hen we found out Cava Winery was hosting a Wine and Wings festival we were not sure what to think. Most people associate wings with beer. We had to ask Anthony what made him come up with this idea. Anthony told us he was sitting with a friend discussing New Jersey Wines paired with comfort foods when he made this decision. We have to say that we were very happy for them because they had a great turnout. He also informed me that the feedback was amazingly positive. I think when most people think of wings they think hot. When we tried the various selection of wings we were very pleased with all the different flavors......... apple, chicken murphy, pineapple and a few others. We are happy to announce that the winner of the wing contest was Cava Winery’s Chef, Carla Brandt. The weather really held out for them during the festival. People were sitting on the lawn and at the tables as they enjoyed listening to bands like the Alex Jornov Band, Massive Raggae Band, Rachel Allen and Joey D and Friends. If you weren’t sitting around, you were doing a little wine tasting with some of the wineries who attended such as Ventimiglia, Four Sisters, Dimatteo and Old York or maybe a little shopping at the vendors who came out for the festival. The Wine and Wings Festival will continue next year with regional festivals in the plan so keep your eyes and ears open and come out and enjoy the fun. As always, thank you Cava Winery for having us. A Taste for Giving Nicolosi Foods, Inc. Hosted “A Taste of Giving”, an evening of full flavor and sophistication on May 28th, 2013 at Pellegrino’s Restaurant in North Haledon, NJ. This event featured Berkshire Black Premium Pork products along with wine and beer. A portion of the proceeds of the night benefited “The Mary Therese Rose Fund”. This non-profit organization assists families of children treated at the Keirker Center for Child Development, reach their maximum potential.

Farmhouse Summer Ale “A tribute to the highly drinkable “every day” beers from French-speaking Belgium. Contains Belgian two-row pale malt and 7% wheat. This beer is lightly filtered with an earthy, spicy hop character from imported Styrian Goldings hops and a beautiful rich creamy head from the wheat” These are the dog days of summer. The thermometer in NJ doesn’t ever seem to drop below 90 for nearly long enough. As the temperatures climb, what beer should we choose to beat the heat? May I suggest FSA as my choice not only as my best softball and boat beer, but also as a worthy partner for your chillin’ summer dining choices? We have 2 dozen artisanal breweries here in Jersey and some truly great artistic master brewers of summer saisons. However during these hazy hot and humid days, it’s time to hit the road and keep it simple in pairing our brew with some picnic table favorites. Those of you, who know me, know that I’m a travelaholic and in doing so, I leave a path of consumption along my way. Flying Fish has created another cooler-worthy travel buddy. So as I write this from the road, here are a few of the perfect pairings that are on my summer vacation itinerary this year:

Cabernet Sauvignon Winemaker Anthony Riccio says: “Everyone could go for in a full-bodied cabernet. Flavors of dark cherry with hints of tobacco on the front and finishing with spices of cinnamon and currant. Treat yourself to a tender filet mignon when it’s time to pop the cork.” Pretty bold, but well deserved. NJ is a red wine-state of Cab Francs and red amalgams, so it was a pleasure to pair up this daring Cab Sav with some of my favored fatty foods. Cava is one of N.J’s most prolific wineries, with quite a resume, but I put this selection at the top of my list.

hat Exit Wines is a new wine recently introduced by Old York Cellars to celebrate the Garden State and give back to those who are suffering from the aftermath of Hurricane Sandy. The iconic New Jersey wine bottle labels are designed to look like highway exit signs and can feature any town in the state and can be customized with a phrase, logo or photo of the customer’s choosing. Several pre-printed labels are available including the very popular “Stronger Than The Storm” wine label. What Exit Wines can be ordered online at whatexitwines.com. Old York Cellars winery is a small and growing company in the rural Hunterdon County community of Ringoes, New Jersey. Nevertheless this boutique winery feels fortunate to be in a position to be able to use its resources of the winery venue, fine wines, professional staff and energy for philanthropy. Like the rest of New Jersey, they were touched by the destruction Hurricane Sandy brought to New Jersey and wanted to do their part to help the victims of the storm. “Almost everyone we meet has a family member, a friend, an acquaintance or they themselves have been affected by the aftermath of the hurricane. It became a priority for us to come up with a way that the winery could help make a difference,” said David Wolin, owner of the winery. During a team meeting the winery staff realized their new line of What Exit Wines was the perfect vehicle to help raise money for Sandy Relief. To insure their donations would be well spent the choose The Hurricane Sandy New Jersey Relief Fund, the state’s official charity fund chaired by Mary Pat Christie, the governor’s wife. This non-profit organization raises and distributes funds to organizations that support the recovery and rebuilding efforts of New Jersey communities impacted by the storm. The Fund aims to make a sustainable, long-term impact and focuses on programs that address the unmet needs of New Jersey communities. For each What Exit Wine bottle sold, $1 will be donated to the relief fund. The new line of “What Exit Wines” includes a soft dry white blend of Chennin Blanc and Seyval Blanc, a dry red blend of Merlot, Barbera and Landot Noir as well as a semi10

sweet blush blend. “Many customers of the winery are purchasing mixed cases of towns to add to their wine collections and to give as gifts. They are enjoying the labels as much as the wine,” shared Austin White, tasting room manager. The wine is also available at A Time For Wine stores at the Tropicana, Resorts, and Caesar’s in Atlantic City, up north at The Kitchen in Englewood, the Little Town NJ restaurant in Hoboken and the winery’s other restaurant outlets in the state. The What Exit Wines have been selling well since debuting in April. Kevin Hayes, general manager of Little Town restaurant states, “Working with Old York Cellars fits our concept of everything New Jersey. The affiliation that the ‘What Exit Wines’ series has with the Sandy Relief Fund really touched our clientele. Sales have been tremendous! After the devastation that Sandy caused in Hoboken, it’s good to know that a winery like Old York Cellars will stand behind, not only the community, but it’s people.” Although the official What Exit Wines launch party took place only three weeks ago the wine’s Facebook page has already received over eight hundred new fans. “Our goal is to continue to make high quality wine with customizable labels to benefit philanthropic causes. We want to produce wines year after year that can help provide funds to organizations that are working diligently to bring comfort to those in need,” conveyed Wolin. Acclaimed Winemaker Scott Gares, has more than 15 years of winemaking experience in the Garden State and oversees the winery’s vineyard and production of 17 wines ranging from native hybrid varietals to European vinifera. Old York Cellars offers daily wine tasting featuring the guest’s choice of six wines for $5 per person from 12 noon to 5 PM every day and 8 PM on Thursdays. 2011 Willow Creek Pinot Noir When trying to describe Pinot Noir to someone who has never tried it, I mean no disrespect and actually hope they are influenced to drink it by calling it “Cabernet Lite”. Meaning, a good Pinot Noir has all the great characteristics of a well aged and barreled Cabernet Sauvignon without the earthy, woodsy viscosity. That leaves a well rounded, very drinkable and adaptable very sexy red wine. I have for years recommended pinot Noir with roasted or seared “steak” fish or shell fish. Whenever a fishing buddy hands off some yellow fin I prepare this fast and very flavorful seared steak at home.

any famous authors drink – to excess. They claim that alcohol releases their bondage by reality, unleashing fantasies on which their best novels are based. To write with conviction requires self-confidence – which many authors claim to lack. But bolstered by the bottle they hope to become boisterous and confident writers. Writing is a solo practice. Alcohol is a companion which authors sip and savor as they sit alone in front of their screen, searching for the next line. And alcohol may relax the tense wordsmith as they worry about the direction in which their writing is going. Swearing by these epithets, many famous writers have drunk to excess. From Edgar Allan Poe in the mid 1800s to Hunter Thompson, Tennessee Williams, Ernest Hemmingway and Dylan Thomas in the early 1900s to more current Jack Kerouac, John Cheever and Truman Capote, many American writers have turned to the bottle for inspiration. But does alcohol release creativity? In his 1988 treatise on the topic, “Alcohol and the Writer,” Dr. Donald Goodwin, a psychiatrist on the medical faculty of the University of Kansas examined the lives and works of several notable American authors to explore whether alcohol merits credit for their creativity. It appears that alcohol masked many other problems and solved none – including that drunkenness can make authors less prolific. Few people, great authors or not, can write anything coherent while intoxicated. And many, who imbibe too frequently, die early, as did many of the above listed authors, from alcohol related causes or accidents. So what exactly does alcohol do for your creativity? From a scientific perspective, creativity is the ability to think of something original from connections made between pre-existing ideas or information in your brain Researchers at the University of Illinois challenged 40 male subjects with a series of brain teasers, similar to TV show questions like Jeopardy and Wheel of Fortune. 12

Sober subject were slower at the task and were less accurate. Inebriated subjects solved nearly 40% more problems and took an average of just over 3 seconds less to solve problems than did sober subjects. Researchers speculated that inebriated subjects were more relaxed and thus more able to see interrelationships and make leaps of judgment to the right answers. This 2012 study noted that alcohol manipulates focus. Instead of pinpoint focus, required for tasks like driving an automobile, operating dangerous equipment, etc., the drunken brain overlooks details, instead thinking “out of the box” and seeing “big pictures.” While thinking may be more fluid, it is also less disciplined. University of Missouri researchers found that when drinking, the signal that warns your brain that you are about to make a mistake is significantly duller than when you are sober. So whether driving, making key financial decisions, guiding a corporate team or leading a construction crew, drinking could lead to disastrous mistakes. In conclusion, if you are writing the great novel, should you drink to stimulate creativity? It is certainly not necessary. While many great authors were admitted alcoholics, they are in the minority. Alcohol, in moderation, can help relax those parts of your brain that may cause writers block. But it is also well known that too much inhibits both perception and judgment. he next adventure we chose to have my daughter be our driver. Heritage Vineyards was the start of the day and also the first winery with a cow! After many photos with the livestock and a complimentary glass of wine from the friendly staff, we made our purchases and were on our way. Wagonhouse winery gave us our own table and our own table and our own private server for wine tasting. We moved to the outside picnic area to eat our lunch and a film crew started setting up for a segment of the Oprah show. We were asked to sign waivers to be on the show but they were taking too long too long to put them together. We had our mission of other wineries you know and we had a schedule for the day so we were off. We mistakenly packed the glasses in our basket and drove away. Well GPS took us in circles around and around the winery over 3 times no matter which turn we made. We took it as a sign and returned the wine glasses to the picnic table with a smile and a wave! Very funny! Auburn Road Vineyards was next. This was a beautiful vineyard. One of the nicest we had seen so far. It was set up like a restaurant. Many people of all ages, music, food and our favorite, Give Peach a chance! Almathea Winery was very unique. It had a back room for tastings in what looked like old Victorian home. We loved all the dĂŠcor and furniture. The girl told us we were fun and refreshing, everyone else that day was snuffy. We took that as one of 14

our biggest compliments and vowed never to become stuffy no matter how refined we became after all this winery knowledge! Now Valenzano was always the winery we headed to the last because it was on our way home. It had closed twice before when we were in the area and we were unable to visit. This time was different, we called and told them we were coming. The girl informed us that a wedding would be there at their cocktail party but she was happy to stamp our passports for us. My daughter and driver encompassed in shame and embarrassment pulled up to the front door like a valet and amon all the dressed to the hills guests of the wedding, we mingled our way into the cocktail hour. We had our complimentary glass of wine and was invited to the wedding by the wedding party. We gracefully declined and exited back out to my red faced daughter waiting in the car. Although we were not able to get a tour, it is definitely worth a trip back. The grounds looked beautiful and the winery was elegant and extravagant. A perfect place for a formal occasion. Our next day trip took us to Slyvin Farms. Frank greeted us with an ax in his hand and led us through his garage into a room within his home. Upon entering we noticed 4 walls covered in accommodations, medals and awards. This was shaping up to be an interesting afternoon. Frank was a plethora of information. He not only opened wine for us but showed us how to use different openers and made us open it our self as a lesson. He taught us things other wineries didn’t touch on, like the reason for the different shape of bottles. He drank the wine along with us and we laughed and learned. He spoke Italian to us and told us which wines to pair with foods. Marianne and I enjoyed our visit with him very much. Slyvin is right down the road from the Renault winery, our next stop. We both have been there before but this trip was different. We did the full tour and listened and asked questions to the guide. The winery itself has so much history. Too much to learn in a single day. We want to go back again when the weather is nicer. The tour ends with a group wine tasting with very energetic and informative staff of servers. I really like the little card that was given with recipe suggestions on how to use their wine in food recipes and desserts. We sat outside


by the fountain and ate our picnic lunch on a café table in the sun. Beautiful and perfect afternoon. Christmas time was upon us and we thought it would be nice to visit a winery in the holiday season. Bellview Winery was our first stop. This was decorated so beautifully for Christmas. The tasting room was warm and welcoming and smelled of the Winter spice wine in the crock pot. We just had to buy a few bottles. Coda Rossa was next on the list. We loved Lou! We tried all his wines, he taught us about the difference between NJ and CA wines and we taught him about our secret rating system. We rate wine like we are on a date. One night stand... skinny dipping or his favorite... answer the door in a towel. We made him laugh and blush! They have a pretty patio outside where we met another group of women and we all had lunch together among the fragrance of lavender that is planted along the outside of the building. Well, again, we needed a driver for our Cape May Tour! Natali Winery had a friendly and down to earth tasting room. This was the first winery to have Banana wine! The fruit wines at this winery were so vivid, like you were eating the fruit itself. Michelle was wonderful, we had to take a picture with her. Next stop, Hawk Haven Vineyards. There was a party going on here. We came on the right day. There was music and special barrel testing. We were taught how to use four square when checking in and they gave us a complimentary tasting for doing so. This is a great place to hang out with friends. I can most likely see us returning during the summer. Cape May Winery was so unique in itself. Private sitting areas, private tasting rooms. You are made to feel like royalty. Very luxurious and very relaxing. Going to the wineries in Cape May allowed us to see the versatility in the landscape in NJ that we never knew existed. A trip up north and to the west led us to another change in the landscape. Four Sisters winery was set in a valley with mountains in the distance. Jodi had a great sense of humor and made our experience fun. There are a lot of special evenings there, where they host murder mystery dinners and more. Since Brook Hollow Winery was under construction, Four Sisters was able to stamp for us but we would like to visit again in the warmer

months. Villa Milagro Winery was set bacl far from the street. As we were driving up the long driveway, we saw all the damage from storms and how it wreaked havoc on their property. At the end of the driveway was a country home and a German Shepard waiting for us. He came right to our car door to greet us and literally escorted us to the correct door for tasting. We were taking a while getting out of the ar, and he looked impatient. As if to say, “People! I have work to do, lets get a move on!” Inside was a lovely barn that was decorated so beautifully, you did not realize you wee in a barn. It was lovely. The name of the wine we loved the most escapes me now but it had a finish of chocolate and every note in between was recognizable. Our mot recent trip was to Swansea Vineyards. We went during the week and they were not open yet. Jennifer lived close by and opened just for us that day! She brought along her adorable baby Abby and was so gracious to us. They had the best peach wine we tasted. She explained their peach was made from peaches not grapes. How interesting and delicious. The Kiwi wine was also a first for us. We’re at the point of last 3 wineries in Northern NJ near High Point but they were not open yet. We saw a segment on TV highlighting these and want to share the last part of our trip with our daughters. Our passport was almost complete and we noticed a new passport with many more wineries that the one we had. We decided to try Southwind Winery while we were in the area. We are so glad we did. Lori was a lot of fun. her grounds were beautiful with horses and paddocks. The pumpkin wine was delicious. She explained her plans for building underground which sparks our interest to make sure we make a date to return. This will be a one of a kind type of winery and one that would be so interesting to learn about. This experience has opened our eyes to more than just wine. We were taught about the climate, the weather, the history of the wineries and the towns they reside in. Driving through our home state of New Jersey and seeing the beaches to the mountains all in less than a 3 hour drive. We learned... we met interesting people... we saw beautiful places but most of all we drank a lot of wine! August 2013 Stem & Stein

ust in case you missed it, this is something you may want to attend next year. One thousand people attended The Garden State Brewfest this year. They had 47 breweries between the main tent and the VIP tent...... now that is a lot of beer! The weather may not have been the best, but we think it really brought people together. Walkin’ the Boulevard played until the storm hit half way through the event. The tents withstood 70 mph winds and torrential rains for 36 minutes. The storm’s arrival pushed everyone under the tents and built up a real camaraderie amongst the soaking wet guests and staff. Everyone just tryed to stay dry and enjoyed themselves through it all. After the storm was over and the sky’s cleared there was dancing, mud slides and plenty of smiling faces. People just hung around having a good time enjoying some pretty amazing beers. It is always a hard choice when it comes down to picking the best when there is so much out there. At this particular event Turtle Stone Brewery won the people’s choice award. Congratulations! As I said, this is something you may want to catch next year. Even if the weather isn’t good all day they are prepared for people to have a great time. Until the next time. Cheers! 16
