HILTON CAIRO HELIOPOLIS CHEF LE BERRRE INTERVIEW How did your passion for cooking start and when did you know you wanted to be a chef? I was lucky to be born in a house that very much valued homemade food, wine and entertainment; we often had visits from family and friends. In our house, I have seen fresh fish, crab, mussel, prawn, homemade soup, stewed meat, cheese, fresh vegetables, fruits and a great selection of wines. This developed my passion for food and when the time has come to decide on my career, I chose to be a chef. The hospitality route was a natural choice for me; therefore I joined culinary school when I was 15. You’ve worked in many different hotels around the world — what’s one similarity in international cuisines? It’s always about the same things everywhere around the world; authenticity, traditional way of cooking and seasonal local ingredients, no matter the hotel name, chain or the country. So wherever I go, I always try and learn about the local food history and that helps me to better understand the food seasonality in order to be able to create the menus and plan for the food festivals and promotions. What’s the difference between Egyptian and French cuisines? In France, we use a lot of wine and alcohol in our cooking to flavor the dishes. In Egypt, they use locally produced spices and a wide range of vegetables and fruits, being a big agricultural country which is a plus point for good chefs. In Egypt they eat more of pulses, while in France most of the dishes are accompanied by potatoes. Given your experience in Egypt, what do you find most similar in terms of techniques (e.g. using lots of butter....etc.)? Looking at the similarities in the cooking technique, you find the braised and stewed meat, grilled and pan fried fish, charcoal grill (BBQ), however the weather in France does not always permit for charcoal grill unlike Egypt where you can have an outdoor BBQ all year round. Using and eating different types of cheeses is a similarity too, however, in France we eat cheese more with lunch and dinner
while in Egypt cheese is more consumed in breakfast and dinner. How did the Hilton Cairo Heliopolis meet your cooking standards? I’m a chef that traveled the world and cooked food in 6 continents. In Hilton Cairo Heliopolis we have 8 specialty destinations and 3 bars; basically a diversity of Asian, Lebanese, Italian, Egyptian, Thai, Indian, Mexican and French. This diversity satisfies my food passion and I already started looking with the chefs to upgrade the food presentation with a modern twist, and enrich the menus with new products such as foie gras, oxtail, truffle and more. Since the holidays are approaching, what do you have in mind in terms of menu options at the Hilton? We had planned for a very special set menu for each food destination and mega buffet for the dome outlets, however due to Covid 19 precautions and the latest government restrictions; we had to cancel all our plans. Given the current circumstances and to still celebrate this year with our guests, we decided instead to enrich the A La Carte menus with festive favorites, unhampered takeaway and roast home delivery for our guests to celebrate at home. 1. When did you realize that you want to work in the media and how did you pursue it? When starting your career, did you expect to reach where you are now? I knew I wanted to work in the media field since I was still in school. I once edited an entire magazine from scratch; I also remember rehearsing with a shampoo bottle in front of the mirror. But I didn’t realize that it was for me until I started speaking to a camera for the first time. I landed my first job in television by sheer coincidence. At that time, I was working in a radio station when someone proposed a new music segment to me. I remember feeling as if I belonged the first time the camera was on me. That’s when I knew this was a career I wanted to pursue. I was studying Economics at the time, and I had to finish my degree before switching to Broadcast Journalism and Cinema. I started my career because I loved it. But as the years passed even until recently, I kept thinking that it was only temporary and that I can enjoy it now and later find a real job. Then, it became the most real job I can think of and I’m really grateful for that. I still love it; it remains my passion even after so many years! 2. We all have mentors and people who pushed us even further to believe in ourselves and get to where we want to go - who is your mentor or someone who supported your journey from the very beginning? I don’t have one mentor, I definitely had several. I know that it might sound cliché, but it’s true that the people who pushed me the most in my career were all women. From my first job in a children’s newspaper, L’OrientLe Jour Junior, my boss Nayla DeFreige was very strict with me because she knew that I could go far. My bosses at MBC were also all women. Samar Akrouk, Group Production Director at MBC Network, has always been a mentor to me and the kind of person I looked up to in the way she balances her career and personal life. 3. What’s a memorable interview you could never forget and why? There was one in particular that I did with Robert Redford for his film “An Unfinished Life”. When I interviewed him, I realized there are two types of stars in Hollywood. Those who are in it only for the

fame and others like Robert Redford, who have won so many awards in directing and acting and have a very long career that you can really and truly be proud of. He’s spoken about so many things; politics, cinema, and arts. He’s so erudite and interesting to talk to. And then there’s always the directors for me as well; Martin Scorsese, Steven Spielberg, James Cameron, and Christopher Nolan. I love talking to directors because I love movies so much. 4. What are some of the challenges and obstacles you had to overcome as you made your way to the top? I was a very young Arabic-speaking woman trying to open doors in Hollywood. I faced challenges and I had to wait patiently. Fame should never be the target; when you show talent, dedication, and hard work, the doors start to open, and people begin to respect what you do and want to work with you. However, they were not challenges as much as stepping stones. I think everything in life, especially in your career, happens for the right reason. And as an impatient personality as I am, I realized you have to be patient and wait for the right opportunity to knock your door. 5. What do you like most about your job? And who’s your favorite actor/actress/director? Internationally and in the Arab world as well. What I love the most about my job is that I’m able to watch, discover, explore, feel, and live films. For movie geeks like me, this is what they live for; a beautiful movie. And if you spot one out of a hundred, it keeps you on a high for like a million years. Also, I love to meet the stars. I love to talk to them about what they do, their passions, and then share this with the public. And, recently, thanks to social media, I really love the relationship I have with the fans. They are very nice to me; I’m just very how grateful for my career. Internationally, my favorite actor at the moment is Benedict Cumberbatch. I think he is amazingly talented and deserves 50 Oscars. I also really love Hugh Jackman, Sandra Bullock, George Clooney, Chris Hemsworth, and Will Smith - there are a lot of people that I love interviewing. Also, director Martin Scorsese, I love his movies, I love to talk to him, I love how candid he is about cinema; every movie for him is like a new experience.

In the Arab world, everybody knows how much I admire Hend Sabry for her career and for who she is. She is really special and one of a kind and equally, Menna Shalaby. I love the combination between these actresses. On screen, they really give their all and are really transformative. Yousra is a legend - the endurance of her career, the way she elegantly navigates every single element of her life and roles, the stories she has to tell, the person she is. I just love her. 6. Tell us a quote from your favorite movie! “Who Framed Roger Rabbit” - this one I adore so much. I guess the younger generation might not know it. This is a Robert Zemeckis film, which is half animation – half live-action. There is this line by Jessica Rabbit where she gets in and speaks to the police officer and says: “I’m not bad. I’m just drawn that way.” This is my favorite movie quote of all time. I don’t know why, but I really love it. 7. Since you’re now definitely and so rightfully a role model to many - growing up, who were your role models from the field or outside and why? When I was studying Journalism my role model was Christiane Amanpour. I loved her and still do. She is now the Chief International Anchor for CNN and host of CNN International’s nightly interview program Amanpour. I love women who are forces of nature, who can beat anyone, who are determined, and who can manage their careers and personal lives equally well. 8. What’s a valuable lesson you’ve learned in your journey so far? You learn so many lessons along the way but, in my opinion, you mainly learn to be humble. The more famous you get, the more grateful you should be to people around you who helped you. On the Arabs Got Talent set, there are tons of people around me trying to make my life so much easier. Same with Scoop with Raya. I have a whole team of people who have been working round the clock to make sure that everything is easy for me. The more grateful I am, the more success I get, the more people get
to know me, the more grateful I become for the people around me. That is the most valuable lesson. 9. Who’s the nicest celebrity you’ve interviewed/ interacted with? And which celebrity didn’t turn out as you expected at all? The nicest celebrity definitely has to be Hugh Jackman. He always remembers me every time we meet. He’s so charming, so professional, so handsome, so talented, and so nice. I remember having a very bad cold once, and he was like, “come here” and he wanted to give me a hug. It was devastating to have to turn down a hug from Hugh Jackman. Who turns down a hug from Hugh Jackman?! The celebrity who didn’t turn out as I expected is Robert De Niro. I remember the first time I interviewed him and how reserved he was and I thought it could have been something I said. And turns out that he really doesn’t think he’s an interesting person in the public domain. So for him, it’s not a very interesting thing to give interviews. He prefers to give performances on the screen. But, throughout the year, I think my interviews got better with him because I knew how to manage him. The last interview I had with him and Al Pacino was so iconic. They were both amazing; it’s one of the most memorable interviews of my career. 10. How do you feel about young Egyptian and Arab actors taking steps in order to make it internationally? First of all, I think Rami Malek is very much Egyptian and I’m so proud that he won an Oscar. Rami Youssef too is doing well with his TV series. Ahmed Malek shined at the Venice Film Festival and I did see from the way the public were speaking with him that they see the potential in him as a great actor after seeing “The Furnace”. He is going to have a very bright future and time will tell. Amir El Masry is also doing amazing and has been nominated for the British Independent Film Award alongside big actors like Anthony Hopkins. His film “Limbo” is creating a lot of noise. He is also making his mark and I’m looking forward to seeing how he will do in the future. A lot of actors in the Arab world are slowly making a way for themselves. It makes me proud of course.

11. You are known for strongly supporting and empowering women through your inspiring career. Who do you think are other Arab and Egyptian women making a difference nowadays? I think a lot of women in the Arab world are making a difference in all walks of life - cinema, music, arts, and other careers that are not under the limelight. In Saudi Arabia, for instance, women are starting to have a voice and are finally permitted to drive. And if you go there, you will have the makeup artist coming to you and she has a whole team working with her. In Egypt, I worked with a young beautiful passionate woman called Haya on a small commercial that I did during the Cairo International Film Festival. She’s a very talented director with such an artistic view. I meet Arab women like that all the time that end up inspiring me in a way on every trip. I really love that!

GOING BACK TO DATING AFTER BEING SINGLE FOR TOO LONG by Marwa Rakha “Change of Status”! Such a scary thought! Change from being married to getting divorced or widowed, from being in a relationship to being single, from being single to getting engaged, from having someone to being alone, or from being alone for such a long time to getting back on the dating arena – these are all “to be dreaded” situations. If one has gotten used to being single, it is only natural to forget how “things were done”. How and where do people meet up nowadays? What to say and do on a date? Where to go from that first date? The scariest thoughts are all related to intimacy; when and how to kiss or make out or have full intercourse? Those who were in a long-term relationship are not in a much better position. Sharing your day-to-day life with someone, taking decisions together, arguing, making up, being intimate, snuggling, having a comfortable silence, having meals together, showing up to parties and events as a couple – these are all addictive feelings and getting used to the opposite is excruciating. If you are trying to adjust to a “change of status”, the following tips might help: FIRST: Embrace your feelings; be it anger, sadness, loneliness, fear, anxiety, restlessness, or confusion, it is okay! It is natural and normal to feel the way you feel even if that change of status was your choice and decision. Avoid pretending that everything is fine when it is not – this is called denial and denial is a hurdle on your path to peace. SECOND: Give yourself time to feel confident and balanced again. After the guilt, anger, denial and finger-pointing that come with the end of a relationship, eventually balance and peace will

come into your life – if you allow them. After the loneliness, restlessness and self-doubt that come with just the thought of dating again, eventually excitement and happiness will follow – only if you take it easy. THIRD: Take the slow lane. Whether you are adjusting to being single or getting used to the thought of meeting someone new, do not rush yourself. Uncertainty and relapses are normal. One step forward-two steps backwards are a natural rhythm at the beginning. This is a good time to go about life one day at a time. Do not make any plans or commitments. FOURTH: No expectations. Expectations are the culprit behind disappointments. Curb those expectations when it comes to your ex, if he/she is alive, or your new partner, whether you have met him/her or not, and try to snap out of daydreaming and imaginary scenarios that may involve the past or the future. FIFTH: No assumptions. After expectations, assumptions are where most people go wrong when they are getting over someone or getting to know someone. Do not assume that your ex, his/ her friends and family, are doing this or that to spite you or hurt you. Do not assume that you will meet your perfect match on that trip or that the person you just met likes you, dislikes you, or is even looking for a steady relationship. SIXTH: Watch out for memories and comparisons. If you are newly single, memories would most likely attack you while you are driving, cooking, or before going to bed. Just be prepared and remind yourself that what is done cannot be undone and shut that door. If you are trying to meet someone new, memories and comparisons will ruin any chances of happiness for you. Each phase of your life is special
only stress you out. A little mess here and a little chaos there will not do any harm. EIGHTH: Give up on perfection. Trying to look perfect, act perfectly, have everything in the perfect shape, and find the perfect man or woman is simply stressful. When a person is stressed, they usually make horrible choices and take very wrong decisions. NINETH: Be true to yourself. You deserve to be loved, accepted, and appreciated for who you are. Your previous partner(s) might have abused you and that is no reason to allow a new partner to treat you inappropriately. If you need help with this step, it would be great to talk to a therapist. TENTH: Surround yourself by true friends – those friends who would never judge you no matter what happened or what will happen. A true friend would never rub salt in your wounds and would never push you to do anything against your nature. and will add depth to your character and emotional evolution. Consciously stop that line of thoughts. SEVENTH: You do not have to be on top of things. It is advisable for you to relax and go with the flow. Trying to control all the factors and givens would
LAST WORD: whatever you do during that “change of status” phase, do it for the right reasons. Do not do anything because you are hurt, vindictive, bored, lonely, pressured, afraid, angry, worried, eager, or simply because that is how others deal with the end of a relationship or finding a new partner. ‘s January. This month unofficially marks the second anniversary to Covid-19. We’re going into 2021 and the virus remains like a guest that overstayed their welcome. And despite the fact that some countries have now lifted the lockdown, including Egypt, we can’t say that we’re walking around without the quarantine’s marks all over us. Which is exactly why we wanted to slow down, take a look back and reflect on some things we learned over the past year.
CHERISHING THE SMALL THINGS During the lockdown, we were all restricted to a much simpler life. You had your home, family and phone and this is it. In order to stay sane and entertained, you had to force yourself to stay positive and to enjoy the little things in life. Like a walk around your block, playtime with your pet or maybe a morning chat with your mom in the kitchen. No big plans, just a slow-paced life that human beings may have forgotten how to live for years now. If anything, we should probably keep that in mind walking through life post Coronavirus.

RECONNECTING WITH ONESELF Another perk of the quarantine. We were completely and unprecedentedly left alone with our own mind and thoughts. Something we hugely lack in our modern days. We were able to hear our own thoughts and interpret them. We bet that you too were surprised by how your mind actually functions and by the kind of ideas and talk coming out from there. We read something along the lines of “our minds are the place we live in for most of our lives, so we should make sure it’s a beautiful place.” Many of us have repressed traumas, unprocessed feelings, anxieties and God knows what else lies within. All of which are manifested through our inner child. The inner child is the voice in your head telling you you’re ugly or fat or unworthy. If you don’t know how to comfort your inner child, you won’t be able to find peace of mind.
bravely facing the fallouts of that each and every day. Honestly, we were heroes. All of us. Because most of the previous generations never lived through a pandemic, but we sure did. BECOMING MORE HYGIENE CONSCIOUS Since we took our time to thoroughly recount all the ironic perks of Coronavirus, we must also be reminded of its serious health repercussions. If anything, we learned that lack of personal hygiene will not only affect us, but the harmful effects can spread wider. A balanced diet is also crucial because during a pandemic, our immune system might turn out to be our only savior. Lesson learned, we should pay more attention to our general health and well-being and others’ too!
APPRECIATING PEOPLE’S COMPANY In this unplanned journey of understanding ourselves, we may have stumbled upon great finds. Some people shared how they, for instance, discovered they are more of introverts. However, we must not deny how that time also made us truly appreciate people’s company. As humans, we’re highly social creatures. And it’s okay to be an introvert, but it’s also okay not to be. It’s okay if you’ve felt like the loneliest person in the world during the quarantine. RECONCILING WITH THE PREDICTABLE Another concept we just had to familiarize ourselves with is “reconciling with the predictable”. Our minds and bodies are not trained to waking up with the same low expectations every day. For months, we had to get our heads around the idea that nothing big is going to happen. That today is similar to yesterday and that tomorrow will be no different. ACCEPTING OUR FLAWS Accepting the fact that you’re addicted to work, lazy, too sociable, too anxious...etc…and January 2021 • IDENTITY 35
Soad Hosny:
THE WOMAN WHO RAISED US by Nada Abdelkader In a rare interview, set in the eighties, a reporter asked Soad Hosny what her artist persona meant to her. And to that, the one and only Egyptian Cinderella said that to her, “Soad Hosny was a mother—the mother who raised generations upon generations of avid watchers.” “And if that mother does well,” Soad said in the same interview, “then we should thank her and if she doesn’t do well, we should encourage her to be better because she has a lot of responsibilities.” But before she was increasing her fan base, old and young, through her works, Soad Hosny was just a baby, born on January 26 to Mohamed Hosny and Jawhara Saffour as the tenth of their combined children. As early as five years old, Soad had moved to live with her mother, along with two of her sisters, after their parents divorced. Even during those younger years, Soad Hosny was a performer through and through. According to her, she’d been captivating audiences on radio shows like Baba Sharo by singing…as early as two yearsold, stuttering through half the lyrics and crying at the applause! The fact that Soad Hosny would go on to be a performer was anything but shocking, considering how one of her sisters is Nagat El-Sagheera. With the itch to perform always haunting the back of her mind, Soad became the family’s go-to entertainer, singing and dancing and doing bits for birthdays and other events. No matter how much performing was always on Soad’s mind, acting had never been an option she’d considered. Not until a family friend offhandedly mentioned that Soad would be a great actress and the chance soon presented itself. “I went with Nagat to a studio where she was shooting a movie at the time,” Soad said. “And Ahmed Badrakhan saw me and insisted on giving me at least one scene as one of Nagat’s friends— and that’s how I got my first role.”

However, the rest wasn’t history. Not quite. After that first ever role, Soad soon joined a theatre troupe founded by Abdelrahman El-Khomeisy, a family friend who was on the hunt for fresh faces. At the short-lived troupe, Soad Hosny explored her burgeoning acting talents and impressed at rehearsals through roles like Hamlet’s Ophelia. Toward the end of her late-teens, a seventeen year-old Soad Hosny was scouted and got her big break as Na’eema in the adaptation of the Hassan and Na’eema novel, directed by Henry Barakat and produced by Mohamed Abdelwahab. A pleasant surprise to everyone involved in the project, Soad didn’t have stage fright. She wasn’t nervous of the camera—in fact, the camera loved her and she herself recognized a familiarity in the world of cinema. “I was only nervous once,” Soad said. “I was auditioning for El-Banat Wal Seif and I’d already heard they wanted a girl who was not so skinny, so I started stuttering and messed up and I told Salah Abou Seif to forget all he’d heard from me!” The messed up audition didn’t ruin Soad’s chances of landing a role in that movie, though. Assigned to a different role, she gave it her all. Soon after ElBanat Wal Seif, Soad Hosny participated in other projects like Esha’et Hob followed by several major movies like El-Safeera Aziza, El-Dou’ El-Khafet, 3a’elat Zizi, El-Qahera 30—all in succession. Just like that, Soad Hosny had gone from a supporting actress to a box office success. As her career developed, Soad’s choices expanded and changed. She was no longer limiting herself to romantic comedies and dramas. Soon enough, she
took on films that were grounded in tragedy, reality, psychology, and justice, securing her spot as the actress with the most films in the 100 Best Egyptian Movies list, tied with Faten Hamama. And that’s, of course, without mentioning Soad Hosny’s redefining the musical genre with hits like Khaly Balak Min Zuzu and Amira Hoby Ana, both with several hits still played to this day!

IMMUNE SYSTEM SUPPORT DIET (COMBATTING COVID-19) It’s no news, Coronavirus is still alive and well. With that in mind, all the attention is now shifting towards diets that boost our immune system. So, following the guidelines of WHO (World Health Organization) recommending a healthy balanced diet with vegetables and fruits served on daily basis; nutritionists are putting together the Immune System Support diet with foods rich in Vitamin C like grapefruit, broccoli, strawberries, peppers, potatoes and sprouts. Vitamin E can be found in nuts like almonds, peanuts and hazelnuts as well as fruits and vegetables like avocados and spinach. Vitamin D comes from eggs, liver and red meat. Of course, sufficient sun exposure cannot be stressed enough. Finally yet most importantly, green tea, rich in anti-oxidants, is also a must. fasting helps you stop the habit of “snacking”. The most popular method is the 16/8 one, where you basically fast for 16 hours and have a window of 8 hours to eat. In more advanced levels, people increase the ratio in favor of fasting of course. Making individuals skip eating for the most of the day, and in some cases people actually eat only one meal per day. This is another diet that can be customized according to every individual’s nutritional needs. PLANT-BASED FLEXITARIAN DIET Unlike veganism, this diet is also centralizing planetbased food but does not exactly exclude healthy sources of protein like grass-fed meat and chicken with a percentage of 80 to 20 %. Just like the plantbased diet, this is an eco-friendly diet because plants have a much lower carbon footprint on earth than animals. Therefore, if veganism was never your thing but you still believe in the concept, this could be an intermediate solution. PALEO-INSPIRED WHOLE FOODS DIET This also falls under the old-diets category but surprisingly, not many people know about it. This diet follows the caveman diet, which relied on the consumption of high amounts of protein from meat and fish and all kinds of fruits. And since cavemen didn’t have the concept of farming, this diet avoids foods made with wheat, corn and processed foods in general. That’s where we come in, to offer you some delightful meals that are both healthy for all year long and that could actually help you lose the extra holiday weight!
Eggplant Ricotta Bites
Eggplants are sautéed instead of deep-fried, keeping the crunch without too much oil. Then topped with ricotta and tomatoes for an eggplant-based healthy appetizer. SHOPPING BASKET: 1 medium eggplant, salt, all-purpose flour, 2 large eggs, 3/4 cup breadcrumbs, 1/4 cup grated Parmesan cheese, 1 tablespoon plus 2 teaspoons virgin olive oil, 2 large plum tomatoes, diced, 2 teaspoons red wine vinegar, 1 cup ricotta cheese, shredded fresh basil.

STEPS: 1. Thinly slice the eggplant into rounds and season with salt. Pour some flour into a shallow dish. Beat the eggs in another dish. In a third dish, mix the breadcrumbs and Parmesan. Dredge the eggplant in the flour, then dip in the eggs and coat with the breadcrumb mixture. 2. Heat 1 tablespoon olive oil in a large skillet over medium heat. Working in batches, cook the eggplant until golden, about 2 minutes per side, adding more oil between batches, if necessary. Drain on paper towels and season with salt. 3. Toss the tomatoes with the remaining 2 teaspoons olive oil and the vinegar in a small bowl. Spoon some ricotta onto each eggplant slice. Top with the tomato mixture and basil.
Vegan Saffron Risotto
A treat for both vegans and non-vegans. It’s delicious, healthy and comes with a cheesy aftertaste that will last for a while. This is a dish for the weekends.
SHOPPING BASKET: 2 medium carrots, 3 cloves garlic, three 3-inch strips of peel from 1 orange, 2 sprigs thyme,1 bay leaf, salt, 5 black peppercorns, large of pinch saffron, 2 tablespoons virgin olive oil, 1 tablespoon tomato paste,1 tablespoon soy sauce, pinch of cayenne pepper, 2 cups rice, one 14.5-ounce can whole peeled plum tomatoe, 1 cup loosely packed fresh parsley leaves. STEPS: 1. Separate the white and green (light and dark) portions of the leek, and cut each in half lengthwise; rinse well to remove any soil. Roughly chop the green top, and set aside for the stock. Thinly slice the white portion into half circles, and set aside for the risotto. Cut the tops off the fennel, and roughly chop for the stock. Finely chop the fennel bulb, and set aside for the risotto. 2. Put the leek greens, fennel tops, carrots, celery, garlic, orange peel, parsley, thyme, bay leaf, 1 teaspoon salt and peppercorns in a large pot. Bring to a simmer, and cook, stirring occasionally, 6-7 minutes. Add 10 cups of water, and bring to a boil; reduce to a gentle simmer, and cook until the stock has reduced by about one third (7 to 8 cups), about 30 minutes. 3. Add a splash of water to the saffron in a small bowl, and set aside to bloom. Heat the oil in a large saucepan over medium heat. Add the sliced leeks, chopped fennel and a pinch of salt, and stir frequently until soft. Add the tomato paste, soy sauce, garlic, 1 teaspoon salt and cayenne pepper, and stir for 1 minute. Add the rice, and stir until coated. Add 3 cups of the warm stock, simmer until most of the liquid is absorbed. Add 3 more cups of stock;, bring back to a simmer stirring constantly until the rice is tender. Add the tomatoes. 4. Remove the saucepan from the heat. Stir in half the parsley, and season to taste with salt and pepper. Adjust the consistency of the risotto by adding more of the stock as necessary. Pour into a serving dish, and sprinkle with the remaining parsley
Green Bean Casserole
A healthier version of this classic meal, with 60 percent less calories and 80 percent less fat. It’s a delicious great substitute! SHOPPING BASKET: 3-4 medium shallots (in their skins), Kosher salt, 1 pound fresh green beans, 1 tablespoon virgin olive oil, 8 mushrooms, 2 tablespoons unsalted butter, 3 tablespoons all-purpose flour, 1/2 ½ cups broth (vegetable or chicken), freshly ground black pepper, 1 cup fresh breadcrumbs STEPS: 1. Preheat the oven to 400 degrees F. Put the shallots on a small baking dish, roast until soft, about 30 minutes. When cool enough to handle, deskin and coarsely chop the shallots. Set aside. 2. In a saucepan, bring water to a boil over high heat. Add kosher salt to taste. Add the green beans, and cook uncovered until crisp-tender about 3 minutes. Drain the beans and transfer to a bowl. 3. In the same saucepan, heat the oil over medium heat. Add the mushrooms, season with 1 teaspoon salt. Cook stirring occasionally, until browned, about 7 minutes. Add the mushrooms to the beans. 4. Melt the butter over medium heat. Add the flour and cook, stirring with a wooden spoon, until golden, about 2 minutes. Slowly whisk in the broth, increase the heat to high, and bring to a boil. Add the shallots and remaining 1/2 teaspoon of salt. Reduce the heat and cook until thickened, stirring occasionally, about 5 minutes. Pour the sauce over the vegetables and stir. 5. Spray a 2-quart baking dish with vegetable cooking spray. Transfer the vegetable mixture to the pan. Add the remaining 2 teaspoons of thyme to the breadcrumbs and scatter over the vegetables. To visit Greece, you’ll need to get a Tourist Schengen Visa so you can enter the country for up to 90 days. After your personally-submitted application, it will take 15 to 20 working days for your visa application to be processed.

Weather If you’re visiting Greece, then the best time to do so is spring, starting April, and fall, September to October, when the Greek weather is at its best and the tourists are at just the right amount. Amygdalota Gluten-free and full of almonds, Amygdalota is one of the most popular Greek desserts.
