Erin Kelly has opened for acts including Hunter Hayes and Frankie Ballard. Her skilled guitar playing and powerhouse vocals define her country/ rock roots. From an early age, Erin has been no stranger to large audiences. She started performing the National Anthem in public at the age of thee. Since then, she has performed for many major and minor league teams from the NBA to the MLB, including the Philadelphia Phillies, Reading Royals, Lehigh Valley Iron Pigs Hershey Beas and Lehigh Valley Phantoms. Erin performs around the Lehigh Valley, including Musikfest Café at Steelstacks, One Center Square in Easton, the Hard Rock Café in Philadelphia and numerous pre-game shows for the Iron Pigs. In 2014, Erin released her first original song, Why Wait. The album won numerous awards and her video and EP won a Lehigh Valley Music Award. The Sweet History of Sweets

The earliest sweet which people have eaten since prehistoric times was honey. The origins of confectionery can be traced back to about 2000BC to the ancient Egyptians who made sweets by combining fruits and nuts with honey. The Romans, Greeks and Chinese made sweets with sesame seeds. The Aztecs in Mexico used the cocoa bean to make a bitter drink more than 3000 years ago. This drink was then sweetened with sugar after 1500 years. Sweets and Medicine In the Middle Ages, sugar candies became very popular. Only the rich could pay for sweet food as
the price of sugar was very high. In that time, rich people ate desserts like preserved jelly and dried fruit and wafers made from batter. Also in the Middle Ages, doctors had to learn how to mask the bad taste of medicines and began mixing them with sugar. Sugar and Cocoa Eventually, the combination of sugar and cocoa set the confectionery story on fire. Chocolate was drunk in Central America before 500 AD. In 1502, Cortez, the Spanish explorer of Mexico, brought cocoa and the chocolate drink back to Spain. The Continued on page 10

The first shop for selling drinking chocolate was opened in London in 1657. In the late 17th century the rich began eating chocolate ice cream. Until the 19th century, chocolate was only for drinking, not for eating. Mass Manufacturing Candy history and its development took off in the 1800's. The cheaper price of sugar and advancement in mechanization made it easier to
mass manufacture confections and for the first time they were available to all people. By the 1850s, there were hundreds of confectionery factories in the United States. The very first sweets included boiled sweets and marshmallows. The first candy bar was introduced in Britain by Joseph Fry in 1847. Then, in 1875, Henry Nestle and Daniel Peter invented milk chocolate. In 1900, Milton S. Hershey invented Hershey's Milk Chocolate and then in the 20th century many new kinds of sweets were introduced, including Tablerone (1908), Milky Way (1923), Snickers (1930), Mars (1932), Bounty (1951), Twix (1967) and of course, many others.

While event cancellations and postponements abound in this COVID-19 world we live in, the Society successfully pulled off our annual BBQ to GO fundraiser on August 15th. It was a resounding success and we had to turn away a number of people. We greatly appreciate the support shown by the members of our community in our recent fundraiser. That has led us to try Round 2 of BBQ to GO in conjunction with our annual fall Mum Sale event. You can see info for both in our Ad in this issue of the Gazette. If you go to our webpage at www.lehightownshiphistoricalsociety.org or our Facebook page, you can link to more information about ordering. Usually about this time of year we are holding an event and Open House at our St. Paul’s One-Room Schoolhouse, however, due to the pandemic, we are not opening the school this year or holding a program at that site. We had been in the planning stages of holding a one-room school house reunion event. That too, postponed. We are hoping 2021 will be a healthier and safer year for organizations such as ours to once again interact with the public for both fundraising and programs. We will be conducting our annual drive for membership donations starting in fall so check back with us later this year if you wish to support our mission to preserve the history of the Lehigh Township and we welcome any old or historical items that can be added to our museum collection. Candy is much loved and has played a role in the creation of many games, including a board game created about 70 years ago called Candy Land. In the game, players advance on a board in pursuit of King Kandy, ruler of a delicious utopia with locations like Molasses Swamp and Gumdrop Mountain.You may know the game, many people do. Here are some Candy Land fun facts: Candy Land was invented in the polio wing of a hospital / In the late 1940s, polio was still a looming threat to our population. While convalescing in the polio wing of a San Diego hospital in 1948, a retired school teacher named Eleanor Abbott decided to create a board game that could become a distraction for patients. The result was Candy Land, a fanciful and easy-to-understand diversion

that saw players advancing game pieces through a sweetened landscape based on a color system – so no reading was required. The game proved to be so popular that Abbott decided to submit it to Milton Bradley, which was purchased by Hasbro in 1984. The game was first published in 1949 and Hasbro still sells about a million copies of the game each year. Candy Land helped put Milton Bradley on the map / When Candy Land was released, Milton Bradley was primarily known as a maker of school supplies. Their other big game acquisition, Clue, had just been released, but it had yet to fully take off. Candy Land distinguished itself because, unlike most board games, kids could play it by themselves – an important feature in a country still concerned with the spread of polio. Candy Land came in an edible version / Normally, the game pieces in Candy Land are not edible. In 2014 however, a company named Gamesformotion issued a Belgian chocolate version of the game that had chocolate cards wrapped in paper. Once they were played, they could be eaten. You can still find the edible edition for sale, but be warned: It's hard to play a second time once you've eaten most of the contents.

First, there was ice cream. Then, there were cars and trucks. And then, there was ice cream and ice cream trucks providing Americans with their longloved ritual of buying a cold treat on a hot summer day. The soundtrack of the ice cream truck, whether “Pop Goes the Weasel” or “The Entertainer” has launched children into action for generations. Children will abandon playground games and just about anything else to catch the ice cream truck. From Then to Now The history of ice cream street vendors dates back to the nineteenth century and is shaped by advances in technology, and fortunately, sanitation. While much has changed since peddlers first sold dishes of ice cream from carts cooled with ice blocks, for the last few generations, not much has changed about the ice cream truck. In the 1970s and 1980s the treats were Fat Frogs and Mickey Mouse shaped ice cream bars. Today the sweet treats may be different, but the timehonored set-up is unchanged: Customers approach
a truck with an open side window, review the menu, and place an order. Ice Cream Truck #1 The first ice cream truck was credited to Harry Burt of Youngstown, Ohio, who was the creator of the Good Humor brand. Burt was already delivering ice cream from a motorized vehicle when he had the idea to place chocolate covered ice cream bars on a stick. His new Good Humor ice cream "sucker" was easy and clean to eat, which gave him the idea to sell it directly from his truck to consumers on the street. Continued on page 16

Ice cream trucks such as Burt's Good Humor brand where able to survive the Depression due to the product's low cost. Many consumers couldn't afford big ticket items, but they could afford a nickel for an ice cream treat. During this time, vendors began offering economical items such as twin popsicles that parents broke in half and shared with two children. Post-War Ice Cream Boom Post-war ice cream production boomed and so did the competition. Mister Softee was founded in Philadelphia in 1956 by two brothers who created a soft serve ice cream machine built specifically for a truck. Although Good Humor sold its fleet in the 1970s to focus on grocery store sales, Mister Softee trucks are still on the streets, not to mention a host of competitors who sell original treats, as well as pre-packaged favorites to a new generation of kids listening to hear the familiar jingle on a hot summer day.

Making Cotton Candy at Home SOURCE: candyclub.com
Hardly anything brings us back to our childhoods more than cotton candy. Once labor-intensive and costly to make, this spun-sugar treat exploded in
popularity thanks to the industrial revolution and affordable sugar. Learning how to make cotton candy at home – without a machine – isn’t as hard as you might think. It may not look exactly like what you’re used to, but home-spun cotton candy is just as delicious. To make cotton candy without a machine, you’ll need to heat, liquefy, and spin the sugar into very thin strands. Just know that you’ll want to keep your batches small. This method is a bit more timeconsuming (and messier!) than using a machine, but it’s also a lot of fun. INGREDIENTS: • 2 1/4 cups white granulated sugar • 1/2 cup water • 1/2 cup corn syrup • 1 pinch salt • Nonstick cooking spray • Parchment paper • Food coloring (optional) • Fruit-flavored food extract, such as raspberry or lemon (optional) SPECIAL EQUIPMENT: • A wire whisk with ends snipped and straightened. Where the wire whisk loops around, cut it with a wire cutter and bend each piece so it forms a straight metal line.

• Candy thermometer • Large lollipop sticks or paper cones for serving. Prepare your workstation / You will be spinning the sugar on parchment paper, so clear some space on a counter or table. You may want to lay down plastic wrap or newspaper underneath the parchment paper to expand your overall protected surface and prevent messes with the hot, sticky sugar. Combine ingredients and heat to 320 degrees / Mix the sugar, corn syrup, water, and salt in a large heavy-bottomed pot, then stir over mediumhigh heat until all the sugar is melted. Use the thermometer to make sure the mixture has reached 320 degrees. Transfer sugar mixture into a large heat-safe bowl / This will keep the sugar from continuing to cook and burn. The sugar will start to thicken after about 10 minutes but can be microwaved to return it to the right consistency. Spin the cotton candy – and work quickly! / Dip the tines of your whisk into the mixture then quickly drizzle the thinning sugar strands back and forth across the parchment paper until you have a sizeable “nest” of candy strands. From there, you can either eat the cotton candy in clumps or spin it onto lollipop or popsicle sticks. Enjoy!

They have evolved far and wide from just chocolate and vanilla to fulfill almost all of our dessert dreams and fantasies. National Cupcake Day is recognized annually on December 15 to commemorate these compact yet delectable sweet treats. THE FIRST CUPCAKES Cupcakes have been around since the late 1700s.
The first mention of the cupcake can be traced to 1796 when a recipe notation of “a cake to be baked in small cups” was written by Amelia Simms in American Cookery. Originally, cupcakes were called “Number Cakes” or“1-2-3-4 Cakes”to create an easy way to remember portions: 1 cup butter, 2 cups sugar, 3 cups flour, 4 eggs, plus 1 cup milk and 1 spoonful of soda. Original cupcakes were not frosted as we know them today, and usually were just flavored with spices or dried fruit. FUN FACTS • The record for eating the most cupcakes in the shortest amount of time was 29 cupcakes in 30 seconds! • The world’s largest cupcake weighed more than 1,200 pounds and had more than two million calories! Peanut brittle is a type of confection, consisting of flat broken pieces of hard sugar candy embedded with peanuts. The term brittle first appeared in print in 1892. In parts of the Middle East, brittle is made with pistachios, while many Asian countries use sesame seeds, as well as peanuts. Many believe peanut brittle as we know it originated in the American South. Now you can make everyone’s favorite sweet, salty and crunchy treat – peanut brittle – in the microwave. Use this recipe to make enough for eight servings. Total time needed is about 15 minutes, including 5-minute prep time and 10-minute cook time. Here’s the “how to”: INGREDIENTS 1 1/2 cups roasted peanuts 1 cup granulated sugar 1/2 cup light corn syrup 1/8 teaspoon salt 1 tablespoon butter 1 teaspoon vanilla extract 1 teaspoon baking soda

DIRECTIONS 1. Grease a baking sheet and set aside 2. In a glass bowl, combine peanuts, sugar, corn syrup and salt 3. Place bowl in microwave and cook 6-7 minutes at high power. Mixture should be bubbly and peanuts browned. 4. Stir in butter and vanilla and cook 2-3 minutes longer. Note: If you know your microwave tends to cook faster and hotter then reduce this cooking time slightly so you don’t burn it. 5. Quickly stir in baking soda – just until mixture is foamy – then immediately pour onto greased baking sheet 6. Let cool for 15 minutes or until set. Break into pieces using a butter knife to crack it apart and store in an airtight container.

The S’Mores of Autumn Ahh, the s’mores of autumn. What wonderful and creative things they are. As the summer winds down and the weather starts to turn a little cooler heading into the fall, the classic s’mores of summer, featuring a few squares of chocolate with a toasted marshmallow smooshed between two graham crackers give way to some very creative variations on the theme. We found more than thirty intriguing “s’mores” recipes at this site, ranging from “s’mores cheesecake” to “s’mores nachos”: countryliving. com/food-drinks/g2006/smores-dessert-recipes/. Preheat oven to 350°F. Line 12 muffin pan holes with liners. 2. Stir together graham cracker crumbs, sugar, and melted butter. Press about 2-2 1/2 tablespoons of the mixture into the bottom of each muffin liner and press to compact.

3. Beat room temperature cream cheese with a hand mixer until fluffy. Beat in room temperature sour cream. Beat in egg, sugar, and vanilla extract. (Room temperature ingredients are a must to avoid lumps!) 4. Evenly divide (about 2-2 1/2 tablespoons each) cheesecake among crusts. Bake for 18-20 minutes, until they just begin to brown. Cool completely and refrigerate for at least 3 hours or overnight. 5. Make the ganache (about 2-3 hours before you're ready to serve): place cream and chocolate chips in a microwave safe bowl or measuring cup. Heat for 45 seconds, then whisk until completely smooth (may take more or less time depending on your microwave). Let sit until it's thick enough that you can spread it but it's not drippy. 6. To assemble: spread ganache over the chilled cheesecakes. Toast a marshmallow over a gas stove or BBQ (or under your broiler for just a very few seconds) and place on top. Serve immediately after you've placed the marshmallow on top. 7. Cheesecakes can be made and frozen for up to one month before topping. Once topped with ganache and marshmallow, serve immediately.

CONTACT TRACING SCAMS - COVID The Coronavirus has created a perfect storm for scammers. One unique scam to arise this summer is scammers posing as contact tracers working for state health departments. Contact tracing is an important part of efforts to slow the spread of the coronavirus. Approaches to contact tracing will vary by state; but know in all states, legitimate tracers will never ask for money, bank account information, Social Security Numbers, credit card numbers, or medical insurance information. You may receive a text from a contact
tracer to inform you they will be in contact by phone. If a text like this tells you to click a link, it’s a scam. Clicking will download software on your device to access personal and financial information. When in doubt, don’t act before contacting your state health department to find out what process they are using. TECH SUPPORT - COVID It’s back to school season in the time of coronavirus, and for many families it means more working from home and attending school from home. Scammers will take advantage of this to scare people into thinking their device has been attacked by malicious software – a nightmare for workers and students alike. The “tech support” scam typically involves a phone call with someone claiming to be with Microsoft, Dell, or another well-known tech company, claiming they have identified a virus on your computer. Or, you will see a pop up message on your computer with a phone number to call right away to deal with a virus. In both scenarios, the scammer’s goal is to get you to allow them to access your computer remotely in an effort to steal financial and personal information. If tech support calls, it’s a scam. If you get the popup and your computer freezes, simply shut down and restart your computer and it should go away.
