Going Green Every year, our April edition celebrates outdoor living, but this year, I think the theme of the issue could better be summed up in just one word: green. As you flip through these pages, you’ll see it over and over again. One of this month’s features explores plant-based clean eating in the Lehigh Valley and, specifically, the growth of three local options. To learn more about the healing power of food, turn to pg. 64.
Then, on pg. 27, this month’s Ask the Expert is basically a how-to on not killing your houseplants. Have I hit a nerve? Here’s the good news: expert Dana Carpenter, the founder of Fancy Plants Club, assures us that anyone can successfully raise plants, so not giving up is step one. Cooking has been a lifelong passion for Khanisa Darby. “I’ve always had a love for the culinary arts,” she says. “I began cooking at 11 years old, and in high school I attended Bethlehem Area Vocational-Technical School where I received formal training in the culinary arts.” But the road to owning her own business in Downtown Easton was not a straight one. “In 2016, my husband, Sean, and I were already settled into our respective careers, but feeling unfulfilled,” she says. “In June of that year, my sister requested I make banana pudding for her barbecue, and once it was tasted, it was an instant hit. I posted a photo of the pudding nicely layered in a pretty trifle bowl and received close to 100 comments requesting an order!” From there, the journey to launching The Pudding Bar began. “We opened our first mall cart in September 2016 in the Lehigh Valley Mall, and opened three more in New Jersey by 2018,” she explains. “With a growing customer base and an even better idea of the experience we’d like to give our customers, we were finally able to open our flagship location in Downtown Easton in August of 2019.” The Pudding Bar offers customers a variety of delicious pudding treats, ranging from the Southern Classic, which layers vanilla pudding with yummy wafer cookies, to Lovers Lane, where banana meets strawberry for a perfect combination.

Joy Boutique was dreamed up in a college dorm room.
Tell us a little bit about your professional background and what initially inspired you to open Joy Boutique. I have always had a huge passion for fashion! All throughout college, I worked at Ann Taylor LOFT while I minored in clothing and textiles at Liberty University. I knew that, eventually at some point in my life, I wanted to own my own clothing store of some sort. I always found an amazing correlation between fashion and helping women. I always enjoyed helping women feel beautiful and find their inner beauty through the means and power of a great outfit. Opening Joy Boutique was my goal to help every woman, no matter her age or body type, to find something that makes her feel gorgeous inside and out. What is the meaning behind the shop’s name? I actually created Joy Boutique while sitting on my dorm room bed my sophomore year of college! I was in a fashion merchandising class and was assigned a project to create a storefront, brand and business concept for a store all my own— Joy Boutique was created in that moment. I named the business Joy Boutique because I am a big believer that there is a reason to

find joy every day in life. In the Bible, joy is defined as “gladness not based on circumstance,” meaning that happiness can be found in every moment of life, whether it is a great day or a bad day, sorrowful or glad. There is always something we can find happiness in. Therefore, I wanted to create a place that, no matter what your day, you would be able to find a sliver of joy in our store. That translates to the clothes too—no matter what the occasion, you’ll be able to find something at Joy Boutique for that agenda. What was the experience of opening a retail shop in the middle of a global pandemic like? Challenging to say the least! We originally planned on opening back in spring 2020; however, when the lockdowns occurred, we had to take a step back and be patient until a better economic time. It has not been easy—with so many at home, many people are not going to work or out and about like they used to, hence not as much need for style! However, we are doing our best to adapt to the times and create chic and cozy options for home. Our customers and local community are the most supportive and encouraging people and we are so grateful—our amazing support base is what keeps us going. We are beyond grateful for that, so thank you!

Describe the variety of clothing and sizes that you carry! We are proud to carry an array of clothing and sizes. We carry sizes XS through 3X. We strive to supply many choices in a variety of sizes as well as different styles to meet the needs of our customers’ preferences and tastes. Talk a little bit about the jewelry and gift options you have available. We have a full jewelry collection, including bracelets, earrings, necklaces and more, which are unique and one-of-a-kind pieces. Roughly half of our jewelry collection is handmade locally in the U.S. Supporting womenowned businesses near and far as well as supporting local businesses in our community is very important to us. We have a gift table that is always stocked with fun, unique choices that are perfect gifting items for others or yourself!
Is there one item that just continually flies off the shelf? We have two items that are extremely popular at Joy Boutique—the first is our “Waffle Knit Wide V-Neck Cozy Sweater” and the other is our “Heather Swing Plus Dress.” Both are soft, comfortable and no-itch. They are effortless style pieces, which we believe is what makes them such great sellers— stylish in a pinch and can be worn and styled numerous different ways. We constantly are getting them in in different colors and these items definitely don’t stick around for long. What do you love about being based in Quakertown? I have lived in Quakertown for almost 10 years and this town is home. I love the people, the atmosphere and everything about Quakertown! The best part of Quakertown, however, is the small, close community feel. We are exceptionally grateful to be part of the downtown borough community.
Everyone here was beyond welcoming when we opened and did everything they could to help ensure our successful start. What trends or offerings are you looking forward to this spring? The color palettes of spring/ summer 2021 are absolutely stunning. There are soft Easter palette colors with some great pops of colors in blues and pinks that really are stunning and energizing—they offer hope and brightness of better days ahead! I also am very excited about some of the great trends such as silver as the prime metal color, minimalism styling and the return of workwear as a prominent style. We are seeing such great pieces in runway and are excited to bring everyday options that reflect these trends to our boutique in the upcoming months! 245 W. How humid is the space?” Carpenter asks. “Take the time to read about the plant instead of impulse buying.” Some plants need very little light, some need frequent watering and some like to stay very dry. Especially if you’re adding to your plant collection, be careful about inviting unwelcome guests into the fold. “I like to set a new plant aside for a week or two after bringing it home and check that no pests appear,” says Carpenter, who quarantines new plants in a separate room. One of the best things about having plants around the house is spending time with them! They need you to gently paw through their leaves checking for signs of pests, dead leaves and crowding. “Like trimming the dead ends of hair,” Carpenter says, “pinching away yellow or brown leaves keeps plants healthy and fresh-looking.” Plants grow faster and fuller with straggling leaves trimmed away, and your connection with your plants grows, too.

Like a loving grandmother foisting meatballs on an overstuffed grandchild, we often fall into the deadly trap of overwatering our plants. “Don’t water based on a schedule,” Carpenter warns. You’re going to have to get your hands dirty. Poke a finger an inch or two into the soil and check if it’s dry. That’s when it’s time to water. Carpenter recommends using room temperature water and reminds us, “Less is more!”

In spring and summer, plants grow faster, requiring more water and even fertilizer to spur their new sprouts. “A fertilizer replaces nutrients in the soil that have been used by the plant over time,” says Carpenter, who’s a fan of Miracle-Gro. Following the package
directions, an infusion of plant food monthly or even every two weeks in the growing seasons will keep your plants thriving.
REPOT THE ROOT-BOUND
Some plants are slow growing and will be happy in one pot for years with a little soil replenishment. Others grow actively and can outgrow their pots every 12 to 18 months. A quick way to check if your plant is getting crowded is to see if roots are making their way through the drainage holes in the bottom of the pot. Early spring, when plants are entering their active growing season, is a good time to repot. Aim for a new pot that’s around two to four inches larger in diameter, with drainage holes to keep roots from getting soggy. Keeping old nursery pots is useful as they can become hand-me-downs for up-andcoming houseplants, and their plain exteriors disappear inside decorative planters.

Another joy of cultivating plants is propagation, not just to multiply your own collection, but because you can gift and swap baby plants with your friends. You’ll have to research the methods that work with each type of plant, but some advice is universal: Plants do best with propagation in the spring and summer, and you can prepare your healthiest specimens with deliberate fertilization in advance and watering a day or so before. “Take more cuttings than you need,” says Carpenter, who loves propagating succulents. “Not all of them will grow successfully, and it doesn’t mean you’re doing anything wrong.” Use the proper tools—like a sharp knife to make clean cuts. Know your plant and you can proudly watch new babies take root and flourish.

Afros in Nature A lot can happen in seven months—just ask the creative minds behind the Bethlehem-based grassroots movement Afros in Nature. “I was just saying to Melanie [Lino], it’s like we’re getting ready to have a baby,” says Amanda Jimenez, who, along with Lino and program developer for early learning and wellness Nia Watson and outdoor recreation coordinator Louis Rivera, serves as the group’s informal leadership board. “We all have different superpowers that, when put together, really balance each other,” Jimenez says. And, as the calendar turned from 2020 to 2021, they were able to take stock of everything they had accomplished during those brief seven months of Afros’ infancy, and to enthuse about their new “baby” on the way—a nonprofit café and community space in Allentown that aims to turn the hospitality industry on its head. “In our area there’s nothing like this,” Lino says.

The idea for the collective had been percolating for a while. Its founders wanted to find a way to connect Black, Indigenous and People of Color (BIPOC) with the natural scenes around them. Lino, an Allentown native and co-owner of Bethlehem’s Lit Coffee Roastery and Bakeshop, where she sells treats from her Made by Lino line, says that meant creating an environment that provides accessibility to outdoor recreation and farming for fellow people of color. But first she had to find her own sense of inner peace about being out in nature. Her family is from the Dominican Republic, where being outside often is the norm, she says. She spent a lot of summers there. But the freedom to roam and explore that made those summers so memorable didn’t extend to the Lehigh Valley. “My mom wouldn’t allow me to do anything alone out in the wilderness, ever,” Lino says. “Bad things could happen to people like us.” She found a shared experience in talking to other people of color in the area—a general unease about spending time alone in natural spaces, coupled with a lack of local outdoor recreation groups specifically geared toward them. “We decided we were going to do this to reclaim space in the outdoors,” Lino says.

One of the group’s first acts of outreach last summer was assuming guardianship of a community garden along South Bethlehem’s greenway that Jimenez says was in need of some TLC. It was an undertaking that certainly appealed to Jimenez, a Texas transplant who moved to the Lehigh Valley four years ago in part to cultivate her interest in farming. She says they tended to the plants that were there and added new ones, while using the garden rehab mission as a means to strike up conversations with people who happened to be walking by on the greenway. All of this was happening as the Lehigh Valley, like the rest of the world, was grappling with the ongoing challenges imposed by the COVID-19 pandemic. “It was a nice way to ride out the wave of isolation,” Jimenez recalls. Soon, other outings began to populate on the collective’s calendar. Paddle boarding at Lake Nockamixon in Bucks County was

among the most in-demand repeat excursions, even though, according to Jimenez and Lino, the vibe at the lake wasn’t always completely welcoming. They recall the group getting a lot of stares from passersby; once a fisherman cast his line a little too close for comfort to the group. “When you have five people looking at you like you don’t belong, it’s hard to not notice it,” says Lino. But, Jimenez says, they always opted to take the high road: “We’re not going to engage in this. We’re here to have a peaceful time.” The group also organized yoga sessions, a bike ride along the D&L Trail and disc golf outings. Other activities were home based, like a virtual book club and home healing workshops. Regardless of the setting, the goal, the group says, is creating a safe space—physically and emotionally—for all participants. “This will be a place for healing, learning, crying, screaming, dancing, playing music and building stronger connections with fellow BIPOC in the Valley,” says Lino in her Afros in Nature bio on the group’s website, afrosinnature.org. Jimenez says the feedback so far has been positive; the Afros in Nature mission has been spreading via word of mouth and social media. “People are really enjoying how it makes them feel and how it shifts their mindset,” she says. Some participants have become regulars at the group’s outings, while others have pledged to work on their newfound connection with nature on their own time. Jimenez says that feeling of belonging is key; it’s important to pay it forward. “Help someone else experience something beautiful. sports like skiing and snowboarding at some point. But the collective is perhaps most excited about what it’s cooking up in Downtown Allentown. The Afros Homestead and Café is on 7th Street between Gordon and Chew streets, not far from where Lino grew up. “I immediately felt attached to this neighborhood,” she says. She first began looking at the space as a possible second location for her Lit coffee shop in Bethlehem. The pandemic forced her and her business partners to pump the brakes on those plans, but Lino still felt the building and the neighborhood had potential and didn’t want to walk away from the chance to do some good. “I asked [the property owner] how she felt about opening a nonprofit café.” The owner— and the team—were on board. The café aims to be much more than just a neighborhood coffee shop; it will offer employment as well as teaching opportunities to young people of color in the region. “It’s not just a job. You’ll be trained on how to be a leader,” Jimenez says. “We just want to prepare people to be their best selves.” Beyond the typical duties in the front of the house, workers in the kitchen can expect to learn food storage, food prep and knife skills. Outside, there will be garden beds to grow food that will be incorporated into the café’s menu offerings. A community space indoors will host workshops and meetings. “The goal is to support this community, not make money,” Lino explains. She hopes to offer the café’s wares on a sliding scale, while also providing discounts to people who live in the neighborhood. Of course, making those plans a reality requires more than just a vision: there’s also the physical work of renovating and refurbishing a building that Lino says has been abandoned for decades and was on the verge of being demolished. Earlier this year, construction crews and contractors were tackling the bigger jobs of redoing the walls and flooring and fixing the plumbing. Once those items are crossed off the to-do list, the Afros in Nature team will roll up its sleeves to bring the café to the finish line. Lino says the community has already been generous in offering time, resources and donations to help them power through any challenges that have popped up. She’s hoping that kindness will continue. “The way the community has come together has been such a blessing. Everyone is coming through to make sure this happens.” afrosinnature.org

Not so long ago, Easton’s old Simon Silk Mill was the definition of an eyesore, better suited for a demolition crew than a community of entrepreneurs. And yet, against all odds, the property, which has adopted the more casual, contemporary moniker “Silk,” has been transformed into an inviting place to live, work and play.
THE HISTORY
THE LAYOUT
You probably know that steel used to be big business in the Lehigh Valley (hello, Bethlehem Steel), but maybe you don’t realize that silk manufacturing used to be a thriving industry around here as well. According to historians, by the dawn of the twentieth century, there were nearly two dozen silk mills in the Lehigh Valley, and Easton’s R & H Silk Mill was among the first to open its doors in 1883. Named for original founders and brothers Robert and Herman Simon, the mill changed hands many times throughout the 1900s. Other businesses occupied the property after the silk business unraveled. The sprawling campus had been vacant for decades before it was acquired by the Easton Redevelopment Authority in 2006. Finally, VM Development agreed to spearhead the massive renovation in 2010. Construction began in earnest five years later.
There are 15 buildings on the 14acre site in Easton’s West Ward, a mix of commercial and residential space. The triangle-shaped campus is bordered by 13th Street, Bushkill Drive and Bushkill Creek.
THE VENDORS More than 30 businesses have set up shop at the silk mill. They offer a wide variety of products and services—everything from massages to craft beer to balloon décor to a shave and a haircut.

Separatist Beer Project was among the initial batch of businesses to call Silk home. “We were an early investor in the long-term vision for the complex,” says founder Joe Percoco. Separatist also has locations in Downtown Easton and South Philadelphia, but its Blendery at the silk mill (“where the magic happens”) is the spot where beer lovers will feel most at home. They host special events, too—meaning you can say “I Do” among 1,000-gallon Italian oak barrels and some very cool, very rustic beermaking equipment.

WHAT TO KNOW BEFORE YOU GO The silk mill is right off the 13th Street exit of Route 22. It’s also a quick two-mile drive from Easton’s downtown. Parking shouldn’t be a problem—there are more than 400 parking spaces on the campus for residents and visitors.
BONUS: The entrance to the Karl Stirner Arts Trail is within walking distance of the silk mill. The scenic 1.6-mile path, named for an Easton sculptor, runs along the Buskhill Creek and connects the downtown, West Ward and College Hill areas. Take a stroll and check out the more than a dozen art installations along the way.
DIGGING THAT COMMUNITY VIBE... The silk mill is like a city within a city. Many of the vendors cite a prevalent welcoming community feeling as a reason for establishing their businesses there, and as one of the major selling points in attracting customers and clients. “We love feeling like we’re part of the neighborhood here, as we have gotten to know many of the residents… and their terrific dogs!” say Sue Amato and Erin Mascelli. “Our clients always remark on how cool the collection of businesses are as well as the character of our space,” adds Alisha Nycole Becker. Catrian Schutzer says Skinterest’s frequent customers appreciate the marketplace’s myriad of options. “They love that they can get their facials while their husband gets a haircut at Gentlemen’s Barbershop and then they meet up after for a cocktail at County Seat Spirits. We plan on staying here as long as we can.”

As of January of this year, all 170 apartments—mostly one- and two-bedroom layouts—had been spoken for; many of them were snatched up as soon as they went on the market. “Our apartments are primarily in brick buildings, with exposed brick and hardwood floors running throughout,” says Stephen Lavonier, property manager for VM Realty. “The top floors of those buildings offer apartments with lofts. Most of the top floor apartments have skylights as well.” And few of the apartments have the same layout, meaning renters who sign on the dotted line are truly moving into something unique.

Right now, there’s a heightened interest in food, eating and cooking. Maybe it’s the pandemic and all the cooking we’ve been doing at home (broken up with well-placed takeout to keep our restaurants in business). But if you look a little more closely, you’ll see that clean eating of green things—i.e., eating plant-based whole foods—is really having moments of growth and change, especially with three of our own local businesses. These businesses operate with the Hippocratic adage of “Let food be thy medicine, and medicine be thy food.”
Green Vida, owned by husbandand-wife team Jackie and Wilson Rueda, says everything in its health-focused café is made with love and transparency. That means the juices are 100 percent organic; almost two pounds of produce are in just one 16-ounce juice. The ingredients are healthy and vegan and vegetarian friendly. The path to Green Vida began when the Ruedas changed the type of food they fed to their son, whose autism symptoms had included lack of eye contact and verbal communication. Shortly after changing his diet, his behavior changed. “Treating our child with a clean diet full of organic whole foods helped improve his classic autism symptoms. His eye contact came back, he started to talk and was coming into our world,” says Jackie. From that point forward, the Ruedas began to educate themselves and Green Vida was born in 2018 out of the back of a small gas station in Bangor. They sold their juices there for about a year and a half until they moved to their current Forks location. Fast-forward to this writing, early 2021, and a smaller Green Vida outpost is slated to open at the Easton Public Market (all juices will continue to be made at the Forks location).
What’s unique about Green Vida is that they use a coldpressed process for their juices. “True cold-pressed juice is very different from centrifugal and slow/masticating juice, which is what most juice bars use. We are educating customers as much as we can,” she says. For example, most grocery-store cold-pressed juice is heat pasteurized, which gives it a longer shelf life, but nothing compares to fresh juice. “The nutritional benefits and taste of a raw juice are far superior to a pasteurized juice. We tell people if the juice is going through a screen and there is no press, it’s not cold pressed,” Jackie says. “Can you tell we are passionate about this?” Green Vida’s cold-pressed juices and immunity shots sell out almost daily, and the juice cleanses are really popular, with options ranging from one to three days. “A juicing cleanse is a powerful way to give your mind and body a complete reset and to replenish lost nutrients by consuming only juice for one to three days,” she says. But it’s not all juice. Yes, there’s avocado toast, smoothies and smoothie bowls, and lots more. Imagine farm-to-cup coffee from Devoción, sourced from small farms in Colombia and roasted in Brooklyn—it arrives in Forks within 10 days.

If you grew up with parents who run a health food store, as Sarah Collins did, it seems like one of two things would happen: you’d run the other way as soon as you could make your own way in the world, or you’d really dig into health, wellness and the healing power of food. The latter happened, and the result is Café Santosha, which has been operating for about 10 years. It’s literally an organic outgrowth of Healthy Alternatives, which her parents, Lloyd and Dianne Burg, opened in 1994. Well, not totally—it’s inside the store. But what could be greener than that? Shop for your bulk items, grab some supplements and fresh local veggies (Salvaterra’s Gardens, among others, delivers there), and then have some breakfast or lunch. Or grab something for dinner from the refrigerated case offering a soup, sandwich or the quinoa salad of the day. (Or their super-popular vegan, gluten-free coconut rice pudding.) “The to-go fridge is always there even when I am not there,” says Collins, as the café closes at 2:30 p.m. and isn’t open on the weekend. If you’ve been following the progress of Trolley Barn Public Market in Quakertown, you may have seen something called Full Earth Goods, which sells Santosha food. That’s her

business too. So you can still get your fix on the weekend, as she opened a mini-outpost at the market, full of graband-go items from the café, bread, eco-friendly gifts and thoughtful products. (And then go sit outside in the “Yard,” full of fire pits and tons of seating.) Santosha means contentment in Sanskrit, and it’s hard to feel anything but that when you eat its food, as it is largely plant based and organic whenever possible and made with tons of love and attention to detail. Ingredients are fresh, flavors are vibrant and food will sustain you, surprise you and nourish you. Collins and her crew are always leaving beautiful treats out on the counter as they come out of the oven. More often than not, they’re made with less sugar and spelt flour. These days, as a result of the pandemic, Collins started adding to-go dinners once a week—things like turkey sloppy joes (or with tofu) and pasta bowls with roasted veggies. “People just want to be comforted right now,” she says. But what Café Santosha offers is a small bit of comfort that can be taken from the knowledge that you’re eating something whole foodsbased and healthy.

Sarah Hinsch’s launch of Greenmouth Café in 2014 is well documented—as the region’s first totally organic café, it was born out of the idea that health is wealth and the staunch belief that we can heal ourselves and our patterns and our lives with what we eat. The café became known for its scratch-made, plant-based vegan fare (epic avocado toasts, for one). But in spring 2020, Hinsch tweaked that business model and renamed it Greentruth Healing Haven & Plant-Based Kitchen, to represent a wider approach beyond just the café, and incorporate wellness across the board. You can now stay overnight at Greentruth, come for a Reiki session or even book a session with the Hippocrates Health Institute LED and red-light sauna, which helps to detoxify the body.
“Health is more than what we put in our mouths. It's what we eat, what we think, what we do and the environment we put ourselves in that creates health—a holistic approach if you will,” says Hinsch. The pandemic, she says, hasn’t changed anything in terms of how she approaches her business, per se, but the timing with the shift and expansion of her business mindset is perhaps ironic—or maybe prescient. Just as we are having trouble coming together in person because of social distancing, it becomes even more important for us to take care of ourselves in a multitude of ways. “Our mission is to build community around health. Community, purpose, food, movement, rest, they all work together to keep us healthy, happy and full of life,” she says.

The Cure Pizza Wayne Milford, Co-Founder & Brewmaster of Birthright Brewing Company
Birthright is known for its woodfired pizzas and seasonal beers.
Wayne Milford was working in the fast-paced pharmaceutical industry in New York City when he decided to switch things up. He had always been curious about the kitchen, but it wasn’t until he was in high school that his appreciation kicked in. He enjoyed grilling and smoking meat and then eventually decided he wanted to experiment with beer. Milford’s newest obsession had been found. He poured himself into home brewing. So much so, that his hobby of home brewing turned into his profession. Milford now has 20 years’ experience, a degree in intensive brewing science from the American Brewers Guild in Vermont and has designed and built six other breweries. These days, he is running his own space, Birthright Brewing Company, on Main Street in Nazareth. It is a family-friendly spot where you can expect seasonal menu items paired with wood-fired pizzas as well as seasonal beers. At home with his family, pizza night is always a big hit. Birthright even sells dough that customers can take home and use to make their own pizza creations. Some homemade sauce and whatever may be in the fridge for the toppings is always a crowd pleaser. Here, Milford is sharing the recipe for Birthright’s famous pie, The Cure. But the best part of pizza is being creative with what you put on it—well, that, and the fact that it pairs really well with beer.

INGREDIENTS 10-ounce ball of pizza dough 2 ounces marinara sauce 2 ounces white sauce 3 ounces capicola 3 ounces prosciutto 3 ounces mozzarella 2 ounces shaved parmesan
INSTRUCTIONS Press and stretch the dough to about 12 inches using your knuckles and the fists of your hands. The dough will be sticky so be sure to use all-purpose flour on the work surface and on your hands. Combine the marinara sauce and the white sauce. Spread it out evenly to almost the edge of the dough. Place the cured meats on top and then the cheeses. Put the pizza in the oven at the highest temperature available on a preheated pizza stone or baking sheet. Remove from oven once the cheese looks like it is cooked through and to your desired doneness.

A fire put Yianni’s Taverna out of commission for several years, and the pandemic definitely delayed the restaurant’s return to full operation, but Yianni’s is back, as of January. You might not recognize the interior of the restaurant—but the exterior is still that telltale stark white. And the tradition that has defined this restaurant for more than 40 years is definitely still intact. Yianni’s is no stranger to reinvention and renaming. The restaurant began in 1975 as Gus’s Crossroads, named for Gus and Eleni Zannakis, who started the restaurant when daughter Maria and son John were young. The restaurant was renamed Yianni’s around 2008, right around when Gus was ready to retire. “We stepped in and gave it a muchneeded facelift and brought the restaurant back to a true Greek taverna. We needed a new name, so named it after Gus’s father, Yianni,” says Melissa Zannakis, who married into the family many years ago. “In Greek tradition, the first son’s name carries forward through the generations so we followed the same thought with renaming Gus’s to Yianni’s,” she
says. “John and I have a son named after John’s dad, as does Maria. Gus is a nickname for Constantine. I know it sounds confusing.” Long gone are the dark hardwood floors and the crisp white and Aegean blue that you see so often in Greek restaurants. The transformation, which was delayed, understandably, due to COVID-19, conveys a more Mediterranean feel that’s less exclusively Greek. “Yes, we are Greek, but people don’t know a lot about Greek food. They might know feta cheese or fresh seafood but it’s more than that,” says Zannakis, who runs the restaurant along with her sister-in-law Maria Manakos. “It’s
about fresh, simple ingredients that are well prepared.” And yes, seafood is part of that—Greece is surrounded by water on three sides. To that end, the place is full of muted ocean colors, blues and greens, and the whole place imparts a very open and bright feel. Family tradition is present in the décor, too; black-and-white family photos line part of one wall. When you walk in, right on the left-hand side (and visible from the bar) you’ll find the “wall of proverbs,” too, as a unique feature. “It’s the kind of stuff you grew up hearing your parents or grandparents say, and some of it gets lost in translation,” she says. One of the favorites? “Tell me who your friends are, and I’ll tell you who you are.”

“My kids grew up hearing that one all the time,” says Zannakis, laughing. Never fear, though. The dishes you may have come to know and love remain, and the menu still lists everything by its Greek name (you can figure out what you’re ordering pretty easily). Those favorites that people have loved, such as the octopus, are prepared simply with Greek oregano, lentils, red wine vinegar and of course extra virgin olive oil. Saganaki—cheese flambé, lit tableside—hasn’t gone anywhere, either. It’s kasseri cheese, which is made from sheep’s milk, typically with a little bit of goat’s milk, too. Other classics such as spanakopita (spinach pie) are available. People also love the Shrimp Zorba, with tomatoes, garlic, feta and pita. And it wouldn’t be a Greek restaurant without the well-known avgolemono, or egg-lemon drop chicken soup. Many of these items are available to go (along with the cocktails, too!), because of the pandemic. There’s also
family packages and half trays of comforting basics such as moussaka, roasted chicken, Greek salad, salmon, whole roasted branzino, pastitsio (kind of like Greek lasagna) and souvlaki handhelds. “That one is fun. You make your own souvlaki—we provide all the accompaniments,” says Zannakis. But if you want to come in and check the place out yourself, the bar is positioned toward the front of the restaurant now, and there’s a great menu full of happy hour small plates they’re calling flights. None of these dishes are available for takeout; they are small and they all come out at the same time. Ideally, the best idea is to go with a couple of friends (or even one other person, depending on your comfort level these days), order a whole mess of things, pass the plates around, take what you want and put it on your separate plate, and share. Keftedes (Greek meatballs) are super moist and flavorful, along with what they are calling tomato pie, but it’s really like nothing any resident of Pennsylvania (or anyone of Italian descent) would understand as tomato pie. It’s called bouyiourdi, but it’s tomatoes, caramelized onions and goat cheese, all baked and warm. Don’t miss the crispy Brussels sprouts, either, which are served with what executive chef Salah Ben Attou calls “the Greek version of Parm, a cheese called Kefalograviera,” and a garlic aioli. Don’t forget the skirt steak with Greek chimichurri and mashed potatoes, the baconwrapped dates… you’re starting
to see why these flights may be the best part of the menu, right? (For something a little sweet, the kasseri—that’s the awesome cheese that you can fry—is sliced with Asian pear and lavenderinfused honey and provides a light, floral counterpoint to the heavier, more savory small plates.) Along with the reopening is a renewed desire to bring many of the beverages of the Greek Islands to the Lehigh Valley dining public. Nikos Zissis, bar manager, has lived in Greece for many years, and is dedicated to educating people about spirits and flavors they may not be familiar with. For example, people may have heard of ouzo, an anise-
based liqueur not unlike, say, Italy’s grappa, but there’s more to Greek spirits than just that. The cocktail list includes a very popular drink called Lefko, which is basically a white Negroni. It’s so crystal clear, it looks like water, but doesn’t drink like it! There’s also the Paloma, made extra special with the imported Greek grapefruit soda from a company started by friends of Zissis’s back in Greece, called Three Cents. Many of the rest of the cocktails feature Greek spirits you may not be as familiar with, such as mastiha. The best way to describe it is that it is like Greek cuisine in spirit form—there’s herbal notes, there’s earthy notes, there’s a tinge of anise. “He is a true treasure of info and a perfectionist in his art. I am totally spoiled by his fabulous cocktails,” says Zannakis. Gus is still alive and well, but the family lost Eleni over the summer, so she wasn’t able to witness the renovation’s completion. “My sweet mother-in-law would have a shine in her eyes with the joy and pride to see their family restaurant full of life once again. She loved people, remembered everyone by name. She was a very one-of-a-kind lady,” says Zannakis. “She loved being with family and friends and creating an inviting space for all to gather. Melissa put it beautifully,” says Manakos.

What to Order If you’re into tradition, Yianni’s does well with the classics, such as whole fish, spanakopita and the famous egg drop soup, among others. They’re very well known for their octopus, too. But if you want a wider taste experience, go sit outside on the patio and order some flights. It’s impossible to be bored with the choices and you’ll really get a lovely sense of the range of Greek food. If you save room for dessert, there’s a Greek-style apple tart; imagine the flavors of apple pie put in a crispy and flaky phyllo cup, with vanilla ice cream. Lobster Roll 3RD & FERRY FISH MARKET On the hunt for the perfect lobster roll? Look no further than 3rd & Ferry Fish Market in Easton. “Our lobster roll is melt-in-your-mouth delicious,” says general manager Danya Kinsman. It’s one of the restaurant’s most popular offerings. (Kinsman noted that their fresh oysters delivered daily rank up there too!) So, what sets it apart from the rest? For one thing, it’s served warm. “We toss the lobster in warm butter and toast the croissant,” she says. “The flaky texture and sweetness of the croissant is perfect with the lobster.
