THE BACKYARD BAR COMPANY During the pandemic, pop-up bars were becoming the norm and inspiration struck for best friends Brittany Caprista and Candice Weaver. The Backyard Bar Company is a completely customizable, mobile pop-up horse-trailer bar, serving the Lehigh Valley and surrounding areas. They cater to events of all kinds, including weddings. “We had a groom that brewed his own beer and we were able to tap in on our trailer, which was really special for them,” the duo shares. VICE PRESIDENT FOR EQUITY AND COMMUNITY, LEHIGH UNIVERSITY
Donald Outing’s journey to becoming Vice President for Equity and Community at Lehigh University began at the U.S. Military Academy, West Point. He was there as a mathematics professor, but did so much more, working to increase representation and participation for women and minorities in science, technology, engineering and math. However, it wasn’t until a
controversial photo of 16 female African-American cadets raising a fist hit the internet that his mission was truly clear. “I found myself in the position of educating the Academy’s leadership on the meaning and significance of their actions,” Outing says. “All 16 women were cleared of any wrongdoing and graduated on time.” His impact led him to interview with John Simon, then Lehigh University president, in 2016, and after hearing his goal of providing greater access and opportunities to historically underrepresented
and disadvantaged populations, Outing knew Lehigh was where he needed to be. Though his day-to-day work of increasing, retaining and sustaining diversity, equity and inclusion can be difficult, knowing he is having an impact on someone’s life makes it worth it. “There are days that I wonder why I didn’t just stick to my mathematics research and teaching,” he says. “Then, one of those emails will hit my inbox at just the right time. It is a reminder of why I love doing this work.” Outing has found more than just a rewarding career in the
Valley. He met his future wife, Jessica, at Lehigh University. Outing is also a member of several boards and local organizations, including Valley Youth House, United Way of the Greater Lehigh Valley, Bethlehem NAACP, Boys and Girls Club of Bethlehem, Lehigh Valley Association of Independent Colleges, Community Action Council of Lehigh Valley, Bethlehem Area School District, Allentown School District and his golf club, The PinSeekers. “In one word: community. I have found a community in the Valley,” he says.

Tell us about the decision to open a second retail location in Easton! We have been a vendor at the Easton Farmers’ Market for a little over a year. We fell in love with the city on our first day at the market. The community here is unmatched. There is a very large Earth-conscious community here and we loved spending our Saturdays getting to chat with them about all things sustainability! local small business. Literally— my employees fight over who gets to go each week! There is so much to do in the city, and we feel as though Easton is constantly growing and changing to accommodate the people who live there. When it came time for a second location, we knew we wanted to be
part of a progressive city that valued change and community as much as we did, and, well, Easton was the obvious choice! How does the Easton location differ from the Emmaus store? Overall, the shops are pretty similar! Our product offerings are the same with only a few minor exceptions. The Easton store is definitely more refined and polished than our Emmaus shop. We were a start-up when we opened the Emmaus shop and didn’t have a super-clear brand identity. Things in that shop feel sort of pieced together. Three years later, we have a clearer identity, and I feel like the Easton shop really perfectly captures our aesthetic. Emmaus taught us what works and what doesn’t, so we took that into
consideration when fitting out the Easton store. Our layout is a bit different in Easton, which we think optimizes the customer experience. How has FD Market’s mission evolved and how has the business grown since launching at the end of 2019? Overall, our mission is the same: to help the Lehigh Valley live more mindfully and reduce their waste. The business has grown rapidly in the past three years; it would not be possible to sustain without my incredible team and community. How do you hope to see FD Market continuing to make an impact moving forward? I hope to be able to continue helping individuals make sustainable changes in their lives, but more and more,
I am realizing that other businesses need help in that department as well. Especially as a small business, it is difficult to know where to start in sourcing products that are sustainable and ethical. We’re out of alignment, according to Pender, when we’ve stopped allowing ourselves to follow the things that light us up with joy and fulfillment. “It tends to be when we’re focused on living life for others,” she says. People-pleasing, following some supposed-to plan we made in our 20s, fitting ourselves to an impersonal definition of success—sound familiar? Not only do we play it safe in this comfort zone, we’re programmed to think life and success has to be hard: no pain, no gain. “It doesn’t get to be easy,” Pender says. “It has to be a challenge.” She explains that we’ve been trained to believe we have to overwork ourselves to prove our worth, to be successful and for others to think we’re enough.

“What I like to do first is allow clients to see if there are any limiting beliefs at the forefront that are preventing them from expanding into their fullest expression,” Pender says. We form these beliefs often in childhood but also anytime we have a profound emotional experience that teaches us what’s safe. In Pender’s example, she was walking down a high school hallway in a new outfit, feeling sassy and radiant when a girl screamed vulgarities at her from a distance. Everyone’s head turned. Mortification flooded her. “I decided it’s not safe to express myself with the way I want to dress,” she recalls with the clarity of retrospect. “It’s not safe to shine and share myself.” That kind of belief doesn’t limit itself to wardrobe. It also had to be worked through to allow Pender to show up online, allow herself to be seen and empower herself teach her wisdom.
SHADOW WORK
The deep inner Shadow Work that Pender employs to excavate and address these subconscious beliefs can be messy. “This could be going back to a really traumatic experience,” she acknowledges. “We avoid it because our ego wants to keep us safe, brush it under the rug.” But in letting those old emotions be seen, heard and witnessed, we can ask deliberately: is that the truth or a story? We can choose to rewrite the narrative. “I’m worthy,” Pender decides. “It’s safe for me to shine.” See if you can start to notice ways you’re putting yourself through the wringer. A common example lies in the excessive work ethic that leads to so much guilt-stricken burnout. “Resting does not equal laziness,” Pender says. “Rest is vital.” Perhaps it started when you were a child and a parent demanded you make yourself useful somehow, or through years
in a culture celebrating those working themselves to the bone. If you now feel unworthiness and shame the second you lose sight of your to-do list, there’s an option to feel it, see it for what it is and let it pass. Let go of these stories and make room for your own.
I may not know what exactly I will be doing, or who with, but I know how I want to feel.
SIGNATURE SUCCESS
When your narrative changes to worthiness, an expansive sense of possibility clears the way to your dreams. What makes each of us happy will look and feel different for each individual, but Pender’s soulaligned sisterhood is pursuing happiness, playfulness, freedom and so much else. Try journaling on your own definition of success, and the dreams your soul is sending to you. Seek and follow what lights you up, and let the universe pave the way. “I may not know what exactly I will be doing, or who with,” Pender says, “but I know how I want to feel.” Stay loyal to that part of you. This approach doesn’t mean never feeling scared or intimidated by aspirations and growth. But when they’re truly your dreams and not somebody else’s, trust in your own intuition makes you brave.

SEEKING A SEASON OF STILLNESS
It was the perfect brisk fall day and I was out for a walk with my mentor. I had recently ended a long relationship and, despite it being the right decision, I was in a lot of pain. Life has a funny way of being full of experiences that make you feel a juxtaposition of emotions, doesn’t it? I felt guilty that I was both relieved and deeply heartbroken. It didn’t make sense to be this disappointed by a decision that I knew was the right one. My mentor patiently let me vent about the state of my heart and then gave me the single most transformative insight I have ever heard. He kindly said, “Michaela, until you see you right, you won’t choose right. You won’t choose the right partner, the right purpose or the right
friends. You need a season of stillness to embrace and discover you.” He could tell that my last few relationship choices had less to do with the other person and more to do about me. How we choose or whom we choose is rooted in how we see ourselves. The core of so many of the decisions that we make in our lives is rooted in our identity—discovering and embracing your identity is the foundation for success in any relationship. While I knew that my mentor was right, a season of “stillness” gave me the immediate internal fear of falling behind in life. I already felt like I was years behind my friends in the timeline department. I was in my 30s, single (again) and not where I thought I would be in my career. Despite my fears, I knew something needed to change—and I was the thing that needed to change.

Sometimes being single gets a bad rap. I think it’s because of our obsession with relationships and marriage. My generation grew up watching Cinderella, Belle, Sleeping Beauty and just about every female lead fall in love with her Prince Charming. Have you ever noticed that the story usually ends after the wedding? We rarely get a glimpse into the after of “happily-ever-after.” We grow up romanticizing falling in love and walking down the aisle but very little time truly understanding what it takes to create a healthy, thriving relationship that withstands the test of time. There isn’t a Relationship 101 in high school. There’s not a class in college on healthy identity development or Wholeness 101. (Although I’m determined to write a curriculum for one!)

FINDING PURE CONTENTMENT
Fast forward a couple of years later to what I call my couch and wine moment. It was a typical Friday night after I dropped my daughter off at her dad’s for the weekend. I walked into a quiet house, made a steak dinner, poured myself a glass of wine and sat down on the couch to enjoy every bite and every sip. As I sat there, I could feel a different sensation rising in my body and I thought, “What is this that I’m feeling?” I realized it was peace, it was pure contentment and it was joy. I genuinely loved who I became and was assuredly happy with my life. Now, here’s the catch, I still didn’t have everything the world tells you that you need to be happy. I was at the same job and Sahara-Desert single, but your girl was so at peace. How? Our world tells us that being content isn’t a good thing, that we always need to be striving for what’s next, but there’s a difference between being complacent and being content. The kind of contentment I’m speaking of allows you to fully love the journey by fully loving the here and now. Being discontented is a habit. If you’re discontented without it, you’ll be discontented with it. That’s why learning to embrace and enjoy your singleness is essential to the foundation of a successful relationship. From that couch and wine moment, a desire set in my heart to teach people how to redefine the season of singleness.

1. THERE IS POWER IN A PAUSE.
Whenever you break something in your body, one of the first things the doctor will do is put a cast on it. Why? Because in order to restore the bone, it needs to be still long enough for it to heal. The biggest mistake I see people make is rushing into a new relationship before they’ve healed from the last one. We’re so afraid to be alone that it’s more comfortable to jump into something new and exciting as a way of distracting ourselves from the hurt and pain we really need to address. It’s one of the reasons that second marriages and third marriages have even higher divorce

rates than first marriages. We rush. We don’t pause to allow for the work to be done to heal the break. We repeat what we don’t repair.
2. ADDRESS THE INVISIBLE SCRIPTS!
We all have what I like to call invisible scripts that run our lives without us even knowing that they’re there. They are often written at a young age or are passed down through generations. An invisible script could sound like: “It’s better to be married than it is to be single.” Maybe you’re used to hearing things like: “Did you hear so-and-so just got engaged? She’s 27 and getting her master’s at the same time!” It’s important to call out the scripts that are making you feel less than or somehow behind in life. The fastest way to do this is to pay attention to your thoughts. Put a note in your phone, and when you catch yourself thinking a disempowering thought, write it down. By writing it down or typing it into your phone, you create space between you and that thought, which then allows you to say, “Is this actually true?”
3. DO THE WORK.
Okay, so not the most glamorous bullet, but it’s the cold, hard, beautiful truth. When I first started studying divorce (I know it’s an odd thing to study), I noticed a large pattern. Divorce is often inevitable when we prioritize finding a spouse before finding ourselves. We’re told through movies, social media and culture that finding your spouse is of utmost importance—but we’re not really taught how to make relationships last. We focus more on getting down the aisle than creating a healthy, thriving relationship. So, how do you do that? First, by doing the work on you. Learn about yourself, invest in therapy, hire the life coach, take the course, try something new, discover you by prioritizing you. A healthy relationship requires two healthy people. And guess what? You can only control your side of the equation.

Female CEOs shouldn't be a rarity in business, but that's (still) the world we're living in. According to the World Economic Forum, as of March of this year, only 15 percent of Fortune 500 company heads are women. But that didn't stop two local visionaries (and Parkland High School grads) from doing things their way and taking a seat at the head of the table.

A restaurant that specializes in toast? Maybe you have questions. The very first Toastique patrons certainly did. Founder Brianna Keefe recalls them eyeing her first shop in Washington, D.C., a bit incredulously. But more often than not, they left satiated and spouting entreaties for Keefe to open a Toastique location near them. Some may be getting their wish. (Toastique does offer more than toast, by the way. More on that in a moment.) Keefe long has been a proponent of physical fitness as well as healthy eating habits. She was on the dive team at Parkland High School and excelled at cheerleading as well. “I was super busy,” Keefe says. “Smoothies and smoothie bowls were always my go-to.” She continued with cheerleading on the collegiate level at James Madison University in Virginia. That’s also when she began to experiment with different gourmet toast recipes, piling on various types of produce and proteins like avocado and chicken. “It filled me up but I was never overstuffed. It kept me powered through the day,” Keefe says. Originally Keefe was studying to be a dietician, but when she decided the many chemistry classes the major
required weren’t a good fit, a guidance counselor suggested she try something else. Keefe switched her focus to hospitality management, and, following her graduation from JMU in 2016, she found work at a hotel in Washington, D.C., that catered high-profile events. Keefe was sometimes working up to 80 hours a week. “I was really burned out,” she recalls. “That’s what gave me the extra push to do something on my own. If I was going to work that hard, I wanted it to be for myself.” She was walking in D.C.’s waterfront Wharf neighborhood when she saw an open storefront. But convincing the building’s broker to take a chance on her idea for a juice bar and gourmet toast fast-casual eatery took some effort. “I spent the next 48 hours typing up this 27-page business plan.” Keefe says. It worked. Keefe’s boyfriend, Kyle Izett, who was working in the construction industry, helped her get the very first Toastique up and running in just 36 days. That was July of 2018—the summertime tourist season in the capital. Keefe says foot traffic was steady from the
get-go: “It really took off from there, and it’s been crazy ever since, in the best way.” Curious customers figured out quickly that Keefe’s handcrafted toast creations really were as tasty and filling as any meal. Power bowls, all-natural smoothies and cold-pressed juices were also on the menu. Keefe says most of the things Toastique sells are made from scratch on site, using locally sourced products whenever possible. For the first six months, Keefe says she worked every day the restaurant was open, from the time she was welcoming the first customer until she was saying goodbye to the last. It was a grueling schedule, but Keefe had found her passion. Once she was certain that all was well at the Wharf location, the next obvious step for Toastique was franchising. A second location was added in Alexandria, Virginia, and then two more were established in D.C. More recent openings in Stone Harbor, New Jersey, and Colorado bring the total number of Toastiques in the U.S. to seven. But there are plans to add even more. Many more; as in
52 new locations over the next several years. “It really just kind of exploded,” Keefe says. “We’re super excited about it.” And yes, there is a Toastique planned for Keefe’s old stomping grounds. That location is expected to open in the fall on East Third Street on Bethlehem’s Southside, not far from Lehigh University. It will be a special moment for Keefe, whose parents still live in the Lehigh Valley. She admits she doesn’t get home as often as she’d like; instead, her parents often come to see her in Washington, D.C., where her brother, Sean Keefe, also resides in the surrounding area. Sean Keefe is the company’s director of operations. And Kyle Izett, who was so instrumental in getting that very first Toastique off the ground, is COO, CFO and director of construction. Of her parents, Keefe says: “They’re
both extremely supportive and try to come to any opening we have, any event that we have.” She admits her dad was initially leery (as most protective fathers probably would be) when she told him she was quitting her dependable, full-time job to take a chance on an idea for a new kind of restaurant centered around toast. But it would be difficult now for anyone to convince Keefe she was wrong to follow her gut. Toastique successfully weathered the COVID pandemic that proved to be the death knell for restaurants across the U.S. Recently, Keefe herself was included by Forbes magazine on its annual “30 Under 30” list in the food and drink category. Keefe says she was so blown away that she cried when she heard the news. “It’s a very humbling honor,” she says.

Build it up or tear it apart: It seems Jessica Young is doing one or the other these days, with the former dominating her professional world, and the latter front and center in her personal life. The thing being torn apart is the historic townhome she’s renovating in Allentown with her boyfriend (a “pandemic sweetheart,” she calls him), and in the “build-itup” department is BUBBLE, the online grocery marketplace for health foods founded by Young that is quickly becoming an invaluable partner in the clean eating movement for both companies and consumers. Young grew up in the Lehigh Valley and is a Parkland High School grad. Her family has deep roots in the area; Young’s Medical Equipment and Young Medical Spa are among their businesses. At first it seemed Jessica would follow a similar path, but, as she progressed in her studies of biochemistry at Moravian College (now University), she began to realize that she needed to make a change. “I wasn’t really happy,” Young recalls. “Something felt really off.” She was 20 years old when she decided to put the brakes on traditional academia and move to New York City to enroll in culinary school. The career

change paid off. Young would go on to work in various fine dining establishments in the city, and as a private chef for some A-list celebrities. Turns out, food was definitely Young’s passion, but toiling away in the back of a kitchen was not. The start-up scene intrigued her. She eventually joined a meal kit company that went up and under quickly before landing at the plant-based meal delivery service Daily Harvest, as the director of product and operations. Young is proud of the work she did there—“That company is now a $1.2-billion company,” she says—but in 2018, she decided to branch out on her own, and BUBBLE was born. Vice.com calls BUBBLE an “online health food paradise”; Young describes it as Etsy for the makers of real foods: “We’re building a platform

for health food companies to ship direct to consumer.” Each product goes through a stringent approval process where natural is key. Products that contain additives like refined or artificial sweeteners, preservatives, growth hormones or hydrogenated oils will not earn the BUBBLE seal of approval. But passing the label test is just half the battle—everything on bubblegoods.com must get the thumbs-up from the team’s taste testers. And of course, all products must be prepared in professional kitchens that are food-safe certified. “There’s a high level of curation,” Young says. “The bar is high but the process is fast.” The end result is true transparency about what consumers are getting when they trust BUBBLE to help stock their pantries.
Young, who’s in her early 30s, is aware that she’s somewhat of an anomaly—a young female CEO at the helm of a start-up. She describes trying to operate successfully in that world as an “uphill battle.” So, it’s probably not surprising then that she would strive to cultivate a culture of female empowerment around her. According to bubblegoods. com, 64 percent of the brands on the platform are founded by women. Recently, BUBBLE added its first female engineer to its tech team. “That was a big goal for us, to have a diverse work culture,” says Young. Also, one of BUBBLE’s investors happens to be supermodel Karlie Kloss, who runs the nonprofit, STEAM-driven Kode with Klossy, which offers a free training program for girls and young women who are interested in computer coding. The pandemic was a time of transition for Young. She came back to the Lehigh Valley to care for her grandmother and ended up sticking around after she met a special someone—that “pandemic sweetheart.” They’re documenting the extensive renovations they’re doing to their 1855 townhouse on Instagram (@allentownhouse).
Young works from home on some days and commutes to BUBBLE’s New York City office on others. She’s trying to keep up with a surge that began in the early weeks of the pandemic. “We had customers and brands rush on to the platform,” she says. Even as stay-at-home restrictions eased and in-person shopping was possible again, it became abundantly clear that the need for an online space bringing innovative food makers to the attention of health-conscious consumers wasn’t going away. “People want the experience of the farmers market and the cool new brand and they want it delivered,” says Young. “They want the ease of having it delivered from their phone.” While BUBBLE started small with just a handful of brands, that number had swelled to about 675 as of late May, and Young says they’re aiming to approach the 1,000 mark by the end of the year. Another objective is tripling BUBBLE’s core seven-person team, while also upping the ante in marketing and fundraising. “We have lofty goals, so the pressure is on at the current moment,” Young says. Most people think nothing of flashing a driver’s license or ID card when buying a bottle of wine or applying for a new job. But the mundane can quickly turn malicious for a transgender person. “If your ID doesn’t match your gender presentation, you are automatically outed as a transgender person, and transgender people are subject to a rate of violence six times the national average,” says Corinne Goodwin, founder and president of the Eastern PA Trans Equity Project (EPTEP). “Literally you can be assaulted, attacked and even killed by having to out yourself.” Founded in 2019, EPTEP (patransequity.org) is a nonprofit organization working tirelessly to support and empower transgender people across a 16-county region in Eastern Pennsylvania. “Our goal is to help them do more than just survive. We want them to thrive,” Goodwin says. The services offered include mentorship, financial assistance and support groups. Goodwin says EPTEP has also compiled the largest list in the state of trans-affirming resources, everything from doctors and lawyers to places to get your nails done. Although advocacy work done on behalf of any group that is often underrepresented or marginalized is often exhausting and frustrating, there are tangible signs of progress for EPTEP. In March, both Allentown and Bethlehem observed International Transgender Day of Visibility by raising the transgender flag outside their City Hall—a first for both cities.
“Trans is not the only thing that defines me...” Goodwin says it’s important to remember that while transgender is an adjective, it’s not the only adjective when it comes to her or anyone else in the transgender community. “I’m a business owner, I’m a cook, I’m a parent, I’m a spouse, I’m a homeowner,” she says. “Trans is not the only thing that defines me and it’s not the only thing that defines other transgender people.” Goodwin owns and operates a consulting business that develops training programs for companies around the world. She spends her free time with her family, on the bike trail or in the kitchen. “Cooking is sort of my therapy,” she says.

It becomes obvious that run-of-the-mill press conferences are a thing of the past when the host picks up a sledgehammer and goes to town on an old concrete bench. That was the scene in April as Allentown Mayor Matt Tuerk marked the beginning of a new streetscape project. And it’s one example of how things are being done a little differently at City Hall these days, says Allentown Communications Manager Genesis Ortega.
“It’s awesome to be part of history in the making.” Technically, Allentown isn’t Ortega’s hometown—that distinction belongs to Santo Domingo in the Dominican Republic. She moved to the Queen City with her family when she was nine months old. “I basically tell people I was born and raised in Allentown because I came here when I was so young,” Ortega says. A graduate of Allentown Central Catholic High School and Moravian College (now University), Ortega worked in community outreach, politics and journalism before Tuerk came calling. “It was an opportunity I couldn’t say no to,” Ortega says. “It was everything I wanted to do.” She’s proud to be part of a vibrant new administration that values transparency, diversity and inclusivity. “City Hall is open for everyone,” says Ortega. Over half of Allentown’s population is Hispanic, so it makes sense that its communications manager would be fluent in both English and Spanish. But as Ortega settled into the role, she realized that language is only one part of bridging the communications gap. When it comes to reaching all residents, she says, “It’s not a typical press release, it’s not just focusing in on one style of communication. It’s using every method we have.” Ortega is married with a young son, and enjoys taking trips back to the Dominican Republic, where the majority of her extended family still resides. But Allentown, she says, is home, and she’s excited to see what she and her fellow gogetters in the mayor’s office come up with next. “It’s awesome to be part of history in the making,” Ortega says.

OWNER & YOGA INSTRUCTOR AT THE LOVELY LITTLE LOTUS Yoga can be more than just exercise; in the right setting it can also double as therapy, and Larissa Noto has made it her mission to make that mindfulness and healing accessible to anyone who seeks it. She’s worked with babies, octogenarians and everyone in between, a client base that spans all skill levels and physical abilities. “I want to provide them and empower them with things they can do, not what they can’t do,” Noto says. Even before she decided to go all-in on yoga, it was her go-to escape from the rigors of demanding careers in education, law and corporate America. “Yoga was my solace,” says Noto. She had taken her first class to fulfill a requirement while a student at Muhlenberg College. Over the years she came to appreciate it more and more as a balm for her body and soul. When she decided to step into the instructor role, she began slowly, offering classes for moms at her home. Since then, she’s amassed hundreds of hours of training in various yoga modalities, with a specialty in trauma-informed movement, which, as Noto explains, has a therapeutic lens to it. “It’s movement that is made so it doesn’t trigger folks who might be experiencing a myriad of things at any given time.” Poses that could be triggering to certain populations—such as veterans suffering from PTSD, or survivors of domestic abuse—are eliminated. Noto, a Bethlehem native, has worked with yoga studios across the Lehigh Valley. She’s also a teacher, trainer and content contributor with ChildLight Education Company, and Pratyush Sinha Foundation. And, through The Lovely Little Lotus (thelovelylittlelotus.com), she offers her own classes and training opportunities. “I love being able to provide a form of movement that’s accessible, but it’s also healing to the folks who come and find me,” says Noto, who is also a wife, mother to three boys and a lover of travel, photography, gardening and reading.
You name it, and Tiffany Sondergaard can sell it, promote it or plan it. She hit the ground running right out of college, working in public relations in New York City for big name brands like Bath and Body Works, Liz Claiborne and Reebok. Later, the Gary, Indiana, native moved to the Lehigh Valley to give her growing family a little more elbow room and learned the ins and outs of event planning. In 2019, she decided the time had come to branch out on her own, and ts PR & Event Planning (tspr-eventplanning.com) was born. She describes it as public relations with a purpose. “I like to align myself with organizations that are going to help change lives for people, help us all do better,” Sondergaard says. “It’s turned into my company mission. I believe in helping our community.”

“If you can help, you do.” Among the groups in Sondergaard’s portfolio is the nonprofit Business Women Networking Involving Charity and Education, also known as BW Nice, which was founded in New Jersey in 2009 and has expanded to include several chapters, including the Lehigh Valley. It provides resources and support to empower women with networking experience and professional skills, while championing the fight against domestic violence. “It’s a great support system,” says Sondergaard. “We support all businesses, including small businesses and female-owned businesses. We all make sure to support each other’s businesses as well as personally.” Sondergaard is the planning director for one of the group’s signature events, the Red Shoe Luncheon and Fashion Show. It will be held at Northampton Country Club in October. Even when she’s not technically on the clock, Sondergaard says she’s often still in “promotion” mode, volunteering in the community to help lift up local causes. Another client, Brooke Mitman, says she’s seen Sondergaard sacrifice personal and family time to help businesses, ministries and missions take it to the next level. “If you can help, you do,” Sondergaard says.

Difficult but necessary work is happening every day at Bloom (bloomforwomen org), a Lehigh Valley nonprofit that offers a path forward for women survivors of sex trafficking. But there are good days, too, such as the day in May when one of those women became a graduate of Northampton Community College. She’s one of Bloom’s many success stories. “These women are going to be game changers for how the Valley ends this injustice,” says Bloom CEO Carol Andersen. Andersen oversees an organization that maintains four homes for these survivors as well as two businesses (My Sister’s Closet, a boutique in Bethlehem Township; and Bloom DIY, a creative studio in Bangor) that offer them a safe space to work during the recovery process. A volunteer with Bloom describes Andersen as a tireless advocate and a breath of fresh air to all who meet her. But Andersen is quick to commend the generosity of the many groups and people in the Lehigh Valley who have helped Bloom flourish, little by little. “I think that’s how great work gets done,” Andersen says. “It’s just one small step in the right direction.” Andersen is a native of Upper Mount Bethel. She and her husband have three sons. She says, unlike the women who come to Bloom, she’s had doors opened for her; she’s had a seat at the table. Now, she wants to offer the same opportunities to the women of Bloom. It’s not always easy, of course, but she credits an unusually positive outlook on life with helping her get through the hard days. “You hear stories every single day of hardship, incredible trauma and violence,” she says. “But what I also see is hope and a resilience and a strength in women who have seen the underside of bridges and alleys, places I’ve never walked. When I see strength come out of their sliver of hope, that maybe tomorrow could be better, that’s what inspires me to do my work every day.”

Hairitage Beauty Salon is an all-inclusive salon with the skills to handle all textures of hair, including clients with alopecia. Felicia is a mentor to many looking to embark on a career in beauty while offering full benefits to stylists who join her team. Owner Felicia Mo’Nique brings her 20+ years of experience as a stylist to The Hairitage Beauty Salon. She initially conceived this passion project in 2013, noticing that there were no all-inclusive hair salons in the area skilled to handle the many textures of hair that Black people possess. It is still in full operation and is the first Black-owned and longest-standing salon in Phillipsburg. In June of 2020, The Hairitage Beauty Salon opened a second location in Whitehall—the first Black-owned and all-inclusive hair salon in the Lehigh Valley Mall. The COVID-19 pandemic caused heavy delays, replanning and renovations at both salon locations for social distancing. Felicia pushed forward against all odds, increasing demand even more. The salon’s vision is to help stylists make a career choice in cosmetology and not see it as a secondary income. There’s something very different about the latest sports bar and restaurant to hit the Lehigh Valley. Sports and Social Allentown is sprawling and a little classy; it still bears some design elements of its previous incarnation as The Hamilton Kitchen. The technology running the entertainment is state-of-theart, the hospitality is friendly and the scratch-made fare on the menu caters to all different kinds of clientele. There are ample gaming opportunities, and you can watch the game or listen to live entertainment from anywhere in the restaurant, whether it’s one of the three bar areas or the outdoor dog-friendly patio complete with a fire pit. In short, your every sportwatching dream can come true at Sports and Social. This restaurant concept is part of a larger company, but it’s not a chain per se. Its parent company is Live! Dining and Entertainment, and it opens restaurants and entertainment venues in urban locations that are undergoing revitalization. (They also operate Xfinity Live! at the Philadelphia Sports Complex, among other sports and entertainment spots.) Allentown is the second spot for this restaurant concept, and the city fits squarely into the company’s profile, as Allentown is an unbelievable 10 years into its urban renewal efforts. (Manager Clint Malek says that by the end of 2022, the city will have added 2,000 residents downtown in the past 10 years.) The menu isn’t necessarily universal; instead, the company understands that catering to the local scene makes the most sense for so many reasons. The menus can be
customized based on location. In Allentown, of course you’ll find things like a cheesesteak (and cheesesteak egg rolls, too, if you don’t want the whole sandwich). You’ll also find beers from neighbors such as Brü Daddy’s Brewing Company and Fegley’s Brew Works, and Philly spirits such as Stateside Vodka and Bluecoat Gin. “The Lehigh Valley is food and craft-cocktails driven, and you don’t always find those things in sports bars,” says Malek. “They’ve elevated the concept of a sports bar with scratch-made food that’s approachable and affordable. And we’re always developing recipes, too.” (More on the menu in a minute.) The most obvious and immediate difference, as far as sports bars go, is the
atmosphere. The sports programming is operated from a mind-blowing command center that rivals anything they use on ESPN (not joking, ask them to show you—the kids will love it). You can watch any major sports event airing from almost anywhere in the world, from baseball and golf and football to the World Cup, for example. Home teams aren’t forgotten, either—how often do you get to see the IronPigs or the Phantoms on television at a bar? The entire back wall of the restaurant is one huge screen (25 feet!) or two separate screens, depending on programming needs. It doesn’t seem like it’d be complete without the ability to play games while you watch the game: try your hand

at pinball, old-school arcade games (including tabletop Pac-Man), foosball, basketball, Skee-Ball and, of course, beer pong. Sports and Social, however, is different because what you order is going to be scratch-made, which is a distinguishing factor among other bars and restaurants of its ilk. In other words, we aren’t looking at a menu full of frozen and/or fried foods. Instead, you’ve got house-made wings that go through a process of breading and flash-frying (and come in several different styles, including the sweet and spicy bee sting). You’re going to find a fair amount of food with heat, too, whether
it’s the popper burger (with jalapeño cream cheese), the Nashville hot chicken sandwich (not to be trifled with!) or the aforementioned wings. And you’ve got handhelds such as burgers, a cheesesteak with shaved ribeye, a Beyond burger, salmon burger and chicken sandwich with avocado. The bowls portion of the menu includes salads but also a Korean bowl with grilled chicken, julienned carrots, red cabbage, cucumber, romaine, green onions, gochujang and charred broccoli over steamed rice. They offer a few entrées, which include fish and chips, pan-seared mahi-mahi, steak and shrimp and the braised short rib dish (over cauliflower rice). Tacos are served in an unusual manner—they’re double wrapped, which is not so unusual these days, with a corn shell on the inside, a flour on the outside and a layer of guacamole in between the

shells. This move guarantees that every bite contains guacamole, and it also helps to easily seal the two shells together. Your tacos can come with Korean short ribs, chicken, bacon and ranch or the mahi with fried, grilled or blackened mahi-mahi with pico de gallo and red cabbage slaw. The nachos receive a smart presentation, too—rather than stacked high, which invariably results in soggy bites now and then, they’re spread out, which also facilitates easy sharing. It’s hard to go wrong with whatever you select, because it’ll be hand crafted. “About 90 percent of what we make here, we make in-house,” says executive chef John Burke. (Note: Most restaurants are outsourcing bread.) Many restaurants like to boast that they have something for everyone who comes through the door, but in the case of Sports and Social, it seems to be true, if the shifting clientele is any indication. Malek notes that the crowd changes dramatically over the course of several hours. They’ve only been open since late April, but the happy hour crowd is finding them, followed by families who enjoy the extensive dinner options (complete with a kids’ menu). The post-dinner crowd shows up after that, and it’s usually younger people, many within walking distance of the restaurant. And then, especially on the weekends, there’s a late-night crowd that shows up after

10 o’clock to enjoy the live music that’s pumped throughout the restaurant, both inside and outside. (Sports and Social caters to that crowd, too, by staying open until 2 a.m.) And if you’re having a great time on the weekend, late into the night, and want to come back in the morning, you’re in luck. Saturday features a chill vibe with an acoustic brunch, whereas Sunday keeps the previous night’s festivities rolling with more of a party feel. After you’ve eaten all the things, watched the game, played some games and listened to some music, what’s left? Dessert. Order the chocolate cake and make sure you’ve got plenty of room—or plenty of folks to share it with, as you receive two hefty slices. Like so much at Sports and Social, the cake serving, too, is larger than life.

Meredith Wong grew up in a home where her mom always baked. In fact, her mother is such a talented baker that she won a Betty Crocker baking award. Cooking was also always a huge part of her childhood, as her family has put together two cookbooks comprised of cherished family recipes. “I was always helping my mom in the kitchen growing up,” says Wong. “What kid doesn’t want to lick the beaters after baking?” And her favorite food memory was with her mom, baking sour cream cookies, a special recipe that has spanned generations in her family. Her mom would cut out each cookie while Wong would slyly steal the scraps to eat. “It is one of my most favorite memories with my mom in the kitchen,” she says. Wong didn’t have a traditional start in the culinary industry. She started her baking business, Sugar Mere, after attending a baby shower and being inspired by the handmade cookies served there. “I remember thinking, I could do this!” Determined, she started baking much more regularly. “My friends and I would watch The Great British Bake Off each week, and I would bake my way through it—baking what contestants had whipped up the previous week and sharing it with my friends.” Wong taught herself how to frost cookies and was inspired creatively by almost everything. “My mind never turns off and I am always thinking about flavor combinations and new, fun and delicious cookies to create.” She picked the name Sugar Mere because “mere” means mama and she is the busy mother of three kids. In 2020,
she enrolled in pastry school, earning herself a degree and the official title of chef. Wong is so grateful for her customer base and all of the opportunities that have been presented because she followed her dream. If you want to order some sweet treats, reach out to her on social. INGREDIENTS COOKIES 12 Tbsp. unsalted butter, melted ½ cup granulated sugar ¾ cup light brown sugar 1 egg yolk 1 egg ½ Tbsp. vanilla extract or paste 1 ¾ cups all-purpose flour 1 tsp. baking soda ½ tsp. sea salt 1 cup graham cracker crumbs (about 9 sheets processed in a food processor)
FROSTING 4 oz. cream cheese, softened 4 Tbsp. unsalted butter, softened 2 cups powdered sugar, sifted ½ tsp. salt (optional) 1 tsp. vanilla extract or paste
INSTRUCTIONS COOKIES Melt butter in a microwavesafe bowl and let cool to room temperature (about five minutes). Once cooled, pour into mixing bowl and add sugars, mixing well until incorporated and smooth. Add in egg, egg yolk and vanilla until smooth.
In a separate bowl add all of your dry ingredients and lightly mix before adding to wet ingredients. Mix until just combined—avoid overmixing. For uniform cookies, use a scoop or weigh out into even balls in your desired size (Meredith likes a big cookie, so she uses a ¼-cup scoop). Place on plate and refrigerate for 30 minutes for a thicker cookie or bake from there for a thinner one. Preheat oven to 325 degrees and bake for 10–14 minutes or until edges are slightly browned. Once removed from the oven, you can use a glass or large cookie cutter in a
circular motion around the cookie to make it an even and perfect circle for that bakery-style touch. Allow cookies to cool completely before icing.
FROSTING In a stand mixer fitted with the whisk attachment, beat the softened cream cheese and butter until creamy (about two minutes on medium high). Add the sifted powdered sugar, salt and vanilla and beat until frosting is soft and creamy. Transfer to a piping bag and swirl around the cooled cookie.
Garnish with some crushed or chopped graham crackers or Honey Graham bears and then drizzle your favorite honey on top. Meredith likes to use Mike’s Hot Honey for an extra punch of flavor. Her final step? “Eat it and revel in the glory of your newfound favorite cookie recipe!”

This summer, try the Cholado at Little Cali in Bethlehem. “Our Cholado is our bestseller,” says owner Heidy Murillo, who calls it an iconic beverage from her native Cali, Colombia. She says the same is true for their Salpicon, a new seasonal offering, which can be made with vanilla ice cream making it a SalpiHelado. “It is impossible to walk the streets of Cali without running into a vendor selling these refreshing drinks,” says Murillo, calling them heaven in a cup and the perfect thing to quench one’s thirst on an especially hot day. “Growing up in Cali, Colombia, street food vendors were a part of our daily lives,” she says. “We looked forward to having a treat with friends and relatives in the evening at our favorite stands.” When Murillo moved to the United States, she missed the flavors she grew up with and decided to bring a bit of Cali to the Valley to share. In Cali, Murillo says the Cholado and Salpicon are made using a lot of tropical fruits like lulo, maracuya, sour sop and papaya, but here, she makes both with seasonal fresh fruit, natural fruit syrup and sweetened condensed milk. If you’re feeling hungry, Murillo recommends ordering either with a buttery cheese arepa.
