THE LOCAL EATERY
What was once known at Easton’s Simon Silk Mill as Mario’s Italian Eatery is now The Local Eatery. “When I took full control of operations, we decided to rebrand with the concept of ‘modern Italian dishes with a fusion flair,’” says owner David Siwy. “Half of our menu is Italian, while the other is a blend of Americanstyle dishes and dishes from other cultures.” Siwy hopes to focus on local schools and historic sites in their rebranding, reflected in the eatery’s theme and ambiance. Executive Chef Salvatore Cardamuro will continue to make customer favorites like the 49%/51% Burger (49 percent beef, 51 percent bacon) and the Margherita Pizza, but there will also be new items added to the menu, such as the Butternut Squash Pizza and the Nachos Es Mio. “We will still be working in conjunction with County Seat to provide food for their patrons,” says Siwy. They are excited to roll out a catering menu for any occasion, customizable to fit all needs.

What started for Bryanna Tomkins as just making candles in her studio apartment eventually evolved to selling at local fairs and festivals. Quickly after, she set up shop at the Lehigh Valley Mall, where she has now opened her first official store location. “We offer a wide variety of soy candles, home products, body, skin and hair cosmetics,” says Tomkins. “[Our mission is] to bring handmade, fresh-daily home, body and cosmetics to the public.” She calls the shop’s overall vibe clean, friendly and inviting. “Plus, we always smell good since we make everything in house!”

COMMUNITY VIBE POWER YOGA
Vibe Power Yoga celebrated its opening in October, offering a safe and noncompetitive place where locals can discover and explore their own light. The studio hosts heated and non-heated classes, with a current schedule offering power yoga, intro to power, spin and yoga, along with options for babies, toddlers, kids and teens. Vibe Power Yoga also holds a weekly donation-only class where all proceeds benefit a local nonprofit organization or charity, and the individuals can attend a meaningful yoga class at a cost they are able to afford. “We wholeheartedly believe in community over competition and welcome anyone in the community to join us,” says owner Gabrielle Jackson. “We truly believe that your thoughts create your reality, which is why we invite you to fill up your cup during class with positive thoughts and intentions with hopes you leave the studio with good vibes.”

Founder of FD Market, Jacquelyn Bassett says building her own business has granted her the freedom to work on her own terms and do something that is truly meaningful to her.
“Founding my own business allowed me to cultivate the healthy and collaborative workplace environment I always dreamed of,” she says.
Bassett says she never had plans of attending college. “I felt as though school squashed my creativity and working a 9–5 felt suffocating,” she explains. Bassett did not know what kind of business she wanted to build and took a gap year after college spending time exploring national parks. “I began living more sustainably to protect the planet that I love to explore. I quickly realized that there was a huge lack in sustainable resources in the Lehigh Valley,” she says. “So, I created the shopping experience I had been looking for myself. I combined my passion for our planet and my desire to be in control of my own future, and FD Market was born.”
She launched the business just before the start of the global pandemic, something she says taught her many lessons—the biggest one being adaptability as an entrepreneur. “I have also
learned to accept and even love risk,” says Bassett. “It’s something that we are taught to avoid, but nothing truly incredible ever comes from playing it safe.”
Something Bassett is really proud of is not cutting corners on her way to building a truly ethical and sustainable business. “It would be so much easier and cheaper,” she says. “I refuse to sacrifice on the things that mean the most to me. I am really proud of how we have been able to keep people and planet first in everything we do.”
Her advice to aspiring entrepreneurs is to ignore the negativity disguised as advice. “Everyone loves to discredit young people. In my opinion, they are using their own insecurity and fear to try and scare you out of doing what they wish they were brave enough to,” she shares. “I had so many people tell me that there was no chance I could be
successful without a college degree. I’m really glad I didn’t let them scare me into settling for a future I wasn’t passionate about.”
FD Market recently launched a wholesale portion of the business, providing other retailers with sustainable and ethical products. Bassett hopes to scale this in order to get more responsibly made local products into shops that share the brand’s values. “I am also hoping to start a resource for others looking to open a refill store. It’s a newer concept and there was no one to coach me through starting this,” she says. “Being able to consult with someone who had been where I was would have been invaluable, so I am hoping that I can be that for others.”

Tell us about Isasuma’s mission!
Isasuma’s mission is to support and empower small at-risk artisan communities. We travel and work directly with a small group of entrepreneur indigenous artisans and small shops in Latin America. It is heritage, lifestyle and economic fulfillment for these communities.
What was the journey that led you to opening the shop?
It all started about 10 years ago when founder Manuel Fresneda started to bring back small batches of handcrafted bags, shoes, earrings, etc. He invited me to help him set up a tent here and there during local festivals and fairs year after year.
In 2019, Curt Weihz partnered with Manuel and as a team we decided to grow not just locally but also as an e-commerce store. After almost two years of me running the business from my attic, great turnouts at Easton Winter Village and thousands of sales and five-star reviews on Etsy, we decided to open our first brick-and-mortar in Downtown Easton in February of 2022. In late October we relocated to a great new location, which is much more accessible and easier to get to.
Today, the skill of crocheting has become the main source of income for the Wayuu community.
Describe your variety of offerings.
We carry world-renowned Wayuu mochila bags and accessories, handmade mola shoes, earrings, hammocks, beaded and woven bracelets, necklaces, leather bags and wallets, purses and more.
Tell us about your Wayuu bags! Wayuu bags are woven by the Wayuu women from Colombia. They learn how to weave at a very early age. The Wayuu are descendants of the Caribs and Arawak peoples, largely known for their strong weaving tradition.
It is said that the Wayuu learned to weave thanks to a mythical spider called Walekeru. This spider would create magical pieces using thread from her mouth. She is the one that taught all Wayuu women to crochet, crocheting hammocks to sleep in, belts for men, shoes, bracelets and Wayuu bags of all different sizes and crochet methods to be used for different purposes. Today, the skill of crocheting has become the main source of income for the Wayuu community.
The creation and meaning of each bag is a tradition that has been passed through many generations in the Wayuu community. The symbolism
behind their crocheted patterns and forms, along with the intentions of each artisan while making each bag, make these mochilas a wearable work of art.
What’s the overall vibe of the shop?
It’s super colorful, bright, full of texture and an experience hard to describe. Most people would say there is so much to see it is hard to decide where to start.
What is something that would make the perfect gift this holiday season?
A handcrafted, ethically sourced, one-of-a-kind bag for sure!
Tell us about the business’s goals for the future.
We want to expand our product selection and bring more accessories from other countries and communities, such as handcrafted cacao products and clothing. We are also looking into expanding our handmade shoes collections.

Color Analysis
Through a long career in apparel, House of Colour consultant Jillian Daubenspeck has seen countless women bring fun colors into the dressing room only to settle on “safe” purchases of black or gray. Now she removes all doubt around what you can pull off, helping clients find the best colors to accentuate their natural beauty in her Allentown studio. Here’s how.

WHAT IS COLOR ANALYSIS?
Color analysis was all the rage in the 1980s with the publication of Carole Jackson’s Color Me Beautiful, and it’s had a resurgence as a way to decode whether the clothes you love are going to love you back.
You don’t have to be a clotheshorse or fashion junkie to go for a color analysis. “It’s for everyone,” Daubenspeck says. “I’m going to give you a skill set you can use to feel confident in your style.” If you find yourself at the clothes rack wondering if the cute orange dress is going to wash you out, or frustrated that a sweater you loved on the shelf seems to make you look dull, Daubenspeck’s service will set you up to dress in the colors that boost your beauty.
“In the right colors,” Daubenspeck says, “people can warm up as if they have a golden tan, or actually look younger.” As she switches between swatches in front of the mirror, clients can see the appearance of their skin go from clearer to blotchy-looking, eyes from brighter to bland. In fact, in the wrong color you might find yourself putting on more makeup to counteract a drawn appearance.
THE FOUR SEASONS
The results of a color analysis are based on the familiar four seasons system. If you’re an autumn, the collection of colors that look best on you reflects the burnished shades of changing leaves, deep greens and earthy fall. “The colors of spring are clear and bright,” Daubenspeck says. “In summer, I think of the muted, natural colors of the beach, and in winter, bold contrast like snow with a cardinal on the branch.”
Within the seasons, color analysis drills down on the handful of power colors that let your hair, eyes and skin absolutely wow. “Those will be the colors of choice for a first date outfit or job interview,” Daubenspeck says.
THE PROCESS
At your two-hour color analysis, Daubenspeck uses precision-dyed drapes in natural lighting to determine your season, and once that’s
established, she performs the 90-second makeup tutorial. House of Colour has its own makeup line formulated to flatter your season, but Daubenspeck stresses that in the right color clothes, you won’t need much.
Clients walk out of their appointment with a color fan they can fit in their purse and pull out to compare with the inventory at their favorite boutique or their closet at home. Daubenspeck also fills out a color book with advice on everything from nail polish colors to eyeglass frames, jewelry to hair dye, to navigate every color and tone in play. You’ll learn the best metals for your palette and whether your hair tone should go ashy or gold, darker or natural.

If you’re wondering what role a fluctuating tan or winter dye job makes on your season, don’t worry. “I’m not assessing overtone,” Daubenspeck says. “I’m assessing undertone. A natural tan will not change that.”
Dyed hair is typically covered with a little root showing to see the natural tone of the hair. “Most people dye their hair,” Daubenspeck says, dismissing this as a barrier to her analysis.
The only true obstacles are artificial and spray tans, which do cover the skin’s nuances. “If you have an artificial tan,” she says, “wait until that wears off before your appointment.”

But of course, not all bloggers are Monica Mangin. She’s a designer, lifestyle expert and founder and CEO of Lansdale-based East Coast Creative Productions (EC2). On any given day, she might be brainstorming ideas for an upcoming TV segment. (Garden ing hacks? Check. Holiday decorations? Check. Door décor? You bet.) Or maybe she’s ducking into a production meeting about a recent video shoot. Or maybe she’s fielding phone calls and Zoom calls from prospective clients who want to talk branded content. Or maybe—and most likely—she’s doing all three.
Not only does Mangin know her way around a home reno project, she also can tell you when to use who and when to use whom in a sentence; she began her professional life as an English teacher in Bucks County’s Pennridge School District. She may not have known it at the time, but she was in a dress rehearsal, of sorts, for her future career as an on-camera personality. “If you can keep a terribly tired, first period class of 17-year-olds engaged at like 7 a.m., you’ll crush it on TV,” Mangin says.
Mangin grew up in Massachusetts and moved with her parents and younger brother to Bucks County while she was in high school. She admits that she accepted the relocation begrudgingly—after all, what teenager wants to be whisked away from friends and all that’s familiar only to be plunked down in a new town hundreds of miles away? But the move afforded her the opportunity to tackle what she refers to as her first major DIY project—the family’s new home. “[My parents] let me do any rooms in the house that I wanted to,” Mangin says. “And I really applaud that because some of them were terrible.” There was her “angsty” teenager bedroom—black walls with silver trim. But not every design choice elicits a cringe when recalled today; Mangin completed her first-ever accent wall mural in the dining room, made up of dozens of colorblock squares.
Her creativity was a constant that was encouraged in the household, Mangin says.
Later, as a young wife and mother of four living in the Quakertown area, she began
to take on bigger DIY projects. “It was a lot of just working with what I had,” Mangin says. “I think I DIYed out of a combination of it being a necessity and a great creative outlet.” She and her best friend, Jess Jackson, started helping each other out with different projects at their respective homes. In 2011, they started a DIY blog at a time when these windows into one’s personal triumphs and trials on the home front weren’t as ubiquitous as they are today. They called it (in a very tongue-in-cheek way) The Real Housewives of Bucks County, a nod to the Bravo series that was a few years old at the time. “We did pretty well because we got a cease and desist from the actual show,” says Mangin. “We were like, ‘We’re being sued, but this is the best news because it means we’re doing something right.’” The blog (and the eventual business) was given a new name: East Coast Creative. Another indicator they were on the right track: The Nate Berkus Show came calling and asked them to participate in a weekend warrior challenge. This would mark the first in a series of segments they’d do for the show. It seemed like everything was clicking. Within six months, they had their own show, Knock It Off! on ABC’s Live Well Network. But when Knock It Off! was done after two seasons, Jackson decided to pursue other creative endeavors, and Mangin had to figure out her next move. By this time, she had bowed out of the education world to focus solely on the DIY and design business. When the vision she had for a pilot she sold to HGTV didn’t turn out as planned, she realized it was time to take the reins: “I need to learn how to become a production company. I need to learn how to do this on my own.”
In 2017 Mangin brought on Gerry Grzywacz as president of East Coast Creative. The two previously had worked together on Knock It Off! and, additionally, Grzywacz had a solid resume built on years of experience in television production with several unscripted shows, including former TLC mainstay and home makeover pioneer Trading Spaces. Their titles, Mangin says, are fluid. Both wear many hats during the process of bringing a project to the finish line. But, as the CEO of a multimillion-dollar company, Mangin knows she’s somewhat of an anomaly. “I feel
like I’m surrounded by a lot of strong women, but I think if I would take a wide step back, I would realize it’s definitely not as commonplace as it should be,” she says. “I think there is that hard line still of, you want to seem amenable to things and you don’t want to seem hard to work with, but at the same time you have good ideas. It’s a really tricky dance.”
The first content put out by EC2 as a production company was “The Weekender,” a DIY home makeover series and partnership with Lowe’s Home Improvement. Two more shows: “Homegating” (helping NFL fans tailgate at home)

and “Home Becomes” (repurposing spaces during the stay-at-home days of COVID) were also collaborations with Lowe’s. EC2 is currently working on new content with Chip and Joanna Gaines’ Magnolia Network. The DIY blog is still chugging along, too, tackling projects and makeovers both simple and complex around the home.
Mangin also has emerged as a familiar face on network TV, with more than a hundred spots on daytime shows like Live With Kelly and Ryan, the Today show and the Rachael Ray Show, where she’s covered every lifestyle challenge and home hack imaginable. Most recently, she’s become somewhat of a regular on Live. “I really like the pressure of live TV,” Mangin says. “It feels right when I’m doing it.”
She describes her approach to design as accessible and attainable. It’s important to her that whatever she’s pitching on television or her blog is doable in real life. If she’s working with a specific person, her goal is to elevate—not necessarily change— that person’s style. “I feel like I have the ability to chameleon into whatever you need me to be,” she says.
Perhaps her biggest “critics” are the young people she shares a home with. She has four children—Makenzie, Kaden, Kira and Callen, ranging in age from 13 to 20 years old—with her husband, Eric, who works in research and development at pharmaceutical giant Merck. Recently, Mangin’s children told her a bathroom at their home now resembles a bathroom at a McDonald’s fast-food restaurant, thanks to a paint job she orchestrated. “I don’t think it’s a super compliment,” she says with a laugh.
All kidding aside, Mangin says she’s happy to see that her flair for the creative is alive and well in her brood, particularly the two girls: “Our house looks like Michaels exploded.” It’s possible one or more of her children will follow in her footsteps in some capacity down the road; her two eldest kids have worked as production assistants for EC2. In the meantime, she’ll continue to grow her business and maintain her jam-packed schedule. Even with all of the success she’s earned, she still finds herself pondering the same question she was asking herself during her teaching days, when she felt a nagging itch to do something more: “Where do we go from here?”

Viola met in AmeriCorps, where they were paired together because they both could cook. They worked together to create meals for hikers who would pass by in their travels. They created beautiful dishes like lamb chops and barbecue, but also pizza. “Pizza is a blank slate for any flavors you want. It is a playground for everything, from fresh ingredients to pickled. You can test out flavors and be as creative as you want,” says Foreman.
Foreman grew up in a home where neither parent cooked but they would give him and his brother a credit card and an open invitation to shop and cook whatever meals they wanted. “This is where I fell in love with cooking,” Foreman remembers. “One of the funniest fails I had that my family still jokes about is when I made tuna noodle casserole but forgot the actual tuna.” He worked in restaurants during high school and college, and when he wasn’t inspired in the career path he had set out
for, cooking came back into the picture.
Foreman and Viola opened a mobile wood-fired pizza oven that would travel to all of the local farmers’ markets. Seven years ago, they bought the building where Emmaus’s favorite Switchback Pizza is now tucked away on Jubilee Street. Their seasonal menu is a cult favorite among locals and truly anyone else who tries their pizza.
Here, they are sharing their recipe for Drunken Apple and Swine, a sweet and savory pizza
made with sweet Italian sausage, Gorgonzola, crisp apples, a little bit of cinnamon-sugar on top, and finished with a bourbon syrup. In the fall, the apples are sourced from local favorite Scholl Orchards in Bethlehem.
The couple is often inspired by new flavors and delicious meals they have when traveling. Whenever Foreman and Viola have an amazing meal on one of their culinary date nights, it always becomes the conversation of “How can we make this into a pizza?”

Makes two 12-inch pies INGREDIENTS
2 10-ounce dough balls
2/3 cup Gorgonzola cheese crumbles
1 cup cooked sweet Italian sausage (links or loose)
2 apples
2 tsp. cinnamon/sugar blend
1½ tsp. cinnamon ¼ cup sugar
2 Tbsp. butter
2 ounces bourbon
For one pie at a time
INSTRUCTIONS
TOPPING PREPARATION
Cinnamon/sugar blend: Put cinnamon and sugar in a cup with a lid and shake to blend. Makes a larger batch than needed.
Pre-cook sausage: Bake links in oven or toaster oven at 400 degrees until internal temperature of 165. If loose, cook in a pan until browned and done; set aside to cool. If making links, let cool then slice into 1/6 inch slices. (Can be made the day before pizza night.)
Bourbon apples: (note: apples cook quickly) Core apples and slice into ¼-inch slices. Set the frying pan on medium-high heat to warm. Add

butter to pan and let melt and begin to brown; add apples to butter and toss to coat. Toss coated apples with cinnamon-sugar blend. Add bourbon to the pan and cook until alcohol burns off and a syrup is created in the pan. Remove from pan and allow to cool. Make in two batches if needed as to not crowd the pan. (Can be made a few days before pizza night.)
PIZZA NIGHT
Add pizza stone or steel to oven. Preheat oven to 500 degrees.
Pull dough ball from fridge 25 minutes before baking.
Pull all ingredients out of fridge and let come to room temperature.
Toss dough ball in flour and stretch dough ball out to 11–12-inch pizza; transfer to steel.
Add ingredients to pizza: apples, sausage then Gorgonzola last (on top).
Finish stretch to make sure pizza isn't sticking to steel.
Bake until desired doneness; about 5–12 minutes.

AT THE HISTORIC RED LION INN
Pennsylvania is loaded with lots of old stone buildings that have stood the test of time, hosted many a weary traveler upstairs and served thousands upon thousands of meals.
McCoole’s at the Historic Red Lion Inn is one such place. Situated in Downtown Quakertown, what began as an inn during the 1740s owned by Walter McCoole has now grown into a rather sprawling enterprise with an adjacent black box theater, brewery and event space (the latter held in the old livery stable). It still has that feel of serving all comers and you can feel several hundred years of hospitality in the exposed stone, the wood tones everywhere and the mix of antiques and vintage décor, here and there.
McCoole’s was a popular Revolutionary War hangout and served as a meeting place for the organizers of the Fries Rebellion. It was also par t of the Underground Railroad at one point; some of those tunnels still exist underground. One owner also apparently permitted goats and horses to wander through the dining room as recently as 60 or 70 years ago. (It seems apocryphal, but places like this have stories.)
The restaurant is first and foremost known for its clam chowder, which is made to order so that everything is guaranteed to be fresh.
As with any seriously historic building, especially one that’s worked as a lodge, McCoole’s is not without its deaths and ghosts. Owner Jan Hench tells the tale of how the inn’s previous owner passed away at a high-top table right across from the bar. His wife thought he was napping, which was a normal occurrence. “We have lots of various ghosts,” Hench says, of the men, women and children whose presence is occasionally felt. (They’re friendly.)
These places have a lot of personality and have hosted many personalities—TV’s beloved dog Lassie was a regular, for example. The inn’s former owners used to drop a steak on the floor so often for the collie that there was, for a while, a stain on the floor (it’s since been remedied). Old inns like McCoole’s have a strong appeal, and tend to attract the kind of owners who are especially equipped to deal with their quirks and history.
Hench has owned this place for about 20 years, and is the current steward in a long line of owners. When she bought the place, it needed a ton of restoration—just ask, she’ll tell you about it. She shares these stories easily, along with the photo album that documents
the renovations, as they are well woven into the fabric of the inn’s history. “This building has never not been occupied,” says Hench. It would be an understatement to say that owning and maintaining the entire McCoole’s complex is a labor of love.
But let’s talk about the food (and the beer), because that’s why people keep coming, right? One menu is served all day, which dramatically simplifies matters, and it includes the standard run of appetizers, soups, salads, sandwiches and entrées. McCoole’s has the kind of straightforward classic American menu that offers something for just about everyone, with ingredients that aren’t too fussy.
The restaurant is first and foremost known for its clam chowder, which is made to order so that everything is guaranteed to be fresh. Unfortunately, many people’s first encounter with clam chowder is the thick
white stuff from a can. Real clam chowder is far superior. Chef Eddie Mora creates this with potatoes, bacon and a white wine and cream broth for a soup that’s rich but not at all heavy. The veggies are cooked in the rendered bacon fat, which adds another layer of flavor, and the soup is garnished with littleneck clams still in their shells, along with pieces of toast.
Elsewhere, the McCoole’s Dip is popular, made with prime rib and topped with melted provolone along with a horseradish sauce. Salmon receives a teriyaki treatment with fried rice tossed with wild mushrooms and bok choy. You can order the usual proteins, such as filet mignon and prime rib, along with seafood such as scallops and grits, and twin broiled crab cakes (no filler).

slices, blue cheese, dried cranberries and sunflower seeds. A citrus-driven dressing brings it all together. (As a side note, this salad, along with the Caesar, is available in half or full portions, which is a nice option.) Local ingredients are sourced whenever possible; the chicken for their sandwiches (including the unique Pickle Back) and chicken parmesan comes from Bell & Evans, a well-known distributor in Pennsylvania, for example. A local farm brings them duck eggs. Other seasonal additions and subtractions pop up on the menu as available, says Hench.
As far as what you’re drinking while you’re here, there are plenty of cocktails to choose from, and people love the Mango Tango, which is made with rum and mango vodka, along with pineapple and cranberry juices. It’s a perennial favorite, but other seasonal drinks pop up, too, so keep an eye out for those. You’d be remiss, however, if you didn’t try Red Lion beer, which they started brewing
in 2007 a nd is only available and distributed onsite (get yourself a growler). Brews change seasonally, but there are several staples, including the malty 1799 Rebel amber ale, that are worth seeking out.
For those who need to skip grains or who prefer cider, McCoole’s offers that, too. Their brew is aptly suited to a business with pre-Revolutionary War roots; cider was a popular drink and traditionally it’s more dry and less sweet than much of the back-sweetened cider that is currently available. You can really taste the apples and their various nuances, and that’s a testament to it not being too sweet, and the fact that the apples used for the cider come from a nearby orchard that grows heirloom varieties dating to the 1600s and 1700s, ones that are ideally suited for the task.

What to Order
If you come here you need to try the clam chowder. It’s light, fresh and flavorful. The sandwiches are ample and appropriately messy; the McCoole’s Dip is beloved. People also love the salmon, along with the Mango Tango cocktail. The cider is worth a sip, too.
Fun Fact
Representations of red lions can be found throughout the restau rant, and the name’s significance is more a function of social history than anything else. As Hench de scribes it, “A lot of people couldn’t read during the founding of lots of these old inns, so they often have a color and an animal name to them.” Thus, Red Lion Inn.

Pancake Tacos
THE BEAMYARD AT STEEL CLUB
The BeamYard at Steel Club’s Street Tacos are a very popular appetizer on the restaurant’s dinner menu, so Executive Chef Dennis Matthews set out to create something similar for brunch. He found it with pancake tacos. Using pancakes as the tortilla shell, the tacos are filled with sausage, bacon, can died walnuts and drizzled with pure maple syrup. The special will be avail able every Sunday in December between the hours of 10 a.m. and 3 p.m.
As for drinks, Matthews says one cannot go wrong with a build-your-own mimosa flight or the Steel Club Bloody Mary, which features a house-made mix. “We offer multiple new and exciting specials every Sunday during brunch year round,” he says.
