EASTON CYCLE When Rena Fimiano moved back to Easton and noticed a lack of boutique workout spaces, she knew she wanted to share her love of cycling with the area. “I’m starting with pop-ups because I want to establish a strong community presence while giving people a more intimate workout experience,” says Fimiano, owner and instructor. There are 10 bikes and Fimiano says the energy really drives the ride. “When you have nine excited people next to you, it’s an amazing feeling.” Keep an eye out for classes popping up in surprise locations around Easton all summer long. Leading up to each ride, hints for the next location will be posted on Instagram. Once revealed, anyone age 16 or older can register online. Easton Cycle is also available to book for private events, bridal party festivities and small business gatherings. “I’m also collabing with local businesses like Inner Shift Fitness and Good Health Acupuncture, which is really exciting too,” she says. Anita Paukovits

EXECUTIVE DIRECTOR & PRESIDENT, THE CHILDREN’S HOME OF EASTON

When Anita Paukovits was a young college graduate, she did not anticipate that she would eventually be the executive director and president of The Children’s Home of Easton. “I took my first ‘real’ job post-college to use my social work degree and thought: Why not? Let’s try this!” Paukovits says. Now, 39 years later, Paukovits is the first female to hold the role, which is one she accepted in 2015. The Children’s Home of Easton is a nonprofit organization that serves dependent, neglected and traumatized children who can no longer remain in their home or with family. AD-LVS-SN-FINAL.pdf

These children are cared for and taught to cope effectively with situations in order to become productive members of society. Having the utmost desire to help others, Paukovits’ role in The Children’s Home allows her to do just that. Not to mention she herself is from the Lehigh Valley, so she is able to help people in her own backyard. “The changes that have been happening in our Valley have been amazing in that, yes, we preserve and respect the past, but we are also leaders in adapting to the necessary changes we are all experiencing in our world, and making the Lehigh Valley a better place,” says Paukovits. “The Lehigh Valley is an incredible area in that it is diverse in every aspect of the word!” She’s proud of what she has been able to do for the area through her work, but Paukovits does not stop there.

She is heavily involved in the community, serving as pastoral council chair at Holy Family Church and as a board member at Kolbe Academy while also supporting local restaurants, festivals, trails and nonprofit events. The passion to help others drove Paukovits both professionally and personally, and her drive has not yet dwindled. When asked to give advice for someone wanting to make a difference in the Lehigh Valley, she says: “Do it! Life is short, times are different. Giacomo’s ITALIAN MARKET Kristin Randazzo hopes customers feel like a visitor in her home when they’re perusing Giacomo’s Italian Market in Quakertown. The vibe is cozy, chic and welcoming, many of the employees are actually family and her kids may be running around barefoot with a football… what’s more homey than that?

Tell us about the journey to opening Giacomo’s Italian Market. I had quit my job in the corporate world to help my husband at Giovanni’s Pizzeria. It had been about five or six years since I had worked at the pizzeria fulltime and I immediately began adding to the catering menu, offering a variety of different items along with charcuterie and grazing tables. I began creating beautiful set-ups that just took our catering to a new level and I absolutely loved doing it. Shortly after that, we began getting requests for family-style meals that were healthy and ready to just heat and eat. So, in January, right before COVID hit, we started offering one family-style meal a day. It was something that was not on our regular menu and gave a new option to families of any size. This concept caught on very quickly and, before we knew it, we had lines of cars waiting to pick up food each day. It was such a success, it carried us through COVID. We quickly came to the realization that we were running two different businesses out of one kitchen and we needed more space. The place right next to us was open and available so I stood in the vacant store one day and drew up my plans. I wanted to expand Giovanni’s. I took it to the landlord and I was denied the expansion because of exclusions in some of the surrounding businesses in the shopping center, but our landlord had bigger ideas and that’s where the market idea was born. I went back and drew up all-new plans for a market and, within months, the lease was signed!


What did the design process look like? I had studied interior design and fine art in Florence, Italy, during college and my time there was unforgettable! The culture made me want to create something like that at home. I wanted to bring that lifestyle and authenticity to Quakertown for people to experience. The market was completely designed by me, including the architectural drawings, light plans, floor plans, finishes, etc. I finally had used my interior design degree for a project for me. The market was built by family and close friends and holds so much sentimental value. This place I have created is more like my home and my heart and soul. It is named after our youngest son, Giacomo, who has wanted a place with his name on it, since his brother is named after the pizzeria (and my father-in-law). Postersize pictures of my kids from our last family trip to Italy are hanging in the market and it just completes the design. How has the market been received by the community? I did a lot of research when selecting the items I wanted in the store, and for a valid reason. I wanted something that has never been in this area. I wanted to create not only a market but an experience. As soon as you

walk through the door, I want you to feel like you’re in a different town, a different county—like you stepped into a market while on vacation! The first few months, I think I cried every time I watched people walk through the door with a huge smile on their face looking around like they had never seen anything likethis in our town. I wanted people to smile when they walked in, and they do! It has been above and beyond what I had hoped for. I have people that drive from an hour away to come here, regularly! It makes me so happy and proud to have created something that makes people excited to come to.

Tell us about your wide variety of offerings! I offer a variety of different items in my store. I have an entire wall of all imported grocery items from breakfast cornetti to pastas and sauces to olive oils, tuna, jarred condiments and aperitivo, to meats and cheeses as well as imported beverages. I have a deli where all of the meats are imported. I have a sandwich and charcuterie station that is made to order as well as an entire wall of grab-and-go and prepared foods both refrigerated and frozen. There is also a small counter with vats of infused olive oils and vinegars for you to fill up your own glass bottle. Then, in the middle of the store, you will find three cases full of pastries and baked goods—the most difficult section of the store to resist! Is there an offering that locals just can’t get enough of? I think the number one item is my mom’s cinnamon rolls. They are incredibly good—like, addicting! You cannot just stop at one bite. She has truly outdone herself with those!

Tell us about Giacomo’s Table and your event offerings! I love to cook for people, especially people who appreciate a nice sit-down meal. I wanted to be able to cook for a table of guests and allow them to sit back and enjoy an evening without the mess or hassle of setting up and cleaning up—a night where they can have a private dining experience to themselves with family and friends and, of course, lots of food. I have done many Giacomo’s Tables since I opened and each one has been so much fun! It really feels like I’m cooking for a group of friends right in my kitchen. 220 N. However, our evolving understanding of our digestive system andits pivotal role in health, immune response, gene expression and disease has brought awareness and expanded opportunity to better address chronic conditions and increase the quality of everydaylife. One in seven people have digestive issues, and while that number is substantial on its own, it may not include those with symptoms not typically associated with digestion and gut health. Issues like brain fog, fatigue, autoimmune conditions, anxiety, depression, poor sleep, chronic aches and joint pain, headaches and

food allergies can all be symptoms and indicators of poor gut health. We are composed of more microbes than human cells, with the majority of those microbes found within the digestive tract. The diversity and composition of microbes can determine our health and gene expression. For every one message from the brain to the gut, there are nine messages from the gut to the brain. Gut microbiota determines the messaging to the brain—whether to turn inflammation up or down, and whether to increase or decrease repair of organs and tissue. It is no wonder that the gut microbiome is being called the second brain. Antibiotics, factory farming, environmental toxins, mental and emotional stress, and poor diet all contribute to the issues. “For a long time, we shied away from language around the digestive system with most unwilling to talk about gas, bloating, diarrhea, constipation, etc.,” says Kristen Bentson, DC, MS, IFMCP, of Bethlehem. “For a significant part of the population, it has meant suffering in silence with no real answers.”

In college, Bentson found herself with serious health issues, having a constellation of symptoms, including gastrointestinal issues, fainting, fatigue and pain. Traveling from doctor to doctor, she was left with more questions than answers. Her symptoms were so significant that she took a year off from school to find out what was happening and how she could fix it. She quickly realized that she needed to be an active participant in her own healing. In addition to an invaluable GI doctor, she found key support in her healing through chiropractic and functional medicine. It would prove to be a guiding force in redirecting her own career into those two professions. After her second child, she had severe reactions to food, which had her dive deeper into gastrointestinal health and a low-FODMAP diet.

WHAT IS LOW-FODMAP?

FODMAPs (fermentable oligosaccharides, disaccharides, monosaccharides and polyols) are certain sugars that may be difficult for the small intestines to digest. This

can cause cramping, gas, bloating and gastric distress. A low-FODMAP diet is a short-term, temporary elimination diet that gives the gut a break and a reset. The eliminated foods are slowly and methodically reintroduced one at a time to see what may still be causing the distress. This temporary plan can be especially helpful for those experiencing IBS (irritable bowel syndrome) and SIBO (small intestine bacterial overgrowth). Bentson’s own journey, combined with hearing so many women being told “nothing is wrong,” “it's all in your head” or “you just have to live with it,” provided the impetus for her writing her book: The Cool Girl’s Guide to the FODMAP Diet. A low-FODMAP diet isn’t limited by gender, nor is it meant to permanently remove all the foods on the list. It is rather a systematic approach to properly identify sources of irritation. It is important to understand that what we are eating has a direct impact on our health and that there are solutions, but it does take work.

A key question Bentson asks when working with someone is: Are you really ready to make lifestyle changes and are you willing to work to get to the root of things? As she likes to say, “There is not a pill for every ill.” As a functional medicine practitioner, Bentson takes a comprehensive and systematic approach through clinical testing, lifestyle changes and a whole-foods approach in finding the root of the issues and the dietary match that works for each individual. Food is information for the body and, as such, can help turn on and off genetic expression. Just because a food may be deemed healthy does not mean it will be healthy for your body. The same applies to supplements. Some supplements could be working for you and against others, despite what an “influencer” may say. Bringing in a functional medicine doctor to work with you alongside your allopathic doctor may provide the guidance and knowledge needed to help you discern the underlying issue and the imbalance causing your symptoms as well as help you navigate a path to effectively rebalance your systems.

SMART PRACTICES FOR A HEALTHY MICROBIOME

Even if you don’t have obvious digestive health issues, maintaining a healthy microbiome is key in maintaining good health and preventing the expression of disease. Bentson reminds us to keep it simple and consistent.


“First, remember that the best foods don't have food labels; focus your food approach on getting a wide variety of brightly colored, unlabeled and unprocessed whole foods,” she says. “Next, if the foods you're eating do have a label, read the list of ingredients and avoid added sugar, numbers (like red dye #40 or polysorbate #80) and chemicals.” Bentson notes that cutting back on and ultimately eliminating alcohol may be one of the best decisions you can make for gut health and overall health. Look to incorporate nutrient-dense foods, prebiotic fiber and polyphenols. These include things like artichokes, ground flax seeds, raw fermented sauerkraut, blueberries, green tea, fresh herbs and unsweetened yogurt. Promoting diversity in your microbiome can also benefit from seeking diversity in your foods and food sources. It is easy to get stuck in the same few vegetables as well as shopping at the same stores. Step outside your normal routine, incorporate different fruits and vegetables and provide more diverse phytonutrients. Sourcing from farmers’ markets and various stores can mean different regions, different soil conditions and differing micronutrients. Minding your food is one aspect, minding how you eat is another. It is a basic yet mostoften-bypassed strategy to improve your digestion. The expression “drink your food and chew your water” is indicative of how we should be eating. Simply taking the time to truly chew your food until it is liquid allows for the proper enzymatic breakdown from our saliva to take place. Swallowing after just six or eight chews puts more stress on the rest of the digestive tract, reduces nutrient absorption and can increase bloating and gas. Chewing your food fully helps you slow down, provides greater satiety and can encourage relaxation when eating. Our digestive system is very sensitive to stress. Bentson encourages everyone to have specific, routine stress-transforming strategies in place. This can include breathing practices, gentle exercise, prayer, time in nature, listening to calm music and sipping an adaptogenic tea like tulsi. In addition to emotional stress, environmental stressors like mold, environmental toxins, chemicals and pesticides can be contributing to poor gut health. Just like minding the soil in a healthy garden, minding the health and diversity of your microbiome is foundational to all aspects of your own health. Paying attention to your body’s signals, being an active participant as well as finding trusted, knowledgeable guidance can help you to flourish.

The school is named after St. Maximilian Kolbe, the patron saint of people struggling with addiction.

KOLBE ACADEMY Pete B. knew he was in over his head. The self-described “quiet kid” was just a freshman trying to find his place in the local high school hierarchy when he began using drugs. “It just led down a path that was really hard to get off of,” he recalls. After he sought professional treatment, Pete and his mother decided he should enroll at Kolbe Academy in Bethlehem, the first faith-based recovery high school in the United States. “They put me back on my feet and got me where I need

to be,” says Pete. “It’s more like a family. We use that word a lot here.” If Kolbe is a family, then perhaps John Petruzzelli is its patriarch. He had been working in Catholic education for about 30 years when the idea of establishing a place like Kolbe was first bandied about in the Diocese of Allentown. Although the concept of a high school experience tailored to kids struggling with alcohol and drug dependency wasn’t new—there are more than 40 such places in the country, including the

Bridge Way School in Philadelphia— what would set Kolbe apart was its faith component, or what Petruzzelli calls “the missing piece.” Petruzzelli was working as the principal of St. Joseph’s Preparatory School in Philadelphia following a seven-year stint in the same role at Bethlehem Catholic High School when he was summoned back to the Lehigh Valley to help get Kolbe Academy off the ground. It was an assignment that came with a lengthy to-do list. “I was the

principal of a school that had no building, no students, no teachers, no money, no textbooks,” Petruzzelli says with a laugh. And beyond the challenges of ironing out the basic logistics, organizers had to create an environment and a curriculum that would cater to the students’ unique needs. “Our mission statement calls for an individualized learning plan for every student, because every student is different,” Petruzzelli says. Making that a reality meant exhaustive work on the front end—visiting other recovery high schools, speaking at length with experts in the fields of mental health and addiction, and engaging the community as much as possible to drum up moral and financial support. Three years after opening its doors on the campus of the St. Francis Center for Renewal off of Bridle Path Road, Kolbe Academy maintains a small student body. As of spring of this year, seven students were enrolled across four grades. Petruzzelli says he doesn’t expect the total enrollment to grow beyond 30 or 40 students. And, certainly, Kolbe will never follow the typical school model of having classes packed with 20 or more students. “We were built to be small. We want to keep that close-knit feeling,” he says. “That one-on-one contact, that small group, that’s so key to their success.” The opportunity to interact with students on a much more personal level was one of the things that attracted first-year math teacher Victoria Seery. “We are more than teachers to them,” she says. “We are mentors, we are friends. We see them through the sobriety. Some days, they just need a second to chill and cry it out, and we’re here for them.” Seery admits that while getting to know her students can be one of the most rewarding parts of her job, it can also be one of the most challenging. “It’s shocking to hear some of the things they go through,” Seery says. “I wish that they had had more time to be a child.” Drug and alcohol use among children is a pervasive problem. According to the National Center for Drug Abuse Statistics, drug use among eighth graders went up 61 percent from 2015 to 2020. The same group reports that 62 percent of twelfth graders have reported abusing alcohol. Petruzzelli says while he’s fortunate in that no one in his immediate family has had to grapple with drug or alcohol dependency, he’s lost several former students to addiction.


“I think there are very few people out there who don’t know somebody, that don’t have a connection with someone who is in recovery or battling addiction,” he says. Seery believes social media is making the problem worse by adding to the pressures already weighing heavy on many young people’s shoulders. “People don’t realize how much drugs and alcohol affect youth,” she says. Every morning at Kolbe Academy begins with a check-in where students are encouraged to talk about anything that might be bothering them. There are also morning prayers, and the recitation of the Kolbe Promise, where students recommit themselves to the school’s mission. Throughout the week, students meet with licensed drug and alcohol counselors in individual and group settings. Twelve-step meetings are run by students (with the support of a Certified Recovery Specialist) and held once a week. Beyond the services provided to aid in recovery, Kolbe tries to give its students as much of the typical high school experience as possible.

I’ve put a lot of heart and soul and sweat and tears into this place, and I just think it’s so needed. There are no sports teams, but in addition to covering the full Diocesan academic curriculum, Kolbe offers a prom, access to college prep services, a graduation ceremony and a plethora of extracurricular activities. Students can take part in Alternative Peer Groups (APGs), activities that range from bowling to making music to cooking. Sometimes, students from other schools’ SADD (Students Against Destructive Decisions) groups are invited to tag along to provide more peer socialization opportunities. announced in the spring that it would be moving to the former Sacred Heart School in Bath. “This has all been in God’s hands the first couple of years,” Petruzzelli says. “We’re not going to change that now. He’s going to take us where we need to go.” Not long after that announcement, Petruzzelli disclosed that he had made the difficult decision to step away as principal. At the time of this interview, he was unsure of his next move. He says he doubts he’s done with education for good, but he wants to take a break for a little while. And one thing is for certain—he still plans on being part of the Kolbe family in some way. “I’ve put a lot of heart and soul and sweat and tears into this place, and I just think it’s so needed,” says Petruzzelli. “It’s such an important part of our diocese and our community. I’m going to do everything I can to make sure it continues to succeed and flourish.” Although Petruzzelli’s tenure is ending, in many ways Kolbe’s work is just in its infancy. “There are probably still people out there who don’t know about us but could use our help,” he says. Petruzzelli speaks with pride about Kolbe’s success stories—the graduates who have moved on to other endeavors and are winning their own personal battles with addiction: one is on the Dean’s List at East Stroudsburg University; another got a job at Mack Trucks and already has been promoted. Pete is planning on joining that distinguished group, too. His grades are up, and after he graduates next year, he wants to join the U.S. Army for four years, and then attend college. Nursing is one possible career choice, although he says he also likes to cook. He’s currently employed at a local Panera. Pete says he’s had some slip-ups in his recovery journey, but when asked how things are going at the moment, he responds with one word: “Awesome.” And he has this message for any young person standing where he was two years ago, ensnared in the grip of addiction, with little hope of beating back the darkness: “I know how bad addictions can get, especially at a young age. It’s most important to know that there is a way out, and there is a different life waiting for you. You can do whatever you truly want to do.” kolbe-academy.org

You know what you’re getting with a name like Pop’s Malt Shoppe, even down to the oldtimey spelling: 1950s nostalgia, served with a smile. Pop’s has been around for 18 years and is owned and operated by Joel and Dakota Seidel. The menu has morphed in that time a bit, but the theme has been consistent. “We’ve got scoops, milkshakes, malt shakes, sundaes, burgers, fries, munchies and sandwiches,” says Joel. “When customers visit, they often tell us they feel as if they’re stepping back in time with our retro décor and ’50s music playing while they enjoy their food,” he says. So many things are on this menu here, in addition to the standards—there’s grilled paninis, salads and even waffles. (You know, so you can top it with one of their hand-dipped ice creams.) They’re doing something right, because Joel says they have been watching families grow up. “We get a lot of applications from local kids telling us their parents or grandparents used to bring them as kids, so they feel a connection to us and want to work for us as young adults,” he says. “We have many regulars that we know on a firstname basis. We really enjoy being part of a small town and are happy that our family also calls it home.”

You may have noticed that the former Sammy’s drive-in, across from the Phillipsburg Mall, looked like it was going to be the location of a business called Mountain Dudes. You may be wondering where they went—it looks like the dudes never set up shop there. However, that’s not true. Mountain Dudes opened at that spot for a short stint last August as a trial. “We had a custom-made food truck and did a test menu with the intentions of opening up inside,” says Chris Sterlacci, owner. What happened? People kept coming, and capacity (20 seats!) was

stretched. “It just wasn’t going to work for us,” he says. Instead, they moved to a bigger brickand-mortar location in Pohatcong Plaza in February. The striking, cheeky logo and concept is the brainchild of Sterlacci, whose background is in branding and development. “It was actually just a design concept before I teamed up with our head chef and chose to build an actual place that serves food,” says Sterlacci, laughing. Menu items for kids (little dudes) include the usual concepts but also a pizza bagel (fun!), and the menu even caters

to vegans. Major crowd faves include the Sasquatch, a smoked brisket sandwich with sautéed onions, fried egg and whatever cheese you like. Or opt for the Mountaineer Burger, which is topped with brisket (yes, a burger topped with beef), crunchy onions, jalapeños and pepper jack cheese. “I worked really hard to preserve a family owned and welcoming environment, with good wholesome food and a kind staff. It’s pretty much all the things [as a customer] I’ve ever wanted to see in a restaurant,” says Sterlacci.

The idea behind Wiz Kidz, which is owned by Bayou Boys Hospitality Group, came from a pretty straightforward place, according to Mo Taylor, one of the co-owners. Kids need cheesesteaks, too. “There’s kids’ burgers and chicken fingers, but no kids’ cheesesteaks. We thought, why not?” says Taylor. At Wiz Kidz, where the retro vibe is the 1980s, the classic steak-and-cheese sandwich is scaled down for smaller appetites. Elsewhere, cheesesteaks are often way too big, and sometimes they have ingredients that kids aren’t excited about (like onions or mushrooms). Parents end up cutting them into segments, which gets messy.

The nostalgia continues at Rod’s Dogs, named in honor of owner Mike Pichetto’s grandfather, who operated a hot dog cart in North Jersey after he returned home from World War II. Rod’s took over the spot occupied by Full of Crepe at the Easton Public Market in October 2021. The hot dog style might be a little different, depending on where you’re from—they sell a type known as rippers. “Ripper

hot dogs are made to be fried until they rip open,” says manager Felix Grzymala. Rod’s is supplied by Thumann’s hot dogs from Carlstadt, New Jersey, which specializes in this kind of hot dog. “They are a specialty of North Jersey that we are proud to bring to the Lehigh Valley,” says Grzymala. Special heads up for chili cheese dog lovers: “We make our chili from scratch and it’s a

perfect pairing with the dog,” he says. Unless, of course, you want a burger, and theirs are hand ground every morning by Saylors & Co., the onsite butcher at the market. Oldschool sodas are available, too, from Reading Soda Works— think birch beer, orange cream, root beer and strawberry cream. They make for a great ice cream float, with scoops from Bank Street Creamery.

We’ve featured this roadside spot before, not far from the entrance to Jacobsburg State Park, much beloved for its wide menu and quick, friendly service. It’s a little different for a few reasons, the first of which is that they offer breakfast sandwiches, and a ton of food they offer can be prepped to go—whether it’s homemade egg salad or tuna salad, pickled eggs, homemade soup or any of its many, many sandwiches. It’s not your run-of-the-mill roadside stop.

But everything is made to order, and that’s one of the best things about Petey’s. The name rhyme is fun, and it’s an homage to the owner Dennis Einfalt’s bulldog Petey, who passed away unexpectedly during the process of planning for the concept but who sure loved to eat. Pull up with the family and eat outside. Naturally, four-legged family members (a.k.a., dogs) are welcome, too—just keep them well-managed on a leash.

The throwback vibe is on in full force at Dinky’s, owned by husband-and-wife team Norman and Jill Matthews. They’ve been serving up burgers and shakes since 2012 at their original spot in Bangor, and added a second location in June 2020. The business was born out of a career pivot when Norman injured his back and decided to instead follow up on his childhood dream of opening an ice cream shop. The business takes its name from Norman’s childhood nickname. But the nostalgia vibe is real—his love for classic cars made opening the restaurant possible; he sold his 1957 Chevy Bel Air to make Dinky’s a reality. Stop in for a burger—there are so many to choose from, all of them quarter-pounders—or all-beef hot dogs with every fixin’ you can imagine, and, of course, homemade hard ice cream. Despite the name, Drip isn’t a coffeehouse. (The name is a long story better told at another time.) It’s a creative reworking of fast food classics, done right, with meticulous attention to detail, in an energetic space, spearheaded by a classically trained chef (Andrew Murtha) and his coowner Bob Weill. When describing the concept, Murtha says it was a bit of an

intentional affront to fast food concepts, but opting instead for high-quality food made to order. Extensive testing went into the menu items at Drip. For example, Murtha says they tweaked both the burger and the bun, many times over, to allow for proper shrinkage of the beef while cooking, but so that it wasn’t too small—or too large—for the bun. (Note: These are the kinds

of people you want making your food.) The burgers are custom ground, the shakes are thick and drippy, and the filet of chicken (an obvious play on words poking at the fast food chain) is soaked in buttermilk for 24 hours before it’s breaded and fried. Nothing gets wrapped in a foil-lined pouch.

BEYOND THE MENU

Mi Havana is the only authentic Cuban restaurant in the Lehigh Valley.

In April of 1993, the Food Network aired for the first time, and George Arce was hooked. From that moment on, he watched everything that played on the channel, learning from the greats like Emeril Lagasse, Bobby Flay, Rachael Ray and many other celebrity chefs that came over the years. Prior to discovering his interest in cooking, he worked in customer relations. “[That] has helped me in the hospitality industry and running a restaurant,” Arce shares. The first time he found himself in a commercial kitchen was as a youth pastor when he

needed to cook for a fundraiser for an upcoming youth group missions trip. That led him to help out in the church’s school lunch program, working alongside the chef. Between his “foodnetwork.com education” and his work alongside the chef, Arce says, “I totally fell in love with cooking.” As many chefs from this era have, Arce says he felt the freedom to cook. Unlike past generations, the start of the Food Network gave an empowerment to home cooks that has shaped some of our best eating experiences. His love of

surrounding himself with family who enjoyed gathering over food gained momentum as he successfully ventured into the catering world and eventually took him to the small town of Emmaus, opening his new love, Mi Havana, the area’s first Cuban restaurant. With a lease signed in January of 2020 and a ribboncutting scheduled—and then, of course, cancelled—for April 4, 2020, Arce quickly found himself in a position to have to create a market in a new town, to be able to spread the word of his dream to have the only authentic Cuban restaurant in the Lehigh Valley. It makes one wonder, as we move further into 2022, if the influence of seeing his favorite stars back in the ’90s having to convince people that they knew something you needed to eat and try and love was channeled into his approach. Through social media, word-of-mouth and the commitment to send food out that spoke from his heart and palate, he steadily created a customer base that, one by one, fell in love with the bright colors of his dishes. “I love bringing a little bit of Cuba to the people of the Lehigh Valley.” Here, he is sharing his lechon asado (roast pork) recipe with us. The slow-roasted pork with a flavorful marinade is one of the most popular dishes at Mi Havana. Garlic, cumin and a bit of sour orange make this a dish everyone will love. INGREDIENTS 8–10 pound pork shoulder (also called pork picnic) 2 heads of garlic, peeled and divided (one head for the marinade and one head to insert in the pork) 2 Tbsp. coarse salt, divided (1 tsp. to break down the garlic, 1½ tsp. for the marinade, 1 Tbsp. to sprinkle on the pork) 1 ½ cups sour orange juice (the number of oranges to use will depend on how large and juicy they are—or you can purchase sour orange juice by Goya) 2 Tbsp. olive oil 1 Tbsp. dried oregano ¼ tsp. cumin

board and give them a good whack with a meat mallet or the side of a large knife. Add the smashed garlic and 1 tsp. of salt to a mortar and pestle. Work the garlic until you break it down into small flat pieces. Add the smashed garlic, sour orange juice, olive oil, oregano, cumin and 1½ tsp. of salt to a medium bowl or jar. Stir or shake to combine well.

MARINADE

Cover the jar/bowl and let the marinade sit in the refrigerator for at least one hour—a couple of hours or overnight is better. Shake or stir well before using.

Peel the two heads of garlic. Reserve 8–10 whole garlic cloves for the pork.

Place the pork in the pan.

Smash the remaining garlic cloves: place them on a cutting

Make 8–10 (as many as you have garlic cloves) small slits

INSTRUCTIONS

MARINATE THE PORK

(about 1–2 inches deep) on the skin side of the pork. Insert the reserved whole garlic cloves into the slits. Dip the cloves in the marinade to make inserting them easier. Turn the pork over (skin side down) and make about 10–12 small slits (about 1–2 inches deep) in the meat.

¼-inch to ½-inch high. You may have to add a bit more after 2 ½ hours of cooking, but don’t let it dry up. Cover the pan well using aluminum foil. Marinate the pork in the refrigerator overnight, if desired; if not, straight to the oven. Preheat the oven to 325°F.

Use a ladle or spoon and start pouring the marinade into the slits you made. Then, pour the remaining marinade over the pork. Sprinkle another 1 tsp. of salt over the pork (if desired). The marinated pork might get a grayish color, that’s normal; it’s the citrus working on the meat. Turn the pork; now it should be skin side up. Add water or pork stock to the pan about

Roast the pork for a total of 3–5 hours until the internal temperature reaches at least 170° F and the meat has pulled away from the bone on one end. About 1½–2 hours into the roasting time, tent the pork. Once it’s cooked and if it looks pale, then remove aluminum foil and let it cook for an additional half hour until brown and a little crisp. Let’s get a few things straight, starting here: Noodles are awesome, noodles are life. Also, no cuisine has the ultimate claim on noodles. And so, in support of such an outlandish statement, let’s add that there is no such thing as having too many places to eat noodles. There is no argument, either, about whether rice, buckwheat or egg noodles are the best. They all have their place and their job in any given noodle-based dish. All of this noodling about noodles is, however, why you ought to head over to La Kang Thai Noodles Bar in Hellertown. The vibe is playful, friendly and a bit tropical, with Thai pop music playing and lots of greenery, and the bowls are brimming with beautiful ingredients whose composition and taste will easily exceed your expectations. The latter point is true, even if you have little exposure to Thai noodles, beyond the ubiquitous pad Thai experience. There is much to discover here—noodles notwithstanding! The name La Kang might be familiar, as the folks who own this noodle joint, which opened in January, also operate (the slightly more fine dining) La Kang Thai French Cuisine restaurant in Palmer Township. “We wanted to show people that there’s more to Thai food than pad Thai,” says co-owner and chef Paul Ratchaphol Rojrattana (a.k.a., Chef Paul). The place is meant to offer a quicker turnover than their fine dining spot. Even when we were there to talk about food and take photos, service was lickety-split. Within about 30 minutes, at least a half dozen dishes came out of the kitchen and from behind the noodle bar. But you won’t feel rushed.


“We’re on the main street, and people want something faster and casual,” he says. Such a central location easily lends itself to a spontaneous pop-in. It helps that the interior and hospitality are an inviting experience. Sitting at the bar provides some transparency, along with theatricality, as you can watch Chef Paul prepare your noodles. Everything is cooked to order. “People love the experience of watching him do the noodles,” says Bunyanuch Pacharakornkul, who simply goes by Nikki. They try to make dishes as authentic as possible, to their experience, but as anyone who’s cooked or traveled outside of their native country knows, the definition of authentic can be rather subjective. La Kang does offer pad Thai, but it’s made with traditional ingredients such as tamarind and palm sugar. Lots of pad Thai recipes skip tamarind altogether and opt for granulated sugar instead of palm, but tamarind’s sourness is key to the dish. Chef Paul, a graduate of NCC’s culinary program, has cooked in various other spots around the region, including Twisted Olive, the House and Barn and Roar. He’s assisted by co-owner and chef Noah Nakkarawaat Krueawang, whose background is in law but whose enthusiasms brought him to cooking and restaurants. He’s engaged to Chef Paul’s sister Natcha Rojrattana, who is studying to become a nurse practitioner. There’s an easy conviviality and warmth among them that’s common in workplaces comprised of family members— and friends-as-family, too. You may have wondered about the name; it holds a lot

of power and symbolism. Kang means bell in Thailand. “We would like to use the words ‘la kang’ to symbolize when people get together, exchange food and have lunch together, it’s just like we are all family,” says Nikki. She goes on to explain that la kang is the golden bell that’s rung in Thailand at temples. “In Buddhism, the ringing of a bell carries a spiritual meaning. It’s our tradition and serves as a prayer timetable for monks,” she says. People in the community would go to the temple and offer food to the monks. “The ringing of a bell brings people in the community to gather together to do the good things,” she says. In the West, we might associate the ringing of a bell as an announcement that dinner is ready, and at La Kang, that’s an easy association to make, too. At both of the locations, they ring a bell to announce that food is ready. If you love Thai food and/ or noodles, you might ring the bell a lot when you’re here,

depending on how many dishes you order, and how many people you’re dining with, and their appetite for culinary exploration. Start with some dumplings, which combine ground shrimp, chicken and crab. Consider the green papaya salad, with smoked shrimp, shredded green papaya, a smattering of veggies and a chili-lime dressing. That ought to get you started. Or go straight to noodles.

La Kang opts for the highest quality possible and makes as much as possible from scratch, including upwards of 45 pounds of egg noodles per week. The jasmine rice, for example, is all 100 percent jasmine rice—it’s not uncommon for restaurants to cut corners and costs there. Real jasmine rice is unmistakable, though—it is incredibly aromatic and delicately flavorful. When you’re making a fried rice dish, such as the one they offer with jumbo lump crab and a bracingly fresh Thai take on chimichurri, the rice better be worthy of its star treatment. (It is.) Jasmine rice is also featured prominently in a signature dish I couldn’t get enough of, the pad krapow ground chicken.

Imagine ground chicken with onion, basil, garlic and chili, topped with a fried egg and crispy basil. It’s so delicious, it’s not clear whether it’s best for breakfast, lunch or dinner. (It feels like a really good hairof-the-dog meal; take home leftovers and decide for yourself.) “This is a popular take on street food in Thailand,” says Chef Paul. Anything you order from the noodle bar menu is made right in front of your eyes while you wait and after you’ve specified your heat level, where applicable. (All the other menu items come out of the small kitchen in the back, which is obscured from view.) The ba mii pu, crabmeat noodle, arrives at your table under a domed lid that traps the smoke from the pork, and makes for good dinner theatrics. It’s recommended you order it brothless—and no, that’s not a mistake. The handmade egg noodles would not stand up to sitting in broth but don’t worry, the dish is plenty flavorful,

served with roasted honey pork, crab meat and scallion. La Kang also prides itself on its Sukhothai pork noodles soup, which features thin rice noodles, braised pork rib and minced pork, along with long beans, bean sprouts and peanuts. But perhaps the biggest surprise is the short ribs khao soi, which prove that you certainly can and should eat short ribs all year round, regardless of weather. It’s a little sweet, a little spicy and totally filling, with coconut braised short ribs, egg noodles in a Chiang Maistyle yellow curry along with pickled cabbage, cilantro and crispy egg noodles—and raw red onion (that’s not a mistake— swirl it in, it works). The food is made with a strong attention to detail and quality, which you can easily see and taste. It’s another thing altogether, however, to feel that distinction. At La Kang, you can feel the difference, too. “We cook with our soul,” says Chef Paul.

What to Order Consider the pad krapow. It’s a signature dish made with ground chicken, onion, basil, garlic and chili. Notch Modern Kitchen and Bar has introduced its draft cocktail of the season: the Lilac & Enjoy, which will be batched in a keg and carbonated so you can enjoy it all summer long. “When approaching our draft cocktails, I always look to create a complex, easy-drinking spritzer-style drink,” says beverage director Neil Heimsoth. The Lilac & Enjoy uses Salers Gentian Apéritif, St. George Raspberry Brandy (which Notch infuses with butterfly pea tea for color), yuzu sake for some soft acidity, Moscato d’Asti, which Heimsoth says rounds the cocktail out with a little elderflower sweetness, and club soda to bring the bubbly. “Salers has always paired well with raspberry, so once I decided to go that route, the other pieces really fell into place to create a beautiful, well-balanced floral crusher.” This cocktail promises notes of raspberry, elderflower, citrus and gentian, making it the perfect sipper for warm weather. “The drink is a floral bubbly riff totally geared for summer,” says Heimsoth. For this reason, he recommends locals pair it with Notch’s fresh fare like the pan-seared salmon or Asian fondue.
