Mr. Walson was an employee of PP&L and along with his wife Margaret, he also owned an electric appliance store in Mahanoy City, where they began selling television sets in 1947. Residents found it impossible to receive the three Philadelphia network stations because of the mountains that surround the city. Mr. Walson erected an antenna tower on a nearby mountain and in searching for a way to increase TV sales, ran a line from that antenna site to his store. By extending the line and the signal to individual homes, Walson created the nation’s first cable television system.

In fall 2022, Easton Wine Project (EWP) officially launched its Wine Wagon, serving more than 20 different wines by the bottle or glass as well as wine sangrias, wine slushies and wine cocktails.
“The inspiration for the Wine Wagon was twofold,” says EWP Executive Director Amanda Thatcher. “We love festivals and sharing our products with the community. The Wine Wagon allows us to do this with more efficiency and ease. The second inspiration was COVID and the rise of outdoor events and parties.” Thatcher says with the Wine Wagon, EWP is able to help families and friends come together and celebrate outdoors in parks, backyards, farms and pavilions. The Wine Wagon has packages that include beer and liquor, and they can even offer lite fare like charcuterie cups, popcorn and fruit kabobs.

“We’ve been thinking of opening a smoothie and juice bar since we were in Allentown,” says Hummus House owner Albert Hechme, “but the space never really gave us the opportunity, even though we tried. It just wasn’t enough space to make it work.” Hechme says when they built the new Hummus House restaurant in Bethlehem, the potential for a smoothie and juice bar was taken into consideration. “It took a while to open because equipment was backordered, but we are up and running now and ready to serve the community with healthy food and drinks.” Similar to their food menu, new drinks will be added over time. 610.434.8800

The Farm & Table opened its doors in Nazareth in June 2022, offering breakfast, lunch, dinner and bowling—that’s right, bowling! The Farm & Table is BYOB and allows locals to reserve a lane for up to six people for $27.99 per hour on Friday and Saturday evenings. There’s also an arcade, featuring a pool table and electronic darts. The lunch and dinner menu changes but includes items like burgers, sandwiches and wraps. In 2017, Shields became the first person of color to be a shareholder at FLB. “There is tremendous pressure and responsibility when you are the first or only of anything,” she says. “The successes and failures of the first and only of anything tend to be unfairly amplified. I am cognizant of and feel responsible for how I show up in spaces. Maraleen Shields says that growing up, what she knew of law came from watching television and movies in the ’80s and ’90s. “Clair Huxtable and Maxine Shaw seemed like the type of women I would like to be,” she says. When she joined the mock trial team in high school, Shields says she was
But Shields does not have any specific recollection of deciding to pursue law. “After nearly 20 years of practicing law, I realize that the trick is not so much deciding to pursue law, but continuing to choose law, which can be incredibly demanding,” she says. “I am still choosing the law, but my understanding of what that means has broadened considerably since I was a kid. I’ve learned quite a bit about defining success for myself.”
Shields began her career in Philadelphia at Saul Ewing and Reed Smith, which she calls two excellent large law firms. While Shields says she could not have asked for more from a firm in terms of interesting, high stakes litigation and opportunities for growth, she knew her career in Philadelphia would be short lived. “After I settled in the Lehigh Valley,

Owner Lauren Vargas says the five-year plan for Nowhere Coffee Co. always included two or three stores throughout the Valley, but they never thought it would happen so quickly. After opening a first location in Allentown in February 2022, Nowhere Coffee Co. opened its second location in Emmaus in August 2022. “A move-in-ready space was opening in the heart of Emmaus,” says Vargas. “Chad and Heather Balliet, owners of South Mountain Cycle, share our passion for coffee, community and customer service. They’ve owned and operated coffee shops of their own and have established themselves and South Mountain Cycle as an active part of the Emmaus community.” Vargas says the cafe had the Nowhere feel, boasting a huge fireplace and picturesque windows overlooking Main Street. She says they are certainly feeling the love from the Emmaus community and are excited to offer outside seating at this location.

Zeke and Elaine Zelker launched Zekraft as a meal delivery service during the pandemic, prioritizing highquality, locally sourced ingredients. Now, they’re about to open their third brick-and-mortar cafe location in the Valley.
Tell us about the journey to launching Zekraft and how it’s evolved to cafe locations across the Valley. We started Zekraft during the pandemic by offering highquality meals using locally sourced ingredients for home meal delivery, which we still do. We tested the market by offering our salads, soups and desserts at the Easton Farmers’ Market and, thankfully, we were well received. We decided to open our first location in the middle of the Valley, choosing Bethlehem. At our cafes, we do everything from scratch—the sauces and syrups for our organic fair-trade coffee, chai, pastry, tartines, salads and more.
Our third location will be in Allentown off of Cedar Crest Boulevard across from Lehigh Valley Health Network. We’re building our central kitchen there and we’ll have a liquor license. We’re experimenting with some cool ideas for our drink offerings. This location is where we’ll try out new menu items.
What are some fan-favorite food and drink offerings? Some of the crowd favorites have been our smoked turkey, brie and spicy raspberry tartine, the Thai peanut chicken salad, our lavender chai and our pop tarts (our flavors change weekly based on what we can get from local farmers).
Locals can expect a third location coming this fall; tell us about that!
We love working with farmers and using their produce in our salads and promoting them. We love our customers and the camaraderie at the markets. We get direct response on what’s working and what’s not.
Following your first location in Southside Bethlehem, what inspired you to open another location at the Silk Mill? Elaine and I were the first tenants at Silk where we opened our studios, which we still have. We love the community there and love how VM transformed the place. Gretchen and Mark from VM asked us if we would
be interested in a space that was coming available and we jumped on it.

The processed foods we want to avoid have vitamins, minerals, fiber and water stripped out or diminished, and sugar, preservatives and unhealthy fats added in.
Get curious about what you’re eating. Start to read the labels at the grocery store and in your own fridge and pantry. Aiming for products with five or fewer ingredients simplifies things. The good news is that options abound. “If you have a snack bar with refined grains and corn syrups,” Orth says, “there are so many other bars at the store you can swap in.”

Orth’s enemy number one is refined sugar. It’s addictive, delicious and associated with chronic and debilitating illnesses and suppression of the immune system. “The WHO recommends less than 25 grams a day,” Orth says, “but the average adult consumes almost four times that.” If you can manage just one tweak, make it less of the highly seductive sugar, replacing it with whole-food sweeteners like dates, applesauce, honey, stevia or monk fruit.

The best food is fresh and local from farmers’ markets or a CSA. “The nutritional value is higher than food trucked across the country or world,” Orth says. But shopping local can be tough when it requires two- or three- or four-stop shopping. Some CSAs will bring farm food straight to your door, like Willow Haven based in New Tripoli. And if you need your supermarket’s precut veg delivered to feel like you have time for a healthy option, getSupplyit! your home with intention by planning meals ahead of time or meal prepping on weekends. “There’s so much knowledge on the internet,” Orth reminds us. Any recipe, ingredient or technique has tutorials aplenty online. Tools like a CrockPot, pressure cooker and food processor can also vastly speed up or take the work out of cooking, so get equipped.

The First Thing About You is neither a memoir nor an autobiography, author Chaz Hayden points out. But there are obvious parallels between his life and the world he’s dreamed up for his protagonist, Harris Jacobus. The most obvious commonality is they both have spinal muscular atrophy (SMA), a form of muscular dystrophy that causes muscle weakness and can make it difficult to walk, speak, swallow and breathe. They both grapple with the challenges of getting around in a wheelchair in a society that often treats accessibility as an afterthought.

Even though Hayden wasn’t interested in writing about himself, as he began to craft the story a few years ago, he realized the perspective he could offer was a unique one: “[I thought] maybe I can take some of the experiences I’ve had, the people that have been in my life and just fictionalize it to show people what it’s like to live with a disability, what it’s like to be a teenager with a Haydendisability.”is26years old, and just that fact alone is somewhat miraculous. The prognosis presented to his parents when he was a two-month-old infant was grim: “The doctor who diagnosed me told my mom, ‘He’s not going to live past a year old. Take him home, cherish the time you have.’” Long story short: the doctor was wrong. Hayden got his first motorized wheelchair when he was two years old and has been on the move ever since. Or, as he puts it in his online bio: “I went full throttle in a split second.”That’s not to say it’s been easy for Hayden or for his parents, Alan and Sheri. Hayden says his mother and father have been his most vocal advocates from day one, always pushing to ensure he received the best care and seeing him through countless doctor appointments, surgeries, hospital stays and physical therapy sessions. Sheri, a teacher, had taken a step back from her career when Hayden’s older brother, Jacob, was born; she became a fulltime caretaker to Hayden when he came along four years later.

In 2019, Hayden got the idea for the book that would become The First Thing About You, which was released in September by Candlewick Press. It’s a Young Adult novel about a 15-year-old boy with SMA who is looking for a fresh start when his family moves from California to New Jersey. He’s determined to carve out a place for himself instead of being relegated to the sidelines as an outsider in a wheelchair. And, like a lot of typical teenagers, he has a crush. But when he enlists the help of his young, attractive new nurse to help him make some headway in that department, things don’t go as planned.

Hayden describes the many hardships he’s encountered as puzzles that he’s had the pleasure of solving. One of those puzzles presented itself as he prepared to enter high school in northern New Jersey. Hayden knew the school lacked the technology he would need to be an independent student. But then he heard about a community college program that allowed students to take high school and college classes simultaneously. Another long story short: Hayden started college at the age of 15, and ultimately graduated from the University of Arizona three years later with a degree in finance. He then moved back home to figure out his next
move. “I always felt like I wanted to do something helpful, but I never knew what that was,” says Hayden.
It was around that time that Hayden began to write. He started working on a novel that he freely admits wasn’t very good. “I was 18 at the time,” he says. “I had no idea what I was doing.” But he kept writing, even after he found work in the financial industry. He started attending writing workshops and critique groups in search of feedback.
Hayden, who moved to Easton with his family last year, still works in finance. But he has no doubt that, in coming into his own as an author, he’s found his calling. “When I’m writing is the only time I feel like my real, true authentic self,” Hayden says. “This is my purpose.” Lucky for him, he’s good at it. Kirkus Reviews called The First Thing About You “a witty, candid take on love, friendship, belonging and disability.” John Corey Whaley, author of National Book Award Finalist Noggin , said Hayden “writes with the humor and heart of a seasoned storyteller.” Earlier this year, BuzzFeed included the book on its list of the most highly anticipated YA titles of 2022.Hayden has already finished the first draft of his next book. He says it’s not a

and honesty of emotion that seem to spring naturally from its plot lines. “When you’re a teen and something happens, it truly feels like the end of the world,” he says. “I love that vulnerability that teenagers have. Kids and young people care so much.”

“This is something that’s really personal to me to want to put out into the world,” Hayden says. One of his priorities is transcending stereotypes about people who have a disability, and how they’re portrayed on the page and screen. “Oftentimes [the plot] is just an aside, it’s never really developed,” says Hayden. “Or you feel a lot of pity for the person that’s disabled.” The way Hayden sees it—and the way he hopes his readers see it—Harris Jacobus has the same hopes, dreams and fears as his peers. He just happens to be in a wheelchair. “The feelings and themes in it are something on a human level we all can understand, whether you have a disability or not,”
He hopes to parlay that positivity into a mentorship role. He has a message of hope for other young people who might be feeling discouraged after the diagnosis of a disability: “You can go to college. You can find a job. This is all realistic now in this day and age.”

hungering for more Hayden in the meantime, he maintains a regular blog on spinalmuscularatrophy.net (with links to each entry on his own website, chazhayden.com) where he waxes on everything practical and personal when it comes to living with SMA. In the latter category, he writes about dealing with the worsening progression of the disease and engaging in a protracted battle with his insurance company to get coverage for a particular drug, which he ultimately had to stop taking. (“Our pharmaceutical and insurance system is broken. I think we all know that, though,” he writes.) He has low moments, just like everyone else. But Hayden says he believes he owes it to his parents—his biggest supporters and allies who sacrificed so much for him—to keep pushing forward. “They’ve shown me that I can do anything, regardless of my disability,” says Hayden.

Although the family’s Emmaus-based publishing business was acquired by Hearst Communications several years ago, the Rodale Institute continues to thrive. “Essentially, we are the university of organic farming for the world,” says Chief Impact Officer Jeff Tkach. The institute is continuing the work of founder J.I. Rodale, considered by many to be the father of the modern organic farming movement. Today, the massive, 386-acre farm outside Kutztown focuses on research, education and training. “We’re on a mission to fix our broken food system,” Tkach says.

So, What’ s the Big Deal about Organic, Anyway?
There’s still a lot to learn, and that’s why the research and instruction happening locally at the Rodale Institute and at its satellite resource centers across the country are so important. Pryor says one current area of study focuses on the nutrient density of organic crops versus those grown with conventional farming methods; another is analyzing carbon sequestration: whether the tilling of soil should be reduced or eliminated to prevent carbon dioxide that’s pulled into the soil from being re-released into the atmosphere. “There’s more living organisms in a teaspoon of soil than there are humans on the earth,” Pryor says. “If we don’t kill them off, they can do all that work and keep the carbon there.”

Maybe you’ve seen products at the grocery store bearing the “USDA Organic” label and wondered whether it’s worth spending the extra money. The Rodale Institute believes that healthy soil leads to healthy plants and healthy people. Quite simply, organic farming means growing crops using biology instead of chemistry, says Dave Pryor, the Rodale Institute’s director of marketing and communications. It’s a laborintensive process, and there’s a three-year waiting period from the time a farmer last uses chemicals or GMO seed products and when they can be certified as an organic farmer. But the long-term benefits for the farmer, the soil and the environment are well worth the investment, Pryor says, and interest in going organic remains high: “We are getting hundreds of new farmers coming on every year.” In July, the 2022 Organic Field Day event at the Rodale farm drew about 500 farmers from around theRegenerativeworld. Organic Certification (ROC) raises the bar even higher. According to the Rodale Institute, Bob Rodale—son of J.I., and leader of the company until his untimely death in 1990— coined the term “regenerative organic” to describe a holistic approach to farming. We want to try and flip that and get more women in.” The track is currently in the midst of a “50/50 in 50” campaign; it’s trying to achieve 50 percent female participation by its 50th anniversary in 2025. “Women’s Wednesdays” and “Women’s Weekends” events—led by former World and Pan-Am Champion Kim Geist—are two ways VPCC is chasing after that goal.

If you had to name a specific year for when the bicycling/ farming relationship was cemented in the region, you can’t go wrong with 1975. That’s when the Valley Preferred Cycling

After Rodale oversaw the velodrome’s completion, he donated it to the county, in return for a promise that the county would continue to promote cycling in the community. “We’ve been pretty much putting on racing and programming here since then,” says Maura Beuttel, the cycling center’s event marketing coordinator.

Both Tkach and Pryor are cyclists who toe the line between recreational and competitive riding, and Buettel, a former participant in VPCC’s Air Products Youth Cycling Programs, says she’s been enjoying more road riding as of late. All three say the region is unique in that all cyclists, no matter which terrain they prefer—track, road, trail, gravel or maybe a combination of all four—will find their happy place here. In fact, Tkach, who spent some time living in Colorado, says even the Centennial State has nothing on the Lehigh Valley when it comes to biking. “People think about Boulder as the

Cyclists who are new to the area or new to the sport and looking for a like-minded community have options. The Lehigh Wheelmen Association ( lehighwheelmen.org) bills itself as the region’s premier cycling organization. It offers a full schedule of road and offroad rides for all abilities. And yes, wheelwomen are welcome, too. Trail riders will fit right in with the Valley Mountain Bikers ( bikevmb.com). The Allentown farmers market at the Fairgrounds has been a city staple since 1955. Since it’s all indoors, you can peruse the goodies offered by the 60-plus vendors at your leisure, no matter the weather. The market is open Thursdays through Saturdays.

According to Discover Lehigh Valley, the region is home to more than a dozen farmers markets, including the Trexlertown Farmers' Market, which sets up shop right at the Valley Preferred Cycling Center. It’s open every Saturday from May through October, and every first and third Saturday in the winter season (November through April).
Easton’s farmers market is celebrating its 270th anniversary this year and can boast of being the nation’s oldest continuously operating open-air market. Vendors are spread across Scott Park from May through December; the market moves to Northampton Street for the winter season.
The Lehigh Valley also hosts several charity rides every year. Pryor himself organizes one of them, a spr ingtime event called “Monkey Knife Fight.” “We ride out of Emmaus down south and find the hardest hills that we can, and then we ride back and then we have a beer afterwards,” he says. Preheat your oven to 300 degrees. Whisk together the coconut oil (in liquid form*), maple syrup and vanilla extract in a medium-sized mixing bowl.
Add the wet mixture to the dry. Combine all ingredients by stirring well with a wooden spoon. Line a baking sheet and add the granola mix. Spread the ingredients evenly across the baking sheet. Bake for about 25–28 minutes until golden. Stir the mix about halfway through baking (13–15 minutes). Remove from heat, but leave on the baking sheet until cool. The granola will crisp as it cools.
Granola can be stored for up to two weeks in an airtight container.

And that special thing is a cafe whose entire menu is completely absent of gluten and dairy, the first of its kind in the Lehigh Valley. You might be reading and think, oh, this doesn’t apply to me, so I can stop reading. (Please, keep going—the food is great regardless of what it’s “missing.”) It might seem niche, or like it’s not that big of a deal, but people have been going out of their way to eat at Indigo 52 since it opened in February 2022. It happened during this interview.Foodallergies and intolerances are increasingly diagnosed these days and while one might not impact you, consider for a moment the family member, coworker or good friend who can’t easily digest gluten or dairy. Imagine that something you might take for granted—going out to eat and ordering anything off the menu and enjoying it without getting sick—is an impossibility. For many, it’s necessary to engage in extensive behindthe-scenes research, phone calls and conversations before making a reservation.

“I want to do something purposeful. I want to give people a meal they are happy with and the experience they deserve,” says owner Felicia Rocchino.So,the fact that a restaurant takes your comfort (digestive and otherwise) to heart by putting in place all the necessary precautions and protocols? And the fact that it’s not just one item on the menu but the entire menu? Well, that’s pretty life-changing. It’s borne out of Rocchino’s own journey of discovery with celiac disease and the subsequent

52 is a cozy and sweet spot with a capacity of a couple of dozen diners or so. Rocchino’s a Bethlehem native and food and retail consultant who was looking for the right space for several years before this one became available. It’s a dream come true for her—and possibly for others, too.
“People can come here with their entire family, and if you can’t have gluten, the entire menu is something you can consider. I want you to be able to take your grandfather here,” she

In talking with Rocchino, it’s clear she has put extensive thought into every item on the menu, so there is a balance of offerings but that the items play well together. “I take into consideration other aspects across the menu, whether it’s coconut, soy, or maybe how many nightshades or corn are on the menu,” she explains. (Nightshades can be difficult to tolerate for some people with autoimmune issues.)

need to give up dairy, too. And, naturally, the frustration of dining out without 100 percent knowing what is in your food.
“Gluten is in everything, and even if you are taking every necessary precaution, people can still get sick,” she says. In other words, it’s not as simple as just asking for a sandwich with gluten-free bread, as gluten is often also in sauces and condiments, and when it’s airborne (think about how flour makes a mess), it’s very easy to unknowingly come into contact with
example. However, the menu is predominantly plant-based in its philosophy and execution, and everything is made from scratch. Ingredients are sourced locally, as much as possible; the microgreens come from 3 Willows Farm, just a few blocks away. “They just walk them over,” she says.
Indigo 52 makes a little bit of everything; all of it is designed to reduce as much negative dietary impact as possible. It steers clear of foods that can be reactive and/or inflammatory—there’s also no shellfish or peanuts. Sauces are instead made from substitutes like cashew cream, but those are real eggs in the cafe’s Farmers’ Frittata and the Eggs Benedict breakfast, not vegan ones. Soy and sugar are deemphasized. It’s not strictly a vegan cafe, but the proteins are ethically sourced as much as possible: wild-caught salmon, grass-fed beef and antibioticfree chicken and bacon, for

INSIDEDISH stuffed French toast (cashew cream, seasonal jam and fresh fruit) as it’s a favorite. Standout appetizers include the cauliflower “wings,” served with a mild, buffalo or maple garlic sauce, and the sweet potato mini sampler. They’re little sweet potato “toasts” loaded with toppings that include house-made hummus, mango salsa, bruschetta and smashed avocado. “That’s available with different veggies based on the season,” she says.
“People come in and are sitting among people who share some of the same issues, and you can really feel validated when talking to other people about your experiences. It’s bigger than just eating my food. I’m creating a community for safe, healthy and delicious meals,” she says.

Mac and cheese is comfort food that those with dairy and gluten issues often very much miss, and Rocchino’s version is a gluten-free pasta with cauliflower-based, vegan asiago-style “cheese,” along with sundried tomatoes. Some items are designed for seasonal ingredients, too, such as the Buddha Bowl, with lots of fresh veggies over greens with rice and quinoa and a ginger sesame oil. Crab cakes take a vegan form (thanks to hearts of palm).You’llfind dessert here (people love the Zebra Cake but one of the options as of this writing was a raw carrot cake). Everything Rocchino puts on the menu is carefully considered. So, for example, there’s a raw carrot cake, but then there’s also some doingsomethingstrawberrieschocolate-coveredifyouwantalittlesimpler.Ultimately,whatshe’sisopeningpeople’seyes

“I had a very clear vision about what Indigo 52 would be. The idea is to open your mind to look at a different way of eating and your health,” she explains.
And the community-building part comes naturally—she’s also behind the Lehigh Valley Gluten-Free Facebook, too. “I’m loud and proud about this.” The restaurant, of course, is its own burgeoning community. She says people “get very emotional about this food. It’s not even in your mind that you could go somewhere and eat everything on the menu.” In that way, what Rocchino is doing feels very much like a soul mission.

What to Order Indigo 52 is developing a bit of a reputation for its French toast, be cause when you can’t have gluten and a restaurant makes a delicious French toast, that’s noteworthy. Try their stir fry with ginger and either chicken or cauliflower “chicken.” There’s a surprising side dish that people are digging, and that’s the pineapple Brussels sprouts; they’re roasted and tossed in a pineapple red pepper flake reduction. Salmon is always a winner; Indigo’s is served with mango salsa, charred cauliflower and that pineapple red pepper flake reduction. Save room for the Zebra Cake, a black-andwhite, double-stacked brownie filled with cashew cream cheese.
