LOOKING BACK As an editor, one of my favorite ways to kick off a new year is by looking back at all of the stories we told in the one prior. When I think about 2023, I’m really proud of all the people and places we featured in the pages of Lehigh Valley Style. It was the year we celebrated new restaurants like Kabinett Wine Bar & Garden, The Vineyard di Norma, Steak & Steel and The Wilbur. (Have you dined at all four yet?) We toured local home renovations and went inside The Dery Mansion. We got to know locals like West End Allentown fashion designer Veena Chauhan (who graced our March cover) and Hagai Feiner, president of Easton’s boutique real estate management company Platform Five. In August, we sat down with legendary celebrity stylist Kate Young, and Style photographer Alison Conklin shared the emotional story of her heart transplant. We welcomed new businesses to the Valley like Toasted & Roasted, Belleville Market and Toastique. We talked to our region’s experts, shared local chef recipes, celebrated winning businesses (and pets!) and honored some of the Valley’s most influential men and women. We’re so happy to have you,

The Waterfront ushers in a new chapter of experiences in Allentown.

In October, Fox Bakery opened its doors in Easton. “I had a dream to own a small bakery where I could bring my fresh and innovative pastry ideas to not only my family but to all the people,” says pastry chef Olga Fox. “We offer European desserts and pastry. Our product is kind of different from what people are used to.” She says customers are loving their macarons, mini cakes and famous tarts. The pavlova dessert is also a hit! This winter, keep an eye out for seasonal macaron flavors and mousse cakes as well as expanded puff pastry offerings. Fox says all the desserts are made from scratch and with love; they can be enjoyed in her Easton café or ordered for delivery.

WHERE LIFE MEETS STYLE SIX FIFTEEN WATERFRONT

Plans to redevelop the Lehigh Structural Steel site into a 29-acre mixed-use campus began in 2012, and in March 2023 the six-story office building officially opened to the public. “The Waterfront is a vibrant new destination designed to harmonize work and life experiences in a beautiful new environment,” says Zac Jaindl, president and CEO of Jaindl Enterprises. Six Fifteen Waterfront is The Waterfront’s first completed building on the campus, offering office space as well as waterfront restaurant and retail space. “Balconies on each floor offer sweeping views of the Lehigh River, the 280-seat amphitheater and the River Walk,” explains Jaindl. “The River Walk stretches more than a half mile and is made up of intertwining, garden-lined pathways that will unite the outdoor amenities with first-floor dining opportunities.” The next building to be constructed will be a residential building called River House, offering 203 apartment units including studios and one- and two-bedrooms. “The Waterfront’s proximity to the Lehigh River is what makes our project unique over other developments in the area and a real draw for anyone looking for a green oasis within the city,” he says. “We’re offering a truly unique opportunity to live, work and experience life on the water just minutes from all the action in Center City.”

Michele Jurkowski first opened The 330 Thrift in a 220-square-foot location in October 2022. “Within only eight months we started outgrowing the space,” says Jurkowski. “Our client base was increasing and we knew we needed to offer them more options.” When she drove by a space available on West Broad Street in Bethlehem—just three blocks from the vibrant downtown—she knew it would be the perfect next step. Allentown’s Pressed Bouquet Shop recently announced an exciting rebrand, which includes a move to Platform Five in Downtown Easton. “Our product lines have developed to include a variety of offerings for clients to preserve their flowers, but we have so much more we want to be able to deliver on, not just pressing bouquets,” says founder, owner and CEO Amelia Paradysz. The Downtown Allentown Market’s Ciao! Sandwich Shoppe recently rebranded as Chez’s Delicatessen. Owneroperator Isaac Csezmadia, who is also a part owner of Ciao! in Downtown Easton, says the new family-run deli is something he and his cousin MariaRosa Piazza aspired to pre-pandemic. “When the opportunity was right, we made the move to go into business together,” he explains. Chez’s Delicatessen offers premium Boar’s Head cold cuts and cheeses served in a New York City-style deli. Csezmadia says their heroes are a must-try, calling number 19, The Pesci, made with homemade chicken cutlets, fresh mozzarella, Boar’s Head prosciutto, roasted red peppers, imported balsamic glaze and homemade pesto, their customer favorite. Chez’s also serves avocado toast, salads, rice balls, charcuterie boards and, even, a sandwich served on a whole pickle (pictured here). Save room for desserts like cannoli, mini New York cheesecakes, truffle brownies and hummus. “The dessert hummus tastes like a fresh rich frosting,” says Csezmadia. “Stop in for a sample!” This winter, they’re introducing an apple pie hummus.

Andrea, tell us about the journey to opening Casa 401! I was born and raised in Colombia and moved to the United States 18 years ago. I focused my studies on the visual arts and art education field. My interest in entrepreneurship and Latin American artisans and makers became more evident after I helped found and manage a successful e-commerce and brickand-mortar business in Easton for several years. I am passionate about photography, education and Latin American cultural heritage. I focus my efforts

on bringing awareness to the diverse talents of other creatives, makers and entrepreneurs from my native country. Casa 401 was born as an initiative to present highquality pieces from emerging brands and independent designers from Colombia and Latin America to the Lehigh Valley through a unique shopping experience. Explain the meaning behind the business’s name. The name Casa 401 is full of meaning. My whole childhood in Colombia I lived in apartment 410. Then, when I moved to

Downtown Easton, I lived in apartment building 401 #4–1. The business phone number has 401 in it. Under the astrology scope, 401 is also full of mystical astrological meaning: associated with the first house (also known as the ascendant) that represents the individual's self-image, personality and physical appearance, and the fourth house, on the other hand, that relates to the home, family and emotional foundations, as well as one's inner sense of security and stability. The name “Casa” is a representation of not only my heritage, my country and my home, but also it is a direct

connection with the values for which I stand: to bring and support small businesses that have made an honest and conscious decision to help reduce the environmental impact of their brands for a better future for all, for the world: everyone’s “casa” at last. Generally speaking, what can shoppers expect to find in store? Casa 401 is a type of retail store that is designed to offer customers a unique and immersive shopping experience. Unlike traditional retail stores, which typically focus on selling a specific type of product, Casa 401 is characterized by a carefully curated selection of items from Colombian brands that reflect the importance of ethical consumerism and slow fashion and are hard to find anywhere else. Our store offers a modern interior design, with carefully arranged displays that showcase the products in a way that emphasizes their quality, craftsmanship and uniqueness. This includes everything from men’s and women’s clothing, to accessories, footwear, home goods and personal care. More specifically, tell us about the products! Currently, we are working with approximately 20 different independent designers, starting entrepreneurs and everything in between. We have clothing made out of hemp, modal, silk, linen and repurposed cotton, and shoes and accessories made out of recycled plastic fibers (PET), repurposed rubber, raw canvas, wooden utensils, 3-D DIY paper sculptures, peltre cups and spoons, hand-painted raw denim pants, all-natural ointments packaged in

biodegradable orange peel, handmade keychains, stunning underwear and more! We offer a carefully curated selection of pieces that have a story to tell, often one of a kind, made in small batches with locally sourced materials, multifunctional, eco-friendly, ethically sourced or handcrafted. What are some of the best sellers? Over the summer we sold out twice of our foldable fans, ointments, men’s shirts, multi-way dresses and wooden spoons. Customers also love the crocheted keychains, animal stickers and paper sculptures. Casa 401 is home to Queso at Casa, a one-of-a-kind dining experience. Tell us about how the two coexist! Casa 401 and Queso at Casa are often described as unique and different from every other shop in the area. We want to promote ethical consumerism and that means creating a welcoming shop in which all senses are integrated. At Queso at Casa you will get the great smell of melted cheese, sweet crêpes and coffee brewing. At Casa 401 you will engage in unique displays, sweet aromas from candles and unique racks with one-of-akind products. We designed the shop ourselves so you will find many unique and clever ways in which we used materials such as vintage windows or wooden cutting boards to decorate.

What goals do you have for Casa 401? I hope to continue to expand the number of designers we work with and that people who visit us continue to fall in love and support ethical and honest businesses. I believe in building meaningful connections between our customers and the objects, so my goal is to continue to highlight stories of the dedication, passion and expertise that go into each piece. Are there any upcoming events or offerings that you’re looking forward to this winter? We are excited to bring our winter collections, which will offer stunning embroidered pieces as well as unisex ponchos, pashminas and hand-stamped cotton dresses and pants. Here’s her advice on using organization to get things done and enjoy your downtime in the new year.

PRIORITIZE YOUR HAPPINESS “I look at the new year differently than most people,” Albright says. “Not as a time for resolutions but as a time to do a life reset and evaluate what makes you happy.” No matter what it is you want more of in your life, organization can help. Take stock of what’s working in your life. Where can you decrease stress and increase free time? For example, maybe you rush around in the morning because of a messy closet. Maybe you’re constantly digging around for important documents, or watching the evening escape you as it takes forever to make dinner. Maybe you’re depriving yourself of hosting guests because your living room is a mess.

Clutter comes into play when you’re trying to create new habits and more leisure time. “You want to be able to find things in 30 seconds or less,” Albright says. “Otherwise that’s time you’ll never get back.” To create a lifestyle with less scrambling, or to be ready for the gym that you’re definitely going to start going to every morning, take a little time before bed to make sure your clothes are laid out and your gym bag is ready for deployment. This takes the power out of any bleary morning hesitation over what comes next. “Before you leave the office for the day,” Albright advises, “write down the most important things to do tomorrow. It’s easier to remember your to-dos at the end of the day than the next morning.” For to-do lists, it’s helpful to circle up to three most important items to take the guesswork out of where to start.

One of the most powerful pieces of advice Albright offers is to stay on top of the unconscious formation of piles around the house. “Once you start a pile,” she says, “you don’t notice that it grows.” An innocently small pile can easily take over a dining room table until it’s standing in the way of Thanksgiving dinner. To prevent this, everything needs to have a place and be put there right away. One organizational system particularly helpful for this is the command center. “I always say you should have a command center that runs the home,” Albright says. This is where keys, purse and things you’re planning to take with you can live, where mail and important papers await your attention, and where your phone can charge. Albright has a system of drawers and cubbies inside her coat closet to accommodate these common countertop accumulators, and you can devise a system wherever it makes sense to you.

TECHNOLOGY In this day and age, Albright’s favorite decluttering tool is technology, even while it’s another target for organization. She sings the praises of her Notes app as well as AI tools like ChatGPT to quickly produce the text for a thank you note or even to devise meal prep plans. Don’t use your email inbox as a “file system.” Create an archive folder on your computer for each year, such as “Archive 2024.” Here, put bank statements and financial documents that will become obsolete. When the time is right, purge with a click of a button. Keeping relevant file systems on your hard drive might seem onerous, but consider the calamity if you switch email providers and it’s no longer easy to find receipts and correspondence that were sitting in your inbox.

It’s important to have idle time to think, process and grow.

GROWTH TIME Don’t lose sight of what all these preparations and habits are for. “I think of my grandmother,” Albright says, “when she was young, she didn’t have an automated washer or dryer. She cooked all meals at home. If we told her we’d have all these things automated she’d ask, ‘What are you doing with all your free time?’” She might be disappointed to hear that some of us feel compelled to cram it with even more productivity. “It’s important to have idle time to think, process and grow,” Albright says. “I call it Growth Time.” Idle time lets the brain reflect and connect the dots in our lives. It’s time to ask whether the things we’re doing are making us happy, and identify what we can change. Or, to simply enjoy being alive without accomplishing anything!

Sex and relationship therapist Jonathan Asayag, LCSW, CAADC, normally shares his expertise with clients at Renew Wellness & Psychotherapy, LLC, in Easton’s Simon Silk Mill, but he’s letting readers in on some of his helpful insight here. Asayag talks love languages, bonding rituals, self-care and more below.

How would you describe your personal philosophy when it comes to overall wellness? I emphasize a multidimensional, holistic approach, promoting physical, mental, intimate and emotional well-being. I prioritize setting clear boundaries to maintain a healthy work-life balance. I am also very mindful of challenging myself and trying new things just as I would encourage my clients to do, as well. Tell us about the work that you do as a sex and relationship therapist. I work with couples and individuals to help them enhance their intimacy, connection and pleasure. I also work with people who choose to open up their relationship through ethical non-monogamy and/or polyamory. I use modern and nuanced therapeutic approaches to help my clients achieve their goals.

What do you think are some of the most common hurdles that couples run into in a relationship? How to manage discrepancies, whether it is communication, love languages, attachment styles or libido. We are all wired differently and how we manage those discrepancies is essentially at the core of the challenges I see in my practice. What is your advice for enhancing connection in a relationship? Setting intentional time to talk to each other. Without interruptions. It sounds cliché but scheduling a weekly checkin time, whether through sitting down for a cup of coffee or going for a walk together. It doesn’t need to take long, 20–30 minutes. Trust me, it works and the research backs it up.

In what ways do you believe that therapy is self-care? Therapy provides a dedicated space for individuals to reflect on their thoughts, emotions and experiences, fostering self-awareness and personal growth. It offers the opportunity to process and manage stress, anxiety and emotional challenges, ultimately improving one’s mental and emotional well-being. Do you think that every couple should seek counseling at one point or another in their relationship? I don’t believe so. People and couples are resilient; however, when your partner asks you to go to counseling the first time, please seriously consider it. Don’t dismiss it or avoid it. Be proactive. What role do you think love languages play in a relationship? How important is it to know and pay attention to your partner’s love language? Love languages play a pivotal role in relationships. Most people are not aware of love languages or are dismissive of the concept. I encourage people to be aware of their love language and their person’s love language, and just like traditional language, folks may have multiple love languages and can also learn and adapt to their partner’s love language.

Tell us about the importance of bonding rituals in a relationship. Bonding rituals play a crucial role in relationships by fostering emotional connection and intimacy between partners. These shared experiences, maybe it’s a date night or a personal tradition, create a sense of togetherness and reinforce the unique bond between individuals. What advice do you have for couples struggling to prioritize their relationship with each other after having children? Be intentional about reconnecting with one another. Nurture the couple (who you were before kids). I like to use the rule of

two. Plan a date night every two weeks, schedule an overnight trip every two months and take a couple’s vacation every two years. Tell us about your personal practices and/or daily habits when it comes to mental health. I move my body! I exercise when feeling stressed. Pause and ask myself what I need right now when I am feeling “off.” I also monitor hydration, sleep and appetite. I do my best to focus on the basics and notice body sensations. Describe your morning routine. Is there anything you simply can’t start your day without? As a husband and parent, my morning routine focuses on helping us all to get out of the house on time. I am sure many parents can relate to the challenges of morning routines with little ones. One thing that is very important to me is a morning hug, touch and kiss from my wife. To me, it is very connective and grounding and it helps me get my day started. How about your nighttime routine? My nighttime routine typically focuses on connecting with my wife (who is also a therapist). Either watching a show together, catching up on our days or sharing an occasional glass of wine together (yay for Sancerre). We end our evenings by sharing a goodnight kiss. What are a few healthy habits you try to practice throughout the day? I try to incorporate body movement as much as I can and as a therapist, I sit down

a lot. I am very lucky to have our office next to the Karl Stirner Arts Trail so I go for walks there in between clients and also will sit outside and ground myself by listening to the sounds of the Bushkill Creek. Most of my clients also engage in similar activities either before or after our sessions. What’s your favorite meal to make at home? I am Peruvian, so making Peruvian ceviche is something that my wife and I truly appreciate. The Leche de Tigre that accompanies the ceviche is a powerful aphrodisiac. What are your favorite eateries and restaurants to visit in the Lehigh Valley for a good meal? What do you order? Mister Lee’s at the Easton Public Market (Black Garlic Noodles), pizza from Scratch, Machu Picchu Peruvian Restaurant in Bethlehem (Pollo a la Brasa). Is there anywhere locally that you love to shop for grocery items? Easton Public Market and the outdoor Easton Farmers’ Market. What’s something that you love to indulge in? I am a big fan of Star Wars, most recently collecting Lego Star Wars and also collecting retro video games and video game systems. I am not a gamer but I love to connect with the fun parts of my childhood. Where are some of your favorite places to visit in the Valley? When I am not at a playground with my little ones, The Game Gallery in

I appreciate going for long picturesque walks in our neighborhood and I also love using my exercise bike. What goals do you have for your personal wellness? Continue growing personally by focusing on community and friendships— particularly building my friendships with other men, as building community is crucial to expand personal growth. How do you stay motivated? By acknowledging that motivation comes in waves. I do my best to nurture myself when things become challenging, avoid social media and focus on enhancing motivation by connecting to things that truly matter to me. How do you relieve stress? Building Lego Star Wars sets, talking through my stressors, a long hug, connecting with my friends, cooking, listening (and dancing) to salsa, bachata and reggaetón, and playing soccer with my son. Who is someone you look up to? My wife. She is my inspiration, motivation and holds me accountable. Do you have a personal mantra that you’d like to share? It’s less of a verbal mantra and more of a somatic mantra. I notice where in my body I am holding on to the emotions: “Notice that.”

Contemplating where the next decade will take her, Grace Moyer acknowledges that no one has a crystal ball, and life is filled with uncertainties, but there is one thing she’s sure of: “I’ll definitely have a dog in 10 years,” she says. Why the wait? Moyer’s career keeps her on the move, literally. As a professional figure skater with Feld Entertainment, she has traveled the world performing in Disney on Ice productions for the past three years. From Saudi Arabia and Abu Dhabi to Singapore and Thailand, Moyer has circled the globe. “Being able to leave home and see the world with my own eyes has been something I never thought I would do,” Moyer admits. “But I’m really grateful for it because it has made me a different person in the best way.”

Moyer began skating at age six when her parents took her to a public skating session. Group lessons came first, and were soon followed by private lessons with coach Angela Davis, whom Moyer works with to this day. “For some kids skating is natural, whereas others have to work a lot harder,” Moyer says. “For me, I was one of those natural kids. I just zoomed through each level.” That doesn’t mean there weren’t challenges. And not just the physical ailments that afflict any professional athlete. Moyer admits that the mental aspect—avoiding the frustration of repeatedly falling while working to perfect a jump—was, and sometimes still is, an obstacle she works to overcome. She worked with a sports psychologist for several years who helped her a lot

with breathing exercises. But it was a daily routine her coach had her adopt that was most beneficial. “Every day following practice she had me write down three positive things I did, even if it was a really awful day,” Moyer says. “Three positives I could take away to build on going into the next practice. She really understood my mindset.” Coach Davis took a similar approach when Moyer began competing. She recognized that if Moyer wasn’t the first skater on the ice and she saw another skater fall, she’d worry that she was going to fall too. Or, if another skater turned in the best program of their life, Moyer would worry how she was going to follow that performance. So, she had Moyer turn her back to the rink and avoid watching. always told me to take those nervous butterflies and use them to help me float,” Moyer recalls. “Just feel free, in a sense, like a butterfly. And turn it into doing what I know how to do.” Moyer’s accomplishments speak to the successful coaching techniques. She’s a two-time U.S. Figure Skating gold medalist in Moves in the Field, and Freestyle; the 2016 U.S. Figure Skating Collegiate bronze medalist; and a 2018 U.S. Figure Skating Regional Championships silver medalist. The latter, she says, is her best memory from competitive figure skating. “Leading up to Regionals I was nailing every program in practice, so I was prepared,” Moyer says. “To make it to Sectionals you have to place in the top four, and after my short program I was in fifth place.

I had to go first in the long program, which I hated, and I was so nervous.” Moyer pushed aside the nervousness, and had “the best program I’ve ever had in my life,” pumping her fist in air when it ended. That performance lifted her to a secondplace finish, and an emotional celebration. “Hearing that I had finished second, I was with my mom and my coach, and we just started crying, because I knew I had made it to Sectionals,” Moyer says. “That was the biggest accomplishment.” While all this was going on, Moyer was working at the Steel Ice Center in Bethlehem, first at the front desk, but by age 16 she began coaching. It was scary and nerve-wracking at first. “You want to help them grow and do things the right way,” Moyer says. “Because if they did something wrong, well, that was on me.” She began by shadowing other coaches to study their techniques, and eventually became more comfortable working with children as well as adults. And while her travel schedule with Disney on Ice has limited her coaching sessions, she regularly returns to Steel Ice to see how former students have progressed. “I was at the rink the other day and one of my students is now with my coach,” Moyer says. “When she hugged me after not seeing me for many months, it was really heartwarming. And watching them, I think, ‘Oh, I taught them something good,’ because I see the progress they’ve made.”

Moyer says she knew as far back as high school that she wanted to perform in some type of skating show once she was finished competing. She says figure skaters are fortunate to have that opportunity, an avenue not readily available to all high school and college athletes. “In some sports, when you’re done competing, you’re done,” she says. Her initial thoughts upon graduating from college were to try out for Cirque du Soleil, but the requirements, she says, were extreme. “I didn’t think I could physically do it.” Fortunately, two coaches she’d taken lessons from knew the casting director from Disney on Ice, and helped facilitate a meeting. Moyer assembled and submitted a highlight video, and a live audition was held in February 2020 at the PPL Center in Allentown.

It was a once-in-alifetime opportunity, so how could I not accept ?

Then COVID-19 hit, and everything shut down. Moyer, who had anticipated hearing whether she had passed the audition by May or June 2020, now had to play the waiting game. She periodically emailed the casting director reminding her that she was still interested. But it wasn’t until June 2021 that she received a positive response, and a contract offer. “It was a once-in-a-lifetime opportunity, so how could I not accept?” Moyer says. And yet, standing in the terminal at Lehigh Valley International Airport in September 2021, ticket in hand to begin rehearsals in Ellenton, Florida, Moyer came close to not getting on the plane.

“I was so scared,” she says. “There were so many what-ifs. And they were all the negative what-ifs. What if I don’t make friends? I couldn’t get my mind to flip to, what if it’s the greatest experience of your life?” But she got on the plane. And it has been the greatest experience of her life. With a B.A. in corporate communication and a minor in business from Penn State Lehigh Valley, Moyer has been able to apply the skills she learned in the classroom to opportunities while traveling. “In Disney, we do a lot of interviews,” she says. “I think all the presentations in college prepared me for being in front of a camera and talking. And I must have been pretty good at it because I always got assigned to do interviews.” She’s also had an opportunity to portray a wide range of Disney characters, including Rapunzel, Buzz Lightyear, Ariel, Anna, Marlin and Nemo. But her favorite, she admits, is Snow White. “My grandmother always said I looked like Snow White, with the pale skin and dark hair and features,” Moyer says. “So when I got to do Snow White I sent her pictures and she was over the moon. That connection with my grandmother made it really cool and fun to do.” Moyer is currently in the middle of a five-month Europe tour called “100 Years of Wonder.” It began last November, and encompasses visits to the United Kingdom, Germany, Finland, Norway, Sweden, Switzerland and Belgium. Prior to embarking on the tour, Moyer reflected on a mix of excitement and melancholy. “We were in Egypt over Christmas last year (2022),” she says. “When we walked into the venue on Christmas Day they had a tree set up with presents everywhere. They decorated the place for us, which was really nice, because it’s hard being away from families over the holidays.” But the Europe tour, Moyer says, may be her curtain call. She acknowledges that she’s still young, but also that there are a lot of things she still wants to do. And spending three years on the road can take its toll. “Living out of a suitcase months at a time is not the most ideal thing,” she says. “But it’s not the worst thing either. The three years I’ve been doing Disney on Ice I’ve gotten to see literally the whole world. I’m pretty satisfied with that.”

HEART, HUSTLE AND HEALING HANDS A Story of Commitment to Adult Learners Nursing school isn’t easy. Raising a family and moving to a new area isn’t easy. However, Michelle Sears, BSN, Cedar Crest College Class of 2023, was willing to figure out how to do all that and more to return to school and become a nurse. “I applied to several universities in the area,” she says, “but Cedar Crest’s scores for the NCLEX were amazing, so if it was possible, I wanted to go there. They have a great reputation.” With that, Cedar Crest was the clear choice for Sears. Sears originally planned to fund her college expenses independently. However, she was delighted to receive scholarships, which enabled her and her husband to preserve his GI Bill for their children’s education. “It’s just been a blessing to our whole family,” says Sears. Cedar Crest College is a primarily women’s college dedicated to smashing glass ceilings and educating the next generation of leaders. BEYOND THE MENU “I love a good breakfast,” says Chef Will Fischer of the BeamYard at Steel Club in Hellertown, which is why he is indulging us with a decadent, rich sausage gravy recipe. “It is perfect with flaky buttery biscuits, over chicken fried steak or even a twist on Eggs Benedict,” says Fischer. “The dish is easy to make at home and is just a good creamy homestyle classic.” Fischer started cooking while attending college in Colorado. He started as a dishwasher at a local ski resort before moving to fast-casual family-friendly resort locations and then up to sous chef at the fine dining restaurants on property. “We were serving five-course fancy Italian dinners at the top of snowy mountains,” he says. After four years there, family brought him to the Lehigh Valley. Fischer has been with the BeamYard at Steel Club since August of 2023. “I love the collective camaraderie of all us working really hard in the kitchen with the same goal in mind,” he says. “The fact that I have worked in every aspect of the kitchen has given me experience and knowledge to run the kitchen.” On his days off he often makes this delicious sausage gravy and biscuits for his family—although with a laugh he admits that his young son’s favorite part is always the accompanying homemade biscuits.

SAUSAGE GRAVY INGREDIENTS 2 Tbsp. butter �⁄ � onion, diced small 1 lb. pork country sausage 2 Tbsp. black pepper �⁄ � cup flour 1 quart heavy cream Biscuits (your favorite brand)

INSTRUCTIONS Simmer your butter In a medium pot with the onions until translucent. Add the pork and black pepper to the pot, stirring occasionally until pork is brown. Add flour and stir in until it is no longer visible. Then add heavy cream, and cook until simmering and thickened. Serve over warm biscuits and enjoy!

“‘Not Your Ordinary’ is a phrase that we have used at Billy’s to describe many things, including our diner and our coffee,” explains Rebecca Druker, general manager of Billy’s Bethlehem. Druker says that to be ordinary means to be without special or distinctive features; to be normal and commonplace. “We strive to be anything but ordinary,” she shares. So the coffee is no exception. “Not Your Ordinary coffee refers to the high quality of products that we use, ranging from our specialty blend coffee beans to the espresso and gourmet syrups we use,” says Druker. The Peepsuccino, pictured here, for instance, is made with creamy, luxurious syrup blended with highquality espresso and topped with steamed milk. It can be sprinkled with cinnamon or topped off with a Peep on a dollop of whipped cream. “Guests absolutely love taking a picture of the Peep on top of a crown of whipped cream,” says Druker. While their Pumpkin Pie Latte was a hit this fall, guests can order the Peepsuccino year-round and enjoy Billy’s Peppermint Mocha Cappuccino and Red Velvet Latte this winter. “We change our restaurant specials seasonally as well as our drink options,” says Druker.

The Proposal

Jason Borso and Caroline Dooley were both in her very first class at Moravian College, but didn’t connect until months after graduation. On Halloween of 2021, Jason posed as a trick-ortreater at the door and surprised Caroline with the treat of her life on one knee.

The Big Day

They were married at the Old Chapel at the bottom of Bethlehem’s Main Street, the same street where they had their first date. With this in mind, Jason’s signature drink was “The Journey on Main,” served with cocktail napkins of their dog Winnie saying, “I do, too.” An intimate group of 55 loved ones joined them for a whimsical wedding styled after a romantic English garden party. Their invites had been beautiful watercolors and each guest received a small painting of the Old Chapel. Flowers filled the 1741 Terrace Room at Hotel Bethlehem where spectacular windows overlook the street that started it all.

The Proposal

Kristina Rosario and Elias Maalouf met the summer before college during a night out with friends, quickly becoming close. On a trip to Mexico together years later, Elias staged a massive marquee letter display strewn with rose petals to pop the question. Kristina caught the hint when she saw him take a knee.

The Big Day

After preparing at home for their wedding at St. George Church, the couple’s reception was rich with traditions from Elias’s Syrian and Lebanese roots, from the Zaffe grand entrance procession played in by a live band to a spread including both taco bar and grape leaves, and finally, an exuberant Dabke folk dance. Behind the sweetheart table a custom-made floral arch and neon sign focused attention front and center even as a mix of Spanish and Arabic music kept the dance floor packed all night. Late afternoon rain and thunder did nothing to dampen this perfect day.

Their wedding was a breathtaking blend of two cultures, Italian meets Indian, held at The Club at Twin Lakes on a beaming summer day with beautiful views. The couple incorporated their own handwritten vows into a fully traditional Hindu wedding. It started with a Baraat: the groom’s procession, in which Joseph sat stately in a horsedrawn carriage, and proceeded into the lavishly decorated hall. Guests were surprised with a live painter at the reception who captured a magical atmosphere brimming with color and excitement. The dance floor rocked into the night while an extravagant s’mores station kept the fun flowing.

Though they shared mutual friends for years in high school, Rachael Okune and Nana Micah met only at the last possible moment when Rachael stayed after her own game to watch his final soccer match of the year. With an elaborate “Christmas party” ruse, Nana surprised Rachael with loved ones and a photographer poised to witness his proposal.

The Big Day

In the lovely light of stained glass, they shared personal as well as traditional vows supported by a wedding party 18 strong before taking the party to Bethlehem’s Wilbur Mansion for an event woven through with their West African heritage. Their families came ready to slay in coordinated traditional Nigerian and Ghanaian attires, and a buffet of seven-plus entrée options and endless sides ensured everyone could sample the delights of their cuisines. With outfit changes, an elevated photo booth and an exemplary MC, it was an energized night of fun and nonstop dancing to West African music.

Gabrielle Gorman and John McGeary have been inseparable since their meeting in chemistry class at Emmaus High School. Getting engaged was a simple matter of mutual agreement, and they planned to share the event between a snowy wedding where they reside in Denver and a summer reception back in the Valley.

The Big Day

From Take a Taco and craft beer at Funk Brewing in Emmaus to the main event at SteelStacks in Bethlehem, the couple spent three days celebrating and soaking up time with family and friends. Guests dressed in black helped fulfill their elegant black and white theme, graced with details like an individualized menu with wine pairings, handmade candles along cozy community tables and a seating chart full of photos to reminisce over. An outfit change for the dance floor allowed John’s father to be honored and present with the color green, kicking off a night of revelry that will be remembered for years to come.

Michelle Foster and Aubry Cohen met at Kutztown University in a 3D Design class, where Michelle was instantly enamored with Aubry’s “edgy and mysterious” interests. The two proposed in unison on a Friday the 13th near Kutztown’s planetarium building, exchanging a Zelda-themed necklace from Aubry and a spaghetti and meatballs pin, tearfully, from Michelle.

The Big Day

With skeletons, pride flags, pumpkins and pompoms, Michelle and Aubry outfitted their wedding with a plethora of meaningful elements, anchored by 3D-printed cat centerpieces uniquely decorated by the wedding party. Michelle entered to the “Healing the Great Fairy” theme from The Legend of Zelda while Aubry was played in by a piano cover of My Chemical Romance’s “Welcome to the Black Parade.” After the ceremony, guests wandered the extraordinary venue, GoggleWorks, with access to art galleries. Instrumental video game music backed a reception, featuring board games, Mario Kart and mocktails inspired by the couple’s cats. Hearts were full after this perfect day!

The Proposal

Bethlehem-born Sarah Callahan and Nashville native Samuel Bellet met in Dallas, Texas, on their first jobs out of college in the tech/consulting field. In July of 2022, Sam brought them back to Dallas for a bachelor/ette party for friends—really a ploy to disguise his champagne- and chocolate-laden gondola proposal!

The Big Day

Their ceremony was officiated by Sam’s hometown priest from Nashville, and a friend played the massive 22-person wedding party out on the bagpipes, a nod to Sarah’s Irish roots. The best man flipped the maid of honor on the way into the reception, dad’s speech was over 20 minutes long and the rest of the night was no less extraordinary.
