A LEGACY GEMS & JOE

“Gems & Joe was created to start a legacy for our family,” share owners Jewel and Natalie Jones. After the seed was planted by the pair’s friend Pastor Joe Berrios, their connection to local coffee shops and the love they had for the coffee culture in Los Angeles grew. “It was a dream on hold coming out of the pandemic, but, honestly, perfect timing,” they say. “The revitalization of Downtown Allentown has arrived on our neighborhood block.” The name, they say, is a double entendre. “Gems is for Jewel, my name, and the collection of high-quality products we are providing and plan to provide,” shares Jewel. “Joe is for the coffee.” Count on Gems & Joe for specialty coffee, pastries, cold drinks and hemp-derived CBD products. Customers love all of the lattes, but the salted caramel variety has become a standout. This summer, enjoy outdoor seating as well as creative drinks and treats, collaborations, pop-ups and more.

Owner and design director Shweta Jajodia says that SJ Interiors’ customers and its products inspired the interior design team to open a brick-and-mortar gallery. “Honestly, pictures just don’t do these intricate furnishings justice. You have to see them in person!” says Jajodia. “Since we’ve started the furniture line, clients have really liked our products and enjoyed their presence in their homes and businesses.” The boutique gallery opened in April and strives to be a breath of fresh air for all visitors. “From the eye of an interior designer, I see a lot of design potential in these products and their ability to really spruce up a space. Every single piece is handpicked to be in the gallery and has the potential to become a strong conversational piece in any space.” Jajodia describes the gallery as having a very eclectic and artsy feel to it, where customers can walk away with their own piece of history and tons of design inspiration to spruce up their homes. In the future, Jajodia looks forward to hosting design talks and casual evening events that will bring the community together in meaningful design conversations and promote handmade, artisan, local products.

Rebekah Doyle, founder and owner of Cafe 23, says that the passing of her husband inspired her to revisit her dream of owning a restaurant, something she had set aside while raising her sons. “My late husband's determination to pursue a business despite his illness served as a profound inspiration,” she shares. “Though it wasn't his original career path, his resilience taught me the importance of following one's passions.” Now, Doyle offers delectable breakfast, brunch and lunch options via Cafe 23. Catering to a variety of tastes, the café strives to be inclusive to all different approaches to healthy eating. In April, Historic Hotel Bethlehem debuted its new spa and extended stay suites, located just across the street from the main hotel. Both were prompted by popular demand, as Director of Room Sales and Guest Experience Kelly Ronalds says vacationers and corporate guests alike had been looking for extended stay options featuring suites with kitchens, and bridal parties were eager to take advantage of spa packages. FINANCIAL LITERACY WITH VALLEY WEALTH ALLIANCE

Full participation in society relies on an understanding of the ins and outs of earning, saving and manipulating money, yet it’s inconsistently taught, especially among the already disadvantaged. To help level the playing field, Steve Redmond founded Valley Wealth Alliance (VWA), an Allentown-based nonprofit devoted to financial education. Here’s how this organization empowers and inspires youth through hands-on learning.

THE NEED

Redmond spent his career in the field of juvenile justice, watching young people come and go, wracked by the same problems decade after decade. Now he’s focused on prevention, hoping to give kids from the Allentown School District where VWA operates a better footing for a fruitful life.

“I grew up middle class,” Redmond says, “but we seldom spoke on certain financial literacy topics in my home and our generation did not have the internet to help us research career opportunities. I knew that if I had so little exposure to that in a stable household, kids in lower-income homes don’t have it at all.”

Higher-income families tend to have fluent access to the financial system and all the ways it can serve them in their

quest for prosperity. It’s second nature to pass this knowledge along to kids who often already have a college fund growing along with them from birth.

THE SITUATION

As it stands now, schools choose on an individual basis whether to teach financial literacy to their students, leaving us with a patchwork of knowledge supplemented by what kids might learn at home. Financial education will often appear through a school’s math program as a way to teach that subject rather than as a subject in itself.

Last year saw a new law passed in Pennsylvania to mandate a personal financial literacy course be taught in all the state’s high schools, starting with the 2026–2027 year. We’re not sure yet what this promising development will look like in practice, but it’s likely to reinforce the lessons VWA provides. Hands-on and engaged with the community of business leaders and entrepreneurs, Redmond’s program prompts its students not just to know, but to do.

It becomes fun for them to see their score go from 650 to 680.

THE CURRICULUM

There’s no reason to wait for high school to lay the foundations of understanding. Valley Wealth Alliance starts in Grade 3 with basic information about what banks do and a project to build your own piggy bank, leading kids to interact with money in an intentional way.

Building on that knowledge grade after grade, students in the credit program in high school have learned how to apply for and receive their own cards and are working on driving up their credit scores. “It becomes fun for them to see their score go from 650 to 680,” Redmond says. A former student, now in college, reached out just to celebrate getting to 779.

Grade 9 students in the paycheck program are learning not just how to read their first paychecks and the difference between gross and net pay, but how to dress and perform to ace job interviews. Far beyond just word questions calculating compound interest, these lessons are in practical skills and strategy that could shape futures.

LOCAL BUSINESS ENGAGEMENT

Valley Wealth Alliance runs an eight-week quarterly program called Kidz Mean Business to familiarize students with the tools of entrepreneurship and the business community they can soon be a part of.

Taking the trial and error out of pursuing this option lets young people cultivate their creativity. From setting up a website to starting an LLC, the building blocks of business are demystified, and visiting mentors offer advice as well as networking connections. “We brought in an executive from Estée Lauder to talk about team building,” Redmond says. “We brought in marketing companies from Allentown to talk about how to promote business.”

The kids also have the chance to visit and observe entrepreneurs in action by touring local businesses, observing the ins and outs of daily operation. Not only do they carry these contacts with them, the students form a cohort among themselves to draw upon.

ADULTS ALSO PROFIT

Adults also get help figuring out the world of finance and getting their affairs in order. “People can be a little embarrassed of their financial situation,” Redmond says. “When they see us working with their kids they open up more.” Whether it’s low credit score or falling behind on bills, there’s help without stigma for them.

Kids start with a clean slate, but for adults, a lot of the assistance VWA provides is reparative, reestablishing credit or gathering documents necessary to open a bank account. This is especially helpful for Allentown’s non-English-speaking population, who might need translators to explain the process.

While VWA currently serves the Allentown School District exclusively, parents around the Valley are clamoring to get their kids the advantages of participation. With greater resources, this organization could do an even greater world of good.

QTell us about your journey to founding Reset Outdoors. What inspired you?

In a word, burnout.

I was working at a local community mental health center that supports survivors of trauma… the clients were amazing. While their stories were often heartbreaking and horrifying, they were examples of powerful resilience and healing. The real issue was that the organization’s leadership was absolutely horrible (to put it mildly).

Thankfully, a friend invited me kayaking (an activity I love but had lost sight of whilst getting sucked into the burnout black hole), and after a few hours on the water, I was feeling better than I had in years. I remember a summer breeze brushing past me, skipping over the surface of the lake and continuing into the canopy of the trees on the other side, followed a few seconds later by the sound of rustling leaves coming back to us and I thought, wow, why on earth aren’t we doing this with our clients and colleagues?

Describe the philosophy behind “nature-centered well-being.”

inextricably linked to, and interdependent with, the natural world. We need the ecosystem, and it needs us (though arguably less than we need it!). The more we reconnect with the world around us, the healthier, more balanced and more fulfilled we become.

What does a typical counseling session look like for Reset Outdoors?

My immediate response to this is that there is no “typical” session. Firstly, sustainable change rarely occurs in one meeting. Secondly, just like individual people, teams, companies, organizations and communities are unique, and require nuanced and tailored approaches.

We pride ourselves on bringing our expertise into the place where our clients, both individuals and institutions, are currently, and working together to plot a trail to the destination of their choosing.

Is there a common thread that you've noticed amongst the individuals you coach?

No. Though most, but not all, recognize a need for change and a need for support in bringing those changes into their lives. We also often find our clients are tired of “typical” methods that leave them feeling

pushed into predetermined lanes that don’t consider them as amazing and unique individuals, families, teams, institutions, communities, etc.

What tools do you hope someone walks away with from a Reset Outdoors session?

We hope everyone that we work with leaves with at least three takeaways: (1) increased awareness—of self and the world around us (which includes other people!); (2) increased connection— internally with the parts of the systems that make us function and thrive, and connection with our ecosystem (which, again, includes the people we share space with at home, in our neighborhoods and at work); (3) reduced stress—a measurable, observable reduction in the stresses we carry all the time. A lot of subtle-yet-profound changes happen automatically when people feel less stress. It’s wonderful to see!

What would you say to someone who might be skeptical about the healing power of nature?

Don’t worry. Not everyone loves nature and being outdoors as much as us. Our job is to find what works for you. If being outdoors isn’t your thing, that’s OK!

What has your own health and wellness journey looked like?

I’m someone who loves intense exercise, especially contact sports, wrestling, rugby, martial arts (Jujutsu! Shout out to my fam at Inverted Gear Academy!).

And, also, I’m someone who is a trauma survivor and battles depression, insecurity and lack of confidence.

All in all, for me, the concept of “intentional awareness” has made such a difference.

Describe your morning routine. Is there anything you simply can’t start your day without?

In the morning, I love to get a good look at South Mountain, usually with my coffee and/or while brushing my teeth (though not at the same time). It’s an amazing part of our landscape that feels more and more like a friend.

How about your nighttime routine?

I really enjoy watching a show (or two) with Emily—especially when I get to choose the show. Drinking a glass of water and reading before bed helps me ease into sleep. And I’m noticing that my dreams are more memorable and interesting when I read versus when I don’t.

What are a few healthy habits you try to practice throughout the day?

Finding at least one subtle glimmer of gratitude or awe. Also, taking breaks— even better in fresh air, especially when I feel depleted (frequently!) and/or when I’m banging my head against the wall (or computer) trying to get more tedious or challenging tasks crossed off the list.

What is your preferred exercise?

Intentional walks, runs and kettlebell workouts, but mostly jujutsu—it’s cardio, flexibility, strength work and chess all in one.

What’s your favorite meal to make at home? It’s a tie between pancakes and eggs or anything on/in homemade tortillas.

What are your favorite eateries and restaurants to visit in the Lehigh Valley for a good meal? What do you order?

At Tulum Restaurant in Bethlehem, my go-to is toasted almond burrito, chips and guac, and hot wings extra crispy. At Biryani City in Allentown, I almost always get saag paneer, “American medium or hot,” with garlic naan and samosas.

What’s something that you love to indulge in?

I’m writing this from the side of the Bushkill in Jacobsburg State Park… it’s truly a stunningly beautiful, peaceful and magical place.

What goals do you have for your personal wellness?

I’d like to be present and engaged fully with my family. Less stressed and busy. No more multitasking. Less phone and computer. I’d like to get in shape enough to enter more jujutsu tourneys… and my hope is to earn a black belt by the time I’m 52.

How do you stay motivated?

I love my family profoundly. I truly believe in the work that Emily, our team and I do, and love it deeply. It makes it so much easier to get out of bed, brush the ole teeth and get to work.

What’s one takeaway that you’d like to share?

Spending a cumulative total of two intentional hours outdoors a week does wonderful things to our overall well-being, including mental health and social health. Go outside! Get better.

Doctor turned professional baker Eileen Mason-Newman conducted a lot of trial and error to nail down her chocolate chip cookie recipe. “Being a scientist, I did many delicious research runs to bakeries I enjoyed the most in New York City and around the world,” she says. Mason-Newman owns Easton’s Mia & Maddie's Bakery, a company she founded in 2019 and named after what she calls the “sweetest things” in her life—her daughters. Her signature cookie is bursting with chocolate that she says is among the most decadent and delicious on the market. And each batch of batter gets a good old-fashioned hand mixing. “It’s a labor of love, it’s huge, it’s delicious and people can really taste that,” says Mason-Newman.

Donerds Donuts’ roots stretch more than 5,000 miles south of the Lehigh Valley. It got its start in Santiago, Chile, the home city of Annabel Figueroa, who founded the business with her husband, Andrew Underwood. “We purchased a 1981 VW microbus and started a doughnut and coffee food truck in 2016 using Andrew’s grandpa's doughnut recipe,” Figueroa says. They opened two brick-and-mortar locations there before expanding here with shops in Jim Thorpe and Bethlehem. Their menu is constantly changing; top sellers include the cannoli doughnut, and the tiramisu and French toast cinnamon roll. Donerds also does the classics. “People say we have the best Boston cream doughnuts they've ever had,” says Figueroa.

Object History is owned by artist Chaz Hampton, and taking a gander around the shop inside Easton’s Simon Silk Mill complex feels a little bit like stepping into an art gallery. The walls are collages of pictures, prints, logos and signs, while shelves are stocked with an eclectic mix of décor, books, records, collectibles and so much more. Of course, some of this “art” is wearable, too; the clothing racks are crammed with treasures. Hampton says he doesn’t go looking for vintage goods at the usual places: “I don’t really source so much, as things tend to kind of find me.”

CUCUMBER MARGARITA

This summer, make plans for happy hour at Flying Pig Tavern & Tap, which opened in Bethlehem in May 2023. The Cucumber Margarita, pictured here, is made with 1800 Cucumber & Jalapeño tequila, fresh-squeezed lime juice, simple syrup and muddled cucumbers. The cocktail is served on the rocks with a cucumber and lime garnish, and a Tajin rim.

Jada Johnson, bar manager, and Nathan Teada, general manager, describe the drink’s flavor profile as fresh and clean. While the cocktail is available to order year-round, it’s perfect for summer sipping. “Combining fresh in-house ingredients, we create a unique refreshing drink,” they say. “A twist on a classic.”

The Cucumber Margarita is one of Flying Pig’s top sellers: “Guests seem to really love the freshness of the cucumber and fresh lime juice combined with the spiciness of the jalapeños.”

Enjoy the beverage with the restaurant’s Bacon Trio Rack (hand-cut smoked bacon marinated in maple chili, honey sesame and candied bourbon) for the perfect combination of sweet and spicy. As with most margaritas, it also goes great with any of Flying Pig’s fajitas.

Appetizers (like the Bacon Trio Rack) are 50 percent off during happy hour, which runs from 4–6 p.m. Monday through Friday and also promises $1 off draft beers, cocktails and wine. “Every month or so you will see a new batch of delicious cocktails,” share Johnson and Teada. The pair calls their Lavender Martini their number-one bestseller, describing it as fresh, sweet and tart all at the same time.
