Warren and Derrick Clark are changing the way the Valley thinks about furniture. Artisan Chocolates & Gourmet Pastries DOLCE PATISSERIE Many consider chocolate as their passion, but just a fortunate few, like Alan Pitotti, have careers that are chocolate-coated. He’s the owner of Hellertown’s Dolce Patisserie, a shop where artisan chocolates and other displayed goodies dare patrons to leave without a nibble. Dolce Patisserie has satisfied the community’s sweet tooth for a while, celebrating its tenth anniversary in 2018. Pitotti makes everything in house, from scratch: chocolates, special occasion cakes and pastries. His signature cake, the Dolce, is a chocolate cake with vanilla crème brûlée layer, fresh raspberries and chocolate mousse. He also caters weddings, showers and other events. So often he hears his creations are almost too pretty to eat; the key word here is “almost.” Pitotti always enjoyed cooking with his mother, but it wasn’t until culinary arts study at Northampton Community College, and later at the Culinary Institute of America, that chocolate became his passion. “I enjoy bringing an artistic display to gourmet chocolate,” he says.
