In the Business of Lifting Spirits: Little Brook Orchids Where positivity goes to bloom in Lancaster BY RACHEL CURRY PHOTOGRAPHY BY KARLO GESNER
“It all started with one orchid.” That’s what Little Brook Orchids owner Trey Pyfer said about his father, John Pyfer, who started collecting orchids in the 1980’s. At the time, John was a trial attorney and Trey was still a kid dutybound by chores. As John’s orchid collection grew to fill two greenhouses, Trey was tasked with spraying the orchids, cleaning the greenhouses, and more. Looking at orchids for the first time in his dad’s catalogs, Trey thought, “They look so alien, like this is a complete sculpture. And this is before Photoshop.” He was smitten. As the orchid bug bit his dad, so too did it bite Trey. In time, two greenhouses at home wasn’t enough to house John’s incredible orchid collection (at this point still a hobby), so he rented space at 25 Ryder Avenue in Lancaster. The plant store that had been there for decades eventually closed and the storefront was left empty, eager for a new life. By the early aughts, Trey returned from a decade out west, where he sowed his oats and readied for life’s next chapter. The timing was perfect, and the father-son duo started the joint venture of Little Brook Orchids in 2004. Little Brook transformed from a passionate hobby to a real family operation, propped up by the Pyfer matriarch, Carol, who took on the bookkeeping. Trey said about the store when they bought it, “It was not up to orchid growing standards.” So they spent a year fixing it up, redoing everything from top to bottom, and doing what the Pyfers do best: Getting the job done. Today, Little Brook Orchids is a reflection of the power of hard work, nurturance, and steadfast positivity—regardless of life’s obstacles. Take one step in the store and you’re greeted by the director of first impressions, a large chocolate labrador named Miles who has worked at the shop every day since he was eight weeks old.

Little Brook has many sides to it, but Trey says it boils down to one key thing. “We don’t want people to come into our shop and leave sad. We want them to see something and have their spirits lifted a little bit,” he says. “I guess we’re in the business of spirit lifting. It’s about positivity.”

A whole slew of orchid varieties and companion plants line the sprawling greenhouses, which extend much further than the curb makes it seem. “The types of orchids that I grow just remind me of being in a tropical warm environment and feeling good,” says Trey. Orchids grow on every continent except Antarctica, with some varieties even going past the Arctic Circle. Trey keeps tropical orchids, which he says have longer blooming seasons and are easier to grow in the home. There are so many orchids that it’s impossible for Trey to pick a favorite, but he fawns over the Japanese orchid Gastrochilus japonicus, or yellow pine orchid, which you can grow a plethora of in the windowsill. Orchid sales are enough to keep the shop bustling, but Little Brook does more than just sell plants. Plant owners can board their orchids at Little Brook over the winter or while they’re on vacation—but the boarding greenhouse fills up quickly. The shop can also grow your orchids and get them to bloom, repot them, and diagnose them if you’re having orchid concerns. If your orchid needs to be rehabilitated, Trey says, “We have the NICU here,” but plants are living things and they can only promise that they’ll try their best. In short, they’re a place where orchid aspirations soar. As any family business knows, obstacles are bound to happen. Trey remembers a big hailstorm that rolled through Lancaster one year, puncturing holes all over their greenhouse roofs. “Our greenhouses are made of polycarbonate plastic,” he says. “In an instant, the hail damaged the whole complex.. I went up and the whole roof looked like Swiss cheese. Every sheet had to be repaired” But, like always, they got it done. From fragrant blooms to pungent ones, orchids are a world unto themselves. For Trey, it’s more than appearance. “It’s neat to reap the benefits of your labor. What you put into is what you get out,” he says. By recreating the environment they thrive in, you can have blooms that last months, often even in the wintertime when the world is bleak. Even if you don’t think you’ve got a green thumb, Trey says, “Little Brook shows people it’s possible to fix mistakes and succeed.” MARCH 2022 | SUSQUEHANNA STYLE

Calling all plants moms and dads! Did you know that your green babies could be doing more than just sprucing up your house’s aesthetic? House plants can have a number of health benefits including improving mental health, boosting air quality, and more. According to a study published in the Journal of Physiological Anthropology, the presence of indoor plants may help reduce both psychological and physiological stress. Not sure what plant is best for you? Check out our list below to help you decide—we even have some suggestions for those of you lacking that green thumb.
Snake Plants If you’re looking to make your first go at being a new plant parent and are worried you don’t have what it takes, then a snake plant could be the perfect place to start. The snake plant can live in partial sunlight or even complete shade allowing you to place them wherever is most convenient within your home or office. Prone to forgetting to water? Great news as these durable plants can thrive on very infrequent watering. According to a number of studies, snake plants can help convert CO2 into oxygen as well as absorb cancer-causing air impurities.
Aloe Plant Many people associate aloe with the go-to sunburn reliever, but did you know aloe is one of the most commonly used ingredients in a number of anti-aging, acne prevention, and daily skin care products? In a 2013 JPMA study, it was found that aloe can help speed the recovery time of minor wounds and burns through topical treatment. Oral consumption of aloe has also been found to have a number of oral health benefits, but we suggest you consult your doctor before consuming.
Rubber Tree Some people avoid household plants because they believe the common misconception that they can breed mold and mildew; however, this only happens if the soil is overwatered. In fact, plants like the rubber plant have actually evolved to fight off such contaminants. Rubber plants can help remove bacteria and mold from the air and soil.
Spider Plant This low-maintenance beauty is the perfect hanging plant as it likes to sprawl out. They even tend to produce babies that can then be harvested in something as simple as a solo cup of water and replanted to flourish as a second plant. According to a NASA study, spider plants can help increase a room’s humidity while also removing toxins like carbon monoxide and formaldehyde from the air. Good news for those with curious furbabies—the ASPCA has confirmed that spider plants are pet-friendly. Bonus for those lacking a green thumb—spider plants who look like they have one foot in the grave can often be brought back to life with a good watering and a little sunlight.
Choose Your Plants Wisely While there are a number of benefits to house plants, not all are created equal when it comes to the safety of other living beings in your house. Before expanding your garden, be sure to research the toxicity of certain plants as they relate to furry friends.

At Tony’s Mining Company, the art of hospitality is alive and well. You aren’t greeted with a hostess grilling you on your reservation status but instead with a warm welcome. That’s nothing new to Tony’s, the venerable establishment run by the family of Anthony Cek since he founded it in 1974. Today, Tony’s has new owners who greet longtime regulars and new patrons alike with a refreshed look and upgraded menu. “Tony’s had a following, so it was important to honor the family and their vision of the place, and just give it a little twist,” says Jennifer Rettew Bushey. She and her husband, chef Steve Bushey, are the new owners. Tony’s is a Lebanon County mainstay, host to countless birthdays, anniversaries, and special occasions. Jen has roots in the region, growing up with her father’s business, the beloved Twin Kiss in Manheim and its spinoff, Rettew’s Catering. She and the Culinary Institute of America-trained Steven met while they both worked at a Five Diamond Hilton property in New Jersey. Pursuing Jen’s dream of self-employment, they returned to Manheim, where she managed and grew her father’s businesses. Even after buying the Twin Kiss and Rettew’s Catering, the couple stayed alert for other opportunities. At the time, Tony’s Mining Company was owned by Cek’s daughter Jean Kotkas and her husband, Paul. When Paul–Jean’s soulmate and right-hand man—died in September 2020, she decided it was time to sell, but only to someone who would sustain the establishment’s reputation for customer service and treating staff with respect. Jen remembers the first time she walked into the restaurant with the vaulted ceiling, central fireplace, and pewter dishes. “It just reminded me of a place I would have come with my grandparents,” she says. “I still have men come in wearing their sport coats.” The Busheys recognized the good bones of the building and the business. They retained many of the elements central to Tony’s–the pewter, the open fireplace between lounge and dining room, crocks accenting corners and shelves. A designer helped arrange groupings of the mining tools formerly scattered on the walls for décor. Underutilized coppertop tables got new life as the tables for all diners. And then there were the once-in-a-lifetime discoveries. When the carpets came up, MARCH 2022 | SUSQUEHANNA STYLE

they found concrete floors in a spectacular, terrazzo-like speckling. “We paid someone to have it polished and polished and polished and polished,” says Jen. Renovations included new lighting, new doors and windows introducing more natural light, a private dining room for small groups, and relocation of the bar from a corner to a long wall. The resulting look reflects the Busheys’ taste in industrial modern–no-fuss comfort with a roomy esthetic. “We tried to make everything we added look like it was here or just fit,” says Jen. That included keeping the restaurant’s cherished name, meant as tribute to the region’s mining industry. “It wasn’t really a consideration to change it,” says Jen. The revised menu keeps two surf-and-turf tributes to the original Tony’s – the Miner’s Combo and the Company Special. New dishes made by Steven and main cooks Mitchell Moyer and Cory Pekarski reflect Steven’s talent for making every ingredient into the best version of itself. “It starts with the very best ingredients,” says Jen. “He never does shortcuts. Always homemade dressings. European butter. Local milk and cream.” Fish, meats, and organic produce come from Pennsylvania and Maryland vendors. “That’s step one, and then it’s a lot of love,” says Jen. “There’s a lot of love in the dishes.” On the seasonally updated menu, winter entrees included Thai chili salmon, vegetable curry, and seared butter-basted scallops. Dishes are complemented by salads, lobster bisque and French onion soup. Appetizers include goat cheese dip and lobster risotto. The Busheys also wanted an approachable menu for casual diners, who can find a pub burger, chicken cordon bleu sandwich, and meatloaf stack. The meatloaf is so delicious that Jen laughs at the memory of choosing it over the lobster when Steven created a sumptuous spread to thank the staff for their hard work over the holidays. Jen, a trained sommelier, took charge of beverages. Wintertime cocktails included pomegranate punch and chocolate peppermint martini. A rotating selection of draft beers presents a strong local focus, with Troeg’s, St. Boniface, and Yuengling on tap.

Pink Waldorf Salad serves 2 as main, 4 as side Let’s elevate the earthy beet this spring! Growing tips: You can have homegrown beets all year round by planning ahead. Sow seeds after the last frost for a late spring crop. Sow seeds in mid-summer for a fall crop. Sow seeds in early fall for a winter crop. There are so many varieties, choose a couple to try this year! Salad 1 bunch beets, tops removed 2 apples (I like pink lady) 2-4oz blue cheese ½ cup whole walnuts Vinaigrette ¼ cup sunflower oil 2 Tbsp Apple Cider Vinegar Lemon juice Salt and pepper to taste 1. Preheat oven to 425 F. 2. Wrap your beets in foil, or place them in a covered dish. Bake for about 25-30 minutes, until you can pierce with a fork. Let stand in foil, or cover for 5 minutes to help loosen the skin, then peel and cut into bite-sized pieces. 3. Meanwhile, chop the apples into nice large chunks, cut or rip the beet greens into your preferred salad greens size, crumble the blue cheese, and break the walnuts up a bit. 4. For the vinaigrette, use apple cider vinegar or a white balsamic. That will lend a little sweetness and not stain the beets darker. Whisk the oil, vinegar, citrus, salt, and pepper together. Toss the beets and apples in the vinaigrette. Place the beets and apples on top of a bed of greens, then finish with the blue cheese and walnuts.

Radish Top Pesto Pasta serves 4 For me, one of the first signs of spring is when I start to see radishes in the markets. They are such a bright signal that mother nature is waking up, and their peppery earthy flavor packs a punch in spring salads. Store your radishes by cutting the green tops off at the base and removing the radish bulb. Store the two components in separate bags or containers. That will keep the greens and radish firm and ready to cook. For this recipe, use whatever extra greens you have on hand like spinach, kale, or arugula. Basil works well, too. I serve this dish warm, but this recipe makes a fantastic chilled pasta salad, especially for spring picnics. You can use the pesto on its own as a pizza topping or mixed into yogurt as a dip! Growing tips: Radishes are an easy first veggie to grow. They don’t take up a lot of room and can be grown in small containers. Keep thinning your crop by picking plants that are bunching together so they have enough room to grow. Toss the mini radishes into your lunch salad! Pasta 1 lb raditore or penne pasta Sea salt, for water Pesto 1 bunch radishes, tops and roots separated 1 handful arugula greens 2-3 cloves garlic ¼ cup olive 4 Tbsp creamy goat cheese Salt and pepper 1. Bring a large pot of water to the boil, salt generously. Cook the pasta according to the maker’s instructions. Meanwhile, chop the radishes into bite-sized pieces, and brown in a 10-inch pan over medium-high with a glug of oil until tender. About 5-7 minutes. 2. Meanwhile, combine all pesto ingredients in a food processor. Pulse until smooth. Add oil until you are satisfied with the consistency. I prefer a slightly thicker pesto, to make it looser slowly add more oil. Season to taste. 3. Toss your cooked pasta with the pesto until coated. Serve with more cheese and cooked radishes. Store leftovers in the fridge for up to 2 days.

Scallion & Arugula Chimichurri Sauce Makes 2 cups Chimichurri is a great pantry staple to have in your repertoire! It has more oil than pesto and is spiced with lots of red pepper. This bright spring chimichurri sauce doubles as a marinade and an accompaniment for grilled beef, chicken, or veggies–I particularly like this sauce on top of roasted romanesco or cauliflower. Scallions are usually one of the first spring alliums (the onion family) to make an appearance at the farmer’s market. You can swap in spring onions or leeks if you want to mix it up. Growing tip: Arugula is a great first-time salad green to grow. Simply sow the tiny seeds on the soil surface and keep watered. Harvest your greens by cutting the greens at the base of the plant. If you have the space,

sow 2 patches in your garden 2 weeks apart. This method of succession planting ensures you will have an ample supply of arugula greens!
1. In a medium bowl, toss the sliced scallions with vinegar and a pinch of salt. Let sit for 10 minutes. The vinegar will mellow out the raw onion taste of the scallion.
From the Market 1 bunch scallions, chopped thinly (about 1 cup) 1 cup chopped arugula greens
2. Make sure that your greens are finely chopped. You can substitute any flavorful greens you have on hand like basil, parsley, etc. Add the arugula, olive oil, and red pepper flakes to the scallion mixture.
From the Pantry ¼ cup Aronia berry or sherry vinegar Salt & pepper 1 cup chopped arugula greens 1 Tbsp sesame oil 2 Tbsp coconut aminos ½ cup olive oil ½ tsp red pepper flakes Cilantro for garnish (optional)
3. Mix the sauce thoroughly, and season to taste with salt and pepper. Use immediately as a sauce on grilled meats or veggies, or use as a marinade overnight. This sauce keeps in the fridge for 4 days…but it doesn’t usually last that long!

media interaction or quick delivery from Uber Eats provides that nearly instantaneous reward so many seek. Perhaps that is why solar energy has yet to catch the fancy of most Americans. Those heavensent rays of sunshine that generate such clean energy can take years to turn a profit, which may be why solar has failed to pick up many residential followers. Aside from the feel-good monthly emails from the inverter system that tout the equivalent carbon offset of planting a certain number of trees that a solar system has generated during that month, gratification is more delayed—a homeowner who installs a solar energy system might have to wait as long as 12 to 18 years to recognize a savings. While seeing a report showing the offset of planting five trees feels pretty darn good, solar is more like a long-term investment than an instant jackpot.

Solar savings are not going to be fast or obvious. The benefits do, however, begin immediately–reducing carbon footprint through a zero-emission system, excess energy produced that decreases an electric bill, and regular checks for energy sold at auction to electric providers are regular reminders of how a residential solar array is beneficial. The money earned from generating power is known as an SREC–Solar Renewable Energy Credit–and every megawatt hour of solar power generated generates one SREC whereas the power generated daily is measured and credited on the monthly electric bill.
HOW IT WORKS
Imagine a day in late spring. The sun is shining brightly, but it isn’t yet hot enough to turn on the air conditioner. A homeowner’s electricity consumption should be fairly low at this time of year. A look at the meter that registers the solar power will show that the meter is spinning backwards. This means that the solar panels are producing more electricity than the home is using. That energy goes back into the grid and the power company will reimburse the homeowner for its generation. This solar income will be detailed on the monthly electricity bill under net metering. Keep in mind that depending on the size of a residential photovoltaic solar array–which directly converts sunlight into electricity—most days might not be days in which the meter spins backwards. More days might be break even and even more might show more electricity used than produced. The bigger an array, the more energy produced, the faster savings are realized. The size of a solar array depends on many factors ranging from cost to available space (south facing is best) to shade cover. Panel and inverter capacity will affect the amount of energy produced as well. Companies that install solar will first send a solar estimator to help determine the roof orientation and shading. The PV panels can be installed rooftop or in a yard. Even before that step, however, it is recommended that a homeowner do everything possible to first to reduce energy consumption by making a home be as energy efficient as possible.
FIRST, DO THIS
Achieving an energy efficient home requires first doing what Geoff Bristow of the Energy Programs Office of the Pennsylvania Department of Environmental Protection says many homeowners view as the “boring part”—buying efficient appliances, LED lighting, looking for opportunities to reduce air leakage and pollution, and improving insulation. After those things have been addressed, a homeowner can look at energy generation options like solar. A typical solar system has a lifespan of 25-30 years. It loses a bit of efficiency over time—up to 0.5 percent to 1 percent of performance each year–but even a system at the tail end of its life should still generate up to 80 percent of power. One way to look at it: while it could take the first half of the lifetime to pay for the system, the second half will be generating power for free.
SIT BACK AND COLLECT THE CHECK
All the terminology, permits, checks, and credits that come with a solar installation can seem overwhelming, but most solar installation companies will handle almost every detail so that all homeowners have to do is cash the check and feel good about doing their part for the environment. Homeowners will want to ensure that the company has trained and certified specialists for installation. Most companies will apply for required zoning permits and electric utility interconnection approval. They won’t charge annual maintenance expenses, and will also manage the SREC paperwork with the state and energy company. A third party can also track kilowatt hour production and determine the best rates.

MANY REASONS TO GO SOLAR
Installing solar can help to increase the property value of a home. Who wouldn’t want to buy a home that is generating some of its own electricity? Rob Altenburg, the Senior Director for energy and climate at PennFuture, says that other solar benefits include reducing emissions to help environment, generating energy to cut personal electric costs, earning dividends from sale of energy generated, and taking advantage of a 26 percent federal Solar Investment Tax Credit.
THERE’S NEVER BEEN A BETTER TIME…
Altenburg would like more homeowners to consider solar, but even he has to acknowledge that “pretty much every family in Pennsylvania has immediate needs that are higher priorities than that $10,000 for solar. It’s not that it isn’t cost effective–it is. It’s just that people prioritize things, so even if it makes financial sense in the long run, it doesn’t mean it will be the choice people make in the short run.” He says that anyone who chooses to install solar will get their money back, “and then some.” In the meantime, choosing solar today is much cheaper than it was 10 to 15 years ago, according to Kerry Campbell of the state’s Energy Programs Office, who added that “the payback is faster, too.” According to a guide on solar energy from the state Public Utility Commission, the cost of solar has dropped about 70 percent since 2009. Part of the reason payback comes more quickly has to do with the advancement in technology–solar panels have increased from 200-250 watts per panel to 400 watts per panel (read that: making more energy more quickly), and they’re much cheaper today, too. Depending on the size of the array, costs to install range from $6,000-$35,000.
NO SPACE, NO PROPERTY, NO PROBLEM
Community and state planners, not to mention President Biden, would like to make solar a more attractive and viable option for everyone–that also includes renters. This could be achieved through community solar programs like those being proposed in a bill currently in the Pennsylvania legislature. According to Altenburg, the bill would create the opportunity for solar companies to install arrays within a community that they would then allow residents to lease or buy shares of, offering solar access to renters or homeowners who don’t have good spaces for their own solar arrays. Every Pennsylvania resident currently has the option to get their electric through a green energy provider. Through PA Powerswitch, residents can choose a company that generates power with renewable energy sources like solar, so even if you’re not ready to make the full-blown investment, you can make small changes to help make an environmental difference.

Our homes mean more to us than ever before. And we’re using our homes in more creative ways than ever before. You could call it a home game of epic proportions: since the pandemic began in 2020, we’ve seen a housing boom, and a home renovation wave that still hasn’t crested. Home improvements are so hot that the home repair market is up more than 80% since the pandemic began. A Harvard study revealed that home improvement spending grew 3% to top out at $420 billion during 2020— while America’s economy simultaneously shrank 3.5%. Our feathering of the nest flourished right into 2021. Design and home improvement website Houzz reports that searches for “home office” jumped 108% between 2020 and 2021. People searching for “home theater” inspo rose 190%, while “home gym” searches increased 156%, and “art studio” searches skyrocketed 875%. Still, upgrades to daily living spaces—the workhorses of our homes—are ongoing, right into 2022. That’s because many of us are spending more time at home—especially those of us who have converted to a work from home (WFH) lifestyle. Americans are renovating kitchens and bathrooms, dining rooms, and home offices. Many people report funneling the money they would have spent on vacations—canceled during the pandemic—into making “home sweet home” a bit sweeter. Here in the Susquehanna Valley, home renos are keeping home improvement businesses busier than bees. “We’re seeing more people moving toward darker, bolder colors, and people wanting more earth elements such as stone, metal, and wood,” says Esther Riddle, current co-owner and daughter-in-law of Kitchens by Eileen’s founder. The longtime Lititz kitchen designer and builder is moving to a new spacious location along the Oregon Pike in Brownstown. “We have paneled appliances integrated within the cabinetry, which makes everything a little more cohesive through the space,” describes Kacie Hall, Kitchens by Eileen designer. “We’re also doing a metal hood surround, to bring a different texture into the space. Arched doorways add curves, and open floating shelves provide additional storage to display a few items.” Still, classic and clean white kitchens are always trending, never-out-of-style, so Kitchens by Eileen’s new location will also include a more traditional, all-white model kitchen as well.

Miller provides a sneak peek at the 2022 designs: “Pattern Mystic Forest from the Antonina Vella Boho Luxe collection is a mix of European folk art and fantasy which provides a show-stopping nature-inspired backdrop of free spirited luxury,” Miller describes. “Pattern Currents from the Dazzling Dimensions II collection uses the organic geometry of ocean currents to create a striking single panel mural, overprinted on textural Mylar™ which allows metallic waves to show through. This mural is in endless repeat, which means you can place as many panels around the room as you would like, and they will match one another at the side seams.”

“A full room wrap of wallpaper acts as an anchor to layering and developing the texture and depth of field within any space,” Miller explains. “Single wall applications, ceilings, and murals can act as statement pieces which define and communicate a feeling of unique vision.”

“With over 15,000 active patterns, and owning all wallpaper printing types available together under one roof, that’s difficult,” says Miller. “But I believe our Surface print products are the most amazing. We still print on certain presses that have been in operation since we opened our doors in 1895, and we are the sole provider of Surface printing in North America. Surface printing gives the look and texture of a hand-painted wallpaper art piece, but it is done on machine.” This unique mechanized printing type is done by master craftsmen after two-year apprenticeships.

Everybody seems to be giving their homes more love these days—and that includes more personalized touches, according to Lindsey Barnes, owner of Lancaster-based Fern.ish, which includes both a shop and studio focused on interior design and home décor of all sizes, from furniture to accent pieces. Organic, natural tones and shapes are in, moving away from boxy lines toward soft curves— and away from grays toward more natural browns. “Kitchen accessories have always been huge— because for many homeowners, it’s where they spend time doing something they love—so they want to make it beautiful,” Barnes explains. “Coffee table and shelf styling is big—we help homeowners group the right items together, to make it all flow. Whether shelves are in the office, living room, dining room, or kitchen, they want to enjoy having beautiful things out surrounding them.”

“I think on the décor side, keep it simple,” Barnes advises. “You don’t have to fill every space—it needs to feel airy and breathe your personality, too. Too much clutter makes you feel anxious and not able to relax and enjoy it.”

It’s accent pieces and décor items that help your personality shine. “Everyone could have the same type of sofa or chair, but then you add in the rugs and it completely changes the space—or you add a unique lamp, and it can push you more organic or modern in your style,” Barns says. “Those pieces really set the tone—they’re almost like jewelry on the room.”

“What we’re noticing from clients is that they want a little bit of an eclectic look,” Barnes describes. “Mixing and matching styles is a fun way to achieve this. A modern angled vase next to a stack of books with vintage style adds that interest— it says you’re not stuck in a style. We like to have new items that can lean more modern, and we definitely love to throw vintage rustic pieces in for that warm feeling— that you’re well-traveled, with the organic feel of greens, different textures in rattan, and making it all work together.”

“In all honesty, it’s hard to pick just one, because we’re constantly doing different things for different people, so I don’t know that I could pick a favorite,” says Barnes. “It’s exciting to work with a client that wants your opinion and understands we’re going to give them the best design from start to finish. It’s a really cool humbling feeling, when people welcome us into their home.”
