Doggie delight

Hang out with your best friends. Play in climate-controlled comfort. Have a nice spa bath. Get lavished with attention. Is this heaven? It certainly is. Dogtopia of Mechanicsburg is the Susquehanna region’s only Dogtopia franchise, where the family’s four-legged members enjoy day care, boarding, and spa services. It’s also a place devoted to doing good for people through the unbreakable bonds forged between humans and their canine companions. General Manager Alicia Comer loves the transformation she sees, from the dogs that start off shy but, before long, run straight back to a custom-designed Dogtopia play room. “They know exactly where they’re going,” says Alicia, who bubbles with enthusiasm about her work. “They start freaking out. We have a dog that hangs out the sunroof when they pull up. He’s a Great Dane, and all you see is his big head hanging over the sunroof.” Owner and dog lover Bob Campbell is a U.S. Navy veteran who, after retiring, started watching his neighbors walking their dogs and wondered what he could do for dogs. His journey to opening a Dogtopia in the Mechanicsburg area, there on Carlisle Pike in the heart of bustling Hampden Township, offered the chance to do good for dogs and to create 23 jobs. “Dogtopia was my second love,” he jokes. “My first love is food.” For Campbell, the Dogtopia Foundation made Dogtopia a perfect fit. The foundation’s motto, “To enable dogs to positively change our world,” encompasses its work to support service dogs for veterans, youth literacy, and employment initiatives for adults with autism. Since opening in November 2021, Dogtopia of Mechanicsburg has already raised $6,000 for one service dog, and immediately started raising the next $6,000 for another. Coowner and manager Timothy Fraley, a certified dog trainer, served in the Navy as a K-9 handler, so working at Dogtopia lets him continue the work. “It means a lot to me,” he says. “I’ve seen what service dogs can do firsthand.” The foundation’s youth literacy initiative focuses on reading to dogs, which encourages literacy by pairing children with friendly, nonjudgmental listeners. “My son is in second grade, and reading to dogs helps him read because he’s not so nervous about it,” says Alicia. Every day is different at Dogtopia, Alicia says, but the “dogma” never wavers. Dogtopia

Every new dog gets a “meet & greet,” assessing personality, sociability with other dogs, and responsiveness. A willingness to be touched by staff is a must, because every dog’s collar comes off for the day, and a Dogtopia breakaway collar goes on in its place. Doggie day care offers the value of socialization. It also provides exercise that can save pet parents from taking the dog for a walk. “As soon as the dogs leave day care, they’re going to sleep the rest of the night, which the parents love,” says Tim. “By the time they get home, the dog is passed out.” Dogs even get an education, learning how to behave while they interact with canine coaches and other dogs. One new client, Pipa, got high marks on her Dogtopia report card. “Observing others so she can pick up on good play behaviors,” wrote the coach. “A lot of pet parents will take the report cards home and put them on the fridge,” says Alicia. “It’s so cute. Dogs are their kids.”
Regular events dreamed up by Dogtopia staff amp up the excitement for dogs and families. Tuesdays might offer fun with flavored bubbles or tennis balls. Special treats regularly raise funds for Dogtopia Foundation, such as the National Applesauce Day applesauce treat or the National Popsicle Day popsicle, each available for a $5 donation. Seasonally themed photoshoots, with props, might capture snaps of the doggos decked out in graduation gowns or baseball gear. “For our prom photoshoot, they wore crowns,” says Alicia. “It was adorable.” Staff get to know each dog by “their personality, their barks, every little thing,” she adds. Tim notes that COVID dogs are now starting to come in. Adopted during the pandemic, they’re now catching up on missed socialization. “They’re doing well,” he says. “We’re really proud of the COVID dogs because they were isolated for so long at home and are learning to adapt.” And as Alicia notes, Dogtopia care keeps dogs out of shelters by “helping people live their life and still be able to take care of their dog.”

What are the building blocks of health and wellness? Our daily habits, over time, can build a strong foundation for overall physical and mental health. In honor of National Wellness Month, get your daily fix of wellness through these six simple—but super—strategies.
MOVE IT! Most of us simply aren’t moving enough. Only one in five adults and teens exercise enough to maintain good health. Active bodies help our minds stay healthy, too. Here are the recommendations: •A dults: At least 150 minutes (2.5 hours) of heart-pumping physical activity, weekly. •K ids, 6-17: At least 60 minutes of physical activity, daily. Daily Fix: Add one brisk 15-minute walk into your daily routine, which equals 1.75 hours by the end of the week!
EAT MORE VEGGIES While the word “vegetables” makes some people cringe, others are embracing “veggies.” Not only are fresh local veggies tasty, but studies show fruits and vegetables can lower the risk of heart and cardiovascular disease, plus stroke. Daily Fix: Try to add one more veggie a day, for an extra burst of nutrition! Bonus: Choose from the most nutrient-dense vegetables: • Powerhouse Greens: Spinach, Kale, Swiss Chard • Carrots • Broccoli • Brussels sprouts • Peas • Beets—and their greens
CUT THE SALT The World Health Organization says that reducing salt intake is one of the most cost-effective ways to improve worldwide health! Most people consume twice the recommended daily amount. Excess sodium can increase blood pressure, and the culprits include salty, processed snacks. Daily Fix: Instead of shaking on the salt, season with fresh, flavorful herbs.
GET SCRUBBING How vital is it to wash our hands? So important, it was cited as one of the best ways to stop the spread of a global pandemic the past two years. Handy tips for hand-washing: • Lather up with soap for at least 20 seconds. • Rinse well. • Always scrub up if you’ve touched public surfaces. Daily Fix: How long is 20 seconds? Watch the clock or sing “Happy Birthday” twice to do a time-check.
CURB YOUR SWEET TOOTH Most of us have a sweet tooth—eating as much as three times the recommended amount every day. All that sugar can lead to diabetes or prediabetes, and weight gain. Our choice of beverages are the main reason. Daily Fix: Replace at least one soft drink with water, and decrease the sugar added to tea/coffee.
MIND YOUR MENTAL HEALTH Mental health awareness is sparking greater understanding and facts, with less stigma. Depression affects about 5% of people worldwide. Warning signs include: • Feeling sad, irritable or empty • Less interested in activities • Changes in sleep, appetite or weight Daily Fix: Check in with a loved one every day, even if just for a few minutes! This kind gesture will brighten your day as well. If you recognize warning signs in others or yourself, reach out for help. We all know to dial 911 in the case of emergencies. Now, dialing 988 is a lifeline to suicide prevention and crisis counselors.

Get transported from South Duke Street to South Beach with a visit to The Cantina, a vibrant restaurant atmosphere cultivated right in downtown York. Taking its inspiration from Miami, it offers an enticing menu, nightlife, and more. Now a part of O.N.E. Hospitality Group, The Cantina became the second of two restaurants that Allison Witherow and Toni Calderone founded through their Taste Test Restaurant Incubator in 2017. As it had grown from a pop-up to its current brick and mortar space in 2019, its outdoor origins allowed it to hang tight in 2020. Witherow says, “The Cantina emerged from a leisurely trip to Miami and gained footing in research and development trips back to the city.” Upon entering though, the vibe is effortlessly cool. This is accomplished through colorful décor, neon green picnic tables, tropical plants, bamboo, and one of downtown York’s only outdoor greenspaces. The Royal Square Arts District of York is the ideal location for such a concept. Witherow describes the neighborhood as having a collective energy, especially on nights like First Fridays where patrons walk from place to place for the sake of art. The murals from the city streets spill into the restaurant, where local artists came together for a project to capture the Wynwood neighborhood in Miami, known for its large-scale public art installations and abundant colorful murals. The courtyard, open May through October, is an architectural celebration of the local community. Once you pass through the restaurant, The Cantina opens into a collective space with access to Artemis Vintage, a vintage and handmade marketplace, and Collusion Tap Works, a local brewing company. It is even possible to order wood-fired pizza to the courtyard from The Cantina’s sister restaurant, Avianos Corner Trattoria. The Cantina’s menu takes its inspiration from the melting pot of cultures that is Miami with a heavy leaning towards Latin American and Cuban cuisine. The showcase of bright, light, and occasionally spicy flavors is meant to take the customers taste buds on vacation. Share a few small plates with friends or order a few for yourself, such as the street corn with garlic aioli, cotija cheese, chili, and cilantro.

For those looking to be a bit more adventurous, there’s chicarrones, pieces of pork belly with chili lime sauce, or soft-shell crab. Witherow’s personal favorite are the shishito peppers, which she says serve as a fun and satisfying “snacktivity”. Tacos and burritos are the crowd favorites. Additionally, salad, rice and beans, and chips all serve as a base for the main event. Choose to pile on combinations of slow braised beef tips with diced avocado, pork al pastor with pineapple salsa, chipotle pulled chicken with lime sour cream, or marinated sushi tuna. For a vegetarian option, the cauliflower packs a flavorful punch. The cocktail menu is a vacation in itself. Choose from the house margarita, or spice it up caliente style with jalapeño infused tequila. The Cotijo is a fresh blend of spiced rum, cream of coconut, lime, mint, agave, and soda. Wine lovers can cool things off with a glass of Frosé. End the evening on a sweet note with fried ice cream or cinnamon sugar churros, paired with a delectable hot chocolate dip. The atmosphere and menu are not the only Miamiinspired aspects of the Cantina. In diversifying the nightlife of York, The Cantina offers a weekly line-up of entertainment for a wide audience, often centered around music. On Wednesdays, kids under ten eat for

3 Pesto-Perfect Recipes for Summer RECIPES AND PHOTOGRAPHY BY JESSICA PAHOLSKY
Everyone’s familiar with basil pesto, but did you know you can also use your garden’s most abundant veggies to make Italianinspired dishes? Did you know pesto is a process, not a specific recipe. The word pesto comes from an Italian verb that means “to crush” or “to grind.” Basil was an important ingredient in the northwestern Italian town of Genoa. The herb was grown in abundance there, and so Italians wanted a way to prevent it from going to waste. Their solution: to grind it up in a mortar and pestle with garlic, parmesan cheese, and pine nuts. That’s where we get pesto Genovese. Just like the Italians didn’t want to waste basil, these recipes will keep you from letting your summer garden staples go to waste.
Zucchini Pesto Makes 2 cups Zucchini and tomato are some of the most often used ingredients in Italian cooking. Zucchini is an Italian word meaning small squash. That translation is pretty straightforward. However, the translation for tomato is a bit different. The Italian word for tomato literally means apple of gold. 2 Tbsp pine nuts 1 medium zucchini, chopped ¹/³ cup sun-dried tomato halves 2 garlic cloves, peeled ¹/³ cup grated Parmesan cheese 1/4 cup olive oil 1 tsp salt 1. Combine all of the ingredients in a food processor. Blend until the desired consistency forms. 2. If using a mortar and pestle, crush the pine nuts until a fine crumb forms. Add the zucchini, sun-dried tomato, and garlic, and mash until smooth. Mix in the remaining ingredients. Mash until the desired consistency forms. 3. Store pesto in an airtight container or jar in the refrigerator for up to one week. Use throughout the week in the next two recipes. Eggplant Parmesan Lasagna Stacks Makes 5 servings Eggplant Parmesan traces its roots to Italy, where it’s called parmigiana di melanzane. The dish’s name comes from the Sicilian word for shutters, parmiciana. On the other hand, lasagna is not originally from Italy. This now Italian classic was first made in ancient Greece. 1 cup flour 2 eggs, whisked 11/2 cups panko bread crumbs 1 Tbsp dried basil 2 tsp salt 1 medium eggplant, cut into 15 slices about 1/2 in. thick 1/4 cup olive oil 1 cup ricotta cheese 1 cup zucchini Pesto 1 cup tomato sauce 1/2 cup shredded mozzarella cheese 1. Heat oven to 375º F. 2. Prepare three small bowls: the first with flour; the second with eggs; and the third with panko bread crumbs, basil, and salt mixed together. 3. Coat each eggplant slice with the flour first, the egg second, and the bread crumb mixture third. 4. In a large pan over medium-high heat, add the olive oil. Heat until water sizzles when dropped in. 5. Place as many of the coated eggplant slices as you can fit in a single layer in the pan. Fry until golden brown, about 2 minutes each side. 6. Transfer the fried eggplant to a paper towel-lined plate. Repeat steps 4 and 5 until all eggplant slices are fried. 7. Meanwhile, mix the ricotta cheese and Zucchini Pesto in a small bowl. 8. Grease a medium baking pan. Place 5 fried eggplant slices in a single layer in the pan, with an inch of space between each. 9. Spoon a heaping 1 tablespoon of the ricotta mixture on each fried eggplant slice, followed by 1 tablespoon of tomato sauce. Place another eggplant slice on each stack and gently press until the filling reaches the edge of the eggplant slice. 10. Repeat steps 8 and 9 two more times so there are a total of three layers each of eggplant, ricotta mixture, and tomato sauce in each of the 5 stacks. 11. Top each stack with a pinch of mozzarella cheese. 12. Bake for 30 minutes, or until the mozzarella cheese has melted and begins turning golden brown. 13. Let cool for 5 minutes before serving.

Risotto-Stuffed Peppers Makes 6 servings
1. Heat oven to 400º F.
Risotto is the most common use of rice in Italy. Rice first arrived in Sicily during the Middle Ages. Over time, the rice that grew best in Italy’s climate was a short-grain variety. Arborio rice is the type used in risotto. It’s cooked in broth to create this creamy primo, or first course, dish.
2. In a small baking pan, toss the tomatoes in salt and 2 tablespoons of olive oil.
1 pint grape tomatoes 1 tsp salt 6 Tbsp olive oil 3 bell peppers, halved lengthwise 1/2 cup diced onion 4 cups vegetable broth 1 cup Arborio rice 1 cup dry white wine 1/2 cup Zucchini Pesto

3. In a medium baking pan, brush the bell pepper halves with 1 tablespoon of olive oil. Transfer the bell peppers to a large baking pan. 4. Bake the tomatoes and the bell peppers for 25 minutes. Set aside when done. 5. W hile the vegetables roast in the oven, combine the remaining 3 tablespoons of olive oil and the onion in a large pan over medium heat. Stir continuously for 5 minutes, or until onions become translucent. 6. Add the rice to the onion mixture. Stir to coat the rice, and then cook for 2 minutes.
7. Add the white wine to the rice. Stir continuously until the wine cooks off, about 5 minutes. 8. Meanwhile, in a small pot, bring the vegetable broth to a simmer. 9. Add one ladle of the simmering broth to the rice. Stir continuously until the rice has absorbed most of the broth. Repeat until one ladle is left. 10. Add the final ladle of broth and the Zucchini Pesto to the rice. Stir until mostly absorbed, but still a little runny. Remove from the heat. 11. Add the roasted tomatoes to the risotto and gently fold in. 12. Scoop the risotto into the bell pepper halves and serve
