River Trail Brewing staff know when Nala is on the back patio. Whenever the train rolls past, the bicolor-eyed husky starts to howl. At the environmentally conscious River Trail Brewing, pet parents are delighted to discover that there’s a dog menu. Choices include steak scraps or chicken on whole-grain rice, or the rice and veggies for weight watchers. For dessert, there’s puppy ice cream with whipped cream and bacon. People have tempting choices too. Maybe it’s the Irish chicken, Louisiana jambalaya or vegan beans and rice, washed down with River Trail’s own Marietta Oat Club stout or Raging River pilsner. “A lot of the pet owners ask for the food to come out together so the dogs can eat at the same time they’re eating,” bar manager Renee Buspamante says. “It’s really sweet to see families have a moment like that.” While fur baby parents enjoy a day out, the staff gets a boost too. “When we’re jam-packed busy, and there’s 10 different dogs on our patio, I take a moment to decompress and pet a dog,” Buspamante says. “They’re our friends too.”

Well-mannered people and their pets are welcome at Spring House Brewing’s Hazel Street brewery, where the old tobacco warehouse’s loading dock is now Dalton’s Doggie Deck. Regulations don’t allow food service around dogs, but part of the charm for human customers is ordering and picking up dishes and drinks through a walk-up window. While you’re enjoying your meal, your pup doesn’t have to miss out on the tasty treats. Order a wood-fired pizza, poke bowl, award-winning Commander Salamander fruited sour beer or a creamsicle crush for yourself. Then give your fur baby a protein-rich treat with Chow’s Chicken or Barley’s Burger Patty from the Dalton’s Doggie Deck menu. “People like the opportunity just to have a place to go with their pet and relax and have a beer or pizza,” director of operations Victoria Bacanti says.
The Valley Tavern has been equine-friendly since 19th-century farmers stabled their horses at this railside watering hole. A more recent customer named Cowboy Rick rode his mule here, where kitchen staff treated him—the mule, that is—to carrots and water. Saddle up for a ride on York County’s Heritage Rail Trail, stop at Valley Tavern, and tether your horse out back. Then, mosey inside for their famous broasted chicken, build-your-own burger or house-made broiled crab cakes.
“We pride ourselves on being a down-home, friendly place,” says Meg Fullerton, co-owner with her husband, Terry. If you can’t come inside, The Valley Tavern’s drive-thru window accommodates motorized and nonmotorized transport.
“Riders have stopped at the pickup window and gotten snowballs for their horses,” Fullerton says. “We take care of them.”

A NEW SCHOOL AIMS TO CARRY THE TUNE BEYOND ITS DOORS
The county of York is best known for its eponymous Barbell Company and its Harley-Davidson factory. So, with all that heavy metal, a School of Rock—the first in Central Pennsylvania—is a harmonious addition to the community.
That idea of blending with the community and contributing something invaluable is a chord that resonates throughout the life of owner Bernadette Lauer, who opened the school’s doors in November 2023. Lauer, a York native and graduate of York College, began her career as an emergency medical technician before using her communications degree to work for a newspaper and television news and then for the county government. In one way or another she was, as she says, “trying to inform citizens to help keep them safe.”
Lauer transitioned into corporate communications, working for more than 20 years for several companies, including Harley-Davidson. As often happens after a long career, she felt “burnt out” and started exploring a new path. “I loved what I did, but I was no longer excited about it,” she says. “And so I was kind of looking at what could I do for this next half of my life.”
The soon-to-be school owner had her own homework, and in researching new opportunities, she heard about the School of Rock. That’s when two passions became one.
Before college, EMT work and a career in communications, there was music. “I’ve always loved music,” Lauer reminisces. “Since I was a little girl, I put on my headphones, and that was my outlet … music saved me.”
Like many of us, Lauer had seen the 2003 “School of Rock” film, but when she learned that there was an actual school, the thought of combining her two loves—music and helping the community—was an irresistible dream she had to pursue.
More research followed. Included were conversations with the school’s business executives, but it was what she heard from school owners that really inspired her. The owners had unique perspectives, “but the common thing that I heard out of all those owners,” she says, holding ... the conversations, “is if you are doing this to make a difference in your community, then you’re doing the right thing.” Some owners added, “That they have had parents come up and literally say, ‘You saved my child’s life through music.’” It was this idea that she could change lives and make a difference, something “you can’t put a price tag” on, that convinced her to make the leap.

In the months since the school opened, she has been doing exactly that, and more, by expanding her vision of trying to make her school a starting point to reach out to the broader community. As we talk, students and parents interrupt to say hi, and from listening to the conversations and meeting Lauer’s daughters—one taking guitar lessons and another working at the front desk— it’s evident that this is, literally and figuratively, a family. In fact, among the school’s students, which range from age 4 to adults, are mothers, fathers, sisters and brothers from the same family. For Lauer, this “School of Rock Family” and the music are a means to an end, not to simply change the lives of students and parents, but also the county she grew up in and loves.
As part of that process, Lauer has talked with the York Music Teachers Association and the professor of music at York College about ways to contribute to local arts. “If we can join forces and somehow just grow the community culturally through art and music, then it kind of goes from there,” she says. “So that’s super big picture, and I think just getting our students out and bringing joy through music too, I think that’s a great thing. I always say I think the world would be a terribly dull place without music, and we just don’t have enough of it here in York.”
The music is definitely here now. It’s here in the practice rooms where students learn their instruments and forge friendships while forging the lifelong love for music that Lauer experienced as a child. It’s here in the school’s first student public performance held in May. While Lauer praises School of Rock’s patented teaching method and their own books, it’s this experience of playing together that she sees as truly unique. “There are plenty of music teachers out there, but to have the whole group band experience here really sets us apart from any other music school in this area,” she says. Lauer looks forward to future public concerts and to watching students take what they’ve learned in the school outside and seeing how it brings people together. That connection and mutual support, and the belief that music can save and unite us, echoes the chorus of Lauer’s life and work. It’s a song worth singing, and more importantly, it’s one everyone sings together. As Bono once sang, “All I got is a red guitar, three chords and the truth. All I got is a red guitar. The rest is up to you.”

The floral industry is not only blooming but booming. Our love of plants and flowers has increased dramatically since the pandemic. The health and wellness industry is also on the upswing. And now, the two industries are intertwining, with a growing list of healthful benefits.
“We grow cut flowers and medicinal herbs which also have flowers, and a lot of our bouquets incorporate both,” says Elisabeth Weaver, owner of Lancaster Farmacy. Her 25-acre certified organic farm produces about six acres’ worth of medicinal herbs, flowers and produce, which are handcrafted into bouquets, herbal remedies and teas.
Natural Beauty
Weaver describes being surrounded by growing, blooming plants on a daily basis as “very euphoric.” But she’s quick to add, there’s hard work involved in the planting process starting with seeds, evolving into tending, watering and weeding, until beautiful blooms are achieved. It’s a process that brought many Americans comfort and beauty during the pandemic, as houseplant and floral arrangement sales soared.
“The beauty of a bouquet is the healing that many people need,” Weaver says. “People recognize the importance of having fresh flowers around them, taking time to beautify their home. It’s almost an act of purification, bringing a fresh element of the outdoors inside.”
Lancaster Farmacy offers subscription bouquets through the Lancaster Farm Fresh Cooperative. About 200 subscribers receive fresh flowers every week.
“To me, that’s such a gift,” Weaver says. “It’s the idea that you as the consumer are getting a discount price on that bouquet, but you also get to witness the change in seasons week to week.”
She notes that locally grown flowers are robust, lasting longer than those typically picked before their peak bloom, packaged and shipped to grocery stores.
Stop and Smell the Roses—and Greenery
There’s more than meets the eye with flowers. Scents—called aromatics—can elevate your

emotional and mental health, often triggering treasured memories of people you associate with specific scents, Weaver says.
Stock flowers are especially fragrant—“like perfume,” she says—while unique all-green bells of Ireland emit “the most amazing lemony-citrus scent.”
While showy blooms bring star power to Weaver’s bouquets, greenery and flowering herbs could be considered the unsung—and aromatic—heroes.
“Scented geranium combines the scents of lemon and rose into an amazing aroma,” she says. “It’s a very fresh scent that truly smells like roses or lemon citrus.”
Eucalyptus, mountain mint, chartreuse green lemon verbena, as well as catnip, are Weaver’s aromatic greenery go-tos.
“Catnip has a beautiful flower and smells amazing, but of course people sometimes have problems with their cats getting into arrangements,” Weaver says with a laugh.
Herbs That Heal
Lavender is one of the most popular herbs associated with healing properties.
“The scent of lavender is known as a sleep aid that’s good for the nervous system, promoting calming, stress and headache relief,” Weaver says.
Lemon verbena and mint both aid in digestion. Herbs in the Monarda family—bee balm and wild bergamot—are “great for colds,” she says, while “holy basil, also known as tulsi, is an Indian Ayurvedic herb with a long list of healing aids—stress, headaches, you name it.”
She fashions aromatic herbs into essential oils, teas and aromatic sprays called hydrosols.
“Hydrosols can be sprayed on pillows or your face for a refreshing mist on a hot day, to give yourself a reset,” Weaver says. “Or you can spray the room rather than burning incense. Hydrosols are more fresh and delicate.”
She creates rosemary, sage, lavender and additional hydrosols through a distilling process. She’s always searching for unique floral and herbal scents, so last year she experimented with a marigold hydrosol that turned out “pungent and zesty and floral.”
Edible Petals
Flowers can truly be a delight for all senses. You can see, touch, smell and—add one more to the list—taste their blossoms.
“Calendula flowers have a beautiful brilliant orange petal that can be added to salads, borage blossoms have a cucumber taste, and Monarda flowers—bee balm and wild bergamot—have an oregano-like flower,” Weaver describes.
For Weaver, the daily demands of a working farm inherently bring healing— and not only to her customers.
“I relieve my overwhelm by being in the fields—that brings me peace.”
Going Green
Over the past 10 years, our total spending on flowers, seeds and potted plants has grown from $29 billion to $72.8 billion, according to data compiled by The Society of American Florists. Meanwhile, America’s wellness industry is the world leader, according to The Global Wellness Institute, at $1.8 trillion.
Plant-Based, Full--Taste
AMBER MURTOFF’S THE SWEET BOTANIST MAKES PLANT-BASED TREATS A DELICACY

Many chefs and bakers have their own niche— some more than others. Amber Murtoff’s corner just so happens to be a special focus on plants and the ingredients they create.
Murtoff, owner of plant-based bakery and catering service The Sweet Botanist, in York, is known for her cakes, oatmeal cream pies, parfaits and even savory pies, among other delicacies, all of which avoid any type of animal product but don’t skimp on flavor.
One customer ordered a vegan version of a traditional Pennsylvania pot pie, and, Murtoff says, “It brought tears to her eyes because she hasn’t been able to eat something that her grandmother would have made for years and still be vegan.” This is the kind of stuff that fuels Murtoff, who thrives on seeing customers enjoy her creations.
Plant-based food, also called vegan food, isn’t a piece of grass, she says: "“Everything is how you flavor it, from meat to tofu,”" She wants people with dietary restrictions, including those with allergies or health concerns, to have a safe place to get food and treats they’ll remember.
And Murtoff’s focus on plant-based, healthy ingredients goes all the way to the source, starting with her homemade food dyes. She makes most of her dyes from food scraps and dried flowers like butterfly pea flowers.
Murtoff has been in the business of food since the age of 15, when she began working as a server at a 1950s-themed diner, poodle skirt and all. After contracting Lyme disease, which left her partially blind, she was unable to participate in many normal teenage activities and instead turned to cooking.
Now, as a chef who focuses on the plant-based side of life, her custom orders and catered events transform the everyday and the celebratory moments alike into something even more special.
With all her experience, it wasn’t until a few years ago that Murtoff baked her first cake (a fact that would surprise anyone who sees her ornate creations). “I get very hyperfocused on things,” she says. “The more you enjoy something, the more you want to spend time learning it.”
The Sweet Botanist partners with a cafe in Red Lion, called Grounding, for a monthly event featuring a savory or sweet flight combined with coffees. Murtoff also caters private dinners throughout the year, and holiday meals like Thanksgiving are a big request. Bridal showers
and fundraising nights are a couple more examples of catering events she frequents, including last year’s French-themed gala for Lancaster Farm Sanctuary with about 100 people. Of course, custom orders are available for pickup or delivery depending on size of order and location.
In addition to creations like a creme brulee cheesecake, rice pudding parfait and Gothic red velvet cake, Murtoff created a cookbook, dubbed “Floral Fête,” featuring floralinspired recipes. Since so many people ask her to share recipes, she compiled some of her botanical creations for them to make at home. Violet syrup, raspberry rose sorbet, calendula lemon bars and other simple, but impressive, recipes are included in the e-book.
Moving forward, Murtoff plans to continue partnering with local businesses like Grounding as well as York’s Firefly Hollow Wellness. She’s also consulting for the Holiday Inn and Imperial Event Center in Lancaster, helping them transform into more plant-based-friendly establishments. Later this year, she’s collaborating with Locally Seasoned to put on a pawpaw cooking class at Leg Up Farmers Market in York. And this summer, she’ll be welcoming the merging of Krystal Block’s Sweets & Snacks Studio to create an even bigger force in the plant-based ecosystem.
Murtoff’s success is no accident. For a while, she stuck with the word “vegan” in her marketing, but switched to “plant-based” because she found it was more approachable. “About 40% of our customers are not vegan,” she says. “They might have milk or gluten allergies or high cholesterol or something like that, and they’re just looking to steer clear of synthetic chemicals or bad ingredients in their food.” Ultimately, the stigma of vegan food is unfounded, she says, and just because something is made from plants, it doesn’t make it unapproachable. In fact, it’s quite the opposite—as her many customers can attest. Although The Sweet Botanist doesn’t have a brick-and-mortar store, anyone can contact Murtoff at her website (thesweetbotanist.com) or customer service text line (717-600-4655). AUGUST IS NATIONAL PEACH MONTH! INDULGE IN THESE PEACHY TREATS THAT ARE TART AND TASTY

HONEY THYME PEACH TARTS
A great quick recipe to wow your guests with! These tarts look beautiful and take less than 10 minutes to get in the oven.
1 17-18 oz package puff pastry (2 sheets)
3 peaches
1 15 oz container ricotta
1 egg
½-1 Tbsp fresh chopped thyme (based on preference)
Salt and fresh cracked black pepper to taste
2 Tbsp olive oil
3-4 Tbsp honey
Optional Garnishes: Fresh ground black pepper, hot honey, fresh thyme
Instructions
1. Preheat oven to 400 F.
2. Unfold puffed pastry and roll out until smooth.
3. Cut each sheet into six even rectangles, 12 total. Divide on two large baking sheets.
4. In a bowl, whisk together ricotta, egg, zest and juice of lemon, thyme, salt and pepper. Spoon and spread evenly on top of 12 pastries.
5. Thinly slice peaches and divide among pastries. Drizzle tops with olive oil and honey.
Tip
• Replace thyme with rosemary or sage for different flavor profiles!
6. Bake for 20-25 minutes, until puff pastry is golden brown.
7. Remove from oven and allow to cool for 10 minutes before serving.
8. Top with your choice of garnishes.

PEACH COBBLER WAFFLES
Looking to step up your breakfast game? Look no further than these peach cobbler waffles!
Waffles
2 cups boxed waffle mix
1 cup cold water
½ cup canned peach syrup
1 egg
½ tsp vanilla
½ tsp cinnamon
2 Tbsp vegetable oil
29 oz can peach halves
Topping
1 cup all-purpose flour
1 cup brown sugar
6 Tbsp melted butter
3 Tbsp canned peach syrup
½ cup oats
½ cup chopped pecans (optional)
½ tsp vanilla
Optional Garnishes: Whipped cream, fresh mint, syrup or honey
Instructions
1. Preheat oven to 400 F.
2. Mix all topping ingredients together and evenly spread on a baking sheet.
3. Bake for about 10-15 minutes, until golden brown, making sure to stir crumble topping halfway through.
4. While topping is baking, mix together all the waffle ingredients except the peach halves. Stir until smooth.
5. Spoon onto a waffle iron and cook according to your iron instructions. This will make four large waffles or eight smaller waffles.
6. To assemble, slice peach halves and place on top of waffles.
7. Sprinkle with crumble topping and then drizzle with syrup or honey.
8. Top with garnishes. Serve and enjoy immediately!
Tip
• If you don’t have a waffle iron or are looking for something easier, you can use frozen waffles!
CARDAMOM PEACH PIE
Plain old peach pie is boring. Try this spiced peach pie for something different!
8 peeled and chopped peaches
Juice and zest of half a lemon
½ tsp cinnamon
¼ tsp ground ginger (or 1 tsp fresh)
1/8 tsp ground cardamom
2 tsp minute tapioca
¼ cup white granulated sugar
1/3 cup brown sugar
½ tsp vanilla
Pinch of salt
1 package premade rolled pie crust (2 pack)
Egg wash for pie crust (optional)
Instructions
1. Preheat oven to 375 F.
2. Peel and chop peaches and place in a large bowl. Mix together all ingredients except pie crusts.
3. Spray deep-dish pie pan with nonstick spray. Roll out one pie crust and mold to pie pan.
4. Pour peach mixture into pie.
5. Roll out second pie crust and cut into even strips. Create pie lattice on top.
6. Crimp pie edges so everything stays together. If you want a golden top, brush pie crust with egg wash.
7. Place in oven and bake for 45-55 minutes, until pie crust is golden brown and peach filling is bubbling.
8. Remove from oven and allow to cool completely before cutting and serving.
Tip
• If you don’t like tapioca, you can replace it with 2 Tbsp cornstarch to help avoid watery pies!

The Susquehanna Valley is full of humane societies, animal rescues and sanctuaries, foster programs and non-profit organizations dedicated to bettering the lives of the animals in our community. Here are five ways to support the animals in your area.

Donations are always toward the top of every animal rescue’s wish list. They don’t have to be monetary, however. Donated items like cat litter, pet toys and unopened cans or bags of pet food are essential to ensuring rescues stay open and continue to have enough funds to pay for daily operations and vet expenses. Even donations as simple as extra towels, blankets and sheets taking up space in your closet that you’re looking to discard are a big help to shelters and rescues. Household items, too, like paper towels, trash bags and laundry detergents are encouraged. Many animal shelters, rescues and organizations have specific wish lists on their website if you’re unsure where to start.
VOLUNTEER
Volunteering doesn’t have to look like devoting several hours a week to an organization. We get it, you’re busy! Many shelters and rescues understand your busy schedule and will embrace your help, even if it’s just for an hour or two every week. Plus, volunteering means you get to spend time with adorable animals who are usually very appreciative of any affection and cuddles they can get. Different organizations have different volunteer needs, so whether you’re scooping litter boxes, walking puppies, providing pet medical assistance or setting up a cat trap, you’re making a big impact on the lives of the animals around you.
FOSTER
Fostering isn’t possible for everyone, but for those who have the means to foster an animal, it is a life-changing experience. Foster homes bring love, comfort and shelter into the world of animals who are going through adversity. Fostering means to temporarily have a pet and care for it as if it were your own until the animal finds their perfect forever home. A famous quote, “Saving one animal will not change the world, but for that one animal, their world will change forever,” truly embodies what it means to be a foster parent to a pet. And who knows, you may just fall in love and end up finding your forever furry friend!
PROMOTE
If you’re interested in saving the lives of animals but don’t have the time or means to donate, volunteer or foster with an organization, you can still get involved by promoting them and their mission. Following, liking and sharing content from them on social media is a free, quick and impactful way to get the word out to family, friends and individuals who may be interested in donating or volunteering but aren’t aware of the organization. And don’t forget about the classic word-of-mouth method of promotion, which, again, you can do easily for free.
ADOPT
Adopt, don’t shop! Adopting a pet is sure to make a difference in an animal’s life and is one of the most impactful ways to support your local animal shelter or rescue. However, there’s a lot to consider before you adopt a pet, like lifestyle, time, budget, other people/pets currently living in your household and the type of pet you’re looking for. Fostering is a great start to gain some experience of what it may be like to own a pet and to see if it fits into your lifestyle.
