Letting Her Shine— All the Way to Her Core

For Chelsea Christmas, founder of At Her Core Fitness in Lancaster, entrepreneurship didn’t come first. So what did? “I was coming in on pure passion,” she says. At Her Core is young—Christmas launched the pop-up fitness business during the pandemic—and already it has gone through many evolutions to hone its identity as an equitable, affordable, and welcoming fitness solution for women of all shapes, sizes, and stripes. Christmas grew up in Lancaster, a twin and one of five girls. That’s where her penchant for sisterhood first flourished. Today, At Her Core is a reflection of that which is ingrained in her. “I wanted to center the work that I was doing around women of color and create a space for them to move their bodies without feeling like they need to look or be a certain way,” she says. Even in the modern era, that standard is not status quo in the fitness industry. Sometimes, the world of health and wellness can place labels on people who didn’t ask for them. Average and plus-sized women are often touted as “body positive” simply by existing as themselves. Traditional gym and fitness environments may not be the most comfortable solution for everyone, and boutique studios tend to be out-of-budget for a lot of people. It’s these gaps that At Her Core seeks to fill. Formerly called Fit City Women, Christmas rebranded to At Her Core after winning Asset Pennsylvania’s The Great Social Enterprise Pitch. The process helped her find her vector point as a community-focused business. When it came to changing the name of her brand, Christmas didn’t take the process lightly. Ultimately, At Her Core stuck. “As women, it’s easy for us to identify with our pain or the things that we’ve been through,” Christmas says. “But at her core, she’s resilient. At her core, she’s strong.”

At Her Core specializes in one-on-one training and group pop-up sessions at locations around Lancaster (think spots like Tread House and I am Limitless). She also works with businesses to provide fitness services to employees and youth. With at least eight instructors leading the charge, exercise styles range from full-body workouts to dance fitness. “We try to have a balance of different workouts,” Christmas says. No matter the setting, instructors can modify any exercise for different ability levels.

Throughout the summer, At Her Core has been hosting pop-up events led by women of color. The series finale, Fitness Together, will take place on Aug. 20 at Tellus360. This donation-based event will support a chosen nonprofit organization, and community members will get the chance to join in on one of two 45-minute workout sessions—at 9:00 or 11:00 a.m.—live DJ and all. The event will be a culmination of a season of health, wellness, and community in Lancaster, but At Her Core won’t end there. Though she remains open to the unexpected, Christmas does have a five-year plan, something she honed working with business experts at Assets. “I would love to own my own fitness studio one day,” Christmas says. She envisions a holistic space offering different kinds of resources, a space where mental and physical health go hand in hand. All the while, community and equity will remain at the forefront. Anyone can donate to the Help a Sista
Out Fund, which covers class registration fees for people who may not be able to afford them. At Her Core wants everyone, especially women of color who have historically been marginalized, to feel not just welcome, but integral. Anywhere At Her Core goes, growth follows. These fitness classes are a place where people celebrate one another’s authentic selves. They empower each other on the fitness journey, which includes the now as much as the sought-after goal. “I’m going to meet you where you are. I believe in us getting to that overarching goal,” Christmas says, “But counting the small wins along the way.” Fitness journeys aren’t easy; they’re not supposed to be. Christmas knows this. “I always feel honored when someone trusts me to be a part of that journey with them,” she says. However, launching a business in your hometown is a vulnerable thing, but Christmas is doing it with gusto. “What I’ve learned mostly is to just be myself,” she says. “No one’s asking for perfection. No one’s asking for me to be anyone else other than myself.” Clearly, At Her Core’s founder is setting the precedent, and the community is ready and eager to follow suit. Whether you’re a natural swimmer or haven’t ventured into a pool in years, these fun and health-beneficial water activities are excellent ways to add a new mix to your summer routine. While aquatic exercises offer many benefits, these are a few of our favorites:
• Water exercises can be done in shallow or deep water, so you can make use of whatever options you have available.
• These exercises are low impact, meaning
they’re great even for those rehabilitating from an injury or suffering from arthritis.
• Aquatic fitness creates a well-balanced
workout for all ages looking to improve aerobic capacity, muscular strength and endurance, and flexibility.
Adding aquatic fitness to your routine can give you a community to work with, get you out of your house, and push you out of the same daily fitness routine you have been doing for months. Looking to get started with some new aquatic activities? Try these 5, perfect for all skill levels and ages!

Water Walking or Jogging Water walking or jogging is the perfect way to start your aquatic fitness journey. This movement is easy on your joints, strengthens your muscles, and requires no equipment. You can walk forward, backward, and even sideways! For an added challenge, increase your speed and try water jogging, or get those knees up for some water marching. Water should be waist to chest high for this activity.
Balance Leg Raises Focusing on balance, start by standing close to the pool wall, and use it to help you balance if needed. Next, raise one knee up to your hip, and hold for 30 seconds. Switch off to the other leg, and repeat. If you like a challenge, try adding a pool noodle. Place the noodle at the bottom of your foot, and pull the noodle up. Hold this pose for 30 seconds before switching sides.
Aqua Bike You don’t need a fancy aquatic bicycle to get a good workout! Using a noodle or the side of the pool, rest your elbows and kick your legs as if you were riding a bike. You can make this movement more intense by increasing your speed and increasing your kicking time. This exercise works your legs and targets your core.
Water Jumping Jacks Jumping jacks require you to push the water around you, providing resistance and requiring you to maintain your balance. This exercise builds strength, balance, and flexibility. If your shoulders aren’t as strong as they used to be, you can bring your hands up to shoulder level rather than going the whole way above your head. If you have aquatic weights, you can add these to increase the intensity of this exercise, too.
Cross Country Water Skiing This exercise will really get your heart pumping! While jumping up and down, move your legs forward and backward in opposite directions. You can jump the length of the pool or stay in a small area. Focus on stretching your legs with every jump and increasing speed as you get more comfortable with the movement. You can also move your arms in opposite directions for a great aquatic workout. Thank you to Aquatics Director, Leah Darras. At SpiceKings in the heart of downtown Lancaster, expect to get cravings for foods you didn’t know you wanted. Po’boys with fried lobster, salmon bites, fish, shrimp, or chicken, topped with remoulade. Crab or lobster boil. Pasta with housemade alfredo. Wings. Fries loaded with lump crab, shrimp, and a creamy garlic sauce. More housemade sauces that bring the flavor. And that’s just the current menu. New additions include lamb chops, fried salmon bites, and Pittsburgh salad. Sunday brunch will feature red velvet waffles, Fruity Pebbles French toast, and shrimp and grits. Behind the SpiceKings food is a story of careful planning seasoned with a healthy dash of serendipity. SpiceKings started with a dream, endured the pandemic and a flood, and cultivated a base of loyal fans eager for fresh tastes hot from the kitchen. Founder Jermaine Smith was a DJ who envisioned creating a turnkey organization serving weddings with catering, lighting, and music. As he started offering food and posting pictures online, the buzz grew, and it planted the idea of a restaurant. He called his nephew, Le Cordon Bleu Pittsburgh-trained Damonte Williams, who returned to Pennsylvania from Las Vegas to partner in the venture. “When I was younger, I had to make meals for myself until my mom got off work,” Smith recalls. “You had to be creative. That’s where the passion came from.” In January 2020, SpiceKings was launched, to immediate acclaim, even though Smith was still cooking in his home kitchen. Ignoring warnings about the hardships of opening a restaurant, he spotted a Lancaster hoagie shop that had gone dark during the pandemic. There were no for-sale signs, but he put a letter with $10 in a foyer mailbox, asking the apartment tenant for help getting in touch with the building owner. The next night, the owner called. “We came to see it and said, ‘We want it,’” Smith says, noting that his business plan helped seal the deal. “A lot of other places wouldn’t have went for it. He took a chance with us.” That was in September 2020. In one month, extensive renovations were completed. Smith and Williams were about to drive to Cleveland to collect a cousin’s commercial kitchen equipment when someone dropped off a business card, offering equipment at a great deal. As the pieces fell into place, Smith thought, “This is supposed to happen.” JULY 2022 | SUSQUEHANNA STYLE

The partners recalled their favorite food-truck hibachis from Las Vegas. Williams specializes in sauces, including a dreamy alfredo that tops the pasta. Mr. Fries Man in Los Angeles inspired the loaded fries. Crab boils come in different sizes, including the Queen Bag of a half-pound of crab legs, half-pound of shrimp, plus corn, potatoes, and choice of sauce. “And it’s $25,” says Smith. “Everybody loves that price.” The seafood comes from Baltimore. The cheesesteak egg rolls, hand-rolled daily by Jermaine’s mom and served hot and crispy, are delectable with topquality shaved ribeye. Anthony Torres, the design artist of Tezign Graphics, created the SpiceKings logo of a chess-set pawn that also evokes a pepper shaker, topped with a Basquiat crown.

SpiceKings is a family affair. Smith’s mother, Shelia Smith, is in the kitchen. Her persistence in pursuit of giving her son a better life inspires him, and he works hard to create something for his own children, a son, 9, and daughter, 2. His son has already learned how to make wings, “and he rung out a customer,” Smith says. “My niece runs the register. She showed him how, and he caught on really quick.” Smith believes that the trust he and Williams have built in the community is returned to them in the success of their establishment. He dreams of expanding, with a SpiceKings Lounge in another city, where the SpiceKings concept is applied to more elevated cuisine. “Anything is obtainable, as long as you’re consistent,” Smith says. “I’ve been adamant that if you speak it enough, it’ll happen. All I was talking about was SpiceKings. That’s why everything came together. I had a vision, and that positive energy made everything happen. Why did I put money in that mailbox? And I got a phone call the next day. If you think it, it’ll happen, but you’ve got to make it happen.”

Strawberry & Basil Toast with Whipped Lemon Ricotta If you’re looking for something to fancy up your brunch game, look no further then this toast! It’s quick to make and a great summer brunch recipe. This topping also works great on French toast, pancakes, or waffles! Toast (4 pieces) 4 large pieces hardy rustic bread (pane, sourdough) 4 Tbsp ricotta 2 Tbsp mascarpone 1 Tbsp honey Juice & zest of half a lemon Pinch of salt Strawberry Topping 12 strawberries sliced (can substitute with blueberries or blackberries) ½ tsp butter 1 tsp sugar Juice & zest of half a lemon Chiffonade 4-6 fresh basil leaves Pinch of salt Optional Garnishes Small basil leaves Lemon zest Honey 1. Toast four pieces of bread until golden brown. Whip together ricotta, mascarpone, honey, lemon juice, zest, and salt until completely combined and fluffy. 2. In a small sauce pan, combine all the strawberry topping ingredients except for basil. Once strawberries become soft and fragrant, remove from heat and stir in basil. 3. To serve, spread bread with ricotta mixture. Top with strawberry topping, and optionally garnish with basil leaves, lemon zest, or drizzle of honey.

Strawberry Spinach Salad with Sesame Poppy Dressing Makes 4 servings This strawberry spinach salad combines salty, creamy, and sweet flavors to make the perfect addition to your summer table. You can easily make the dressing and nuts in big batches to have on hand to throw this salad together any time you want a quick summertime meal! Salad 8.5 cups chopped spinach (or a 12 oz bag of baby spinach) 1 quart strawberries, sliced ½ red onion, thinly sliced 8 oz feta, crumbled Candied Almonds ¹/³ cup sugar Pinch of cayenne Pinch of salt 6 oz slivered almonds Dressing ¹/³ cup white wine vinegar ¼ cup sugar 2 Tbsp toasted sesame seeds (MUST be toasted) 1 Tbsp poppy seeds ½ tsp Worcestershire sauce ½ finely minced shallot ½ tsp paprika ¹/³ cup neutral oil Salt to taste 1. First, so they can cool, add all candied almond ingredients into a non-stick pan and stir constantly until sugar has melted and almonds have turned a light golden brown. Quickly transfer to a baking sheet lined with parchment paper, and spread evenly to cool. 2. To make the dressing, combine all dressing ingredients. Make sure you use toasted sesame seeds. Whisk everything together until sugar and salt have combined. Place in refrigerator, and allow to rest for 1 hour. Before serving, shake or stir to make sure everything is combined and not separated. 3. To serve, place chopped spinach, sliced strawberries, red onion slices, and crumbled feta in bowl. Break up cooled candied almonds into bite-size pieces and place on top of salad. Pour dressing over salad, and toss to combine. Serve immediately.

Fruit Tart with Orange Glaze A showstopper of a dessert centerpiece! You can decorate for just about any holiday, and it’s sure to have people raving. This tart pairs a cookie crust with an orange glaze that brings out all those fruit flavors. Cookie Crust 16.5 oz tube of pre-made cookie dough (can also make your own) Ass orted fruits: kiwi, strawberries, blueberries, raspberries, mandarin oranges, grapes, etc. Orange Glaze Mix 1 Tbsp corn starch with ½ cup sugar ½ cup orange juice Juice of one lemon ¼ cup water Pinch of salt Cream Base 8 oz softened cream cheese block ½ pint heavy whipping cream ½ tsp vanilla Pinch of salt 1. Press and spread a thin layer of your sugar cookie dough in your tart pan. Bake your sugar cookie base according to package instructions. This makes either two 12inch fruit tarts or 10 mini tarts. Allow to completely cool before assembling. 2. Mix all your orange glaze ingredients together in a sauce pan. Put on medium high heat and stir constantly until it thickens, about 5 minutes. Set aside, and allow to cool until you’re able to touch it. *Can also do this in a microwave safe bowl stirring every 30 minutes until thickened. 3. For your cream base, whip your heavy whipping cream until it forms stiff peaks. Then whisk in softened cream cheese, vanilla, and salt. Mix until evenly combined. 4. To assemble, spread cream base on cookie dough. Decorate with fruit. Take a brush, and brush glaze over all your fruit. Refrigerate for an hour before serving to let set. Creative Paths to Explore Where to find the Susquehanna Valley’s art and story trails—and how these paths are a breath of fresh air for mind, body, and spirit. By Karen Hendricks
StoryWalks are the latest family-friendly trend. They combine exercise and fresh air, learning and creative fun! Here’s how they work: Weatherproof story boards, each featuring a page of a book, are tucked into parks, along trails, and other unexpected locations, throughout the Susquehanna Valley. As families walk, run, skip, or bike along the path, they stop to read the story along the way. It’s a meandering, outdoor story time adventure. And local experts agree—the combination of activities adds up to summer fun that can spark a life-long love of the outdoors, reading, and art.
A Lancaster County StoryWalk is Born It was a case of perfect timing.
“We always had a StoryWalk on our wish list,” says Karin Rezendes, assistant director, Manheim Township Public Library. Unexpected funding came through, during pandemic closures— allowing Manheim Township’s StoryWalk to be born, along its winding walkway, within Overlook Park. “It allows people to experience the library, outside,” says Karyn Beltle, Manheim Township’s youth services manager. She adds creative touches to every StoryWalk page for added fun—activities, motions, questions, and fun facts. “There have been studies that incorporating physical movement with reading helps cement learning in a child’s mind,” says Rezendes. Stories and activities are changed seasonally, inviting new family adventures. Even though they’re geared toward beginning and early readers, visiting families often include babies, as well as teens. “Every time I look out the window, I see families outside, doing the StoryWalk—even in the winter,” Beltle says. Naturally, Art at Wildwood Park – Art in the Wild Family walks, combined with stories, get the creative juices flowing. But there’s another option at Harrisburg’s Wildwood Park. “Art in the Wild” is an annual sculpture and art exhibit created by local artists who use all-natural materials such as rocks, sticks, and logs. Families, many with strollers and bikes, complete the 3.1-mile loop while taking advantage of the park’s picnic areas, too. “If you have littles, it helps to have those benchmarks along the way—there’s one more around the curve,” says Richelle Corty, Wildwood’s environmental educator. “I think just being outside in nature, off phones and devices with your family, is a huge health benefit—and seeing art engages a whole different part of your brain.” WILDWOOD PARK, 100 Wildwood Way, Harrisburg explorewildwoodpark.org
Cumberland County’s Magical StoryWalk in the Park Community partnerships are at play—literally— for a Cumberland County StoryWalk. “I can’t think of a better place than a park—that’s where families flock,” says Jess Woolridge, Fredericksen Library’s youth services director. “Parks were magical places for my children when they were young.” Grandon StoryWalk is located in Creekview Park North, thanks to generous library patrons and a partnership with Hampden Township. It'’s Not Window Shopping— in York County – It’'’s Window Reading York County’s Red Land Community Library partnered with small businesses to put their StoryWalk on display in storefront windows. “It’s a new community trend,” says Ellen Helfrick, York County Libraries’ director of library relations. “And I think StoryWalks have great potential to convert reluctant readers into enthusiastic readers.” Paul Smith Library of Southern York County integrates reading with an obstacle course called the Ocean Adventure Trail. And York County’s Collinsville Community Library offers a Sensory Walk and Mural created as an Eagle Scout project. Many of York County’s StoryWalks feature ocean-themed books, tying into their summer reading program. “These are vibrant stories that have family appeal, that also lend themselves to movement,” says Jaclyn Cassidy, York County Libraries’ youth services director. “Think of that child who can’t sit still. COMMUNITY INVOLVEMENT IS THE KEY TO MACKENZIE BENDER’S LEADERSHIP GROWTH
Growing up in Lancaster County, Mackenzie Bender has actively been involved in her community since her days as a student at Hempfield High School. After graduation, Mackenzie went on to attend Shippensburg University where she earned a degree in Business Management. During her time at Shippensburg, she was a known leader throughout campus. In her junior year, she worked to start a Mini-THON fundraising effort, which raised more than $30,000 under her direction in the fight against childhood cancer. As recognition for these efforts and more, she received the Raider Legacy Award before graduating for her lasting impact on the college. She began her post-collegiate career at Nxtbook Media where she assisted in their marketing efforts. Her path then led to Spooky Nook Sports, the largest indoor sports complex in America. She started there 2017 as the Public Relations and Communications Coordinator and has continued to grow and advance ever since. Now as the Corporate Director of Marketing and Partnerships, Mackenzie oversees marketing and sponsorship initiatives at both the Spooky Nook locations in Pennsylvania and in Ohio. As a valued member of the Nook team, she consistently embodies the essence of a young leader through her charisma, drive, and genuine character. Mackenzie is an active member of the community, serving as the President of Lancaster Young Professionals (LYP), as a mentor for the Lancaster Chamber’s Young Women Discovering Paths program, and more. As a dedicated young leader, she prioritizes networking, community service, and professional development. Her positive, kind-natured attitude has helped her build relationships and mold her career into what it is today.
