“It is just like spicy sauerkraut!” is how Joyce Park Williams, owner of Kimchee Girl, explains her authentic Korean kimchee to potential and unfamiliar customers. Kimchee Girl is a small business located in Mechanicsburg, PA that focuses on providing the local community with the type of traditional kimchee that can’t be found in the grocery store. Approaching its oneyear anniversary, Kimchee Girl has seen rapid growth and an outpouring of community support. However, Williams’ success story really begins with the story of family. Farmers in Seoul, Korea looking for a better life for their family, Williams’ parents sold their wedding rings to move their four children to the United States. Her father was the first to arrive, joining an already growing number of extended family who had settled in New Cumberland by chance. Williams was the last of the Park children and was born into the house that they often shared with others. This is where her earliest memories of making kimchee began. “It truly is a labor of love,” Williams says. She recalls Saturday mornings where the entire family headed outside to harvest cabbage from the earth, wash it with the yard hose, and form an assembly line of the various tasks required to make hundreds of pounds of kimchee. The entire operation was run by the tiny but commanding matriarch of the family, Williams’ mother, whose friends would then come flocking for a taste of home.
“Most people have a loyal attachment to how their mothers cook a cultural recipe, or their great aunt’s meatloaf, but my mom truly made the best kimchee,” proclaims Williams. In 2013, she lost her mother to cancer, and in 2016, Williams fought her own battle against breast cancer. In her mother’s absence, Williams learned to make the family kimchee recipe from her father. “Every family does it differently,” she explains. “The difference in taste goes all the way back to how you grow your cabbage. I knew I had ours right when one of my siblings told me it tasted just like mom’s.” Growing up in a food-focused culture has assured that Williams loves to cook. However, lockdown gave her the time to get creative. Her stand became the most popular attraction at a neighborhood yard sale. While cooking up non-stop Korean dishes paired with kimchee for the lines that formed, it dawned on both Williams and her husband Kevin, that there might be a regional demand for an authentic alternative to the kimchee found in local stores and restaurants. Kimchee Girl officially began selling in May of 2021. “Despite being made in a commercial kitchen, the process is still just as backbreaking,” says Williams. Her efforts, however, have not gone unnoticed. “The community has been overwhelmingly receptive,” said Kevin Williams. He helps on the weekends by drawing in crowds at pop-up locations where the bright pink Kimchee Girl tent serves up Korean BBQ. “We’ve made loyal customers out of older women who have never tasted kimchee before and Koreans who grew up on their own family recipe,” Kevin Williams says with a proud smile. Kimchee Girl’s products are vegan, gluten free, and contain four times the number of probiotics in yogurt, making them great for gut health. Williams locally sources as many of the ingredients as possible, and every ingredient on the label from ginger to garlic is recognizable. The three staple products are Napa Cabbage Kimchee, Cubed Radish Kimchee, and Cucumber Kimchee. The Napa Cabbage is the staple, with an irresistible blend of flavors. The Cubed Radish heats things up with spice and crunch, whereas the Cucumber balances out the flavor with its coolness. Each bite tastes simple and familiar yet exciting and complex in their fusion of common flavors. Williams imagines a world where kimchee is a condiment used as ubiquitously as mustard or ketchup, but she understands that many people don’t know how to pair it with everyday foods. Kimchee grilled cheese and pork carnitas with kimchee are just two of the recipes that she regularly shares on her website. For an even simpler approach, she recommends having it with eggs in the morning or Kevin’s favorite, piling it on top of a hot dog to mimic the beloved Pennsylvania Dutch pork and sauerkraut. As an ode to Williams’ mother, a portion of every sale from Kimchee Girl goes toward helping families impacted by cancer. “Everything I do is to keep her

memory alive and share her incredible food with people,” she says. Be Good to Your Gut What is “gut health” and why does it matter? Here’s

Trust your gut. When your tummy or digestive system feels off, there’s a buzz phrase to describe the problem—gut health. According to the NIH, as many as 60 to 70 million people are affected by digestive diseases. Today, there’s greater awareness of our gut health—and the key role it plays in our overall health and wellness. We talked to a Susquehanna Valley doctor who explains how to get your gut in tip-top shape.
What is gut health? Digestion—how your body breaks down food in order to absorb nutrients—is at the core of gut health. “Gut health is a pretty broad term for how your belly feels every day—but it means more than that,” says Dr. Aaron Sachs, a surgeon with Leader Surgical Associates–UPMC York, and director of the UPMC Comprehensive Reflux Program for UPMC in Central Pa.
Why is gut health so important? Gut health is determined by a balance of bacteria, hormones, and nutrition—and if that balance is off, Dr. Sachs says you’re more vulnerable to diseases such as acid reflux, inflammatory bowel syndrome, gall bladder disorders, and more.
What role does bacteria play in gut health? “Your gut has what’s called a microbiome,” says Dr. Sachs. “Your GI tract is not sterile— there are tons of bacteria that have a symbiotic relationship to your body. Some bacteria are good, and some are bad. There’s some thought that the balance of bacteria in your gut affects your body and health longterm. My theory is, it comes naturally if you eat a balanced diet.”
What if bad bacteria take over? When bad bacteria outnumber the good, it can lead to a condition called “C. diff”. Antibiotics can also skew your balance. While there’s a lot of marketing behind foods containing probiotics, with claims they enhance the production of good bacteria, Dr. Sachs says the short answer to whether they work is, “Maybe. Certainly, I don’t think they hurt.”
What symptoms are clues you may be having issues with gut health? “Abdominal pain, nausea, feeling full quickly— or not full enough when you should, irregularity or difficulty with bowel habits, feeling weak, fatigued, or dragging,” Dr. Sachs lists. “If your gut health is off, your whole body can be affected.”
How can you improve your gut health? Dr. Sachs’ advice is straightforward: “Eat healthy, eat balanced, eat right. Keep your vitamin levels where they should be,” he says. “Smoking, lack of exercise, and stress can all affect gut health. In general these things are all a lot easier said than done.”

McAllister’s on York: The Art of Dining
New restaurant caps Hanover revival

At McAllister’s on York, the two-top table in the corner is the best seat in the house, says co-owner Andrew D’Agenais. “You get to see outside,” he says. “You get to see the staircase and the bar.” All the tables and bar seats, really, offer immersion into elegant comfort and a meticulously detailed rehab completed in downtown Hanover. Served here are carefully selected wines, an array of beers, enticing cocktails, and dishes crafted from the freshest ingredients available. D’Agenais and co-owner Robert Godfrey already had a following from their popular Handsome Cab restaurant in York. Then, regular customer Jordan Ilyes, a property redeveloper and manager, approached them about taking their upscale casual concept to Hanover, the busy southern York County borough having its own revival. The space needed some TLC. A small corner had once housed a bar for the adjoining McAllister Hotel, with its apartments recently renovated by Ilyes. The history of the circa-1928 building, built as a mini-me of the Yorktowne Hotel in York, inspired the restaurant’s Art Deco touches, such as the curving, corrugated glass fronting the host station, like a department store perfume counter. The space retains many original features, including tile floors artfully patched to repair the damage of years without erasing the footprints of time. “It adds provenance,” says D’Agenais. The contributions of York County artisans Patrick Sells, of Salvaging Creativity, and Peter Danko are prominent. Danko designed the barstools, web chairs, and compact padded wingback chairs that accommodate diners in ergonomic comfort. Sells’ contributions include the two lighting focal points. His dining room chandelier glimmers in dangling shards selected from the Rudy Art Glass archives. Over the bar, his light installation, inspired by an idea from D’Agenais, teams an array of hanging steel tubes, cut at angles and powder coated in multiple colors. Everything from the Danko-designed bench on the far wall to the restrooms’ granite countertops seem to float. In the upstairs Bar E11ven, window panels accordion open for the feeling of an aerie above the street. On the cantilevered staircase, charred wood planks seem suspended in air, as if held only by the line of rods fastened to the ceiling. Curated artwork punctuates the space. Paintings by Buenos Aires-based Jorge Alio present lively scenes in the dining room. The fun abstract piece that greets diners as they enter ties together all the colors of the restaurant–and that’s no coincidence. It was created after dinner with a group of York County artists, when paints and paintbrushes emerged and everyone added their touches to the canvas. “I did the dark blue, with a spoon,” says Godfrey. A quieter but effective feature is a pair of arches dividing the bar and dining room. A stucco covering hides the red of the brick while revealing the pattern beneath. The overall look is “elegant but also industrial,” says D’Agenais. “It’s filled with artwork. It fulfills many senses. It gives you that MAY 2022 | SUSQUEHANNA STYLE

edge of modernism. It’s also an ode to the past, with Art Deco touches.” The menu elevates familiar plates with culinary touches. Dishes of seafood, steak, or poultry are inspired by French, Italian, Asian, and American cuisines. Handhelds include the French Onion Slider and its burger that is “not just a burger” but a tantalizing mix of short rib, brisket, and chuck, says Godfrey. Sunday brunch specialties include the Banana Split Bowl, with vanilla yogurt, granola, banana, dried pineapple, chocolate sauce, and of course, cherries on top. “We play around with things,” Godfrey says. “Instead of a regular taco, we did a duck taco. We wanted to make some interesting things you wouldn’t typically make at home.” All the food is procured from top purveyors, such as the renowned, Maryland-based Mattes Seafood. “We like to buy the freshest, nicest, highest-quality product,” says Godfrey. The playful cocktail menu includes the Stormy Night, a dreamy mix of cherry vodka, watermelon liqueur, blue curacao, and sour mix, and the Tolkien Trilogy of gin, sauvignon blanc, and elderflower liqueur. How did the name originate for the Movie Star, featuring vodka, ginger simple, vermouth, and lemon juice? Godfrey sings a line from a classic

Amid the local, domestic, and imported beers, D’Agenais says that the South County brews, from the York County town of Fawn Grove, are “exceptional.” D’Agenais remembers the bitterly cold day before the November 2021 opening, when they hung a prototype of the bar lighting and stepped outside to view the results through the plate-glass window. The effect was magical. Today, that same magic halts diners in their tracks. They step in and marvel at a look that might be new for Hanover but is steeped in York County’s artistic traditions. “At nighttime, it is absolutely beautiful,” D’Agenais says. Adds Godfrey, “Everybody deserves nice places to go.”

As the first Filipino restaurant in the area, Lapu Lapu has made a big mark. Owners Daryl Bingaman and Samantha Stitt have built a menu that’s authentic yet accessible for the American palate. Lapu Lapu’s barbeque is a family recipe from the owner’s Aunt Maribel in the Philippines. The team puts tons of effort and love into each dish, including the hand-rolled Lumpia complete with meat, vegetable, and spices. “I think this city needs flavor and more culture with variety. I hope that I have brought that to the Central PA area,” the owners say. “It’s a great food establishment if you're looking to try different food.” In the future, Lapu Lapu plans to expand their menu and to add more authentic dishes, so customers can expect even more.

Norbu is more than Pennsylvania’s first Bhutanese restaurant. It’s also family run and culturally multifaceted, with Nepalese traditions in the mix as well. Owners Tenzin Norbu and Sanya Yeh cherish the opportunity to build relationships with customers and farmers.

Bhutanese people are known for using datsi, or cheese, in their dishes. The national dish, which is also the spiciest, is ema datsi, a chili and cheese stew. Meanwhile, Nepali cuisine centers on the thali, a brass platter featuring a sampling of dishes. With a Nepali-Bhutanese background, Norbu learned how to cook from his mom. “The menu is built around his family recipes,” Yeh says about her husband. Contrary to some expectations, the menu is not all spicy—each dish is made to order based on the customer’s unique preference.

Inna Kondramashin is owner, manager, and holder of many other roles at the shop. She opened up Tanya’s Pastry Shop in 2016. Within two years, Inna introduced pierogi to the menu. During the pandemic, her pierogi became extremely popular, so she rebranded to Inna’s Pierogi Shop to focus on the crowd favorites. “We hope to one day bring back some of our pastries,” Kondramashin says. Today, Inna’s is a small pierogi shop selling frozen pierogi by the dozen, cooked refrigerated pierogi for people to warm up at home, and lunch-ready pierogi for people to eat right at the shop’s intimate tables. Kondramashin says, “I love getting reviews or messages about how our space brought people back childhood memories with their grandmother as I can share the same memories.” For Inna’s, serving people and serving great food go hand in hand.

Now, the Central Market House staple has opened a shop in East York, featuring an extended menu of breakfast, brunch, and sandwiches as well as the market stand’s platters and customizable favorites.
In addition to delicious jerk chicken and grilled salmon platters, Global Cafe is known for its mouthwatering veggies. “Veggies are big for us culturally,” Assen says about her family and Cameroon heritage. The plantains are fried at peak ripeness because, as Assen says, you have to “fry it in the right state” for that perfect sweetness. Global Cafe’s cuisine is healthy, wholesome, and nutritious—and perfect for vegans as there are many veggie options, and they don’t use butter in any of their main dishes.

Owner Ethan Greer describes his cuisine as chef-driven Cal-Mex street food with Caribbian-Latino influence. The streetside shop offers art-centric outdoor seating that’s best enjoyed in the sun or under the overhang. Of the many dishes that represent the restaurant, Greer says the quesabirria tacos are one of the biggest phenomena. Born in Mexico and popularized in California, Greer’s mid-atlantic version sources high-quality, local beef and cheese, the latter of which is from Caputo Brothers Creamery cheese in Spring Grove. Caribbean-Latino seasoning and cooking techniques elevate the dish further. In the first grade, Greer already knew he wanted to open a restaurant. He never lost focus. “I come from a family of excellent cooks, and everything is centered around food,” says Greer. To him, their support means everything. The multi-cultural team all have an aspiration to make their friends, family, and community proud and, as Greer says, “We really put that love into our food.”

Andre and Donna Pham were in their early 20’s when they decided to open Issei Noodle in downtown Lancaster in 2013. “We spent a lot of time day-dreaming about other smallbusiness possibilities that we thought would be fun,” says Donna. “But when Andre finally sat down to iron out the finer details of what life would look like as a future Issei Noodle owner and operator, his vision really clicked and the pieces just fell into place.” Andre’s sister Chane operates the Carlisle location. They both grew up in their parents’ restaurant, learning what hard work, long days, and sacrifices really mean. You can find a version of TanTanmen on almost any ramen shop menu—both in the U.S. and Japan—but Issei’s version is unique. It’s “a silky textured broth that bursts with nuttiness and swirls into a depth of varying spice,” Donna says. Charcoal art, a curated playlist, and an amazing staff make up Issei’s environment. As for the food, that’s intimate in and of itself. “Before anything makes it onto our menu for service, we make it for ourselves and our family to eat many, many, many times,” Donna says.

Together with Julian Clarke, she bought Halfway Tree, and the pair infused their dreams together. “It’s been lit ever since,” Roselyn says emphatically. The restaurant also features creations from Grace Torres, who makes fresh juices for customers to enjoy. “The most rewarding parts of the restaurant are the customers who appreciate the time and love we put into our craft,” says Roselyn. That craft is legit, because Halfway Tree makes everything from scratch. Absolutely nothing is processed and the result is very fresh, well-made Caribbean cuisine.

Staffing often came down to Gabriel and our daughter Madison—while Emily was working in the hospital as a Respiratory Therapist at the time—keeping daily operations running. We knew that in order to survive, we had to change our original business plan and offer our whole menu as takeout only while also making investments in the business such as building an outdoor seating area. It was more than a struggle, but we made it. We were able to build our business and our brand into one that we are proud to offer our guests.
After 10 years in Philly, we decided it was time to move back to Emily’s hometown of Lancaster and open our own restaurant. After a few years of searching, we finally found the perfect spot for our restaurant in the heart of Millersville. Our goal was to create a concept that was completely different, yet approachable for our guests. With this goal in mind, our blend of Regional American BBQ and Modern Mexican food was born.
