From The Editor’s Desk. To say that 2011 has been a transformative year for the Gazette is an understatement. I started at the magazine nearly a year ago and have worked hard to add fun and informative features while continuing many of the classics that you like so much. Throughout the year I have met many of you and enjoyed hearing your feedback. I hope all of you have enjoyed the changes. It’s hard to believe that 2011 is coming to an end, but 2012 looks like it’s going to be an even better year, both professionally and personally. I want to take this opportunity to thank a few people who contribute to the Gazette. Larry Gradwohl happily contributes the Touch of Dutch feature, a piece which has become a Gazette staple. I also want to thank all of the graphic design and editorial interns who have designed some of our best ads and editorial pieces throughout the past year. Tyler Trumbauer, an editorial intern who has gone above and beyond what was asked, he provides us new local sports articles for every issue. Tyler has proven himself to be a pretty

Konkrete Kids Looking to Stay Strong in 2011

The Northampton girls’ basketball team has been stellar these last few seasons. They have been a consistent contender in the Lehigh Valley Conference and a perennial power in District 11. The girls have been guided by a great coach in Jeff Jacksits who is entering his eighth year lurking the sidelines for Northampton. In his tenure there he has accumulated a 122-67 record and has been in the last four District 11 final games and has won the two most recent ones after beating Nazareth in the 2009-10 and 2010-11 finals. Other than dominating the District tournament, Northampton was on top of the standings for most of the regular season. In the 2007-08 season this team finished, 25-7 overall. In 2008-09, they ended their season with a 20-8 record. The finished the 2008-09 season with a 25 wins and 4 losses and

last regular season they stayed dominant with a 21-5 overall record. Last season after escaping Nazareth 38-34 in the District 11 final, Jacksits and his girls took on Boyertown in the first round of the PIAA state tournament. They unfortunately were on the losing side that night and ended their season. Even though the Konkrete Kids had a terrific season last year, they are very excited about this winter. Northampton has been very great the last few seasons and that is obvious as they have been contending for the District 11 title for the last few years but, they haven’t been able to capture the Lehigh Valley Conference title. The reason this fantastic squad has not notched an LVC title recently is because they are battling with ferocious teams for that award. The Konkrete Kids are vying with defending champ Central Catholic, Bethlehem Catholic and Liberty for the title of LVC champ. Northampton has a good class of juniors. Watch out for them and see if they can step up and be very productive this season.

YMCA Winter Registration The Suburban North Family YMCA in Catasauqua is accepting registrations for Winter 2012 Programs. A variety of new programs will be offered starting the week of January 2. New preschool weeknight and Saturday morning classes include: Pre-K Zoology (ages 3 - 5) consists of a different animal story and craft each week. Master Monets (ages 3 - 5) children will use creativity all while improving fine motor coordination and self-expression. Paint, paste and more! In Pre-School Gymnastics, children ages 3 through 5 will enjoy tumbling, rolling, parachute play, music, bubbles and more! An open house for our Tang Soo Do Program will be held Monday, January 2 and Wednesday, January 4. Tang Soo Do is divided into two classes. The youth class is ages 6 through 13 years and the adult class is ages 14 & up. This 2000 year old traditional Korean martial art emphasizes self-defense, discipline, endurance, and spirit. Affiliated with Tang Soo Karate Academy and the International Tang Soo Do Organization. All are invited to try a class the first week of January. New Teen Programs will be offered! First Prize in Halloween Parade The Blue Mt. Town and Country Gazette Wins 1st Prize in the Palmerton Halloween Parade Walnutport, PA – It was announced that The Blue Mountain Town & Country Gazette won first prize in the Palmerton Halloween parade. Gazette employees entered their company’s smart car, “Smartie” in the parade, held by the Palmerton Chamber of Commerce, on Oct. 16th. The Town & Country Gazette is a proud partner of the chamber and local community. Kid-Friendly Projects Fuel Winter Family Fun (Family Features) Colder temperatures mean more indoor time, making it a challenge to find activities that will keep kids happy and engaged. The good news for parents is that even common household items can create hours of fun time. These child-friendly arts and crafts projects will allow you to spend quality, memorable time with your family this winter season with things you already have around the house. Arts and Crafts Ideas With the most soft cotton at the tip*, Q-tips cotton swabs are gentle and safe for baby care and pet care; great for cleaning nooks and crannies in the house and for fixing makeup mishaps. They can also be used in a variety of craft projects. Use them to: • Replace expensive paint brushes. Perfectlysized for children's small hands, you can use a different cotton swab for each color and simply toss when finished. • Apply glue to small areas on models and crafts. Use one tip to apply the glue and the other to remove any excess glue before it dries. • Carve detailed designs into pottery. Moisten the tool to put the finishing touches on sculptures. • Touch-up hard-to-reach areas on freshly painted model airplanes and cars – or even dollhouses.

PA Driver’s Licenses Updated

The Pennsylvania Department of Transportation deployed a new security hologram that makes it easier to spot fake drivers’ licenses and identification cards. Pennsylvania is the first state in the nation to use this enhanced security feature. “A driver’s license or identification card has always been a trusted source for establishing a person’s true identity,” said PennDOT Secretary Barry J. Schoch. “We are steadfast in our resolve to combat counterfeit forms of identification, which ultimately jeopardize lives and hold great potential for harm to our national security.” The new hologram suppresses the “rainbow" colors normally associated with holographic images. The result is a hologram that appears to switch between white and black as the image is moved. Also, because the new image is of a much higher resolution, it is clearly visible in bright, moderate and even low-light environments. This state-of-the-art technology is added to an array ofsecurity features including a holographic overlay of county names and keystone outlines already embedded in current license and ID cards. Holidays got you Stressed? Consider Massage! With the holidays approaching many people are finding themselves extremely stressed whether it be emotionally or physically or both. Many people don’t think about it, but massage is a great way to relax with many health benefits to get you through any stressful time, including the holidays. And let’s face it, who doesn’t enough some selfpampering too! Many people I have met don’t realize the health benefits that come along with getting a massage; they just think its something rich people do to indulge themselves, but massage really should be for everyone. Massage has been shown to improve mental concentration and memory, lower blood pressure for at least 40 minutes after your massage, increase your energy level and boost your immunity for fighting off illness. Who couldn’t use all that with the madness of the holidays!?! It has also been shown to help premature infants gain weight and has been

shown to reduce signs of senility in nursing homes and helps with Alzheimer’s patients’ symptoms. So it can be used across the ages for a healthier more fulfilling life. Plus it just makes you feel good! Now that we understand the some of the great benefits of getting massage, let’s make sure you get a good one. One of the biggest suggestions I can make is to interview and talk with the therapist. Ask them about their training; ask them to explain some techniques they use. Don’t be surprised if you hear “It depends”, but they should be able to give you a scenario such as “If I feel tension in a muscle, I will use smoothing strokes, followed by pressure in direct areas with kneading.” The second biggest suggestion I have is to communicate with your therapist when you are on the table. Tell them what feels good, if they are using too much or too little pressure or if something hurts. If you communicate with your therapist they will tailor your session specifically to your target areas and you will leave feeling like a million dollars. The third suggestion which is really a rule and not a suggestion is to drink LOTS of water after your session. It will flush all the toxins that were loosened by the massage and leave you feeling wonderful. So don’t let the stress of the holidays get to you and if you are feeling the effects, talk to your local massage therapist and get into see them, you will be glad you did. Shepherd/Husky Mix: An adoptable dog in Whitehall, PA Medium • Young • Female Hi, I'm Jazzy! I am a two year old Shepherd/ Husky mix! All of the volunteers tell me I am very sweet and pretty, I'm starting to love all of the compliments! I was taken to an extremely high intake shelter as a stray and who knows how much time I could have had to live . Thankfully I was rescued and brought to Peaceable Kingdom where I am coming out of my shell! Now although the volunteers here are great and take awesome care of me and the other dogs I still would really love a home for the holidays. Sure I get to go for long walks , get soft blankets and sheets, and get lots of loving but I would love to have a family or a person to love me and someone that I can love back. There is nothing better then a warm cozy home with people loving me all of the time and telling me I am the best dog ever! Boy would I love that! That would just be the best holiday present

Buddy is a 5-6 year old mix! He is an extremely sweet dog! He was adopted out a few years back and unfortunately was not taken care of the best so thankfully he is back at Peaceable Kingdom waiting for his forever home again! He is very loving and loves to snuggle! He also loves to get a good petting! He loves to get pet, it is definitely his favorite thing! He is out of shape at the moment and not in the best of health but he is in the best of spirits! He is working his way back into shape each and everyday! The light turned yellow, just in front of him. He did the right thing, stopping at the crosswalk, even though he could have beaten the red light by accelerating through the intersection. The tailgating woman was furious and honked her horn, screaming in frustration, as she missed her chance to get through the intersection, dropping her cell phone and makeup. As she was still in mid-rant, she heard a tap on her window and looked up into the face of a very serious police officer. The officer ordered her to exit her car with her hands up. He took her to the police station where she was searched, fingerprinted, photographed, and placed in a holding cell. After a couple of hours, a policeman approached the cell and opened the door. She was escorted back to the booking desk where the arresting officer was waiting with her personal effects. He said, ''I'm very sorry for this mistake. You see, I pulled up behind your car while you were blowing your horn, flipping off the guy in front of you and cussing a blue streak at him.

Spread The Good Word Free Thanksgiving Dinner a Huge Success

On Thanksgiving Day, members of St. John’s United Church of Christ, 15 South Second Street, Slatington and other community members, prepared and served approximately 150 free thanksgiving Dinners to members, friends, and shut-ins in the Northern Lehigh area. This community outreach program would not have been successful without the help of many members who donated turkeys, baked goods, money and time. The Church would like to publicly thank the following businesses for their support and generous donations of food and gift cards: Thomson’s Market in Walnutport, Galio’s

Market in Slatington, Weis Market and Crystal Spring Farm in Schnecksville, Wegmans, Giant, and Stroehman’s Bakery in Allentown, Mr. Bill’s Poultry at the Allentown Farmer’s Market and Jaindl Farms in Orefield. Christmas at St. Nicholas Church

Christmas is without doubt the most joyful time of the year. Lights and music add a special glow to the season. But this external dazzle has little meaning if it does not proceed from a deep sense of contentment reaching to the depths of the soul. This true spirit of Christmas can only come about if one realizes the real message of the Feast – God become man – Christ’s Birthday. The Catholic parish of St. Nicholas invites all to join in our celebration of this Christmas season. We welcome those who have been away, visitors to our area, and all who would like to celebrate with our parish. To prepare spiritually for Christmas, Pastor Msgr. Thomas Derzack encourages receiving the Sacrament of Reconciliation. Confessions are scheduled for Saturday, December 17 at 3:15 pm and Wednesday, December 21 at 11 am and 7 pm. Celebrating the Life of St. Nicholas In the 4th century, there lived in Asia Minor a holy bishop who was known for his generosity and care for those in need. Christians of his day recognized him as a living example of God’s love and generosity. Today we know him as St. Nicholas. Stories of his charity and concern have been passed on for generations, and they’ve inspired the custom of gift-giving on his feast day, December 6. In the parish of St. Nicholas in Berlinsville, this feast is cause for a special celebration. Early in

December, children are encouraged to leave an extra shoe at church. On the evening of December 6, children and parishioners gather at mass to commemorate the feast of their patron saint. The homily becomes a teachable moment on the life of this saint: God wants each of us to reflect His love, just as St. Nicholas did. After mass, children find their shoes and are excited to see they’ve been filled with gifts. Over the years, parishioners of St. Nicholas Church have shown that spirit of generosity. They have a history of responding to need. A recent example was this year’s Thanksgiving food collection. The lives of twenty five families from our area were brightened when they were gifted with boxes of food and grocery certificates. The Boy Scouts and Cub Pack of Troop 62 collected over 1200 pounds of food; parishioners donated money for grocery certificates; students from the religious education program prepared the boxes. A group of women who enjoy scrapbooking prepared special Thanksgiving prayer cards, and parishioners personally delivered the food boxes to grateful families. At a time when many are enduring the effects of being unemployed, may we all be inspired by the life of St. Nicholas and remember during this holiday season to share our gifts with those who are truly in need.

The Battle of the Bulge Americans remember many dates - December 7, 1941, November 22, 1963, and September 11, 2001. Yet other dates such as December 16, 1944, are a mystery to most; except for those who fought in the largest land battle of WWII. These dates evoke memories of tragedy, a nation in mourning and terrorism. December 16, 1944, the date the now famous Battle of the Bulge began. Over 1 million men from all involved nations fought in this battle. The United States suffered over 89,000 casualties that include over 19,000 killed in action. In terms of losses, this was the worst battle for American forces in WWII. In Germany and most of Europe it is known as The Battle of the Ardennes; Ardennes being where the battle was fought. The Germans called it Wacht am Rhein (Operation Watch on the Rhein). Because American intelligence believed the Ardennes was the least probable area for a German offensive, American forces were thin in the area and composed of the newest and greenest troops in Europe. My uncle, Thomas D. Reda, a 34 year old draftee, a member of the 106th Infantry Division was one of those troops and became a Prisoner of War the first day of the battle. The Germans had the element of surprise because of failed American intelligence. However, American forces fought valiantly and within days of being reinforced assured that German forces could not achieve their ultimate goal of reaching the sea and trapping allied armies which would have forced a negotiated settlement on the western front. Because of factors that included one of the most severe winters in history, inopportune

delays to the Germans, loss of necessary equipment, resources and manpower, the final defeat of the Germans became inevitable. Actuaries state that 1,000 WWII veterans pass away each day. History passes with these proud and noble veterans. Thankfully, many projects are in place to record their history, individually and collectively. Because my own family saw one member becoming a Prisoner of War the first day of the battle and another killed in action the last day of the battle ( Thomas O’Brien - January 25, 1945) I became very interested in the history of the battle. Being a veteran myself and almost losing my own son, a U.S. Marine, in battle in Afghanistan in 2010 I have an acute sense of military history. I support all veterans who ever served our country. I became aware of the Lehigh Valley Veterans of the Battle of the Bulge and was an active member for a long time. Meeting and becoming friends with many who served in the battle was exciting. I recommend to anyone interested in history firsthand to look into this fantastic organization. I’ve often thought that area colleges might grant 3 credit hours to members and those interested enough to attend all meetings where you are truly educated by those who were there. I personally have learned more about WWII and not just this battle from these veterans than I did in high school and college combined. It is likely that December 16 will be overshadow by the hustle and bustle to get ready for Christmas, Hanukkah, Kwanzaa or other such holidays. But please stop and think of this: many historians agree that had American forces not persevered in The Battle of the Bulge, you and I could be speaking German today rather than English. Certain dates will become more important throughout your lifetime. The starting and ending dates of the Battle of the Bulge (December 16, 1944 – January 25, 1945) became extremely important to not only those who fought there but to allied troops in general because it was the beginning of the end for Hitler’s lunacies. It was also just as important for loved ones at home, some who would see their loved ones again and many for many whose loved ones perished in this battle and in WWII itself. As such, these dates are indelibly stamped in their minds forever. Continued on Page 45

Northern Lehigh Community Center After fourteen years of perseverance and hard work, we began Phase I construction of the building that will be known as the Northern Lehigh Community Center. Phase I will encompass 10,000 square feet and will consist of an exercise room with equipment and weights, meeting rooms, activity rooms, an art room, computer area, locker rooms with showers, a kitchen, office space, and much more. Phase II, consisting of 6,000 square feet, will house the gymnasium. Upon completion of Phase I and availability of funding, Phase II will commence. Certain conditions must be met in order to obtain funds from a financial institution. It is essential that residents, organizations, and businesses of the area be involved and committed to the project by contributing financially to its construction. Past studies conducted of the area indicated that a community center is a much-needed asset for Walnutport, Slatington, Washington Township, and surrounding areas. Having our own facility will enable us to offer a full schedule of multi-dimensional programs covering all ages from preschool through senior citizens. The facility will also be available for rental for special occasions to the residents, businesses, and organizations of the area. We are appealing to you for your financial support. Studies indicate that a community center unites residents of a given area. Your organization or business may have made a financial contribution to this project in the past, while others have taken a wait-and-see approach and have vowed to provide financial support when construction begins. We thank you for your contributions in the past. We have been able to purchase the land, performed several phases of surveying, razed the old building originally located on the property, installed the necessary storm drainage infrastructure, obtained permits and blueprints, and are currently in the position to construct Phase I. Now that construction has begun, we need your financial commitment in order to continue the progress. Your partnership in this project will improve the quality of life of all citizens in the area while assisting them in reaching their fullest potential and encouraging healthy community involvement. Plans are being developed to recognize significant financial contributors by listing their

Christmas Celebration Folklore Each year 30 million American families bring a natural Christmas tree into their homes to become the warm and glowing center of their Christmas celebration. The tradition endures year afte year… but how did it get started? Historians trace countless roots that grew into our present day custom of using a Christmas tree. Legends tell of the decorated tree in winter celebrations log before there was a Christmas. Egyptians brought palm branches into their homes in late December as a symbol of growing things. Romans trimmed trees with trinkets and topped them with an image of their sun god to celebrate Saturnalia. Druid sorcerers hung golden apples and lit candles on oak trees to celebrate the winter solstice. In the middle ages, the feast of Adam and Eve was held on December 24th; a fir tree hung with red apples called the Paradise tree was its symbol. It is generally agreed, however, that the use of an evergreen tree as part of the Christian Christmas celebration started 400 years ago in Germany and spread to most of northern Europe by the 19th Century. Hessian Mercenaries during the American Revolutionary War brought the custom to the United States. In 1804 soldiers at Fort Dearborn (now Chicago) hauled trees to their barracks during Christmas. A Philadelphia newspaper story printed in 1825 commented on decorated trees in German immigrant homes during the Christmas season. In 1842, a German named Charles Minnegerode introduced the custom in Williamsburg, Virginia. His tree was described as “splendidly decorated” with strings of popcorn, gilded nuts and lighted candles. The first recorded Christmas tree retail lot was set up in 1851 by a Pennsylvanian named Mark Carr who hauled two ox sleds loaded with trees

from his land in the Catskills to the sidewalks of New York. There is little doubt that the trees he brought were Balsam firs, which remained the best selling and most popular type of tree until 1955, when it was nudged out by the lush western Douglas fir and Scotch Pine produced on tree farms in the Eastern United States. Meanwhile, in Victorian England, Prince Albert, husband of Queen Victoria, gave the Christmas tree the stamp of acceptability in England when he introduced it to the Royal Palace. On the other side of the Atlantic, the 14th President of the United States, Franklin Pierce, was the first President to set up a Christmas tree in the White House. But it wasn’t until 1923 that President Calvin Coolidge establilshed the National Christmas Tree Lighting Ceremony on the White House lawn that has since become part of the annual holiday observances. The enduring tree symbol – which is even older than Christianity and not attached exclusively to any one religion – remains a firmly established part of our holiday customs, engaging not only our senses of sight, touch, and smell, but also our sense of tradition. The tree evokes a mood of holidays from long ago, of the genial ghost of Christmas Past.

How many of you do Springerle baking? Those cookies were baked in the old country, and when our ancestors came over, they brought the Springerle boards with them. Those cookies were made with that board that had all sort of flower designs carved into the wood by hand. The dough was very stiff. The lump of dough was placed on a baking board and then pressed flat by hand. The Springerle board is then pressed on top of the dough with the flower pattern on the bottom side. Then you had flower designs pressed into the dough. Next, the dough is cut in square pieces and baked on cookie tins. Those cookies became rather hard and were good for dunking. That is the way we should eat cookies all the time. They soaked up a lot of coffee.

D&L Marathon a Runaway Success Five hundred twenty five runners from 15 states and the District of Columbia registered for the inaugural Delaware & Lehigh Heritage Marathon and Half-Marathon along the D&L Trail on Sunday, October 23. Twenty-four-year-old Chris Bauer of Sea Cliff, NY was the overall winner of the 26.2-mile marathon in a time of 2:53.14. The top time in the half-marathon was turned in by 42-year-old Sean Robbins of Shavertown, PA, who ran the 13.1-mile course in 1:17.05. Hundreds of spectators gathered at the finish line near Lehigh Gap to cheer on the 475 runners who competed in the races. Runners started in Northampton and followed the D&L Trail through portions of Northampton, Lehigh, and Carbon counties. Marathon runners also covered parts of the Slate Heritage Trail in Slatington and the Lehigh New England Trail in East Penn Township, Carbon County. The wide, flat course proved to be a favorite among the racers. “The course was beautiful, and I had a great time,” said Jenna Jebitsch of Allentown, who ran the half-marathon in 2:22.41. “I would definitely consider running the full marathon next year.” ”It was a well-planned and organized event on

a beautiful, fast course,” said another Allentown resident, 36-year-old half-marathon runner, Dave Sabol. “While it was the first year for the race, it was hard to tell as everything from logistics to catering was handled exceptionally well. There was lots of on-course support, great volunteers, and a nice finish festival made this race one that I won’t soon forget.” The top female in the marathon was 28-year-old Jessica Kennedy of Morristown, NJ, who blazed the 26.2-mile course in 3:16.40. The top female runner in the half-marathon was 38-year-old Mindy Sawtelle-Zottola of Indiana, PA, with a time of 1:25.06. Stephen Armstrong of Macungie was one of the 288 half-marathon runners, finishing the course in 2:32.31. Armstrong said he would “do it again” in 2012. “Overall it was an enjoyable run and not bad for a first-time event,” Armstrong noted. “The volunteers were very motivated and encouraging.” D&L Race Director, Rayne Schnabel, was pleased with the first-time event and already planning for next year. “It surpassed any expectations I had for an inaugural race,” Schnabel said. “We’re excited to Continued on Page 47

Cream butter, almond extract and confectionery sugar until mixture is light in color and smooth. Add melted chocolate to butter mixture until fully incorporated; add egg yolks one at a time. Fold butter-chocolate mixture into meringue. Once mixed, sift together dry ingredients; slowly add to wet ingredients until mixture is completely blended. Bake for 30 to 35 minutes at 350째F in 10-inch spring form pan that has been lightly coated with butter and dusted with almond flour. Ganache Frosting: Bring heavy cream to boil on stove; pour over chocolate and agave nectar in large mixing bowl; mix with whisk until smooth. Allow ganache to set up overnight before use. When ready, spread ganache over top; then sides of cake in thick layer. Garnish sides of cake with toasted almonds.
