From The Editor’s Desk. What is patriotism? I know that it’s more than the glib buzzword that we hear so often bandied about by pundits and politicians. It’s not something that’s divisive, that’s exclusive to liberals or conservatives, democrats or republicans. I also know that I could never explain patriotism better than someone who has volunteered to risk their life for their country. One of my closest friends made that decision. Shortly after I had the honor of being the best man in his wedding he left his friends, family and wife Crystal to go to boot camp and begin his career with the Air Force. Like so many other young men and women who decide to serve Tom balanced his family life with his lengthy deployments to the Middle East, including Afghanistan. In honor of Memorial Day I asked Tom what being in the Air Force means to him. This was his response. “As a service member in the United States Air Force, Memorial Day means something a little different for me than it would the average American. When I was 18, I joined a group of people who swore a solemn oath to their country to defend her with their lives. This is not something to take lightly. Every day we receive word that another brother or sister has been lost to enemy attacks. Life, in the military, could be taken from you at a moments notice. We lay it all on the line for the sake of others. Those that came before me hold a special sort of respect in my heart. If not for their sacrifices I can’t say that I could live the life I do today. I learn from their past sacrifices and support my comrades so they can continue to do the work required of them. They swore the same oath I did to “support and defend the constitution of the United States.” This is what

we do. Children, fresh out of high school, enlist to serve what seems to be a higher calling. Some of us do it because of the benefits the military provides. Some of us do it because jobs are hard to come by. Still, others do it for the pride. I’ve made friendships in my military life that will last Staff Sergeant Tom until the day I die. On October 10, 2003, this F14 “Tomcat”, a former Navy fighter jet, flew its last flight into Lehigh Valley International Airport. The Tomcat made its way for LVIA to the VFW Post 7293 in Egypt where it is on display in memory of those who fought for our freedom and for those who continue to fight. The F14, a member of the Strike Fighter Squadrom 103 “Jolly Rogers”, carries the names of Lt. Jay Hildebrant “Cheese” and Commander Dave Asjes “Charmin”. It is also marked on the sides with USS Enterprise, the Aircraft Carrier who’s flight deck it roared from on more than one

Warrior’s Watch Riders - New Chapter Warriors' Watch Riders has a new chapter in the Lehigh Valley; the PA East Central Chapter. Our soldiers have our backs over there. We have their backs here at home. Some of us are veterans; some of us are family to those that serve. Some of us ride motorcycles as a way to raise awareness. All of us are Americans. We stand together to honor our nations warriors and to support their families. Warriors’ Watch Riders provides motorcycle escorts for military units returning from war, or for units deploying, and for individual warriors coming home or departing. Warriors’ Watch supports military families and unit Family Readiness Groups. They also provide motorcycle escorts and for military family members in awareness-raising activities in which they may be engaged as well as promote these activities. Warrior’s Watch Riders’ definition of “troops” includes veterans of all military branches from all eras, police and firefighters, and all first responders. They honor our first responders and our veterans in the same way that we honor our currently uniformed troops. Warriors’ Watch does not charge money for our

services. We do no fundraising, and we do not accept donations. All of the activities are carried out by volunteers on their own time and at their own expense. What they need is YOU, either to ride or to stand and cheer our homecoming and departing troops, or totravel to support unit family groups in their activities. LCCC Students Attend Beacon 2011 Conference On Friday, June 3 three LCCC students will attend the Beacon 2011 Conference, held on LCCC’s main campus in Schnecksville. This is the second time the conference will be held at LCCC. The Beacon Conference provides an opportunity to showcase and celebrate the achievements of outstanding two-year college scholars in diverse academic disciplines. As a result of the Beacon 2011 rankings completed by three readers in each of the categories, the following LCCC students have been invited to present their papers at the June 3 conference: Tyler Landis, whose paper "Economic Paradoxes" is included in the Business and Economics Panel. His faculty mentor is Ned Schillow. Ryan McGrail, whose paper "The DeLacey Family; the True Creators of Frankenstein's Creature" is included in the General Literature Panel. His faculty mentor is Dr. Kathleen Mayberry. Jusline Sayegh, whose paper "Addressing the Needs of Generation 1.5 in the Community College" is included in the Education Panel. The BHCWA Spritz Invasive Plant Watch Water wisdom from the Bertsch Hokendauqua Catasauqua Watershed Association At the Bertsch/Hokendaqua and Catasaqua Creek’s Watershed Association one of our primary goals is to educate and bring awareness to the public on key watershed issues. One of the ways we at BHCWA have chosen to help the public is to bring awareness of the growing problem of “invasive plants” and the damage that they cause. What is an “invasive plant”? “Invasive plants” are described as species’ of plants that become weed pests that aggressively compete with, spread and displace native plant life and can alter the functionality of an ecosystem once established as a dominant member of a local plant community. Most “invasives” are described as “non-native”, “exotic”, “alien” or “introduced” species. They tend to be generalists, being able to exist in wet, dry or infertile soil, at home in sun or shade, and being most aggressive on disturbed ground. Other characteristics of “invasive plants” is that they mature quickly, spread by roots or shoots and produce a prolific amount of seed that readily germinates in many different soil/light conditions. Impacts of “invasive plants” are many. They degrade native environments thus affecting “native” plants, insects, birds and animals, with endangered species being the most vulnerable. They establish readily in yards, gardens, fields, parks, and hedgerows. Left unchecked they can and are very expensive to control. In the southeastern U.S. millions of dollars a year are spent controlling a non-native invasive called Kudzu vine. This vine is extremely fast growing, engulfing anything onto which It can attach, especially utility poles and wires. Common “invasives” in our area include Japanese Multiflora Rose, Japanese Honeysuckle, Purple Loosestrife, Norway Maple, Garlic Mustard, Canada Thistle, and Oriental Bittersweet and Butterfly Bush, to name a few. Memorial Day As a child of the 1950’s, Memorial Day was officially designated as Decoration Day. Interestingly, some called it “Declaration Day”. But, all knew it was day to honor those who had died in service to our great country and it was always celebrated on May 30th. The official name of Memorial Day did not become the law until 1967 and by 1968 the Uniformed Holidays Bill was passed creating three day weekends for several holidays (Washington’s Birthday, Memorial Day and Veterans Day). The law took effect across the nation in 1971. With this change and even before, revered national holidays became less about honor and ultimately undermining the meaning of the day. Throughout the nation this became a time of diminished observance of the day and what it stands for. On this day in any given current year look around and those observing the day are mainly veterans, their families and Americans with a lot of pride in those who serve their country. While the day is to honor those who died in service to our country there was always a mix of emotion by those in attendance as the mass in parades and other ceremonies was by veterans, women’s auxiliaries, police and fire departments, boy scouts and girl scouts and for me it was a microcosm of all who serve our country. The day is one in which the youth can see history personified right in front of their eyes. When I was young there may have been a few Civil War veterans just as we have lost the last 2 WWI veterans 93 years after the war, quite a few Spanish American War and World

War I veterans and incredible numbers of World War II and Korean War veterans. Today’s youth will see a decreasing number of World War II and Korean War veterans, a long overdue honored group of Vietnam veterans and those from the wars since to include the Gulf War and the wars in Iraq and Afghanistan. I tell the youth I speak to, here are your heroes, not those in a ballpark. Talk to these heroes, ask them questions and learn from those who were there. The history books in school will not and cannot share what these heroes experienced firsthand. Rarely in a lifetime can you speak to someone who was on the front line of history. During WWII over 1,000 professional athletes served our country. If you want to learn about these dedicated athletes of a bygone era read “Duty, Honor, Victory: America’s Athletes in World War II by Gary Bloomfield. How many athletes do you know that served in recent years? Know your heroes! Often on this day while honoring those who died in service to our country the thought is of those “who died in combat!” However, throughout our military’s history men and women have died nowhere near combat but still in service to our country. Some die in training exercises. Some die in support operations. Some die in other ways. But, while they wear the uniform of our nation’s military their lives are every bit as important and honored as those who die in combat. Continued on Page 28

Memorial Day Continued from Page 27 I served in the army for 10 years. I lost a family member in combat and another became a Prisoner of War. On May 19, 2010, my youngest son, PFC Joseph L. Faro, a United States Marine nearly lost his life in Afghanistan when an Improvised Explosive Device (IED) was set off. I know the cost of service to our country as many others do. War takes another toll on those left behind. In my son’s case a fellow Marine and friend, PFC Kyle Joseph Coutu was killed in action in Afghanistan on February 18, 2010, having just turned 20 days earlier. Now my son Joseph, another son Matt and I will journey to Pawtucket, R.I. for the first annual PFC Kyle J. Coutu 5K Run to honor this hero. Let us never forget those who died in service to our country. In closing I often tell those I talk to that in recent years it is my belief that most of our society tunes out the current war and unless tragedy hits home or close to home or you know someone affected the war remains as far from you as Afghanistan does physically from all of us. Yet that war gets closer and closer to home the closer you are to one who has served. Recently the news reported that an Afghan pilot, someone supposed to be our ally, opened fire killing 9 Americans. One of those Americans, Major David Brodeur, is the father of a young girl who attends school with a granddaughter in Alaska. That young girl made her First Communion days after her father was killed. Yes, the war is close to home. Let Memorial Day be all it was meant to be. Parties, picnics and time off from work are fine but without those who died serving you and me there may never be parties and picnics let alone time off from work. God Bless America! Bob Faro

Postscript from Bob Faro: “I thought I was finished but news just came that we lost a true WWII hero and my dear friend John “Jack” S. Davis of Easton. Jack was a true WWII hero, having been awarded 2 Silver Stars and a host of other awards for valor. Yet Jack never talked about his deeds and always said the real heroes are buried or lost overseas. My life has been enriched for knowing Jack Davis. To me, Memorial Day means remembering those that not only died in service to our country but for many war veterans who suffered a lifetime after their war.”

Carbon Co. Fair Queen Contestants sought Krisandra Livingston, 2010 Carbon County Fair Queen had an exceptionally fun and exciting year representing the fair through her participation in various parades, appearances and radio interviews The 2011 Carbon County Fair Queen Contest is now underway. To participate in the contest, contestants must reside in Carbon County or West Penn Township (of Schuylkill County) and be a female at least 16 years of age, but not over 20 years of age by June 1, 2011. Contestants will be judged based on an essay, personal interview and speech presentation. Madeline Ligenza, Pageant Coordinator of the fair association, noted that the judges are looking for the candidate who they feel can best represent the fair, while effectively promoting agriculture. She emphasized that the fair is about our youth and this is one way of keeping teens involved in our county fair. Holbren What happened ‘On the Road to Emmaus’ is well known; Two men, most likely Jewish followers of Jesus who also knew the Twelve, were returning to their hometown, Emmaus, following their celebration of the Jewish week of Passover. They were discussing all that had happened when Jesus appeared to them, yet they did not recognize him. He “walked ahead of them” as they spoke. The text then says, “Beginning with Moses and all the prophets, he interpreted for them the things about himself in all the Scriptures.” It

wasn’t until hours later when Jesus sat down with them and “broke the bread” that they suddenly realized who he was, for they must have heard the account of the Last Supper from the Twelve. The same sort of thing happened when Jesus appeared to the women at the tomb, Peter (Simon), and with the apostles gathered behind closed doors. Christ also “opened the Scriptures” for them, but it took letting them touch him or sharing a meal before “their eyes were opened”. How easy it is for us ‘post-modern’ people to not recognize Christ in our midst. Like so many stories in the Bible, we deceive ourselves in so many ways from witnessing to the risen Christ. Recipe Round-Up Go Fish with Carla Hall of “Top Chef” (NAPSI)—Those interested in easy, tasty seafood recipes no longer have to go fishing for them. Carla Hall, All-Stars Fan Favorite on Season 8 of the TV show, “Top Chef,” offers a “Go Fish with Canola Oil” recipe collection with stepby-step video instructions. “A lot of people get nervous about cooking fish, which is unfortunate because it’s a healthy addition to any diet and ‘ticky-boo’ to prepare,” said Hall. Her fish recipes include Grilled Salmon over Lentil Salad with Walnut Vinaigrette, Halibut en Papillote (meaning “in parchment” in French) with Roasted Tomato-Artichoke Ragout, Tuna Stir-Fry over Whole-Wheat Vermicelli and the trout dish below. All of these recipes are made with canola oil, which is a good source of omega-3 fat along with the fish. Omega-3 fat may help protect the heart, especially when consumed in place of saturated fat. In fact, the U.S. Food and Drug Administration authorized a qualified health claim for canola oil on its potential to reduce the risk of heart disease. In her CanolaInfo videos online, Hall answers common questions about fish, including selecting and preparing it. Trout with Lemon Oil & Oven-Grilled Vegetables The star of this recipe is delicious lemon canola oil, which should be a staple in any pantry. Here, it makes this simply prepared broiled trout with vegetables a healthy and tasty weekday meal. 1 cup canola oil zest of two lemons, about 2 Tbsp 2 small zucchini, cut in half lengthwise, then cut into ¼-inch thick diagonal pieces 1 pint grape tomatoes 1 medium red onion, cut in half and thinly sliced into half moons

4 garlic cloves, peeled and smashed 2 sprigs rosemary 1 Tbsp balsamic vinegar 2 Tbsp lemon oil ½ tsp salt ½ tsp freshly ground black pepper 4 rainbow trout fillets (6 oz each), skin removed 2 tsp lemon oil 4 sprigs fresh rosemary, 2 inches long ½ tsp freshly ground black pepper lemon wedges for garnishing 1. In blender, combine canola oil and lemon zest. Process until smooth, then strain through fine mesh strainer. Store in refrigerator in airtight container or covered jar for 1−2 days. 2. Preheat broiler. In large bowl, combine zucchini, grape tomatoes, red onion, garlic and rosemary. Drizzle vegetable mixture with balsamic vinegar and lemon oil. Toss, then sprinkle with salt and pepper. Spread vegetables in single layer on baking sheet and place 4 inches under broiler for 10 minutes or until vegetables are tender crisp and browned. Halfway through cooking time, toss vegetables. 3. While vegetables are cooking, prepare baking sheet with foil and canola oil cooking spray. Place trout on prepared baking sheet. Sprinkle both sides with pepper and place rosemary sprig under each fillet. Drizzle each fillet with ½ tsp lemon oil. Place fish under broiler for 7−8 minutes or until fish is opaque and flaky. 4. Carefully lift trout from pan with spatula and serve with vegetables. Yield: 4 servings.

Jerry Stokes and George Zahradnik, who retrieve artifacts from under long-abandoned outhouses, will be the speakers at the Lehigh Gap Historical Society’s May 12 meeting in the Palmerton Library. They have found literally thousands of items ranging from old coins to glassware, china, metal, etc. The Northern Lehigh Events Committee is proud to announce the 2nd Annual Great Slatington Duck Race and Committee Picnic to be held on Sunday, August 3 in Slatington. Watch the ducks race down Trout Creek. All proceeds from the Duck Race are earmarked to cover the expense of the Northern Lehigh Halloween Parade this year. Northampton Borough Centennial will be performing one of its last functions on Saturday, September 6 at the Northampton Borough Municcipal Building in Northampton. On that day a time capsule bench will be dedicated and filled with items from the centennial celebration. These include products that were sold during the year, photos of events, and copies of newspaper ads. The bench will be sealed and opened when the borough celebrates the 125th anniversary of its incorporation. In partnership with the Pennsylvania Historical and Museum Commission, the Northern Lehigh Future Focus-Historic Preservation/Tourism Task Force will sponsor a ceremony to dedicate a state historic marker a 11:30 a.m. on Thursday, October 23, at the intersection of Main and Factory Streets in Slatington. The marker commemorates the first school slate factory in the United States.

Walnutport Canal Association News The Locktender’s House will be open for guided tours on Sunday, June 5 from 2 – 4 p.m. The recently restored basement area with new displays including photos of past Canal Festivals, the 1953 canal restoration, the Lock 23 restoration, historic canal photos, and a display of artifacts found during the restoration of Lock 23 are now part of the tour. The house will also be open July 10, August 7, September 11, October 2 and October 16. Stop in to see these new displays and learn about life in the late 1800s. C&D Landscaping of Walnutport recently performed the annual maintenance on the landscaping on both sides of Main Street and the Locktender’s House with funding provided by a grant from Northampton County. The Canal Association wishes to thank all the volunteers who came out on April 30 for the annual cleanup. Thanks also to Thrivent Financial for Lutherans for their generosity. The Walnutport Recreation Board in conjunction with the Walnutport Canal Association is sponsoring a 3.7 mile stroll along the lower towpath that will take place on Sunday, June 12th at 1 PM. Gathering point will be at the canal pavilion. Everett Kaul, President of the WCA and canal historian, will point out areas of interest including the nature trail, locks 24 and 25, the Poughkeepsie railroad bridge/pillars, and the Bertsch Creek Aqueduct. Mr. Kaul will also talk about life along the canal during the height of the canal operation. The entire walk is 3.7 miles but you need not feel obliged to do the entire walk. You can walk as fast and as far as you feel comfortable. Also, well behaved and leashed pets are welcome with owner cleanup expected. The 8th Annual Gathering Trout Run Covered Bridge On the first Saturday in October, NLHS will once again stage The Gathering, its major fundraiser that supports the Slate Heritage Trail Project. It is a day of food, festivities, and fun for our community. As always, attendees will be offered the choice of an assortment of foods, including local and regional favorites, as well as the ever popular Bier Garten. The Chinese Auction, with its outstanding selection of baskets, will also be present. A variety of musical acts will perform, and the day will end with the spectacular evening fireworks display. Palmerton Students Hold Silent Protest to Save Their Sports Program Students, parents and supporters circled the Palmerton High School building on May 2nd. The crowd was gathered in support of Blue Bomber’s sports as well as other extracurricular activities on the chopping block because of budget issues. A vote is scheduled for June that will end Palmerton School District’s participation in the Colonial League. Nearly 500 people carried signs that read “SOSSave our Sports”, Don’t take the P out of Pride” and other pro-Bomber’s slogans. The blue and white clad crowd was mostly silent except for a few chants of “Let’s Go Bombers” as they picketed around the school where a budget meeting was taking place. By Joe Korba

Alexander Hamilton formed The United States Coast Guard in 1790, then knows as the Revenue Cutter Service. The Coast Guard’s mission is unique in the armed forced because it includes a maritime law enforcement directive. The Coast Guard is operated under the Department of Homeland security during

peacetime and is transferred to Navy control by the President or congress in time of war. When Hamilton first established the service he was attempting to collect taxes from smugglers bringing goods into the young nation, fight piracy and rescue people in distress while they were at it.
