FROM THE PUBLISHER’S DESK The time has come already for the Back to School issue. I’m sure for the kids it’s bittersweet, excitement for reuniting with friends but dreading the homework. For parents it’s the same, glad to see the kids go back to school and out of their hair, but we always end up missing them! I love summer, but this summer was just too hot for me. I’m looking forward to fall; cool nights, warm days, the changing of the leaves and the smell of fall candles. My favorite scent is Sweater Weather by Bath & Body Works! Don’t forget to drop off your pet donations by September 11, it’s for a good cause. All donations go to the Animal Food Bank of the Lehigh Valley. I hope you enjoy this issue as much as we enjoyed putting it together. I especially hope you enjoy the Back to School cover, my grandkids are models! Siegfried Station submitted by IRENE E. URBAN

The Siegfried Railroad Station, the home of the Northampton Area Historical Society, will be open to visitors on Sunday, August 21, from 1 p.m. until 4 p.m. The station is a museum housing artifacts of the Northampton area. It is located on West 21st Street (Route 329) in Northampton. There is no charge to visit the station, but donations are always accepted. Money received through donations and earned through fundraisers is used for the restoration of the station. A new floor was recently installed in the former ladies’ waiting room and paid for with society funds and a grant from the Northampton County Hotel Tax program. The society is selling mums again this year. To place an order call 610-767-8420. The deadline to order is August 24. Mum pickup is Saturday, September 10, from 9 a.m. until Noon at the station. The fall garage sale will be held on Saturday, September 10, from 8 a.m. until 1 p.m. Donations for the sale are requested from the public. Northern Lehigh High School to Host Freshman Orientation Day submitted by JON DeFRAIN

On Thursday, August 25, 2016, Northern Lehigh High School will hold our annual Freshman Orientation Day. The transition from Middle School to high school is often difficult for many students and the purpose of this day is to introduce the students to their new surroundings and prepare them for the final stages of their public education. This year the orientation day will again be a half-day format.The day's activities begin at 7:15 a.m. and last until 12 p.m. Throughout the day, students will be introduced to the entire high school administration and faculty, assigned lockers/

combination locks, tour the building and attend scheduled classes. Also, the administration will provide the students with information regarding school policies, rules, procedures, and be introduced to our new schoolwide behavior system. Bus transportation will be available to and from students' regular bus stops and a free lunch will be provided. Parents should make every effort to ensure that their child attends this important day. DIRECTIONS • Cut sirloin into 1-inch cubes. • Saute garlic and onions in butter slowly until soft, discard garlic, remove onions from pan. • Brown cubes slowly in drippings in pan. • Add beef gravy, salt and pepper. • Return onions to pan, simmer one hour or until beef is tender. • Add oregano, marjoram and Burgundy wine, simmer 15 minutes. • Stir in sour cream and serve with rice or noodles.

Burgundy Beef Recipe by Joan Pierce from St. Paul’s Pantry cookbook

INGREDIENTS 2 lbs. sirloin beef cubes 1 garlic clove 2 med. onions, sliced thin 4 Tbsp. butter/margarine 2 (10¼ oz.) cans of beef gravy

Salt and pepper to taste ¼ tsp. oregano ½ c. Burgundy wine ½ pt. sour cream ¼ tsp. marjoram

My end result picture might be lacking in the looks department, but this recipe made up for it in the taste department- it is so delicious! The flavor is so rich with the gravy and the wine, and once you add the oregano towards the end, the aroma is mouthwatering. Personally, I think two onions is a lot so I don’t even add a full one, but it still looks like a lot of onion to me. I always, always use butter, never margarine. Also, I did not have marjoram, so after some research on what marjoram is; I added a little bit more oregano instead. This recipe is a bit lengthy, from prep to having it simmer on the stove for almost an hour and a half, but the end result is so worth it- this dish immediately became a favorite dinner!

Starting the new school year can be a time of great excitement… and anxiety. Help calm your child’s fears (and your own) with these teacher-approved tips. Meet the new teacher. For kids, one of the biggest back-to-school fears is “Will I like my new teacher?” Breaking the ice early on is one of the best ways to calm everyone’s fears. Take advantage of your school’s open house or back-to-school night. Some teachers welcome phone calls or e-mails — another great opportunity to get to know each other before the year begins. If personal contact with the teacher isn’t possible, try locating the teacher’s picture on a school website or in a yearbook, so your child can put a name with a face. If your child’s teacher sends a welcome letter, be sure to read the letter together. Tour the school. If your school hosts an open house, be sure to go. Familiarizing your child with her environment will help her avoid a nervous stomach on the first day. Together you can meet her teacher, find her desk, or explore the playground. With an older child, you might ask him to give you a tour of the school. This will help refresh his memory and yours.

A familiar friend can make all the difference when heading back to school.You might try calling parents from last year’s class and finding out which children are in your child’s class this year. Refresh these relationships before school starts by scheduling a play date or a school carpool. Tool up. Obtain the class supply list and take a special shopping trip with your child. Having the right tools will help him feel prepared. While keeping basic needs in mind, allow for a couple of splurges like a cool notebook or a favorite-colored pen. These simple pleasures make going back to school a lot more fun. School supply lists also provide great insight into the schoolwork ahead. Get your child excited about upcoming projects by explaining how new supplies might be used. Let him practice using supplies that he’s not used before — such as colored pencils or a protractor — so he will be comfortable using them in class. Avoid last-minute drilling. When it’s almost time to stop playing, give a fiveminute warning. Giving clear messages to your child is very important. Chat about today’s events and tomorrow’s plans. While it is important to support learning throughout the summer, don’t spend the last weeks of summer vacation reviewing last year’s curriculum. All kids need some down time before the rigors of school begin. For some kids, last-minute drills can heighten anxiety, reminding them of what they’ve forgotten instead of what they remember.

Cabinet Keeps Pennsylvania Bluegrass Alive By Justin Sweitzer

“Old Time Songs” is not only the the title of the opening track of Pennsylvania-based bluegrass band Cabinet’s most recent release, it also serves as an autobiographical description of the group’s style. The Scranton/Wilkes Barre outfit combines traditional elements of bluegrass, folk, americana and country, which pays homage to the country music of the past while embarking on a journey to solidify themselves as one of the premier forces in modern bluegrass. The band formed in 2006 and consists of Pappy Biondo who handles vocals and the banjo, mandolinist and vocalist J.P. Biondo, Mickey Coviello on acoustic guitar and vocals, Dylan Skursky on both electric and double bass, Todd Kopec who plays the fiddle and contributes vocals, as well as Jami Novak on the drums and additional percussion. Listeners who cringe at the thought of modern country music can breathe a sigh of relief as Cabinet’s latest release, their 2015 effort entitled Celebration, mixes instrumental virtuosity with an effortless form of storytelling that abandons modern country’s played out themes of women, trucks and being country for anthems of small town life in rural Pennsylvania and beyond. The band’s song “Pennsylvania” pays tribute to their local roots as it tells of drives through the countryside, days spent at lakes and visions of the Appalachian mountains--common characteristics to life in Pennsylvania’s rural areas. Pappy Biondo’s banjo solo midway through the song truly stands out in the group’s salute to their state. Their track “Home Now” circles around the comforts of returning home in a narrative that references one’s brush up with the law, featuring quick banjo picking and a harmonica on one of the album’s most uptempo songs. “Red River Valley” slows down the pace from other songs on Celebration, offering a perfect song for an evening slow dance with the song’s mellow solos from guitarist Mickey Coviello and fiddler Todd Kopec, showing that the band can excel no matter the speed or style of the song. “Tears of Laughter” also makes use of slower tempos coupled with lyrics about how to rise past adversity both in love and other facets of life. “If you find yourself drifting too far from the shore,” the band sings, “You could steer yourself through the stormy weather. Lehigh Carbon Community College (LCCC) and the American Health and Safety Institute (ASHI) will offer first aid classes designed for both adults and children, as well as in specialty cases. All classes are held at its main campus in Schnecksville. Pediatric First Aid is ideal for daycare providers, school staff, scout leaders, coaches or others who serve youth. It includes CPR, AED and First Aid specifically for children. Class is held Wednesday and Thursday, Sept. 7 and 8, from 6-9 p.m. Cost is $125. Lehigh Carbon Community College (LCCC) will offer two noncredit courses for job training in technology this semester. Microsoft Office Plus teaches word processing, spreadsheets, databases and presentation software, focusing on Word and Excel applications and preparation for the certification testing. Class is held Sept. 6 through Dec. 15, from 6 to 9:30 p.m. at the college’s Morgan Center in Tamaqua. Cost is $1,214; additional fees apply for text and voucher. A new computer-aided design (CAD) drawing course will be held at LCCC Allentown, beginning Sept. 14 to Nov. 4, from 2 to 4:30 p.m. Using the computer as a design tool, students develop their skills through step-by-step instruction. I will get a couple of dogs to chase the bugs, That will create humor, I can tell you, I will buy a shotgun for the (tent) caterpillars, [And] bird cages for the pigeons. … [The second part will be printed the next issue of “Town and Country”.] [In the early part of the twentieth century when the townships in our area were still comprised mostly of rural farming communities and small villages, one often heard less than flattering views of urban dwellers by the country folk and vice versa. Ralph S. Funk (1889-1969) was born in Stockertown,

PA, but grew up near Gilbert in Monroe County where his family had a creamery. So he was familiar with farming in general and dairy farming in particular. His poem about a city person going out to a rural area to show the county folks how to farm uses tongue-in-cheek humor to show the perception that “country bumpkins” had of those “city slickers”. During his lifetime he also made the transition from rural living to city dwelling. While at Gilbert he graduated from the Fairview Academy and then attended Muhlenberg College. Later he joined the engineering departments of local railroads and finally the Lehigh Coal and Navigation Company, from which he retired in 1957. When he was working for a railroad in 1920 he was already living in Allentown and that was also his residence when he passed away in 1969. He is best known for his Dutch poetry, 331 poems in all, and they reflect his strong identification with his rural PA Dutch roots. He first started writing dialect poetry upon the passing of a former beloved pastor of his church at Gilbert, Rev. Astor C. Wuchter, who also wrote poetry in the Dialect. In 1969 the Pennsylvania German Society published 112 of his poems in their second annual volume. Most of his poems, unlike the one I chose because of its humor, reflect the culture of the Dutch and the rural lifestyle in general. In the future I will include some of his other poems in this column.

sensor sprinklers. As the deer passes in front of the motion sensor it starts the sprinkler and sends them running. Just be sure to turn off the sprinkler when you go out to garden. Repellents that make plants taste or smell bad to deer can also help. You will find products containing things like garlic, hot pepper oil, and predator urine. Apply them before the animals start feeding for the best results, and reapply as directed on the label. Look for products like Deer Ban (summitchemical.com) that are easy to apply, odorless and last a long time. Include deer resistant plants whenever possible. Even though no plant is one hundred percent deerproof, there are those the deer are less likely to eat. Include plants rated as rarely or seldom damaged by deer. And be sure to provide additional protection if you include plants known to be frequently or severely damaged. Constantly monitor and evaluate the effectiveness of the methods used. Deer often change their feeding location and preferred food. If the populations are high and the deer are hungry, they will eat just about anything. Be willing to change things up if one method is not working. Using multiple tactics will help increase your level of success. So don’t let hungry deer stop you from gardening.
