INSIDE THIS ISSUE

FROM THE PUBLISHER’S DESK The votes are in and Ice Cream Lab is the winner of our coolest treat contest. If you've never been there, stop by and give it a try. Speaking of stopping by, I hope everyone had a chance to visit the Vietnam Memorial at the Palmerton Borough Park. If not, be sure to check out the pictures and the write up in this issue. We are having a hot summer and it's hard to believe the kids go back to school at the end of this month. It's especially exciting for me this year, my granddaughter starts Kindergarten, and it's my grandson's first year of preschool. It brings back memories from when my kids started school, time goes by so fast. Don't forget to drop off your pet donations by September 11, all donations go to the Animal Food Bank of the Lehigh Valley. -Kathy Marsh

MEET THE STAFF What book would you take with you to the beach? My summer read would be “Flight Patterns” by Karen White-The story of one woman who is forced to confront her past and the family she tried to leave behind. Kathy Marsh, Associate Publisher If I were going to the beach for just one day, I’d take the book I recently purchased - “Me Before You.” I normally don’t buy books, I prefer library books; if a member of one’s local library, they can put a little blue sticker on your card (Access Pennsylvania), which entitles you to use any library in the state! Christine Stroh, Account Executive My summer read would be “A Game of Thrones” by George R.R. Martin. It is the first book in an epic fantasy novel series that takes place on the fictional

continents of Westeros and Essos in a setting that very much resembles the Middle Ages of Earth. While the story contains common fantasy elements, such as swordplay, magic, and fantastical creatures like dragons, those elements are downplayed in favor of political intrigue and human drama. Tony Pisco, Art Director Anything by Gillian Flynn. Her books hook you in pretty quickly and have a way of keeping you enthralled until the very end. Because of this, it doesn’t take very long to finish her stuff, I usually can’t turn the pages fast enough! Catherine Stroh, Publishing Assistant “Me Before You,” I’ve seen the movie and read the book once. Donna Bachman, Accounting Manager

Recipe by Foodnetwork.com

COOKING WITH CATHERINE

Linguine with Shrimp Scampi INGREDIENTS Vegetable oil 1 Tbsp. kosher salt plus 1 ½ tsp. ¾ lb. linguine 3 Tbsp. unsalted butter 2 ½ Tbsp. good olive oil 1 ½ Tbsp. minced garlic (4 cloves) 1 lb. large shrimp, peeled and deveined ¼ tsp. freshly ground black pepper ⅓ c. chopped fresh parsley ½ lemon, zest grated ¼ c. fresh lemon juice ¼ lemon, thinly sliced in half-rounds ⅛ tsp. hot red pepper flakes

DIRECTIONS Drizzle some olive oil in large pot of boiling salted water, add 1 tablespoon of salt and the linguine, cook for 7 to 10 minutes. Meanwhile, in another large heavy-bottomed pan, melt butter and olive oil over medium-low heat. Add garlic, sauté for one minute. Beware- garlic burns easily. Add shrimp, another 1½ tsp. salt and the pepper. Sauté until shrimp turn pink, about 5 minutes. Remove from heat and add the rest of your ingredients, toss to combine. Serve with pasta.

Overall this was a decent, easy recipe, however next time I would add less lemon and maybe more garlic and butter. With the zest, the slices and the lemon juice, it was pretty overwhelming. Next time I might even substitute some white wine instead of the lemon juice. I made this dish for lunch while vacationing in Florida and it was the perfect, light, citrusy lunch for summer.

Ice Cream Lab Wins Coolest Treat Contest Submitted by TOWN & COUNTRY STAFF

Q: What's new at the lab? A: Many new homemade flavors such as Smores, Summer Main flavor and Cookie Monster to name a few. We will be opening Imagi Nation in the Dorneyville Shopping center. Imagine the anticipation as you approach the entrance to a city built to scale for children, complete with its own bank, market, post office, manufacturing company, media center, health/dental clinic and of course, Ice Cream Lab. This is no ordinary city, as children make all the decisions here, which companies to visit, what jobs to perform, how much money to make and where to spend or save it. This magical place where education is seamlessly blended with entertainment is not fictional; it's called Imagi Nation.

Q: What led you to the ice cream business? A: 26 years ago, my wife and I were unhappy with our jobs and were customers here. The place was for sale and was only about three years old at the time. Palmerton Borough Park remembers Vietnam veterans with Moving Wall by JUSTIN SWEITZER

Hundreds made their way to Palmerton Borough Park on Thursday, July 21 for the opening ceremonies welcoming the Moving Wall, a structure dedicated to Vietnam Veterans lost in the war, to the town. The Moving Wall is a half-size replica of the Vietnam Veterans Memorial in Washington, D.C. which features the names of 58,300 veterans who were lost in the war. The Moving Wall tours the country from April through November, giving many across the country a chance to remember the service of fallen veterans without having to make the trip to Washington, D.C. Stephen Vlossak, the leading force behind bringing the wall to Palmerton, “welcomed home” the many Vietnam Veterans in attendance, giving them a chance to receive the recognition that was not often shown during the war. Vlossak, a local attorney and community leader, was the featured speaker of the opening night and

14

delivered an address that recognized the sacrifices, the struggles and the perseverance of the veterans of the Vietnam War. “This is a time to reflect and respect with dignity,” Vlossak said. “To those Vietnam vets here, I say welcome home brothers.” Vlossak touched on the everlasting effects of the war, from the irreplaceable bonds and friendships made, to the terrors that still live on in the minds of many veterans. “We have come home, but the experiences of the war always live on in us,”Vlossak stated. The opening night also featured remarks from Palmerton Mayor Chris Olivia, who delivered an emotional speech remembering his own time in Vietnam. State Representative Doyle Heffley additionally spoke, calling the wall “a learning experience for younger generations,” referencing the Palmerton High School football team who helped to set up the wall early that morning. Other speakers included County Commissioners Wayne E. Nothstein and Thomas J. Gerhard and Carbon County Veterans Affairs Director Henry Desrosiers. In addition to the opening ceremonies held on July 21, Friday, July 22 recognized and remembered the veterans of the Vietnam war with ties to Carbon County. Wreath laying and candlelight ceremonies were held on Saturday, July 23, and the ceremonies came to an end on Sunday, July 24. No theme was more evident than that of sacrifice during the five-day period in which the Moving Wall visited Palmerton. Mayor Olivia stated that while all give some and some give all, the Moving Wall is dedicated to those who gave all in the name of their country.

Steve Vlossak echoed the same sentiment in his speech. “The ones we honor on the Moving Wall, they gave their lives, and it has been written there is no greater gift, no greater love, than to give your life for another.” What followed is the ultimate message that

Vietnam Veterans wish to get across about their service. Despite the various political viewpoints and negative opinions surrounding the Vietnam War at the time, Vlossak urged all in attendance to remember, “They gave this ultimate sacrifice for you and me.”

LT Historical Society Sponsors PA Dutch Day With Schoolhouse Tours And Musical Program submitted by BEVERLY PUTT

We hope you will come out to visit St. Paul's Schoolhouse, located at 780 Almond Road, Walnutport, (Lehigh Township) on Saturday, August 6. There will be tours from 1 to 1:50 p.m. and 3 to 4 p.m.You will want to see the one-room schoolhouse which was one of the many schoolhouses that dotted the Lehigh Township landscape years ago. You can go inside and experience firsthand the classroom of yesteryear. It was plain and reflected the simplicity of years ago - no running water, no electricity, two outhouses behind the school - a classroom where

eight grades were taught by one teacher. The schools always had a picture of George Washington, father of our country, and you will see his place on the wall. You will see the modest classroom environment, yet the schools fulfilled the purpose of educating the local children. Many who attended these early schools will say they received a great education! At 2 p.m., in St. Paul's UCC of Indianland's Fellowship Hall, 787 Almond Road, Fritz and Belva Williams will present a musical program using many instruments: harmonica, ocarina, harp, guitar, and more. Come out and hear this talented couple from Palmerton as they play different styles of music from different countries. All ages will enjoy this program. In the Fellowship Hall, you can enjoy a PA Dutch treat of shoo-fly pie and sugar cookies with various beverages. Children can color PA Dutch pictures to take home. Plus, more activities. Come out and share your stories about your schoolhouse days and "kibitz." We will be looking for you! Bring your family and friends! For more information, call 610-440-0151.

August 22, 1963 Where is someone that can tell me what one calls a weather vane in Dutch? [Some people call it, “Weather flag”, others say, “Weather roosters.”]. This week we want to write a little about such things. Here in our Dutch region one can see many iron horses, cows, roosters or fish on the barn roof(s). In times past the weather pointers [Literally, weather witnesses.] however were not made from iron. They were just cut from tin. Very recently we saw a horse that was about 14 inches tall and about 20 inches long. That one was cut out of tin and fastened to an iron rod. Last week we drove towards Boyertown and along the way down towards Oley we came to a hamlet. [There appears to be part of a sentence missing here in the transcribed text that I use.] On one end up on the roof was such an old weather pointer. It was a deer and it was cut out of tin and fastened to the roof on an iron rod. Yes, Continued on Page 32

that was always the old way when the people did not have much money. This was not such an expensive thing like those which were made out of iron. Oley is a nice little old village where one can see lovely things, that demonstrate how our forefathers lived. We saw right there in that village such a nice iron fence around a lawn. This was not the ‘grape fence’ that one so often sees. This fence had leaves and fruit. We believe that they should have been peaches or perhaps also plums. We saw many, many fine homes with beautiful elaborate 4571 CLOVER HILL CIRCLE SERVING THE GREATER LEHIGH VALLEY

architectural decorations around the porch [roof] and in the gable end and around the cornice of the house. The old things are still worth something [not for nothing] in that region. John Harner, who built a beautiful large house in Boyertown, had a date stone mortared in [probably in a gable end]. This is also something that is not done today when someone builds a house. [There was one, John Zimmerman Harner (1872 – 1965), who owned a foundry in Boyertown. It was named “Union Manufacturing Company” years ago and today, “Unicast Company”. Perhaps he was her John Harner.] We hope that the old things [and ways] once again return.

Northern Lehigh Recreation Authority Names Director submitted by DEBRA KLOCEK

Michael Kukitz, a Penn State graduate with a degree in Recreation, Park, and Tourism Management, has been named Executive Director of the Northern Lehigh Recreation Authority. Kukitz will begin his duties on August 1, 2016. He was most recently employed as the Director of the Allentown Corps Community Center and Resource Development Manager for the Lehigh Valley Salvation Army. Kukitz has an extensive background in grant writing where he obtained 1.1 million dollars in

grant funding, created an annual corporate proposal to engage and ensure financial corporate support, and successfully obtained, implemented, and monitored all grant applications for the Salvation Army homeless shelter, Allentown Corps, Easton Corps, Bethlehem Corps, and Pen Argyl Corps. In addition, Kukitz successfully completed foundation and county grant proposals to help offset a 3.8 million dollar annual budget while supporting the homeless shelter, youth and social departments for Allentown, Bethlehem, Easton, and Pen Argyl locations. Kukitz states, “I am honored to have been selected, and look forward to creating opportunities throughout the region that will improve the lives of all residents. This area has such potential to thrive through the opening of the Community Center, as well as opportunities that can be created throughout the park system.” About The Northern Lehigh Recreation Authority: “The mission of the Northern Lehigh Recreation Authority is to provide a diverse range of recreation programs and activities that promote a strong sense of community.”
