Joe Korba Personally, I love Valentine’s Day. Any excuse I have to go get a nice meal with my wife is always welcome. I hope you guys enjoy our annual Romance edition and our slightly different take on the usual holiday spread. (We try to keep things interesting.) I’d also like to thank the volunteer firefighters who came out to my house a couple of weeks ago. Luckily, it was only a malfunction in my hard-wired smoke detectors, but they responded quickly and handled it professionally. On one side, February 14 is a day for grand gestures and bold declarations of love. On the other, it’s propelled by commercialism: chocolate, flowers, and greeting cards galore. What side are you on and what’s one thing you’d change about Valentine’s Day if you could? Joe Korba Associate Publisher

While I kind of see the crass commercialism on one hand, on the other, I enjoy getting my wife flowers and going out to a nice dinner. So, Valentine’s Day gives us a nice excuse to celebrate our love for each other. I do hate how restaurants tend to jack up their prices with “special” menus for the holiday—that’s one thing I could do without.

I’m somewhere in between; I love the idea of it and all the decorations and hype, but at the same time, I realize that it means absolutely nothing, that it’s just a made-up holiday and just another excuse to spend unnecessary money. I think it’s a shame that people may be considered “bad” significant others if they don’t buy into the whole holiday, literally and figuratively. I suppose I’d change that.

February Is For Wine & Chocolate Lovers At Galen Glen Submitted by KATHLEEN MATSON Galen Glen Winery has partnered with Chocolatier Steve Evans of Lancaster to create two exciting new chocolate truffles made from their award-winning wines. In February, visitors to the winery will have the opportunity to purchase a pairing featuring these delectable treats. The truffles will be part of what the winery is calling "The Triple Treat." For only $3, visitors to the winery may purchase a pairing of three ounces of wine plus three mouth-watering truffles. One of the three truffles is a Dark Chocolate Chambourcin, made with wine of the same name. The next is a Zweigelt Salted-Caramel infused with Galen Glen's Zweigelt, an Austrian grape they grow in Andreas. Finally, the third amazing truffle is Winemaker Sarah Troxell's favorite, the Double-Dark. Truffles will also be available in a half-pound box for purchase and visitor's gift-giving needs. NASD Adult Community Education Classes—Spring 2016 Submitted by MEG SCHELL The Northampton Area School District is pleased to announce another session of Adult Community Education programs set to begin Monday, February 22. Classes offered are: Quilting, Knitting, Multi-Level Yoga, Family Yoga, Water Aerobics (now Tuesday and Thursday evenings), Lap Swim, Guitar I and Guitar II. New for this session: Indoor Cycling/Spinning and Open Men’s Basketball. For the aquatic programs, we are pleased to be using the new indoor pool housed at Northampton Area Middle School. All classes are held in the evenings at various school district buildings. It is the goal of the NASD Community Education Program to offer the opportunity for adults to participate in courses that range from general education, fitness, and leisure, to personal interests. The topic for the diabetes lecture for the month of February is “Testing 1,2,3.” The lecture will be given on February 24 at 1 p.m. at the library. In addition to the profound authentic learning experience, Mr. Caiazzo was extremely generous in offering over $400 in prizes to these amazing students for their remarkable ideas. Orthodontics Of The Lehigh Valley Joins America’s ToothFairy Smile Drive

Submitted by BETH ARCURY Beth Arcury RDH, MPH, PHDHP, school dental hygienist for the Northampton Area School District, along with the Borough PTA, will participate in the America’s ToothFairy Smile Drive, a national campaign to collect oral care products for at-risk children and raise awareness of the importance of oral health. The Smile Drive will be held throughout February during National Children’s Dental Health Month. Dr. Stephen Ely and his team at Orthodontics of the Lehigh Valley will also be donating 1,500 of oral care products to the Smile Drive. The 1,500 donated toothbrushes and the 1,500 tubes of toothpaste have already been delivered to the Northampton Borough School of Colonel John

Siegfried Elementary School. When I was in college, Netflix was just a DVD service that had you request a title then wait two weeks to receive it in the mail. It’s amazing to see how far it’s evolved over the years. Now you can stream an entire TV series in one weekend, provided you’re OK with becoming a sweatpants-clad hermit. I swear there will someday be a room full of addicts in an AA-type meeting muttering “just one more” while scraping dried pizza sauce off their clothing and stroking their cats. American Red Cross Needs Emergency Donations

Submitted by BETH TOLL Since January 1, winter weather has forced the cancellation of more than 300 Red Cross blood drives across 20 states, further depleting an already low blood supply and causing an emergency need for donations right now. Eligible blood donors of all types are needed, especially those with O, AB, B negative, and A negative. The Red Cross must collect approximately 14,000 blood and platelet donations every day for the patients at about 2,600 hospitals and transfusion centers nationwide. Blood and platelets are needed to respond to patient emergencies, including accident and burn victims, heart surgery and organ transplant patients, and those receiving treatment for leukemia, cancer, or sickle cell disease. Blood is needed to respond to emergencies large and small across the country every day.

St. Nicholas Church News Submitted by MARIANNE GESSLER It seems as though we were just wishing everyone a Merry Christmas and a Happy New Year a little over a month ago and now we will be talking about the season of Lent. Lent is a liturgical season consisting of 40 days of fasting, prayer, and penitence beginning Ash Wednesday, February 10 this year, and concluding at sundown Holy Thursday, March 24. Ash Wednesday is so called from the ceremony of putting ashes on the forehead as a sign of penitence. The ashes are from burnt palms blessed on Palm Sunday of the previous year. This year at St. Nicholas on February 10, ashes will be distributed at all services, masses at 8:30 a.m. and 7 p.m. and prayer service at noon. On Lenten Wednesdays (only) beginning February 17 until March 16, St. Nicholas will have a Soup Supper beginning at 5:30 p.m. in the church Social Hall. Each week, volunteers will donate different kinds of soups and bread for those wishing to participate. A cash donation for the food will be accepted. All contributions will be given to the Ecumenical Soup Kitchen of Allentown. Also, after the Soup Supper, beginning at 6:30 p.m. on Wednesdays in the church, there will be Adoration of the Blessed Sacrament. Stations of the Cross will then follow at 7 p.m. Confessions: Wednesdays, Feb. 17 to March 20 at 7 p.m., all Saturdays in Lent at 3:45 p.m., Tuesday 3/22 from 12 to 12:30 p.m. and 7 to 7:30 p.m., and Friday 3/25 from 12:30 to 1:30 p.m. Everyone is invited to attend all of these services and events. Celeb Crushes: J

This issue’s column is brought to you by the letter J and my inability to effectively narrow down a list of Hollywood hotties. It’s our Valentine’s Day issue, so we’re supposed to be all gushy, chatting about loooove and whatnot, right? Well, I’m going to discuss lust instead. (For the past two years, I’ve talked about romcom clichés, but I decided to tackle something similar next issue instead, in our bridal guide― so be on the lookout for my favorite wedding movies, coming soon!) Anyway, I’ve noticed that the majority of my favorite famous guys have names that start with J. So allow me to introduce my boyfriends, four actors and a musician: Jake, James, John, Joseph, and Justin.

In my last column, I joked that I could listen to James do a dramatic reading of an encyclopedia―I wasn’t really joking. I didn’t discover James until 2007’s “Atonement.” (Technically I saw him in 2005 as Mr. Tumnus in Narnia, but as I didn’t know who he was yet, I didn’t recognize him until much later.) “Atonement” is brutal―if you’re familiar with the book, you know there’s no happily ever after happening here. I was so impressed with his performance (as was the Hollywood Foreign Press that year) that I went searching for more of his films. Plus, I mean, he’s not exactly hard to look at. I backtracked and watched him in “The Last King of Scotland,” “Penelope,” “Becoming Jane,” then saw “Wanted.” He’s a fantastic dramatic actor and the baby blues (and Scottish accent) get me every single time.

I’ve always joked that somewhere out there is a man who’s a perfect mix of John and Jason Segel (another J!) ... I was late to “The Office” party, but once I started using Netflix as a way to catch up on all the sitcoms I’d never yet gotten to enjoy, I fell head over heels for Jim Halpert. The thing about John is, he barely has to act. He’s incredibly charismatic and, as he proved in his role of Jim, a well-timed eyebrow lift and a perplexed smirk is all he needs to get his point across. I love his comedic timing, demonstrated in rom-coms like “License to Wed,” “It’s Complicated,” and “Something Borrowed.” But this year, finally, he got his shot to show his range in the drama “13 Hours” and I suspect this will be all he needs to catapult himself from the background guy to leading man. I haven’t seen it yet, but I fully intend to.

I honestly forget when I was introduced to JGL. Was it “Angels in the Outfield?” “10 Things I Hate About You?” Or was it later when “500 Days of Summer” suddenly reminded us that he was out there somewhere, plucking along trying to get himself top-billed in a film? Regardless, he’s there now and I’m watching. This guy’s adorkable charm is irresistible, but

I’m more drawn to his artistry. His business venture, hitRECord, is a phenomenal example of a celebrity using their fame and talent to create something beautiful. If you’re unfamiliar, it’s a production company that gathers talent from around the globe by way of online submissions and collaborations. They’ve made short films and stories―they even host a TV show―and everyone who participates gets financially compensated. It’s a huge under-taking, but he’s done an awesome job with it. And all while furthering his film career in blockbusters and indies alike. He’s cute AND inspiring.

Justin Timberlake

Here’s the thing about JT. I’ve been in love with him since his spaghetti-fro days and I always suspected he would have a successful solo career―but I haven’t always enjoyed his style of music. When I was a knee-socked elementary school kid, *NSYNC was my jam; they were my first ever concert! When they broke up and Justin started doing his own thing, I was just a little disappointed that I didn’t immediately love it all. “Cry Me A River” can still get me singing in my car to this day, but that was about it. And as his style evolved, my enthusiasm waned. Until “The 20/20 Experience.” The music was much better, but the concert was mind-blowing. It made me love the music even more. Seeing him live was one of the best experiences of my life and I’m not even remotely embarrassed to admit that. He rose up out of the stage flanked by a full orchestra, decked out in―what else?―a suit and tie and I was re-awakened to what it feels like to love JT. And I do. Love. Him. He’s a fantastic performer with a wonderful sense of humor―plus ... I mean, just look at him. Ugh.

Perfect for Valentine’s Day dinner!

Spinach and Ricotta Stuffed Chicken Breasts

with Lemony White Wine Sauce

Stuffing:

INGREDIENTS

1 cup cooked, chopped, and drained fresh spinach ½ cup ricotta cheese ½ cup Gorgonzola 4 slices cooked bacon crumbled Kosher salt and freshly ground pepper 1 large egg

Sauce:

½ cup dry white wine ½ cup chicken stock 1 tbsp Dijon mustard 1 lemon, juiced Kosher salt and freshly ground pepper Chopped parsley leaves for garnish

Chicken:

2 (8 oz.) boneless skinless chicken breast halves Kosher salt and freshly ground pepper 2 tbsp vegetable oil

DIRECTIONS

Make stuffing: Combine spinach, ricotta, Gorgonzola, and bacon in a bowl. Add egg, mix well, and set aside. Make sauce: combine wine and stock in a nonreactive saucepan. Bring to a boil, reduce to sauce-like consistency. Whisk in mustard, lemon juice, set aside. Make the chicken: Place each chicken breast in a freezer bag and pound to an even ¼ inch thickness. Fold the chicken so the stuffing is completely wrapped and secure each flap with a toothpick. Heat oil in a large skillet. Add the chicken, turn occasionally until browned, about 2 minutes each side. Cover the skillet; turn heat down to low, cook until just cooked through, about 5 more minutes. Pour the white wine sauce into the skillet over high heat and cook, stirring and scraping the bottom. Slice the chicken and serve with white wine sauce. I’ll start by saying that this dish is delicious. It certainly isn’t difficult to make, just very involved and lengthy. I would not make this if you were just looking for a quick, easy, weekday dinner. I knew how much of a pain in the butt this recipe was so I, innocently enough, asked my boyfriend if he wanted to help me make it. Stuffing the chicken is an absolute mess and the more you fight it, the more it fights back, I swear. That is probably the hardest part, but I always think I’m going to need more stuffing than I do. I also used three chicken

breasts, not two. I was so convinced we’d need more stuffing that I doubled the recipe. Needless to say, we have a ton of stuffing in the freezer now for future meals! Good luck and enjoy!
