Happy New Year to our friends around Lehigh Township and surrounding areas. Although we are only part way through winter, the Lehigh Township Historical Society is already busy planning for spring and summer activities. Ads and flyers will be showing up in the coming weeks about our events and activities. Remember that our mission is to preserve the history of Lehigh Township. We welcome volunteers who are available on Tuesday mornings from 9 am to noon (and other dates for activities) at the Historical Centre in Pennsville. If you are interested in local history and preserving items from the past, we need your help in our museum. If you want to find out ways you can help, stop in or give us a call at 610-440-0151. In preparation for spring events we are looking for empty baskets. If you are cleaning out and find baskets that you do not want, we can use any shape or size, especially medium to large baskets. Baskets and any other old or historical items that you wish to donate to the Society's museum collection can be dropped off at the Historical Centre on Tuesday mornings 9-12 weather permitting. Please call 610-440-0151 to be sure we are there before coming. Although our regular Open House season will not begin until May 5th you may arrange a small group visit to the Historical Centre at any time. Please call 610-440-0151 to set up a time and date. Something New is happening at St. Peter’s. Starting on January 25th and each month on the 4th Friday starting at 6:30PM we will be hosting Family Fun Night. Each month there will be a different activity going on. Maybe games, a movie, crafts etc. The community is invited to come out and share the evening with friends and neighbours. The New Year has begun and Christ’s Kids’ Club is again meeting. Christ’s Kids’ Club for kids ages 4-11 happens each Wednesday from 6-7:30PM. Christ’s Kids’ Club will teach children Bible truths with object lessons, there will also be games and snacks. All children are welcome to participate. This is a free club. Bethlehem Area Vo-Tech Launches Shoe Drive Fundraiser for the National Technical Honor Society submitted by Connie Muschko
Bethlehem Area Vo-Tech School, https:// bethlehemavts.org/ is conducting a shoe drive fundraiser in January of 2019 to raise funds for the National Technical Honor Society. The National Technical Honor Society will earn funds based on the total weight of the pairs of gently worn, used and new shoes collected, as Funds2Orgs will issue a check for the collected shoes. Those dollars will benefit the National Technical Honor Society.
Anyone can help by donating gently worn, used and new shoes at Bethlehem Area Vo-Tech School located at 3300 Chester Avenue in Bethlehem. All donated shoes will then be redistributed throughout the Funds2Orgs network of microenterprise small business partners. Funds2Orgs works with micro-entrepreneurs in helping them create, maintain and grow small businesses in developing countries where economic opportunity and jobs are limited. Proceeds from the sales of the shoes collected in shoe drive fundraisers are used to feed, clothe and house their families. Scientists can turn peanut butter into diamonds. Scientists at the Bayerisches Geoinstitut in Germany have discovered that since peanut butter is so rich in carbon, it’s possible to turn simple Skippy into diamonds. All you need is to extract the oxygen from the carbon dioxide found in the peanut spread, and then enact immense pressure on the carbon left behind. The red food dye used in Skittles is made from boiled beetles. Carmine, also known as carminic acid, is a common red food dye that can be found in Skittles, maraschino cherries, raspberry and strawberryflavored junk food, and even lipstick. Carminic acid also happens to be made from the crushed carcasses of a beetle known as the Dactylopius coccus. Raw oysters are still alive when you eat them. Chances are, raw oysters are still alive when you eat them. Oysters deteriorate so fast that chefs have to serve them very quickly – while they’re still alive, basically. Some varieties of the shellfish can survive out of the water for up to two weeks, which is why oysters are stored under particularly regulated condition. Place the potatoes in a large mixing bowl and beat with a mixer just until the potatoes start to break down (about 30 seconds). Add the butter, salt, and pepper and mix just enough to combine. You don't want to overbeat the potatoes or they will become gummy. Add the sour cream and set the mixer on low and slowly add the heavy cream until just blended. By now the potatoes should be smooth. Angel hair pasta tossed with a quick tomato-basil sauce makes an easy Italian dinner. ready in: under 30 minutes ingredients 1 package (12 ounce size) angel hair pasta 1/3 cup extra virgin olive oil 2 cloves garlic, minced 2 pounds plum tomatoes, seeded, diced 1/4 teaspoon black pepper 1 ounce minced fresh basil leaves 3 ounces shredded Parmesan cheese directions Cook the pasta as directed on the package until al dente. Drain well and keep warm. Meanwhile, heat the olive oil in a saucepan over medium-high heat. Add the garlic and cook, stirring constantly, until the garlic softens. Do not let it burn. Stir the tomatoes and black pepper into the saucepan. Cook, for 2-3 minutes, stirring constantly until the tomatoes are just starting to soften. Remove the pan from the heat. Place the hot pasta in a large bowl. Toss the pasta with the tomato mixture, minced basil, and half of the Parmesan cheese. Serve in individual pasta bowls and top with the remaining Parmesan cheese.

1 1/2 cups warm water, about 110º F SAVE $ 4 1/2 cups all-purpose flour, plus more as needed 2 tablespoons butter, room temperature 2 tablespoons sugar 1 tablespoon salt For topping: 4 tablespoons butter, melted 1 teaspoon garlic salt • Place 1/4 cup of water in the bowl of a stand mixer fitted with a dough hook. Sprinkle the yeast over the top and let sit until foamy, about 5 minutes. • Add the remaining water, 4 1/2 cups of flour, butter, sugar and salt to the mixer. • Mix on low speed until combined. Increase speed to medium and knead for 5 minutes or until the dough is smooth and elastic. Add more flour as needed, to get the dough to come together. • Break dough into fourths. Roll each fourth into a long, thin log about 16 inches long. Cut each log into three pieces. Place the breadsticks on a parchment-lined baking sheet and cover with a clean cloth. • Let rise for 45 minutes. • Heat oven to 400 ºF. • Lightly brush 2 tablespoons of butter over the breadsticks and bake for 15 mins or until golden brown. • Remove from the oven. Brush with the remaining butter and sprinkle with the garlic salt. Serve hot.

Dorothy L. “Mina” Beers, 80, of Northampton, passed away peacefully Tuesday, January 8, 2019 at Gracedale surrounded by her loving family. She was the wife of the late Dale M. Beers, Sr. Born March 26, 1938 in Allentown, she as the daughter of the late Alvin and Lillian (Diefenderfer) Haldeman. Dorothy was the owner and operator of Dot Beers Flowers for over 30 years. She was a member of Hope Lutheran Church, Cherryville. Dorothy loved spending time with her family, camping, going to races and especially trips to Knobles. She selflessly gave of her time volunteering in community and civic organizations. Her memberships included the Red Hats, Coplay Garden Club, Coplay Senior Group, AARP, Young at Heart, Northampton Exchangette, Allen Township Fire Company, Coplay Community Days Committee and a life member of the Racoon Club. She raced stock cars at Mahoning Speedway and was crowned powder puff champion. Survivors: daughter, Lori A. Kerper and husband, David; sons, Eric A. Beers and wife, Cherie and Jason C.
