A Walk Among Slatington Businessmen Presentation Recently Held submitted by Robert Stettner

A cemetery walk presented by the Slatington History Preservation Committee featuring histories on select 19th century Slatington businessmen was held on Saturday September 14, in Union Cemetery, Slatington. Nearly 50 people attended the hour long presentation that delved into six businessmen, their family histories and business ventures and whose influence reached into the Slatington community and beyond. Why Your 2020 New Year’s Health or Fitness Resolution Might be Proven Outdated by 2030 submitted by Jamie Ducharme

Each year, as the calendar turns from December to January, millions of people make resolutions. and each year, surveys show, many of those selfpromises relate to wellness, whether it’s losing weight, eating better, exercising more or simply getting healthier. But “getting healthier” isn’t a fixed concept. If health advice is anything, it’s fickle. While some concepts stand the test of time—eat fruits and vegetables, get plenty of sleep, exercise when you can—other trends are over practically as soon as they begin. (Remember appetite-suppressant lollipops and Shake Weights?) As a result, resolutioners of 2010 likely had different goals than will resolutioners of 2020. Here’s a look back at prominent health advice from 2010— and how it stands up going into 2020. Nutrition 2010 The U.S. Department of Health and Human Services (HHS) published a new version of its federal Dietary Guidelines for Americans in

December 2010. Among long-standing recommendations—such as eating a variety of fruits and vegetables and plenty of whole grains—the guidelines also advised Americans to limit saturated fats to 10% of caloric intake; increase low-fat dairy consumption; and limit cholesterol to 300 milligrams per day. But, of course, federal dietary guidelines aren’t the arbiter of how people eat. Pop culture also plays a big part, and 2010 was a banner year for fad diets. Several of them, oddly enough, involved not eating solid food. Juicing was everywhere, and the “Baby Food Diet” hit the internet, encouraging followers to replace breakfast, lunch and snacks with container after container of baby food. Plenty of people chased all that juice and mush with apple cider vinegar, in hopes of aiding digestion and suppressing appetite, according to Insider. 2020 While nutrition science changed quite a bit throughout the decade, the next version of the Dietary Guidelines, published in December 2015 and meant to last until 2020, included relatively few

significant changes. For the first time, HHS suggested a specific cap on added sugars (less than 10% of daily calories), reflecting the broader war on sugar that took hold in the 2010s, sparked by rising rates of obesity and diabetes and replacing the war on fat that took place in the 1980s and 90s. Meanwhile, the guidelines eliminated its recommended cap on cholesterol, focusing instead on the need to avoid saturated and trans fats, while continuing to push for low-fat dairy—advice that was controversial in 2015, and has only become more so. As fat phobia fades further from memory, a number of studies have suggested that a fat-rich diet may actually prevent obesity and diabetes by balancing blood sugar and boosting satiety. In step with the resurgence of fat, the pendulum has swung from one dieting extreme (juice cleanses) to the other: meat-heavy meal plans like the ketogenic diet, which all but eliminates carbohydrates so that the body can shift to drawing its energy from fat. But perhaps the most drastic change to take hold since 2010 is the way Americans think about dieting in the first place. The 2010s saw a major shift in the way people—and the media—talk about health, as emphasis on weight-loss and thinness began to give way (albeit not completely) to ideals of strength, holistic health and body positivity. As such, new measures of dieting success began to emerge, like

“clean eating” (usually defined as eating whole foods instead of processed versions) and having a healthy gut microbiome. The broader self-care revolution has extended to food, leading many people to self-soothe conditions like anxiety and burnout with adaptogens, herbs thought to help the body fend off physical and emotional stress. Several prominent studies published in those years suggest that there is no safe amount of drinking, and that the heightened risk of conditions like cancer and obesity associated with alcohol outweigh any of its possible cardiovascular benefits. The self-care, mindfulness and wellness movements also converged to produce a shift away from heavy drinking, especially among millennials. ultra-intense bootcamp classes began working their way up the American College of Sports Medicine’s annual list of fitness trends for the first time. (On a lower-key note, yoga continued its ascent after being introduced to the U.S. decades earlier.) CrossFit, the notoriously intense workout program, was also well on its way to the full-fledged phenomenon it would become a few years later. The most recent federal physical activity guidelines at the time, published in 2008, seemed to support the more-exercise-is-better mindset. Numerous studies have found that short bouts of physical activity, even at low intensity, can prolong lifespan and prevent chronic illness, in some cases just as well as more intense, longer-duration exercise. The latest update to the federal physical activity guidelines, in 2018, agree that any exercise is better than none, even if it’s just a few minutes at a time. Not coincidentally, studios meant for napping and meditation, along with yoga, began popping up in cities all over America in the last few years of the decade.

It’s a New Year-Time to...

Enjoy nature, help a community group, go for hikes or bike rides, make new friends. How? By renewing your membership in or joining Lehigh Township Rails to Trails. We are a local group that enjoys area walks, hikes, and bicycle rides. In addition, we work on projects with both the Walnutport Canal Association and the D & L National Heritage Corridor. Currently, we are completing a looped path in the woods at Indian Trail Park. The next step is to create labels for native trees and herbaceous plants, and for fish found in the creek. Although we meet at the Municipal Building in Lehigh Township, our members come from locations both inside and outside of the township. Beginning in February, we’ll be meeting the third Thursday of each month at 7:00 PM. Meetings are open to everyone. We are planning a variety of walks and hikes each month. On Friday, January 10th, we’re doing a walk around Palmerton, highlighting the various styles of architecture in the town. Interested in joining us? New Year’s resolutions Should be reminders of Goals The ISD Editorial Board recommends to make your New Year's Resolutions simple and achievable to avoid extra pressure and stress. These resolutions aren't binding, and personal goals can be set at any time throughout the year. It’s almost the end of the year and — this year specifically — it’s almost the end of the decade. New Year's is a great chance to reflect on the accomplishments and highs and lows of the past year, and it also signals a fresh start. It’s an exciting time to think about a new year starting, but it can also seem overwhelming and pressuring. A popular tradition is to make a “New Year’s Resolution,” and oftentimes multiple. While it’s good to set goals for the new year, it’s important to remember a few things before the new year starts. If you make any New Year resolutions, make sure they are simple, specific and achievable. Remember: These resolutions aren’t binding or shouldn’t put lots of stress on your day-to-day life. They should be reminders of what you want to be working toward, not a binding contract that causes anxiety. If you are one of those people who will find making a resolution anxiety-inducing, you don’t have to, it’s not a requirement. You can still make progress even if you aren’t specifically documenting it. If you do make any resolutions, a way to make them not seem as overbearing and overwhelming is to be specific. Instead of saying you want to run faster by the end of the year, maybe write something like you want to. You can also make personal goals at any point throughout the year. New Year, new habits by New Canaan Advertiser

As we begin the year 2019 many people have also begun to pursue their set of New Year’s resolutions. Whether your resolution for the year is to eat more healthy or exercise more, one key to accomplishing them is holding yourself accountable. Once you understand that no one can do your resolutions for you, the better off you’ll be and the closer you are to reaching your goals. Another big part of reaching any of your new goals is setting short term goals that will put you that much closer to what you ultimately hope to achieve. If one of your goals is to exercise more, one way to do that is when you first begin, start by going to the gym twice a week. Although exercising twice a week may not give you the exact results you want, at least it will get you in the habit of working out on a schedule. After a month or so of working out twice a week, maybe you could decide to kick it up a notch and go three times a week. As time goes on, you can increase or increase the difficulty of your workout regiment until you begin to see the results that you want.

The importance of setting those short term goals is vital towards accomplishing your long term goals because they help to give you momentum, build confidence, and it’s a way of dividing your task to make it more manageable. You must make your long-term goals a priority by making your short term goals a part of your schedule. While you set and achieve goals for yourself it’s very important to be realistic. That’s not to say don’t challenge yourself, but one of the worst things you can do when trying to accomplish something is set yourself up to fail by setting unrealistic goals. For example, if you would like to eat healthier maybe instead of becoming a vegan cold turkey, you focus on cutting out key things that are not healthy for you. During the first few weeks of working on eating more healthy, you can cut make it a point to drink at least a gallon of water a day or try not drinking soda or other sugary drinks. As drinking water becomes more of a habit you can kick it up a notch by not eating junk foods or no longer eating right before you go to sleep. The progress you make in each area of your diet will help you build the discipline you need to reach your ultimate goal of eating more healthy and after doing more of your own research you may be able to find other techniques that work for you.

When February rolled around and the ice houses were not filled, they became afraid it would give no ice that season. Years back the people knew nothing of keeping food and drink cold with electricity. Not everyone even had ice. We remember well that it was something special when we brought home a stick of ice which we loaded on the wagon at the ice house down at the dam next to the mill where dad let them grind feed. Dad also always told us how he always helped take the ice off the dam and load it in the ice house. They hitched a horse or mule to the ice plow to mark off the ice [in blocks], which they later sawed and broke off. We always buried the ice in the horses’ hayloft when dad brought it home and then over Sundays we made ice cream. We did not put any ice in the drinking water, but we knew that some people did that. The ice always looked very clear and sometimes we would suck on a piece of it. When one thinks how dirty the water is in the river or in the run one has to wonder how the ice could look so clear or clean. And if one thinks over how the majority men

always chewed, we wonder what they had to do when they needed to spit when they were out on the ice dam. And what did they do when the horse needed to make manure? And even Wasser, that large old dog, was out with them, running all around on the ice then. And the dog occasionally had a necessity for a tree [We all know why male dogs need trees, right?], but there were none on the ice, then the ice plow came in handy. Working the ice [blocks] into the ice house was cold job, but it was a job that did bring much fun with it for the men who helped. [I am saddened to announce that the leader of

St. Luke’s University Hospital in Bethlehem has been named for the second year in a row one of the nation’s Top Hospitals in the Teaching Hospital category by Leapfrog Group, an independent nonprofit hospital watchdog organization. This recognition for safety is one of the health industry’s most prestigious honors. Unlike many other health care awards, it is based entirely on an independent, scientific review of objective data. “St. Luke’s is proud to be the only health care network in the region to have earned Leapfrog’s Top Hospital recognition in the Major Teaching Hospital category for two years running,” St. Luke’s University Hospital President Carol Kuplen said. “In fact, not only is St. Luke’s the only hospital in the Lehigh Valley to have earned Leapfrog’s highest honor in both 2018 and 2019, it is one of only six hospitals in all of Pennsylvania to have qualified for the honor this year.” “This award is a credit to St. Luke’s outstanding leadership, providers, nurses and hospital staff and volunteers who day in and day out maintain an unwavering focus on quality and patient satisfaction. I couldn’t be prouder to work with such wonderful caregivers.” Leapfrog’s Top Hospital award recognizes the highest performing hospitals across many areas of hospital care, including infection rates, maternity care and the hospital’s capacity to prevent medication errors. In 2019, only 118 hospitals in total were awarded nationally across the four categories: Top Teaching, Top General, Top Rural and Top Children’s hospitals. The Leapfrog award is further acknowledgement of St. Luke’s University Health Network’s commitment to excellence. Earlier this year, St. Luke’s was named one of the nation’s 100 Top Hospitals in the Major Teaching Hospital category by IBM Watson Health. This is the fifth year in a row and the seventh time overall that St. Luke’s has achieved the honor. Like the Leapfrog Top Hospital award, IBM Watson Health is based entirely on an independent, scientific review of objective data. Additionally, St. Luke’s hospitals are the only hospitals in the Lehigh Valley to earn Medicare’s top four- and five-star ratings for quality, efficiency and patient satisfaction in 2019. For the Leapfrog Top Hospital award, data is 36

gathered and publicly reported through the Leapfrog Hospital Survey. The survey compares hospitals’ performance on national standards of patient safety, quality, efficiency and management structures that prevent errors, providing the most comprehensive picture of how patients fare at individual institutions. The data collected also enables hospitals to benchmark their progress toward Leapfrog’s standards and measure the care they deliver. “Leapfrog is honored to spotlight the hospitals across the nation that have truly gone above and beyond in their pursuit of excellence.
