What Do I Do with Kohlrabi? SOURCE: foodnetwork.com By: Katie Workman
Kohlrabi – what is it and what do you do with it? Kohlrabi is a cruciferous vegetable, just like cabbage, broccoli and kale. This funny looking vegetable is about the size and shape of an orange, with a bunch of leafy stems sticking out. It has a thick skin that can range from pale green to purplish, though the inside is always a very pale yellow. The leaves are all edible (the freshest kohlrabi will still have the leaves attached, which can be eaten raw or cooked like any greens). The smaller bulbs tend to be more tender and flavorful, but the large ones are also fine for cooking and eating. In taste and texture, kohlrabi reminds me of peeled broccoli stems with a bit of peppery radish thrown in. Trim kohlrabi and peel it very thoroughly (you may need a sharp knife for this; the skin is quite tough and indigestible). Slice, julienne or grate it into your salad or slaw for a great crunch and a fresh but slightly spicy flavor. It also can be cooked – boiled, steamed, sautéed, roasted or fried. More often than not, however, I use it raw for its appealing mild flavor and pronounced crispness. When buying kohlrabi, choose smaller, unblemished bulbs that are heavy for their size; if the bulbs have leaves, cut them off, and store the bulbs and the leaves separately in plastic bags in the refrigerator for up to a week, or even a bit longer for the bulbs.

For this issue, at the suggestion of Kathy Fields from Flint Hill Farm in Coopersburg, Blue Mountain Town & Country Gazette reached out to independent farmers in our region. We wanted to get their perspective on changes taking place as consumers spend more of their food dollars at local farms during the pandemic crisis.

He says,“Now people that don’t normally buy local, are.” He feels consumers are slowly and surely realizing the value of local food on several levels, from flavor and nutrition to the shorter supply chain. Regarding the food supply chain, Spagnola thinks consumers are developing a better understanding of how that works, especially when the long grocery store supply chains are disrupted. Fink says when the food shortages started in grocery stores it was very reassuring to people to know they could come to the local farm store and be able to get eggs and potatoes. “In response to that,” says Fink, “we pivoted quickly to bring more produce into the farm store earlier than normal so people could also grab strawberries and bananas.” In closing, Fink says, “We hope people keep the mindset of shopping local. If they do, it would be a very positive outcome of this terrible virus situation.”

meaning of Thanksgiving – in other words, the importance of the harvest!” The other key point Fields makes is that the community of farmers is “a unique breed of people who are flexible and innovative,” and work together as a community within the community to adjust to what’s happening during the seasons. Says Fields,“We started in a garden, and the farms are like the integral piece that helps weave a community together – food is the common thread.” Reuben DeMaster, Farmer Willow Haven Farm, New Tripoli, PA Reuben DeMaster, the farmer at Willow Haven Farm, became aware of heightened interest in buying directly from farmers in part through Willow Haven’s CSA shares program that creates a very close connection with consumers. “Prior to the pandemic Willow Haven was already planning an increase in its capacity to do CSA shares,” says DeMaster, “and that allowed us to accommodate significant growth as consumer focus did shift to buying more locally-grown food.” DeMaster concludes: “Now is a great time to consider what kind of food system you want to
support. If you really want to support local food and build the food security of our region, you should make a commitment to buy local food not just during a crisis but for the long term. If local farms can count on your food purchases, year round, they will find ways to produce more food for you.”

Clarence and his wife can speak such good Dutch correctly, just like when the left here 34 years ago. They speak it every day at home and their three girls can also understand it. The girls had come east a few years ago, but this trip was the first for Clarence and his wife since they left 34 years back. The youngest
daughter also came along. And she had planned everything to tie the knot with a man in August. She is a very good singer and is a member of Phil Kerr’s Harmony Chorus. They are a group of good Christian people from about 20 churches in [the Pasadena area of] California. They give concerts and make records. could actually buy something!] Do you know who got that dollar? Oh my, Clarence Barthol from California. What did he do with that dollar? Just blow it away? No way! Clarence knew better, how to hold on to his money. He brought the check with him from California to Nazareth almost two years later to introduce himself to Mr. Metz at the Item [He was the owner of the Item newspaper at that time.] He cashed the check for Clarence.
At no time did we have a desire for a trip to California like we now do, since we became acquainted with the Barthol family. Much jollity and good health to all of you in California. [Florence Baver noted it was unique that someone could be separated by over 2,000 miles from their original home for 34 years and still maintain the Dialect. I think it’s even more fascinating that the Dutch people are separated from their original homeland by almost 4,000 miles for over 250 years and can still communicate with current residents of that Palatinate region. I first became aware of that when Kutztown University started their Pennsylvania German Cultural Heritage Center. They had Roland Paul from a historical society in Kaiserslautern, Germany speak at the event. When I approached him after his lecture to ask him a question I listened to him talking with someone from the Kutztown area in the Dialect (His Pfälzisch dialect and our Dutch dialect still able to communicate with each other.) and was amazed that I could understand most of what was said. Separated almost 4,000 miles and over 250 years and still functioning. Wow!]

Teagan is a BIG girl looking for someone with a BIG heart! This almost 90 pound Shepherd x Collie mix is affectionate, outgoing, playful, and has lived with kids! She is crate trained and we believe she is also house trained, though we have very limited information on her past. She would be best in a home with another large dog that understands when she plays she just truly does not understand her size! Before coming to our facility she did test positive for heart worm and is finishing up a month of cage rest before returning to normal activity! She would much rather be running and playing, but hopefully a home falls in love with her and will be able to finish her care before she goes back to her ACTIVE self! Her adoption fee is $195 and that includes she is spayed, microchipped, and up to date on all vaccines, flea/tick treatments, and heart worm treatment. If you're interested in adopting any of our
