We live in a very diverse and energetic region. Within it, we have a lot of communities. Depending on your personal interests you probably belong to one, if not several communities. They could be family-related, job-related or academic. They could be church-related, hobby-related, a neighborhood group, your town, the crew at your favorite bar or whatever. No matter where your community is, including online, it hopefully gives you a sense of belonging to something greater than yourself. That’s the sense of community and it’s an important feeling to have. Whether your individual interests are health-related or outdoorsy – we have a lot of that, food-related or any combination of our region’s possibilities, we hope you will discover new communities of interest within our pages as time goes by. Yes, in this issue the theme is “community” and we’re going to look at that from a number of angles. To start, we’re going to look at two businesses that have been members of our communities for many years. Becky’s Drive-In in Walnutport has been here so long that 2021 will be Becky’s 75th Anniversary season! Meanwhile, over in Slatington, A. F. Boyer Hardware and Guns came onto Main Street in 1868. That’s an even longer time. We’ve got profiles on each. We also have an update from the Krysta Hankee Memorial Fund on their “Miles that Matter” initiative that provides critical funds and GIANT gift cards to families that must travel to address critical needs. Among our other articles, we also look at the benefits and history of community colleges, as well as a “community tested” sour cream blueberry pie that originated on Food.com. It’s awfully good. We provide the recipe and one extremely tasty tip – especially if you like cherries. So enjoy this issue and please pick up the next Gazette in just two weeks when the focus will be “gardening” – one of my personal favorites.

The Woman’s Club of Slatington is pleased to announce that Northern Lehigh High School senior Emily Hunsicker of Slatington has been chosen as their Girl of the Month for March. Emily is the daughter of Doug and Debra Hunsicker; she has a sister Sara, who is a senior at Belmont University, and a brother Jackson, who is a freshman at Northern Lehigh. Her activities include soccer for 3 years, Northern Lehigh Theatre Troupe for 3 years, and cross country and basketball for a year. Emily is also a member of SADD. She enjoys cooking and baking in her free time. Emily was nominated for a Freddy Award for Outstanding Performance by A Featured Ensemble Member. Her future plans include attending college to major in Elementary Education. Congratulations, Emily!

Krysta Hankee Memorial Fund: Making the Most of a Difficult Fundraising Season In late March of 2020, the Krysta Hankee Memorial Fund faced difficult choices. Did it continue with its seasonal golf events that provide most of the proceeds to fund the “Miles that Matter” initiative, or cancel the season? After much discussion around the program that provides GIANT gift cards to families traveling to address critical needs, the Hankee family made a choice. “We took our lead from the brave healthcare providers that put their masks on every day and went to work,” said Bill Hankee. The

Hankee family chose to not make this a binary choice to play or to cancel. Instead they chose a plan that allowed them to have all fifteen of their golf events that provided over 200,000 miles of travel for local families in need. Bill said, “We published clear expectations for our golfers to follow and monitored each event resulting in no adverse situations.” The “Miles that Matter” Initiative is one of the three missions of the Fund. It represents Krysta’s caring nature. Her willingness to give is represented in the Fund’s focus on the benefits of Organ Donation. Her life mission of learning and personal development is represented in the Fund’s Leadership Scholarships. A portion of the more than $270,000 raised over the past ten years comes from the Fund’s golf events and the remainder comes from donations from a very caring community. In partnership with GIANT’s Cash for Causes Program, the “Miles that Matter” mission provides GIANT gift cards to families in support of their often urgent travel needs. In the Community: Becky’s Drive-In

Over in Walnutport we have the award-winning Becky’s Drive-In. Becky’s Drive-In has been part of our community since all the way back in 1946. And “the road to Becky’s” goes even further back than that when William D. Beck (known to all as “Becky”) first fell in love with movies, got his crank movie machine and started projecting movies onto sheets in his parents’ living room for neighborhood kids to watch.

Becky’s Honors For more than 70 years, Becky’s Drive-In has been a family-run staple of the community and over the last couple of decades has received some significant honors. In the Morning Call’s Readers’ Choice Awards Becky’s has been voted “Best DriveIn Theater” in the Lehigh Valley area every year since the category was created in 2007. In 2016, Becky’s was recognized by USA Today as one of the “10 Best Drive-in Theaters,” coming in as the fifth best in the entire country. In 2002, Becky’s was even recognized by the New York Times in its story titled “10 Drive-Ins Worth a Detour.” Becky’s is a true local treasure and it’s appreciated near and far – but especially “near” by most everyone in this community it serves. We had the opportunity to recently speak with Cindy Deppe, one of the family members carrying on the Becky’s tradition and learned some interesting background information. In the Early Days According to Cindy Deppe, when her dad was young a few things came together for him around movies. He saw a movie at an indoor theater in Slatington and fell in love with it. He also took a movie course – probably through the mail. Not only that but when he was young, he sold garden seed and salve and due to his very good work, he got his hands on a crank movie machine. When he started projecting movies onto sheets for kids to watch in the family living room, the road to Becky’s Drive-In came into view. Cindy also notes that her mother Alice was the unsung hero of the operation. According to Cindy, Alice was an extremely hard worker, the one who really took care of the operations. Alice was known for keeping the place clean and making her amazing fresh-cut french fries that she herself peeled, sliced, fried in lard and then sold to the Drive-In customers. For Cindy, Becky’s Drive-In has always been a part of her life. She actually says it’s “the only life”

Once upon a time, there were more than 4,000 drive-in theaters in the United States, but today there are only 305 and Becky’s has survived these many years to be one of them. That’s an incredible accomplishment and it’s the result of both the family’s and the community’s devotion. Classic Store If you haven’t visited A.F. Boyer Hardware and Guns, you should consider doing so. The store has been serving both Slatington and the Lehigh Valley communities for more than 150 years. It is a classic “Main Street” one-stop hardware and gun shop in the oldest traditions of service, selection and knowledge. On Saturday, January 23, 2021, Macie Bazella of Emmaus, PA was crowned Miss Pennsylvania Junior High School America. She even started her own program, Operation Outreach U, a social media outlet that helps make teens aware of different ways they can donate time, meet new friends, and make a difference. She is currently promoting the HSA platform B.R.A.V.E. which stands for – BUILDING RESPECT AND VALUES FOR EVERYONE. B.R.A.V.E. is an antibullying campaign to make kids aware of the importance to be kind. She is hoping to spread this message by reading to 200 classrooms by the end of the school year. Bazella will be representing Pennsylvania this summer in Little Rock, AR, as she competes for the title of Miss Junior High School America. The Miss High School America Scholarship Pageant Organization was started in 2009, for the purpose of providing personal and professional opportunities for young women. It is their goal to provide outstanding junior high, high school, and collegiate girls the opportunity to compete in a prestigious national level scholarship pageant. Slatington Library is still open to the public. The option of curbside delivery is still available. There will be limited use of the computers. Library hours are still shortened, Monday, Wednesday, Friday 9-5, Tuesday 9-3 and Sat. 8-Noon. FACE MASKS MUST BE WORN. The library is holding the Donald Owens Reading Incentive Program beginning February 18th. Donald Owens was a lifelong reader and friend of the library and in his memory four $25.00 prizes will be raffled off in May. A raffle ticket is earned by reading 10 books. The contest is open to all ages, so start reading and write down the titles. The Library is once again teaming-up with the Woman’s Club of Slatington to hold their annual Art’s Contest. There are categories for all ages. Coloring contests for children, preschool to 2nd grade, and adults. An Art contests for students, 3rd grade through 12th grade and adults in the following categories: photography, 2-dimensional Art, 3-dimensional Art, and Fiber Art. A writing
category has been added this year, poems and short stories for all ages, but they will not be judged. Cash prizes are given to student winners. Entries must be at the Slatington Library by Saturday, April 3rd. The Arts contest will be held on Monday, April 19th, either live or virtually. This will be decided closer to the date. A crooked Oak Dear People: When the leaves are almost all off the trees, you can well see that not all trees have grown arrow/ rope straight and high. But does that mean that they aren't worth anything? Arthur D. Graeff can tell us something about that in his story "The Crooked Oak Tree": Long years ago a little acorn fell from an oak tree. Soon a groundhog comes and digs its hole close by where the little acorn lay. While scratching about, the groundhog covers the acorn with dirt and leaves. Winter comes, and the little acorn lies in snow and ice and freezes. But when spring comes again and the sun has melted the frost, something wonderful happens. The little acorn has sprung up, and a little sprout grows from the inside out, peeps up, and says, "How's it going in the world?" A tree was born! But the world did not bother much with that little sprout/shoot. The old groundhog still lives in its hole and keeps going out and in. It scrapes and digs until finally a part of the little roots were torn off. But just when the danger was at its worst/ greatest, a hunter comes and shoots the old groundhog. The little tree was now safe, but because it was not rightly rooted, it did not grow straight. Every year it became/grew bigger. Every year stronger. The other trees just laughed. "It is bewitched," says the old chestnut tree. "It is too stupid to stand up straight," says the dogwood

The furniture maker came and cut the big pine tree down. Then he looks at the oak and shakes his head. "Out of such a trunk I can't turn out a thing." The woodcutter goes at it and cuts the dogwood, but he doesn’t touch the oak. "Oh, oh, oh," he says. "If I were to cut you up into pieces, there wouldn't be a stove-wood length or more than a couple of inches. That's working too hard." Then one day the shipbuilder comes along. He needs a very particular kind of wood to build a big boat. The beams have to be thick and strong, and the keel has to be made from a crooked oak. He has to have strong logs for the ship’s ribs. The shipbuilder looks at the crooked oak and says, "That tree I have to have, may it cost what it will.” Out of a crooked oak a ship was built, and that boat still sails the sea – an eternal ship out of a crooked oak! If you are considering furthering your education for any reason, a community college could be a great choice and we have several in our region. Here we take a look at some of the benefits of attending a community college, as well as differences between a community college and a four-year college. As you probably already know, a community college is a higher education institution that provides a two-year curriculum that can lead to an associate’s degree. Community colleges also offer transfer programs towards a four-year degree, as well as one- or two-year occupational programs. In addition to the coursework focusing on academics, a community college will offer programs for personal growth and development. Historically, community colleges sprang up in the early 20th century as a way to meet the needs of young adults who did not want or could not afford to leave their families to pursue further education. These smaller schools were developed locally, in communities. That distinguished them 24
from typical four-year schools where students needed to leave home and stay in student dorms. Other Differences Two additional differences to consider between community colleges and a four-year college revolve around on-campus living and admissions policies. Community colleges are not set up for students to live on campus. Students are expected to live at home or in their own apartments. Since students go home after their classes at community colleges, you don’t have the social atmosphere that comes with on-campus living. For some, that may be a drawback. Community colleges may also not have additional programs like sports and drama that you would find with four-year colleges. The second major difference is the admissions policy. Most community colleges have an “open access” policy and do not promote a competitive application process. If a student wants to enroll, they generally can. Pennsylvania’s Amish Community

One of the best known “communities” is the Amish Community and when most people think ‘Amish,’ the first place that comes to mind is likely to be Lancaster County, Pennsylvania, although there are numerous other Amish settlements throughout the Commonwealth. Not all Amish live in Pennsylvania, however with a total of 53 settlements it does lead the nation in the number of Amish communities. The Lancaster community is the oldest and bestknown of all Amish settlements. Also worth noting is the Amish community in Somerset County, because it is the second-oldest Amish community in North America. Lancaster County As home to the oldest (founded circa 1760) and largest Amish community in the world, Lancaster County is by far the most heavily-visited Plain community, and has developed a thriving tourist industry. Some Amish participate in tourism, either operating businesses selling product to tourists, or in some cases catering directly to tour groups. As an industry, tourism is controversial among the Amish, with some seeing it as detrimental to the community while others consider the economic support it provides to be a plus.
Farming and Business Farming remains important for the Lancaster Amish however population pressures have limited agricultural opportunities. As a result, some Amish have begun small-scale produce operations suited to labor-intensive agriculture on small plots of land. Business is another way the Amish community has made a living in the face of high land costs. Today small business is very important in the Lancaster Amish economy with an estimated 2,000 Amish-owned companies. These businesses include manufacturers, builders, quilt makers, furniture shops, market stands, and a variety of others. Amish Woodcraft The Amish are well known for their woodcraft and with one of the largest Amish populations of any state (60,000+) Pennsylvania is home to hundreds of Amish furniture producers. Most Amish furniture manufacturers follow the smallscale model of a family-run shop on the home property, although the full range of furniture shops run from tiny one-man operations to mini-factories that crank out hundreds of pieces weekly. Amish craftsmen sell furniture direct and via retailers (both online and brick-and-mortar stores). Amish woodworkers frequently maintain relationships with non-Amish sellers, which provide them access to wider markets. Old Order Mennonites Lancaster County is also home to a large population of Old Order Mennonites, who populate the northern end of the county, near Ephrata. Also known as “Team” Mennonites, this group has maintained a stronger connection to farming than the Amish, and rely more heavily on tractors to manage and work the land. As an overall community, Old Order Mennonites and Amish cooperate on education and operate joint schools, attended by children of both groups.

New research published in the journal Radiology shows that breast cancer death rates for women under 40 are no longer decreasing. The study looked at data gathered by the National Center for Health Statistics between 1969 and 2017. The breast cancer mortality rate had been falling steadily since 1989, decreasing between 1.5 and 3.4 percent for each decade of age for adult women from 20 to 72 as breast cancer screening rates steadily rose. The trend has continued to hold for women 40 and older. But beginning in 2010, the breast cancer death rate rose 2.8 percent per year in women in their 20s and 0.3 percent per year in women in their 30s. Researchers think regular screening plays a critical role. Breast cancer screening guidelines have shifted in recent years. The current recommendation is that women between 50 and 74 get a mammogram every two years, and that younger women talk to their doctors about when to begin screening. Younger women, who are not regularly screened unless they are at a high risk for breast cancer, may therefore have cancers that go undetected.

Kitchen Test: Sour Cream Blueberry Pie SOURCE: Food.com
We’ve tested this one and it is delicious. First we made it with blueberries as it calls for – fresh, plump blueberries, and then after making it two more times that way, we swapped out the blueberries for a mix of tart, red and sweet, dark cherries. The cherries we used were frozen so we just let them thaw and then poured off the extra liquid before adding. This recipe works either way and it works beautifully! It is so good. It came from Food.com and we highly recommend it. READY IN: 45mins SERVES: 8 YIELD: 1 pie INGREDIENTS • 1 unbaked pie crust FILLING • 3/4 cup sugar • 2 tablespoons flour
• 1 cup sour cream • 1 egg • 1 1/2 teaspoons vanilla • 1/4 teaspoon salt • 2 1/2 cups blueberries (fresh or frozen) – or as noted, you can swap out to cherries TOPPING • 3 tablespoons flour • 2 tablespoons sugar • 1 1/2 tablespoons butter • 3 tablespoons finely chopped pecans DIRECTIONS • Mix sugar and flour together in bowl. • Beat in sour cream, egg, vanilla and salt until smooth (about 5 minutes). • Fold in blueberries. • Pour into pie crust, and bake at 400F for 25 minutes. (May need to adjust temperature and time for unthawed frozen berries). • Meanwhile, combine topping ingredients. • Remove pie from oven after the 25 minutes, and sprinkle on topping. • Return pie to oven and bake 10 minutes more. • Chill before serving. This pie will be a crowd-pleaser. In addition to the swap-out to cherries, we also made this pie two times using low-fat sour cream and it was just as delicious.

The news around COVID-19 and the related vaccines continues to move along at a quick pace. Here are some recent highlights. Johnson & Johnson Vaccine At the time of this writing, a government advisory committee is expected to give approval to a third COVID-19 vaccine. An emergency use authorization from the acting commissioner of the Food and Drug Administration should follow that within a few days. The new vaccine, from drugmaker Johnson & Johnson requires only one shot, and will join the Pfizer and Moderna vaccines already administered to 45 million Americans since mid-December. Public health officials say it doesn't matter which vaccine someone receives. New Variants New variants of the original COVID-19 virus are appearing and causing concern around the world, particularly one out of South Africa and one discovered in the U.K. Although there's no evidence that people already immunized with either the Pfizer or Moderna vaccines have less
protection against the variants, both companies say they have started looking at new ways to address them. Vaccines and Painkillers By now, most of us have heard that the COVID vaccines can come with a variety of mild side effects, lasting up to a few days, particularly after the second dose. Those side effects can include a sore arm, pain at the injection site, tiredness, headache, muscle aches, fever and chills. Any one of those might make you reach for a painkiller from the medicine cabinet, but experts are warning against taking painkillers either before or after your COVID vaccine in most instances. In a recent news briefing Dr. Rochelle Walensky, director of the U.S. Centers for Disease Control and Prevention, said, “These symptoms mean your immune system is revving up and the vaccine is working.” Michael Mina, MD, and assistant professor of epidemiology at the Harvard T.H. Chan School of Public Health, strongly recommends not using painkillers before or after your injection, saying, “try very hard not to.” Evidence at the moment is limited, but some data suggests some painkillers might interfere with the very thing the vaccine is trying to do, which is generate a strong immune system response.

Every day thousands of patients rely on lifesaving blood donations. The need for blood is constant, even during snowstorms and the COVID-19 pandemic. To help ensure lifesaving patient care isn’t impacted, individuals are urged to make appointments to donate in the coming days and weeks by downloading the Red Cross Blood Donor app, visiting RedCrossBlood.org, calling 1-800-RED CROSS (1-800-733-2767) or enabling the Blood Donor Skill on any Alexa Echo device. Important COVID-19 information for donors The Red Cross is testing blood, platelet and plasma donations for COVID-19 antibodies. The test may indicate if the donor’s immune system has produced antibodies to this coronavirus, regardless of whether an individual developed COVID-19 symptoms. Red Cross antibody tests will be helpful to identify individuals who have COVID-19 antibodies and may now help current coronavirus patients in need of convalescent plasma transfusions. Convalescent plasma is a type of blood donation collected from COVID-19 survivors that have antibodies that may help patients who are actively fighting the virus. Plasma from whole blood donations that test positive for high levels of COVID-19 antibodies may be used to help COVID-19 patients. Each Red Cross blood drive and donation center follows the highest standards of safety and infection control, and additional precautions– including temperature checks, social distancing and face coverings for donors and staff – have been implemented to help protect the health of all those in attendance. Northern Lehigh Recreation and the Slatington Parks & Recreation Board are joining together to hold the first Great Slatington Photo Scavenger Hunt from March 13th until March 27th. There is no charge for the event. Teams can register online at www.northernlehighrec.org until March 11th. They will then receive a list of hints for several locations in the borough that they must locate. Pictures must be taken at every location with at least two to three of the team members included. Each team must send their pictures to the Slatington Parks & Recreation Board’s Facebook page by March 27th. The first ten teams with all the correct answers will win a prize!
