Free Nutrition and Food Preparation Group Classes submitted by Lindsay Taylor
Penn State Extension, with support from Northern Lehigh Recreation Authority is offering a series of free nutrition and food preparation group classes for families with limited resources. Classes will be held via ZOOM Mondays from 4:00 pm until 5:00 pm. Classes will begin Monday, October 12th and run until November 16th. These free classes are open to parents or caregivers of a child age 19 and under, adults and older adults who qualify for free or reduced school lunch, WIC, SNAP benefits, food pantry boxes/bags and Pennsylvania Farmers Market Vouchers. Participants will learn to save money on food, plan and cook tasty meals, the importance of family meals, and how to introduce new foods. Kids will learn to cook and how to plan tasty snacks. The classes will be taught by Julie Davitt, Penn State Nutrition Education Advisor. Fall is upon us and time for the Lehigh Township Historical Society to thank everyone who supported our fundraisers in August and September this year. LTHS held our annual BBQ to Go Take-Out Dinner fundraiser in August this year and since the response was so good that we held BBQ to Go Round 2 along with our annual Fall Mum Sale on September 12th. Thank you to all who placed advance orders for mums this year. The response was so great that we increased our supply order before the sale! The day of the sale brought us beautiful weather and an abundance of customers. When the day was done, we had 29 mums remaining to be sold. We would like to thank Ruthann Henry from Henry’s Service Station in Danielsville and Ed Lorah from Lorah’s Farm Market in Berlinsville for helping us sell the remaining plants. Both of these events were sponsored in part by our Business and Civic supporting and sponsoring members: Lehigh Township Lions Club, Gilbert Funeral Home, Point Phillips Hotel, J-T Lelo Trucking, LLC, Filbert Bed and Breakfast, and Henry’s Service Station. Due to the pandemic our Historical Centre is closed to the public and we are not holding any
other fundraising events this year. Meanwhile planning for 2021 is beginning and we will update our Facebook page and website as events are planned. We hope next year will be better than 2020. Our annual supporting membership drive will begin soon, please support us if you can. Bethel United Church of Christ in Slatington recently recognized it's 2020 graduate, Cadence Rehrig, with a $250 Pearl Banks Scholarship. Cadence graduated from Northern Lehigh High School and is currently attending Lehigh Carbon Community College majoring in Fine Arts. After earning her Associate's, she plans to transfer to Moore College of Art & Design to major in illustration. Her future aspiration is to be a book illustrator.

The Slatington Library Book Club is now reading “The Dutch House” by Ann Patchett. The book club will meet on Monday, October 5th, at 1:00 pm. As we begin enjoying fall, the weather in Pennsylvania starts the shift from summer to winter. Although the average high temperature in August in Pennsylvania is 80° F and in September is 72° F, it starts to slip as we head into October when the average high temp is just 60° with a low of 41°. And as we move even further into the fall season, November’s high, on average, is 49° with a low of 33°. According to the Old Farmer’s Almanac, this month – October 2020 – will be warmer, and also rainier than normal, but make no mistake: October is a great time to enjoy the outdoors in Pennsylvania. The summer heat is gone and the winter cold has
not yet arrived. Whether you like a socially distanced Colonialera walking tour or biking and hiking woodsy trails, it’s just a wonderful time to get outdoors and breathe in the cool, fresh October air. Pennsylvania’s weather in October is actually ideal for most outdoor activities and that includes enjoying our spectacular autumn colors that usually peak from mid-October to early November. 2020 has been such a distracting year that it’s hard to believe summer is over and it’s now time to pull out the sweaters. The autumn is one of the most beautiful times of the year to take pictures and your phone camera makes it easy and convenient. Here are some pro tips to help you get the most out of your phone photography. Use Camera Gridlines One of the easiest ways to improve your mobile photos is to turn on the camera gridlines. That superimposes a series of lines on your smartphone's camera screen that are based on the “rule of thirds” – a photographic composition principle that says an image should be broken down into thirds, both horizontally and vertically. According to this theory, if you place points of interest at the gridline intersections or along the lines, your photo will be more balanced and level, and viewers will interact with it more naturally. To switch the grid on: 1. iPhone: Go to "Settings," choose "Photos & Camera," and switch "Grid" on. 2. Samsung Galaxy: Launch the camera app, go to "Settings," scroll down and switch the "grid lines" option to "on." Have One Subject Many of the best photos have just one, interesting subject.Your subject shouldn’t fill the entire screen and two-thirds of the image should be negative space (see next tip). Embrace Negative Space "Negative space" simply refers to the areas around and between the subjects of an image.Your subject will stand out more and get a stronger reaction from your viewer with good negative space. And what does that look like? It's often a large expanse of open sky, water, an empty field, or a large wall.

How-To: Apple Cider Doughnuts Source: Marian Cooper Cairns
These apple cider doughnuts are delicious warm or at room temperature. YIELDS: 12 servings PREP TIME: 45 mins TOTAL TIME: 1 hour 45 mins INGREDIENTS 1 c. granulated sugar 1 tbsp. ground cinnamon 3 c. apple cider 2 large eggs 6 tbsp. butter, melted and cooled 3 1/2 c. all-purpose flour, spooned and leveled, plus more for work surface 2/3 c. packed light brown sugar 2 tsp. baking powder 1 tsp. Kosher salt 1/2 tsp. baking soda 1-1/2 tsp. apple pie spice 1 48-oz. bottle canola oil DIRECTIONS 1. Combine granulated sugar and cinnamon in a paper bag; shake to mix. 2. Boil cider in a large skillet over high heat until reduced to 1 cup, 15 to 20 minutes. Cool completely. Whisk together eggs, butter, and reduced cider in a bowl. 3. Beat flour, brown sugar, baking powder, salt, baking soda, and pie spice with an electric mixer until combined, 30 seconds. Beat in cider mixture just until moistened. Cover and chill at least 1 hour. 4. Heat oil in a large pot over medium heat to 365 degrees F. Line a baking sheet with paper towels. Divide dough in half. Working with one half at a time, on a floured work surface, roll dough to 1/2" thick and cut into circles with a floured 3" doughnut
cutter. Repeat with remaining dough, re-rolling scraps once. 5. Fry doughnuts and holes, in batches, until golden brown, 45 seconds to 1 minute per side. Drain on prepared baking sheet 30 seconds. Gently toss warm doughnuts in cinnamon sugar. 6. Serve warm or at room temperature.

Each season the world of design has its “hot trends” and new “color palettes.” And as we head into fall-winter 2020 it’s no different. Here’s a short recap of some of the current design suggestions you might want to consider if you’re thinking of freshening things up in your home as we head into the autumn and holiday season beyond. Color palettes this fall have a definite emphasis on warm and “soothing” tones undoubtedly due in part to the kind of year 2020 has been. On the design front there seem to be trends focused on what we might call “natural” elements. One of the 2020 Décor Trends from designer Elisabetta Rizzato at Italian Bark involves decorating with leaves. The fact that fall leaves are a virtually infinite resource and come in so many colors makes them an excellent fall decorating element. How to use them? You can string them together for garlands for the mantle or porch railing, or use them as part of your holiday dinner centerpieces. But according to Rizzato, it doesn’t have to be complicated. Using leaves in your decorations this year can be as easy

as filling a simple vase with a few branches of fall leaves to add a warm, natural touch to your home. Another key trend is a warm color palette. Warm color hues come naturally to our minds – colors like cinnamon, caramel and terracotta immediately add a warmer feel to any interior. The nice thing is that repainting the walls is not required. You can introduce the warmth of these colors just by replacing some cushions or maybe a small rug. With terracotta hues so strongly in play this year, if you have exposed bricks and unfinished exposed walls, these are great features to highlight. Another color option at the moment is olive green.

Pennsylvania held its first archery deer season in 1951. It was a bucks-only season. The 5,000-plus hunters reported killing 33 bucks, which amounted to far less than one-tenth of 1 percent of the total deer harvest that year. It was not until 1957 – when does were first allowed to be shot by bowhunters – that the reported

archery deer harvest exceeded 1 percent of the total harvest. Things Have Changed If an archery hunter from the 1950s teleported to today, he would likely think that he had arrived on a different planet. Compound bows were legalized for deer hunting in 1973, and crossbows were made legal for non-disabled hunters during the regular archery season in 2009. At the time, thencommissioner Russ Schleiden said, “Legalizing crossbows will expand hunting opportunities and give hunters a choice.” And expand opportunities it did. Game Commission statistics show that there are now well over 300,000 licensed archery hunters. More than 60% percent of today’s archery hunters use crossbows all or part of the time. Arrows have evolved from wood construction to aluminum and fiberglass, and more recently to carbon. Broadheads had two or three handsharpened blades, and then four. The next advancement was replaceable razorblade inserts, followed by today’s mechanical broadheads, which fly truer and expand on contact. Plastic has replaced turkey feathers as the fletching of choice, while crossbow arrows or bolts are around 20 inches long, as compared to 28- to 34-inch long arrows for recurves and the original compound bows. Compound bows, with their pulleys, cams and cables, have allowed vertical bows to become smaller and more maneuverable for hunting. Their draw-weight let-off allows archers to more easily hold at full draw before releasing their shot. Compounds also shoot arrows faster and with a flatter trajectory. Mechanical releases, formerly illegal, provide a more consistent release of the arrow and make compound bows more accurate. News@TownAndCountryGazette.com || OCTOBER 1, 2020
Hunting Tools and Rules Most archers hunt from some type of portable tree stand or from a ground blind – neither of which were available in the 1950s. Masking scents for deer hunting and deer lures now come in a wide variety of types and dispensing methods. Some archery hunters even use deer decoys, which was unheard of during the first 50 years of archery hunting. From the deer and deer management perspective, the 2002 change in antler restrictions has made a huge impact on the age and size of the bucks harvested. Gone are the days when a typical buck was 1 1/2 years old and sported spikes or maybe three or four point racks. From Then to Now Pennsylvania’s archery deer season began during the “one-and-done” deer hunting days — hunters could only harvest one deer. If you had already harvested a buck, you could not fill your antlerless tag. Beginning in 1988, with appropriate licenses, hunters could shoot an antlered or antlerless deer during archery season and then still hunt during a rifle season. Prior to that, many hunters were reluctant to arrow a doe and then not be able to hunt bucks. In 1967, the statewide archery season was lengthened to include a winter season. More recently, the archery season was extended to six
weeks — including the peak of the rut in early November. Hunters in the ‘60s and ‘70s could only dream of bowhunting during the mating season.

As we move into the fall, if you’re in the mood for a home-y comfort meal, especially one you can make in the Crock Pot, you’re in luck! This Crock Pot Apple Cider Pork Roast totally fits the bill – it’s a little sweet, a little tangy, super easy and made with a handful of ingredients you probably already have in your house. This recipe serves 8. INGREDIENTS 1 medium onion, sliced vertically 1 tablespoon butter 1 tablespoon extra-virgin olive oil 1 2.5-3 pound pork sirloin roast 1 1/2 teaspoons kosher salt 1/2 teaspoon freshly ground black pepper 1 1/2 cups apple cider (the murky brown stuff – it’s widely available in the fall, but you can usually find Simply Apple year-round) 3 tablespoons honey 1 tablespoon Creole or mild coarse grain mustard 1 1/2 tablespoons organic apple cider vinegar (again, the murky stuff, like Bragg’s) 2 tablespoons cold water 2 tablespoons cornstarch Mashed Potatoes
INSTRUCTIONS Heat olive oil and butter in a large skillet over medium heat. When melted, add the onions in a single layer and season with kosher salt and freshly ground black pepper. Sauté for about 10 minutes, stirring occasionally until the onions are golden and caramelized. Remove the onions from the pan and set aside. While the onions are caramelizing, season the pork roast on all sides with the 1 1/2 teaspoons salt and 1/2 teaspoon black pepper. When you have removed the onions from the pan, increase the heat to medium-high and add the pork roast (you may need to add another teaspoon or so of oil). Sear on all sides. When the roast has seared, place it in a slow cooker. Top with caramelized onions. In a 2-cup measuring cup, whisk together the apple cider, honey, and mustard. Pour it over the roast and cook on high for 4-6 hours or on low for 8-10 hours or until the meat can easily be shredded with a fork. When the meat is done, remove the roast and onions from the slow cooker and shred. Pour the cider mixture into a small saucepan and bring to a boil over medium heat. While the cider is heating, whisk together the cold water and cornstarch. When the mixture is boiling, whisk in the cornstarch mixture and stir until thickened. Remove from heat and add vinegar. Serve the pork on top of mashed potatoes and topped with gravy.

The Woman’s Club of Slatington Meets in its 80th Year
The Woman’s Club of Slatington held the first meeting of the club year on Monday evening. 2020 has been a momentous year for many reasons, and it also marks the existence of a club devoted to the diverse interests and concerns of women, community service, and friendship. The Slatington Woman’s Club is ongoing in its 80th consecutive year. The focus of the club has been on five basic areas: Education, Home Life, Women’s Issues/Health, Conservation/ Beautification, and Public/Community Affairs. Supporting the Slatington Public Library has been an important club project throughout its history. While the club continued to support the community with monetary donations and work to enhance our Northern Lehigh area, monthly meetings were suspended after February 2020 due to Covid19 precautions. Members continued to beautify our area by planting and tending the flower gardens at both town Welcome signs, the Trailhead, Victory Park, and the Springside fish nursery. Support was given to local food bank programs, and a $1000 scholarship given to a talented NL High School Senior Girl of the Month. The new club year meeting was held with social distancing at Victory Park pavilion to install club officers, with Rosanne Pugh presiding as new President and Past President Lana Reitz thanked for her two year term of 2018-2020. The club will continue their monthly meetings through the use of ZOOM this year. The club will continue to offer interesting speakers and activities via this format, as well as supporting the community in a safe manner. Club meetings are always held at 7:00 p.m. on the third Monday of the month from September to May. Interested women are encouraged to join us for meetings via ZOOM by calling the Slatington Library for needed information. New members are always welcome.

The Woman’s Club of Slatington is proud to announce that Ava Rosario was the recipient of the $1000 scholarship at Northern Lehigh Graduation 2020. Ava was one of the outstanding senior girls honored at our monthly meetings. Her strong academic record as a member of the National Honor Society combined with the values of service and character she holds close to her heart were closely aligned to the focus of the goals of the Woman’s Club of Slatington. 10 Tips to Avoid COVID-19 Scams SOURCE: AARP By Katherine Skiba, AARP
Some pandemic scams are known and others are just emerging. Here's advice from the Justice Department to help you dodge fraud during this tricky time. 1. Independently verify the identity of any company, charity or individual that contacts you regarding COVID-19. 2. Check the websites and email addresses of companies offering information, products or services related to COVID-19. Be aware that scammers often employ addresses that differ only slightly from those belonging to the entities they are impersonating. For example, they might use “cdc.com” or “cdc.org” instead of “cdc.gov,” which is the legitimate website of the Centers for Disease Control and Prevention (CDC). 3. Be wary of unsolicited emails offering information, supplies or treatment for COVID-19 or requesting your personal information for medical purposes. Legitimate health authorities will not contact the general public this way. 4. Do not click on links or open email attachments from unknown or unverified sources. Doing so could download a virus onto your computer or device. 5. Make sure the anti-malware and antivirus software on your computer is operating and up to date. 6. Ignore offers from suspicious sources for a COVID-19 vaccine, cure or treatment. Remember, if a vaccine becomes available, you won't hear about it for the first time through an email, online ad or unsolicited sales pitch. 7. Check online reviews of any company offering COVID-19 products or supplies. Avoid companies

whose customers have complained about not receiving items. 8. Research any charities or crowdfunding sites soliciting donations tied to COVID-19 before making a donation. Remember, an organization may not be legitimate even if it uses words like “CDC” or “government” in its name, or if it has reputable-looking seals or logos on its materials. For information online on donating wisely, visit the Federal Trade Commission (FTC) website. 9. Be wary of any business, charity or individual requesting payments or donations in cash or by wire transfer, gift card or using the mail. Don't send money using these payment methods or channels. 10. Be cautious of “investment opportunities” related to COVID-19, especially those based on claims that a small company's products or services can help stop the virus. If you decide to invest, carefully research the investment beforehand.

The picture is probably from the 70’s. The ambulance is a late 60’s Cadillac (the fire apparatus collectors are in general agreement it’s either a 1967 or 1968 Miller-Meteor Cadillac). The Fire Company started the ambulance service in 1974. I’m guessing they probably bought this ambulance used.

IN PERSON WORSHIP IS BACK: On September 20th, St. Peter’s United Methodist Church located at 7860 Center St in Emerald met together for worship for the first time since March 15th. What a great feeling to be together with fellow church members. It was different in that there were no hugs or handshakes and we tried to keep a safe distance from each other, and we sang with masks on, but the feeling of connection was there. A time of Bible study/Sunday school will be at 9am, followed by the service at 10am. Also, Bible Study is meeting again on Mondays @ 11am. All persons entering the Sanctuary will do so by the ramp entrance, upon entering you will be asked to use hand sanitizer (provided) and wear a mask. As we re-open we will be following government and CDC guidelines. Many of you are not comfortable meeting together and that is ok. You will still be able to view the service online. You can also share “Youth talks” with Kristin on Wednesday evening @ 7pm. On Friday afternoon @ 4pm join Pastor Michelle with “Moments with Kids, and “Trail Talks” with Pastor Bill and James Monday thru Friday. These can all be viewed on https://www.com/
stpeterschurch18080. On the 2nd and 4th Saturdays @ 6pm on the Helping Hands Community Centers Facebook page you can join in Lifetree Café for an hour of stories and conversations to feed your soul.
