From the Publisher’s Desk

Joe Korba

I very rarely delve into heavy subjects in this column, but the international news this week—a direct assault on freedom of expression and freedom of the press—was too personal and too important not to address. The craven, tragic terrorist attack on the Paris office of satirical magazine Charlie Hebdo is an assault on very basic rights, ones that we consider inalienable in the United States. As someone who has spent all of my adult life immersed in media and journalism, I consider freedom of speech and freedom of the press to be the very foundation of democracy and our way of life. As I’m writing this, it’s being reported that French commandos have killed the terrorists in raids on a kosher grocery and publishing house where they were holed up, keeping hostages at gunpoint. The raids end a nightmare for the people of Paris but, unfortunately, created martyrs for other violent zealots to emulate. This threat isn’t going away, but we have to

Page 3

take inspiration from the real martyrs of the Paris siege—the journalists, police officers, and hostages who were killed by these cowardly, murderous thugs. Those killed were martyrs for freedom of speech, expression, and liberty itself. It’s heartening to see the international community rallying to the cause of freedom rather than cowering in fear in the face of shadowy militants willing to attack unarmed cartoonists as they sit at their desks. The surviving staff of Charlie Hebdo is planning on printing their next edition on schedule, but instead of their usual 60,000 copies, they are upping their print run to a million editions. That’s true bravery that should motivate us all not to shy from offending or being provocative. Ideas and concepts are tempered by debate, discussion, satire, and humor. The enemy knows the power of a free press, which is why oppressors around the world regularly target journalists—61 were killed in 2014 alone. We are lucky enough to live in a country where we, generally, don’t have to fear for our lives. But I think I speak for all of us, even at your community papers, when I say, “Je suis Charlie.”

From sleuthing out sales to clipping coupons, how are you a thrifty spender? Tony Pisco, Art Director: I find the best way to save money is to try to stop my wife from shopping anywhere. Northampton High School Named Debate Champs

Submitted by LISA VEISZLEMLEIN On Dec. 12, the Northampton High School Debate Team won the Eastern PA Conference Debate Championship by defeating Nazareth High School in the trophy round. Northampton’s debate team advanced to the finals by winning their division during the regular season with a record of 14-6. They then defeated Easton High School in the quarter-finals round, Emmaus High School in the semi-finals, and finally Nazareth High School to win the championship. 18 schools in the Lehigh Valley and Pocono Mountain region compete in this league. The topic of this year’s debate was whether the United States federal government should significantly increase security activities regardless of the impact on civil liberties. Members of the team who competed in the championship rounds were seniors Erika Veiszlemlein, Frank Lukaitis, and Gaelan Campbell. They were coached by Mr. Michael Bauer.

This was a good turn-out. Our judge was Phillip Campbell, who began photographing back in the film days. The images had already been judged, so we were able to sit back and enjoy the show. Comparing our work to that of successful professionals can be intimidating. Not only that, it can be difficult to judge our progress. We can learn much by comparison to our peers. Woman’s Club Of Slatington Meeting News Submitted by DEBBIE BARHIGHT

The Woman’s Club of Slatington enjoyed its fall meetings and looks forward to upcoming 2015 activities. An informative November meeting was held when Mr. Dan Kunkle of the Lehigh Gap Nature Center brought the group up-to-date with recent happenings at the center. A demonstration of some wonderful ideas about recycling everyday things into attractive, useful items for the home was given by conservation chairman, Becky Lienhard and is ongoing at every monthly meeting. The year wrapped up with the club’s “Holiday Happening” when the club made a scented ornament, had fun playing some games, exchanged homemade cookies, and had a secret gift swap. The upcoming regular monthly meeting on the third Monday of this month, Jan. 19, should help members start the new year off on the right foot. The meeting is entitled “New Year… New Habits—ZUMBA” and is a focus on health and wellness by fitness instructor Amy Hillanbrand. If you have been thinking about doing something nice for yourself, want to help make things a little better in our Northern Lehigh community, want to meet some new friends or catch up with some old friends, we invite you to come to this meeting and have some fun with us. Meetings are held at St. John’s Lutheran Church on Second Street in Slatington at 7 p.m. If you would like more information, please call 610-767-7929.

Keep Up the Good Work this Winter Pro Basketball Star Skylar Diggins Shares Her Indoor Fitness Game Plan

(Family Features) While the winter may make for a tempting time to curl up on the couch, adapting your routine is essential for year-round well-being, whether you’re a professional athlete or an average person looking to stay on top of your game. “As an athlete I am just like everyone else – when it’s dark and cold outside it can be harder for me to stay motivated to keep up with my workouts,” said women’s professional basketball star Skylar Diggins. “But hibernating in the off season isn’t an option for me, nor should it be for anyone who wants to stay in shape year-round.” As the days grow colder, follow this advice from Diggins to stay fit: Power up with protein. It’s important to give your body the proper protein to fuel your workout – both before and after exercise. Protein drinks are one way to reward your muscles and power your body for intense exercise. Banish boredom. A great way to change it up is signing up for new gym classes or bringing a buddy for motivation. Add variety by doing short reps of different circuit exercises to make workouts more efficient and fun. By alternating reps of speed ropes with walking lunges with weights overhead and high knees, you can incorporate cardio and strength training into one rewarding, un-boring gym session.

drain, mash. Place mashed sweet potatoes in a large bowl, blend with margarine, brown sugar, orange juice, and cinnamon. Spread mixture evenly in a 9x13 in. baking dish. Top with mini marshmallows. Bake for 25-30 minutes or until heated through and marshmallows are puffed and golden brown. I would like to start off by saying that I absolutely love this dish. I only recently developed a love for sweet potatoes— better late than never! I made a few slight changes to the recipe: I substituted the reduced fat margarine for real butter; I never use margarine when baking/cooking, and I did not add any orange juice to the dish either. While reading reviews for the recipe, I read from every entry that the orange juice was unnecessary and made the casserole too “orange-y,” so beware! I baked the casserole for 30-32 minutes and it was perfectly browned and puffed. Good luck and enjoy!

Mir wunnere ferwas net. Mer hen vergesse der Harry zu frooge. -Florence Baver December 1, 1960 This week we want to write about a story which Harry Shafer, who lives near Bushkill Park, gave us. Harry explained how he and his father always fetched malt [brewer’s grains] from the Seitz Brewery and Malt House in Easton. The Farmers used to drive away this malt and feed it to the cows. It was always doled out so that the farmers did not all come on the same day. Harry said they always went on Saturdays to fetch theirs. They paid three cents per bushel. That cost about one and a half dollars to fill up

the body wagon [a wagon with a box on it]. That wagon would hold 50 bushels. The brewery was mighty glad to get rid of the leftovers [from the brewing process]. Harry said his father divided up the load with two other farmers. Fifty bushels were too much for his small drove of cows. They used burlap to partition off the malt on the wagon during loading. One farmer would get 25 bushels, another 15 and the third 10 bushels. The adage was that the farmers did not get cold feet while hauling the malt, since it was still hot when it came out of the malt house. At home in the barn they shoveled it into a wooden trough and tamped it down with a wooden stomper. This was done to get the air out, so it would not become pungent or strong tasting. At eating time every cow got a shovel full, with middlings sprinkled over it. One could trace the route of the horses and malt wagon from the brewery to their home because the malt was wet and the liquid ran out the wagon all the way home. The horses did not get any of the malt. We wonder why they did not. We forgot to ask Harry. [Seitz brewery was located at Bushkill and Front Streets in Easton. It was a family owned business which operated from 1821until it was closed for Prohibition. The brand name resurfaced after the prohibition law was repealed, but probably not under the control of the Seitz family. In its heyday, Seitz Brewery even had its own canal boat to distribute its products along the Lehigh Canal, reaching as far north as Walnutport.]

Lansford Gets Facelift From Main St. LV Grant And GLVCC

L-R: Kathy Henderson, Chris Ondrus, Mary Soto, Bob Dobosh, Donna Valent, and Pastor Jeremy Benack. Submitted by ALICE WANAMAKER The Carbon Chamber and Economic Development Corporation, in conjunction with the Greater Lehigh Valley Chamber of Commerce, presented the first Main Street Lehigh Valley Grant in Carbon County to Lansford Alive last month. The group applied for and received a $500 matching grant from the Chamber Foundation to beautify the downtown of Lansford. Mary Soto, board member at Lansford Alive, said the money was used for multiple projects including new stone and pavers around the borough, updated planters and Christmas decorations, as well as improved landscaping. The group has been working on the improvements for the past six months and is proud to have patronized only local businesses for their improvements. They plan to apply for a second round of streetscape grants to continue the improvements. Lansford Alive is a community-based group aimed at improving the downtown to encourage economic growth and improve the quality of life in Lansford. "My family's been in town for a couple generations and I still want to see the town move forward," said Christopher Ondrus, president of Lansford Alive. Main Street Lehigh Valley, the Chamber’s 501c3 charitable arm, aims to improve every main street in the Lehigh Valley through targeted investments in façade improvements, streetscaped designs, sidewalk beautification, and other enhancements to the physical appearance of our local downtowns and surrounding traditional neighborhoods. Over the last seven years, during one of the most challenging economic periods in U.S. history, the Chamber Foundation raised nearly $300,000. Modest grants were awarded all over the Valley. This funding leveraged other donations and grants, rallied local volunteers and instilled

community pride. The results? Over the last seven years, 160 projects were funded in Carbon, Lehigh, Northampton, and Warren Counties—more than $6 million in measured impact—a 20X return on investment. To partner with the CCEDC and Main Street Lehigh Valley in improving our downtowns by donating to The Foundation, please contact AliceW@CarbonCountyChamber.org or call 484274-2080.

Goodnight, Sleep Tight

I have a gigantic soft spot for warm and fuzzy critters. I got

my first dwarf hamster as a freshman in college. They weren’t exactly allowed in the dorm, which made it all the more fun. My roommate and I each got a cute little ball of fur and I fell in love with Scooter and Twitchy’s itty-bitty feet and noses. In 2011, when I moved to NJ for a year, I got my second tiny hammy: Giselle (inset). My sister named her after the princessto-be in “Enchanted,” but she eventually amassed a variety of nicknames, my favorite of which was Lil Boop. Hell, I once stood in the PetCo rodent section for 40 minutes trying to contain my squeals. Anyway, the point of all this is that when I see a viral video involving a dwarf hamster, I lose my mind a little. Enter this beyond precious clip shared by the Huffington Post last week entitled, “Hamster Gets Tucked Into Bed At Night, Is Treated Like Royalty.” The hamster in question is named Enoki. She lives in a hamster apartment. She sleeps in a little hamster bed with a teeny hamster blanket. And according to her owner, she doesn’t go to sleep without a head massage. Needless to say, the video went wildly viral that day. You can see it for yourself on our website at www. townandcountrygazette.com.

The 72nd Golden Globe Awards Award season has arriiiiived! The Golden Globes are the first major award show of the season, one quarter of the Four Horsemen of Fame (and judgment), the EGOT—Emmy, Grammy, Oscar, Tony. It’s one of my favorite because it brings stars and characters from my two favorite forms of entertainment together to one big party. The small screen and the silver screen share the stage at the one dinner a year we (I) desperately wish we (I) could attend. This year was a tricky viewing for me because I still haven’t seen many of the nominated films. “Boyhood” took home the night’s biggest honor and I hadn’t even heard of it. “The Grand Budapest Hotel” sounded vaguely like something that had already been up for an award last year or the year before. (Not sure what I’m thinking of here—was there something else with ‘hotel’ in the title?) The only thing I’ve ever seen from Best Director winner Richard Linklater was 2003’s “School of Rock.” While I was hoping for Jake Gyllenhaal to share his sister’s success of the evening, even I had to admit competition was stiff and his performance in “Nightcrawler,” while chilling and enigmatic, couldn’t quite measure up to that of winner Eddie Redmayne for his unflinching portrayal of Stephen Hawking in “The Theory of Everything.” Amy Adams and Julianne Moore both gave sweet speeches for their wins. I’m unfamiliar with “Big Eyes,” but “Still Alice” sounds like it might make my watch-list. “Foxcatcher” too. As for TV, I gave up on “Fargo” after just a couple episodes. I was depserately hoping “Orange is the New Black” would sweep a few more wins, but no luck. I essentially had no basis for judgement

all night for any of the categories, which made watching seem a little pointless. I better up my game for the Oscars! Here are some highlights of the starstudded night: •Third-time-in-a-row hosts (and BFFs) Tina Fey and Amy Poehler predictably brought the laughs, but also dropped a rumored Bill Cosby joke in their opening monologue during a description of nominee Into the Woods: “Cinderella runs from her prince, Rapunzel is thrown from a tower for her prince, and Sleeping Beauty just thought she was getting coffee with Bill Cosby.” The crowd roared, but no reaction was better than Jessica Chastain’s pure hand-over-eyes shock. •Our dear hosts continued to make everyone uncomfortable by taking jabs at “The Interview” scandal, complete with Margaret Cho stepping in as a North Korean journalist overseeing the awards. •The most emotional acceptance speech came from first-time nominee Gina Rodriguez who won for Best TV Accress, Comedy or Musical for her work as the CW’s titular Jane the Virgin: “My father used to tell me to say every morning, ‘Today is going to be a great day. I can and I will. Well Dad, today is a great day. I can and I did.” •Presenters are typically announced ahead of time, but a few surprises can sneak in here and there. Seems no one expected to see Prince take the stage to award Best Original Song, least of all Allison Janney and Viola Davis who appeared to completely lose their minds in a brief crowd shot. For more 2015 Golden Globes moments, head to www.townandcountrygazette.com.

Best Dressed Kate Hudson in Versace: Versace won the night with these ladies, the first of whom looked stunning in a brilliant white gown that drew the eye to curves she doesn’t technically have. I would’ve left her hair down though, as the slicked-back look brought an unflattering emphasis to her ears.

Amy Adams in Versace: Critics are already slamming Adam’s “safe” choice, but I thought the cornflower blue made her hair pop and the multilayered wrapped look hugged her slim figure in all the right places.

Jessica Chastain in Versace: I wasn’t sure I liked the metallic color choice at first, but Jessica looked lovely in this plunging neckline with her side-swept mane. She wound up looking like a little firecracker. Beautiful.

Worst Dressed Lorde in Narciso Rodriguez: Eesh. The only thing I liked about this ensemble is the bling. The 18-year-old nominee (for Mockingjay’s “Yellow Flicker Beat”) went for a conservative look that backfired by making her look twice her age. Those pants are in desperate need of a tailor! If she wanted tips for how to pull this off, she should’ve looked to Ms. Flawless herself, Emma Stone, who looked laidback and gorgeous.

Keira Knightley in Chanel: Apparently Keira Knightley got pregnant and decided she wants to spend her down time sewing Amish tablecloths and dried bug collections into Homeless Couture. (That corsage though!)

Kerry Washington in Mary Katrantzou: The Scandal star is a red hot resident of Shondaland, but this two-toned metallic monstrosity was a major misstep. The shoes don’t even match.

In March of 2014, in preparation for the Bloom Women’s Conference in Haiti, “sister to sister” teas were held in churches and women’s homes to collect lightweight scarves to bless the women attending the conference. The Bloom Women’s Conference was held

from October 27 through October 30. After the conference, volunteers traveled to remote villages to distribute boxes of food containing rice and vitamins. What is a “sister to sister” tea? A woman opens her home to her friends, serving them coffee, tea and dessert. The attendees brought
