From the Editor’s Desk
Joe Korba
If there is anything I’ve learned about this community after working for the Gazette the past three years, it’s that they are always willing to help those less fortunate. Whether it is the annual “Ride for Adam” fundraiser or one of the many charity events we advertise throughout the year, people come out in droves. It’s truly amazing to witness. In that spirit of charity, I wanted to remind all of you that our 3rd Annual Blue Mountain Blowout fundraiser for the Northern Lehigh Food Bank is coming up on Saturday, September 6 from 9 a.m. until 2 p.m. I’m still looking for vendors to come out and help make this event a success. If you’re interested in setting up a table, give me a call at 610-767-9600 or e-mail at jkorba@ townandcountrygazette.com. The fee for a vendor spot is $10. All of the proceeds from the vendor fee are donated to the food bank. BLUE MOUNTAIN

Horses Dance For Charity
Ride 4 Hope Benefits St. Jude’s
Submitted by NOELLE VANDER BRINK On Saturday, August 9, horses and their riders will compete in the Ride 4 Hope Musical Challenge to raise money for St. Jude Research Hospital for Children. The competition, to be held at Hidden Creek Equestrian Center in Kunkletown, will feature pairs of one, two, or four horses and riders performing to music. In this form of English dressage, called Musical Freestyle, riders are judged on how well they have creatively
combined required patterns and gaits with suitable music. This year, five teams and seven individual riders will take to the arena to compete and raise money. Judges will score each timed presentation according to the rules of the United States Dressage Federation, but in a departure from regular dressage competitions, spectators will have a chance to vote for their favorites. Each dollar donated to a team or rider equals one point added to the score, and all funds are donated to St. Jude’s. There is no admission to the event, but donations will be solicited for St. Jude’s. The Ride 4 Hope Musical Challenge will begin at 10:30 a.m. and performances will continue through 1 p.m. After the conclusion of the final ride, voting will open and food and beverages will be available for purchase. Voting will close at 1:30 p.m., and the challenge winners will be presented at 2 p.m. There is no permanent seating, and spectator should bring their own chairs.

Would you like to send your child to private school but think you can’t afford it? Do you have a child who dislikes school? Do you have a child who might benefit from a small classroom size? Did you know you don’t have to be Catholic to attend Catholic school? Michael came home from St. John Neuman School smiling. We want to bring a smile to your child. Let us help you!! For More information call: ➢ Sister Stephanie @ St. John Neumann Regional School ~ 610-826-2354 ➢ Mike or Tamara Kulp @ 610-767-6264
Not sure because change is difficult? Have your child spend a visitation day.
“The only reason Michael agreed to spend a visitation day at SJNRS was because we told him it would be a day out of regular school. Michael came home from his day of visiting smiling ear to ear and didn’t stop talking about how much he loved the school until he went to bed that night.”….Mike and Tamara Kulp

Town & Country Office No Longer Collecting Pet Supplies
By TOWN & COUNTRY STAFF The Blue Mtn. Town & Country Gazette community is one with large hearts, especially when it comes to our furry friends. Over the years, we have advertised for and collected your unwanted pet items and passed them along to our local shelters. You, the community, have graciously donated tons of food, blankets, cages and carriers, leashes, cleaners, and more to help aid the local shelters in caring for the animals that they have helped. While your generosity is appreciated, as of July 20, we will cease the collection of these items and ask you to continue to donate directly to the shelter of your choice. Pet food can be donated directly to your local food pantry or to any local shelter. Other items, such as cleaning supplies and blankets, are accepted at the local shelters listed below. If you have any questions about the items you wish to donate, contact the shelter directly at the number listed. Thank you for your continued support of the animals who need you the most. Directions Preheat the broiler to high heat. Melt the butter in a large ovenproof skillet over medium heat. Add onion and cook until softened, about 3 minutes. Add ham and thyme, continue to cook until ham is lightly browned. Add chicken broth and ¾ cup water and bring to a simmer. Add gnocchi, stir well, cover and cook until gnocchi is slightly tender, about 5 minutes. Remove from heat. Stir in peas, heavy cream, ¼ tsp, salt and pepper. Sprinkle the cheese over the top. Broil until golden and bubbly, about 3 minutes.
Chef Cat’s Notes I know many people who have issues with peas; don’t shy away from this recipe just because it contains those little green things you will forever push around on your plate! I am not a fan of peas myself, but love this recipe anyway. It is extremely easy and quick to make. It’s very important to use unsalted as opposed to salted butter and low sodium chicken broth as opposed to regular because this recipe can get very salty in a big hurry. Having an ovenproof skillet is not imperative; I don’t have one and just improvise. Good luck and enjoy!

Crystal Spring Farm 2014 Coolest Treat Winner
W
hen you pick up a pint of ice cream at the store, you don’t know much about it besides the brand and flavor. But at Crystal Spring, you can practically see the cows from your seat on the deck as you sit outside in the summer breeze enjoying your cone of some of the freshest ice cream in the Valley. Crystal Spring Farm is the winner of our 2014 Coolest Treat award and it’s not hard to see why. According to Audrey Marsteller, CSF snatched all the votes because customers “know exactly what they’re getting here. We’re all about knowing where your food comes from and I think more people are becoming aware of that.” Marsteller is a fourth generation farm girl; her greatgrandparents Irwin and Katie Piefly purchased the land back in 1903. Her father, Hubert Sell, turned it from a potato farm to a dairy farm in the 1960s. He had always wanted his own dairy store, said Marsteller, and while there used to be a handful across the area, now “there’s only us,” she said. “The secret is, we all stuck together as a family and made it work,” she continued. “It’s a lot of hours of work in the week.” Her two brothers, Scott and Gary, work approximately 80 to 100 hours a week tending the farm; they do everything themselves. One specializes in their crops, the other in their cows. They have nearly 300 cows on the land, nearly half of which contribute approximately eight gallons of milk per day. That’s over 1,000 gallons! “They [Scott and Gary] are both hoping to work as long as physically possible,” said Marsteller. “We grew up in it and we loved it. The boys, all they thought about in school was the farm. We wanted to stay in it.” Marsteller helped out her whole life, but she was 18 when she started helping in the retail part of the business. “I always wanted to be a teacher or to work in retail. I love people, so I went with retail. Really all of us had the same idea; we’ve all been lifelong workers and we all specialize in our own areas here. We don’t butt heads, because we all do our own thing, yet work together.” Her third brother runs Crystal Spring Electric and their parents still have a heavy hand in the day-to-day operations. “They’re still very active,” said Marsteller. “Dad is 80, but he’s still here every day. Mom comes in around three days a week to bake and make the soups and pie filling. She’s a real Betty Crocker, she’s done

COOLEST TREAT
C
that since Day 1.” OOLES Crystal Spring has received other awards throughout the REAT T years, and Marsteller said they appreciate the recognition and the appreciation of the hard work that goes into keeping the farm running smoothly and churning out a quality product. “The quality is unsurpassed; we use a lot of cream, fresh from our dairy herd, and a lot of other places can’t afford to do that,” she said. “What we’re doing this time a year is fighting for cream. It’s a challenge, meeting that need.” In other words, if you don’t see as much milk or butter on their shelves, blame their delicious ice cream. Marsteller’s personal fave? Coconut Almond Joy, just one of almost 30 flavors total. Marsteller said the line of people is often out the door during the summer. A weeknight may see around 100 people stop by, while the weekend can see up to five to seven times that many. Lucky they have indoor and outdoor seating, not to mention the picturesque fountain area and gazebo. So next time you stop by Crystal Spring Farm for a sundae, smoothie, shake, or split, be sure to thank the cows lowing right around the corner for the fresh creamy taste. Even though they aren’t allowed to get public visitors, they’re still part of the Crystal Spring family. “Our cows are a mess,” laughed Marsteller. “They have personalities; they stand and lick you. They’re like pets.”

it’s written that Jonas died in 1893 and is buried in [the Red Church] cemetery. Rev. Fegley wrote that Jonas had lived with Jacob Leibensperger. Calvin’s uncle, Alfred Leibensperger, also lived in that area during that time. I think Jonas was a little like a pappy to Calvin when he was young and Calvin did not forget that for his entire life. He told many good things about Jonas to his family, more than Florence wrote in her column. For example, Jonas went to church with Calvin’s family and Calvin often sat with Jonas then. It was a great pleasure for me recently to make the acquaintance of a granddaughter of Calvin Stump. We talked on the phone for an hour and send each other Emails. I learned so much about Jonas and hope we both have more time in the future to discuss his life’s story. Jonas was not a renowned man in his area; he was “just” a laborer, a servant and a soldier who went into the Civil War. But he made a great impression of Calvin, and Calvin’s descendants to this day hold him in esteem. And it’s more than 100 years since he passed away! Perhaps there is a lesson here: anyone, whether rich or poor, can make a good and lasting impression on those around them when they live and love just like they learned from their religion.

Pitch In For Brett 2
Submitted by CHRISTINE Hankee Olde Homestead Golf Club and the Krysta Hankee Memorial Fund joined forces on July 4 and 5 to give special meaning to this great American holiday. The “closest to the pin” event raised $1,500 for the Brett Snyder family. Brett, the local 36-year-old father of two young boys, is in a fight against ALS. He is the husband of Carissa (Seng) Snyder. The money will be used by the family to supplement his ongoing medical care. The formula was simple; Justin Smith of Olde Homestead was the “Godfather of Golf” during this holiday by making the golfers a “closest to the pin” offer they couldn’t refuse. Friends and board members of the Krysta Hankee Memorial Fund donated their time to sit at hole #9, a 150 to 200 yard par three with a great view of two ponds and the beautiful club house. On hand for two days was Bill and Chris Hankee, Peg Coker, Tim and Priscilla McGinley and Jim and Jill Tilney. As golfers approached the number 9 tee box, a representative of the Krysta Fund told them that if they donated $5 to the Brett Snyder family that Olde Homestead Golf Club would give them back a ticket to receive $10 off their next round of golf at the club. Also, they would receive a free round of play just for landing their ball on the green. The Krysta Hankee Memorial fund donated the prize

for the person who landed their golf ball closest to pin. On July 4, Tom Sondergaard of Bethlehem marked his ball 10’2” from the pin and won $75. Rick Tolan took the prize of a $100 Olde Homestead Gift Card the next day with 4’8”. Congratulations golfers for two great shots. Special thanks goes out to over 200 golfers who took part in this community building event. Golfers from as far away at Ohio and Massachusetts took part in helping this young family. This initiative was part of the Krysta Cares Flight Club, which promotes the “Courses That Care, Miles That Matter” program where 11 local golf courses have joined in to present golf events to raise money to purchase Giant gas gift cards to be given to families needing help with the ever increasing cost of ongoing medical travel. In two and a half years, the Flight Club has generated over 258,000 miles for these families in need. Please consider supporting these Courses That Care and thank them for making a difference when you visit. The Courses that Care are as follows: Pleasant Hills GC, Green Pond CC, Olde Homestead GC, Silver Creek CC, Bethlehem GC, Woodstone CC, Southmoore GC, Berkleigh GC, Mahoning Valley CC, Whitetail GC, and White Birch GC.

The first award, a $500 scholarship, was presented to Jaclyn Marcantonio. Jaclyn, a granddaughter of Phillip and Mary Jean Spaziani,

is currently pursuing a Bachelor’s degree in graphic design at East Stroudsburg University. The recipient of this award must be a child, grandchild, or great-grandchild of a member of the chapter and must be either a senior at a public high school in Northampton County or a graduate of such a school who is a student at an institution of higher education. Frank Kovacs, Chair of the Educational Support Committee, introduced the recipient of this year’s William C. Pfeffer, Jr., Educational Grant. This year’s award of $500 went to Barbara Miller, a psychologist at the Easton Area Academy in Easton Area School District, who used it to purchase musical instruments that will be used to expose the students to music and teach them to focus. Both she and her principal, Kyle Yanders, expressed their own gratitude and spoke about that of the students who were in disbelief that money would be given by people who don’t even know them. Kovacs then introduced Phillip Spaziani to present this year’s Lauretta Woodson Awards, given annually through the state PASR to recognize both an educator and a support professional who have exhibited creativity, initiative, or productivity relevant to the learning process and growth of children. This year’s awards were presented to Dee Darragh, a school nurse, and B. J. Smith, a high school secretary, both from Easton Area School District. Each received $100 along with a plaque and medal commemorating their achievement. Kovacs presented the final award, the Arthur D. MacDonald Award, to Peggy Stoudt, Cabinet Secretrary for Human Resources at IU 20. This award of $100 is presented annually in honor of a very active chapter member who was prominent in IU 20 for many years before his retirement. Stoudt’s selection seemed particularly appropriate because she had been MacDonald’s secretary when she first worked at the IU. 4571 CLOVER HILL CIRCLE SERVING THE GREATER LEHIGH VALLEY

‘BEST’ EMMY NOMINATIONS 2014
COMEDY Best Actress in a Comedy Series
2014 Emmy Award Nominations
Technically award season never ends, what with obscure music awards scattered throughout the summer months and the ever-dreadful VMAs in August, but I always look to the Emmys to kick off another year. They’re not my favorite award show, but they’re more official than even the Golden Globes (think EGOT). I’m a severe television addict, which should mean I get excited for this particular golden statue, but I’ve admittedly grown very tired of seeing the same names year after year. Shows that aren’t even funny anymore continue to win Best Comedy (I’m lookin’ at you, “Modern Family”) and phenomenal performances are overlooked in favor of more famous faces (Monica Potter was so painfully snubbed last year for her ugly-sob inducing work on NBC’s “Parenthood”). So imagine my surprise this year when some new talent was finally recognized on July 10 with the announcement of the 2014 Emmy noms. I’m most happy to see the Netflix juggernaut “Orange is the New Black” snag a dozen nods, most notably Taylor Schilling for Best Actress in a Comedy Series, and deservedly so. I don’t know that OITNB qualifies as comedy, even if it does make you laugh, but whatever gets them on the ballot. Joining Schilling is Supporting Actress nominee Kate Mulgrew (Red), with Natasha Lyonne (Nicky), Uzo Aduba (‘Crazy Eyes’), and Laverne Cox (Sophia) as Guest Actresses. The show as a whole was also nominated for Best Comedy Series. As for the rest, I can’t speak to many of them as my TiVo is booked solid enough already, but I will say that my heart breaks a little each time I don’t see Matthew Rhys’ name for his top-notch work in “The Americans.” When he gets angry? Whoa. Keri Russell, also amazing, also overlooked. And yet, Margo Martindale somehow wound up with another nom for her work of barely showing up and basically just annoying everyone (myself especially). While I would normally agree that “American Horror Story” deserves all its noms (for five separate actresses this year!), season 3’s “Coven” really didn’t blow me away. More often than not, I was bored. Overall, it’s sure to be a showdown with many actors from the same shows competing against each other for the same title. Tune in to NBC on August 25 at 8 p.m. to see who takes home the gold. SNL’s Seth Meyers is hosting.

Meet BUDDY
"Buddy is a 14-year-old cocker spaniel, but he still has plenty of pep in his step. He can go a full eight hours without any accidents. He enjoys playing and going for walks; his foster family reports that he is always on-the-go and looking for some action. He is a gentleman on the leash. He loves food and was quite overweight when coming to PK; his foster family is slowly helping him get his slender figure back. Buddy will tolerate other dogs, but he will chase cats. Healthwise, other than his weight, he has a little bit of arthritis and came with some mild skin issues. He's also a little hard of hearing. Buddy is neutered and up-to-date on vaccines along with being heartworm negative. Buddy is currently in a foster home and not at the shelter. Please call or email to schedule a meet and greet." Buddy's just looking for a buddy late in life! He'd make a loving companion for an older person in need of some company. Adoptions are held every Saturday from 10 a.m. to 3 p.m. at 1049 MacArthur Rd. in Whitehall. For more information, please email pk.dogadoptions@gmail.com or call 610-597-2193.
Tiny Birthday For A Tiny Hedgehog HelloDenizen is back with a second “tiny animal” video. This time, a cute little hedgie is thrown a spectacular birthday party complete with tiny gifts, tiny cake, and tiny friends—not to mention the poker coin plates and Scrabble tile chairs. I think the company has found its niche with the tiny animal videos (their other clips, “Bottle Cap Snap” and “Bubble Porn” have not done as well). The clip, published July 8, had already soared to nearly 400,000 views at press time two days later. The original “Tiny Hamsters Eating Tiny Burritos” skyrocketed to almost 8 million in two months.
