Car Cruise Benefits Horses & Horizons

Tamaqua Street Machine Association held a car cruise on Sunday, June 25th to benefit Horses & Horizons Therapeutic Learning Center, Inc. Bear Rock Junction Mini Golf in New Tripoli

hosted the event. There were more than 60 classic and vintage automobiles on display. The fundraiser brought in more than three hundred dollars in donations. Horses & Horizons Therapeutic Learning Center, Inc. is a registered non-profit organization that offers a special program of therapeutic horseback riding for children and adults with special needs. The center is based at Harvey & Elaine Smith’s Helping Horse Farm in West Penn Township, located between the towns of New Ringgold and Tamaqua. Tamaqua Street Machine Association is comprised of a group of people of all ages who are dedicated to the enjoyment of antique cars, muscle cars, and hot rods. It has two more car cruises scheduled at Bear Rock Junction. There will be one on July 30th to benefit the Vigilant Fire Company of Slatington, PA and another one on August 27th to benefit the New Tripoli Fire Company. Donations are accepted for admission to these events. TSMA will also hold a car show at the same venue on September 23rd. In addition to miniature golf, Bear Rock Junction features a go-cart track, paintball, a miniature train ride, and a snack bar.

It will run through August 9th. The program is sponsored by the Lehigh Gap Nature Center. Looking for children who love to read! The library is holding its summer reading incentive program for children, preschool through 12th grade. For every 10 books read, (or read to,) the child will receive a raffle ticket. At the end of the summer, one raffle ticket is drawn and the winner will receive a $25.00 gift card for Barnes & Noble. Forms are available at the library. The topic for the Diabetes lecture for July will be “Insulin: the 411” and will be held on Wednesday, July 26th at 1:00 p.m. The Diabetes series is sponsored by Bechtel’s Pharmacy, Inc. The Slatington Library Book Club is currently

reading “Stone Mattress: Nine tales,” by Margaret Atwood. They will meet on Monday, Aug. 7th at 1:00 pm. Copies of the book are available at the library, and new members are always welcome. We're not having one, but if you are, consider donating old or antique items to the Lehigh Township Historical Society for display in our Historical Centre. Don't throw old things out before you check with us! Large or small, we take it all, things from old businesses or household items to true antiques. Be sure to stay in touch with your doctor so they know how you are doing. Find the strong and weak points in your current diet. Do you eat 4-5 cups of fruits and vegetables every day? Do you get enough calcium? Do you eat whole grain, high-fiber foods? If so, you’re on the right track! Keep it up. If not, add more of these foods to your daily diet. Keep track of your food intake by writing down what you eat and drink every day. This record will help you assess your diet. You’ll see if you need to eat more or less from certain food groups. Think about asking for help from a dietitian. They can help you follow a special diet, especially if you have a health issue. Almost everyone can benefit from cutting back on unhealthy fat. If you currently eat a lot of fat, commit to cutting back and changing your habits. Unhealthy fats include things such as: dark chicken meat; poultry skin; fatty cuts of pork, beef, and lamb; and high-fat dairy foods (whole milk, butter, cheeses). Ways to cut back on unhealthy fats include: Rather than frying meat, bake, grill, or broil it. Take off the skin before cooking chicken or turkey. Try eating fish at least once a week. Reduce any extra fat. This includes butter on bread, sour cream on baked potatoes, and salad dressings. Use low-fat or nonfat versions of these foods. Eat plenty of fruits and vegetables with your meals and as snacks. Read the nutrition labels on foods before you buy them. If you need help with the labels, ask your doctor or dietitian. These eight practical tips cover the basics of healthy eating, and can help you make healthier choices. The key to a healthy diet is to: Eat the right amount of calories for how active you are, so that you balance the energy you consume with the energy you use. If you eat or drink too much, you'll put on weight. If you eat and drink too little, you'll lose weight. Eat a wide range of foods to ensure that you're getting a balanced diet and that your body is receiving all the nutrients it needs. It is recommended that men have around 2,500 calories a day (10,500 kilojoules). Women should have around 2,000 calories a day (8,400 kilojoules). Most adults are eating more calories than they need, and should eat fewer calories. Base your meals on starchy carbohydrates Starchy carbohydrates should make up just over one third of the food you eat. They include potatoes, bread, rice, pasta and cereals. Choose wholegrain varieties (or eat potatoes with their skins on) when you can: they contain more fibre, and can help you feel full for longer.

Most of us should eat more starchy foods: try to include at least one starchy food with each main meal. Some people think starchy foods are fattening, but gram for gram the carbohydrate they contain provides fewer than half the calories of fat. Keep an eye on the fats you add when you're cooking or serving these types of foods because that's what increases the calorie content, for example oil on chips, butter on bread and creamy sauces on pasta. Eat lots of fruit and veg It's recommended that we eat at least five portions of a variety of fruit and veg every day. It's easier than it sounds. Why not chop a banana over your breakfast cereal, or swap your usual mid-morning snack for a piece of fresh fruit? Unsweetened 100% fruit juice, vegetable juice and smoothies can only ever count as a maximum of one portion of your 5 A DAY. For example, if you have two glasses of fruit juice and a smoothie in one day, that still only counts as one portion. Eat more fish – including a portion of oily fish Fish is a good source of protein and contains many vitamins and minerals. Aim to eat at least two portions of fish a week, including at least one portion of oily fish. Oily fish contains omega-3 fats, which may help to prevent heart disease.

You can choose from fresh, frozen and canned: but remember that canned and smoked fish can be high in salt. Cut down on saturated fat and sugar Saturated fat in our diet We all need some fat in our diet, but it's important to pay attention to the amount and type of fat we're eating. There are two main types of fat: saturated and unsaturated. Too much saturated fat can increase the amount of cholesterol in the blood, which increases your risk of developing heart disease. The average man should have no more than 30g saturated fat a day. The average woman should have no more than 20g saturated fat a day, and children should have less than adults. Saturated fat is found in many foods, such as: hard cheese • cakes • biscuits • sausages cream • butter • lard • pies. Try to cut down on your saturated fat intake, and

choose foods that contain unsaturated fats instead, such as vegetable oils, oily fish and avocados. For a healthier choice, use just a small amount of vegetable oil or reduced-fat spread instead of butter, lard or ghee. When you're having meat, choose lean cuts and cut off any visible fat. Sugar in our diet Regularly consuming foods and drinks high in sugar increases your risk of obesity and tooth decay. Sugary foods and drinks, including alcoholic drinks, are often high in energy (measured in kilojoules or calories), and if eaten too often,

These foods contain added sugars: this is the kind of sugar we should be cutting down on, rather than sugars that are found in things such as fruit and milk. Food labels can help: use them to check how much sugar foods contain. More than 22.5g of total sugars per 100g means that the food is high in sugar, while 5g of total sugars or less per 100g means that the food is low in sugar. Get tips on cutting down sugar in your diet. Eat less salt – no more than 6g a day for adults Eating too much salt can raise your blood pressure. People with high blood pressure are more likely to develop heart disease or have a stroke. Even if you don’t add salt to your food, you may still be eating too much. About three-quarters of the salt we eat is already in the food we buy, such as breakfast cereals, soups, breads and sauces. Use food labels to help you cut down. More than 1.5g of salt per 100g means the food is high in salt. Adults and children over 11 should eat no more than 6g of salt (about a teaspoonful) a day.Younger children should have even less. For example, try getting off the bus one stop early on the way home from work, and walking. Being physically active may help reduce the risk of heart disease, stroke and type 2 diabetes. For more ideas, see Get active your way. After getting active, remember not to reward yourself with a treat that is high in energy. If you feel hungry after activity, choose foods or drinks that are lower in calories, but still filling. If you're underweight, see our page on underweight adults. If you're worried about your weight, ask your GP or a dietitian for advice. Don't get thirsty We need to drink plenty of fluids to stop us getting dehydrated – the government recommends 6-8 glasses every day. This is in addition to the fluid we get from the food we eat. All non-alcoholic drinks count, but water and lower-fat milk are healthier choices. Try to avoid sugary soft and fizzy drinks that are high in added sugars and calories, and are also bad for teeth. Even unsweetened fruit juice and smoothies are

high in free sugar. Your combined total of drinks from fruit juice, vegetable juice and smoothies should not be more than 150ml a day – which is a small glass. For example, if you have 150ml of orange juice and 150ml smoothie in one day, you'll have exceeded the recommendation by 150ml. When the weather is warm, or when we get active, we may need more fluids. Don't skip breakfast Some people skip breakfast because they think it will help them lose weight. In fact, research shows that people who regularly eat breakfast are less likely to be overweight. Breakfast has also been shown to have positive effects on children’s mental performance and increase their concentration throughout the morning. A healthy breakfast is an important part of a balanced diet, and provides some of the vitamins and minerals we need for good health. A wholegrain, lower-sugar cereal with fruit sliced over the top is a tasty and nutritious breakfast.

Addiction is Not a Moral Failing submitted by MOLLY STANTON

I can remember recently staffing a call bank for a news station where people called addiction professionals to ask questions about the opioid epidemic. One of the calls I received was from a gentleman who phoned just to tell me that we should let addicted people die because they knew what they were getting into and deserved what they got. I was not surprised. It is an all too common reaction to the crisis that is killing our sons and daughters. I told my new friend we know exactly what causes diabetes and heart disease, and yet 9.3% of Americans have diabetes and nearly 28% have heart disease. Since they saw it coming and ate too much red meat and cake anyway, should we advocate letting them die of their illness? Turns out the gentleman had diabetes and was shocked by my suggestion. Subsequently, we had a lovely talk about the nature of addiction. It is an interaction between two things: Biological factors and stressors. Addiction is most certainly not a moral failing. It is a chronic brain disorder affecting the part of the brain called the reward circuit. All rewards- sex, food, money and drugs- cause a release of dopamine in the circuit. Dopamine floods the brain and docks

on receptors like a key fits into a lock and boy does it feel great! The number of dopamine receptors (locks) someone has is partly determined by genetic makeup. People who are genetically predisposed to addiction have far fewer receptors. This means they experience less pleasure and reward from day to day activities and would be highly susceptible to drug use. The situation becomes more complicated when we add in stress and pain. In 15 years working with addicted people I nearly always find that addiction began with pain and suffering. Experiencing stress and pain actually reduces the number of receptors for dopamine, driving a person to seek out comfort in food, alcohol, drugs, sex. The more frequently someone overeats or uses drugs in response to stress the fewer dopamine receptors they have. That initial stressor might come in the form of a work injury leading to an opioid prescription, crippling anxiety and a sedative prescription, use of alcohol to cope with combat or sexual trauma, use of marijuana to cope with the stress of living in a poverty stricken neighborhood. A vicious cycle begins where each use reduces receptors intensifying the craving for relief through substances. Obsession, withdrawal, and desperation follows as the reward system goes on runaway. None of the people coping with these issues suddenly lost their moral compass and opted to become addicted. The good news is that with proper treatment, addicted people do recover. Just like with diabetes and heart disease, it takes a while and there are often relapses and setbacks. Each of us can be a positive influence in ending the addiction epidemic. By learning what addiction truly is and responding with compassion rather than judgment we can stop losing our brothers and sisters to this deadly disease. Here’s my starter list of 13 Healthy Living Tips to help you maintain and improve your health. 1 Avoid microwaved food, non-stick cookware and aluminum cookware (used in most restaurants as well as homes). 2 Drink half your body weight in ounces of water everyday. Drink between meals, and finish your fluids 2 hours before bed. Use a reverse-osmosis water filter, a Big Berkey water filter, or buy Spring water. 3 Check food labels for the word “hydrogenated” and eliminate all hydrogenated oils. Dressings, mayo, “butter spreads”, baked goods, cereals, preprepared, fried foods, and most restaurant foods usually have these. 4 Use coconut oil, ghee (clarified butter) or leftover fat from pasture-raised meats for sautéing. Avoid heating olive oil and other oils – use them to flavor food after cooking. Choose oils high in monounsaturates and low in polyunsaturates. Avoid corn, canola and soy oils. 5 Grate or puree squash, cauliflower, broccoli and other veggies to make them taste differently, freeze better, and get more nutrition per bite. 6 Buy and eat Pasture-Raised eggs – the highest quality eggs you can find. 7 Replace starchy foods such as bread, rice, cereal, pasta, beans and chips with vegetables. Avoid juice and excess fruit. Combine fruit snacks with some fat and protein such as organic cheese or almond butter. 8 Have a solid breakfast with plenty of protein and fat. Eat meals and snacks at regular times every day. 9 Avoid pesticides in your food, your home and your yard. 10 Eat wild salmon frequently (canned is OK). Take premium quality Omega 3 oils – Beverly recommends Rosita Cod Liver Oil. It’s got a light fresh taste and a complement of vitamins in natural form. 11 Eliminate Iodized salt and regular Sea Salt. Look for Sun-Dried or Solar salt such as Himalayan Salt, or our Pink Salt. 12 Remember that sodas, granola bars, muffins, rice and soy milk, desserts and potatoes are extremely high in starch and sugars (and therefore carbohydrate calories). Artificial sweeteners are no good either… 13 Never eat soy unless it is fermented as Miso, Tempeh or true Tamari Soy Sauce (Gluten-Free). Avoid all Gluten, and try going Grain-Free as well. We have often spoken to him and he always had a good word for the people around Easton. loan, tied them in a bundle and carried it out in the country to the farmers and sold them. [He was a Kraemer, a peddler who went door to door out in the townships selling his wares.] Many times the bundle weighed more than the man who carried it, but Jacob did not hate hard work and continued on for about four years. By then [1894] he saved enough money to start a clothing store on Northampton Street [at Sitgreaves Street]. Jacob was a friendly fellow, an honest one and a good manager. So later [1898] he bought the store on a corner of the circle [1 Centre Square], where he now has held store for sixty some years, until he was called to that large Store, where one needs no money to buy [anything]. When we held the first Fersammling on the Bushkill seven years ago, Jacob was there, since he considered himself a good friend of all the PA Dutch, who he always said helped him get on his feet here, when he was a poor fellow. It was our pleasure to give him the bouquet of flowers, since he was the oldest person there. The next year we needed to hold the Fersammling on Friday evening and continued to do so every year since. For that reason he could no longer attend. when the stores in the town were open and he had to tend to his business. And when it was time to lock up the store, Jacob went regularly to the Jewish synagogue on Friday evening. When we always spoke with him, he spoke his Yiddish dialect and we spoke our Dutch dialect. We could always understand each other in many ways, just like in our own Dialect. We read in the newspaper that he should be worth over $100,000. That is what a man, who had been a poor boy, could do with hard work, being honest and being a friend to everyone. Jacob had sold clothing to four generations of many families. Did the people like him! [That Florence Baver and Jacob Mayer could converse using their respective dialects and understand each other reasonably well comes as no surprise when we understand that a Yiddish dialect existed among Jewish people who were living in that German speaking area from where our Dutch ancestors emigrated. (That Yiddish and our Dutch belong to the Franconian family of German dialects.) That Yiddish, referred to today as Western Yiddish, was comparable in grammar and contains many vocabulary words similar to our Dutch. Some of the Yiddish words were also of Aramaic (Jewish) and ancient Hebrew origin. Further, the Eastern branch of Yiddish, which is the only one spoken today, also has words of Slavic

So Jewish people who had an ancestral connection from the Southwest Germany region may also have known Western Yiddish and could converse with the Pennsylvania Dutch here. Thus, years back it was not uncommon to hear of a Jewish person and Dutchman (or lady) in this region here sharing conversation, each using their own “mother tongue.” As a youngster, I recall my dad often talking to a Jewish merchant in Nazareth and of course the conversation was usually not in English! At the time I was not aware that that elderly Jewish gentleman was speaking his Yiddish, but since that time I have heard from other people of like encounters across this language ‘barrier’.

LCCC Holds 24th Annual Foundation Scholarship Summer Golf Classic and Dinner Reception Submitted by DENISE M. REIFINGER

Lehigh Carbon Community College’s (LCCC) Foundation will hold its 24th annual golf classic at Lehigh Country Club in Allentown, Pa., on Monday, Aug. 7. This year's honorary chairs are the Rothrock Family, in memory of the late Bruce L. Rothrock, Sr. All proceeds will benefit the Bruce L. Rothrock Entrepreneurial Scholarship Fund this year. Registration fee is $350 for an individual golfer, which includes green fees, cart, box lunch and promotional gift for every golfer. Golfer registration begins at 10:30 a.m. Golfers will play a scramble format with a shotgun start at noon and conclude with an evening dinner reception and awards. The dinner reception will begin at 5 p.m. with an elegant menu to include an iced seafood table, prime rib beef, chicken piccata and salmon. For those interested in attending only the dinner, the cost is $100 per person. Many sponsorship and advertising opportunities are still available, ranging from the $10,000 platinum sponsor level to tee sponsor for $100, with a variety of levels in between.
