Slatington Veterans Committee To Hold Veterans Day Service submitted by ROBERT STETTNER

The Slatington Veteran’s Memorial Committee will hold aVeterans Day Service and Commemoration of the 100th Anniversary of the signing of the Armistice ending WWI (The Great War) on Sunday November 11 – Veterans Day at 11:00 AM. The service will be held at Slatington Memorial Park, located at Second and Main Streets. In the event of inclement weather, service will be held inside St. John’s UCC Church, located directly behind the park across from Kuntz Alley. Following the ceremony everyone is invited for light refreshments

and fellowship in the basement of St. John’s UCC Church. The patriotic, but solemn service and commemoration will begin at 11 AM with the ringing of church bells similar to what occurred 100 years ago when news of the Armistice reached Slatington. Slatington Veteran’s Memorial Committee Chairman David Altrichter will serve as Master of Ceremonies. The program will include history, music, prayers, singing, speeches, taps, and a 21 gun salute. Special recognition will be given to the seven men from the Northern Lehigh area killed in action during WWI. Biographies of these soldiers and letters they wrote to their families back home while stationed in Europe will be read. The 5th annual Bomber Fun Run fundraiser for S.S. Palmer and Parkside elementary schools was held on October 18th. This is a 1 day event where all students have the opportunity to run or walk throughout Palmerton Borough Park, participate in activity stations, and also go through a bounce house obstacle course. All students are asked to get sponsors for this event, however it is not required for them to participate. This event is a fundraiser however it is also a wonderful way to remind children that being outside and being active can be fun especially since it is a crucial part of being healthy. All proceeds go towards field trips, Christmas gifts, and assemblies for the children of S.S. Palmer & Parkside. To give the students an extra incentive to raise money we have teachers who volunteer to get pies thrown at them if we reach $5,000 or more in sponsor donations. As chairperson for this event I am very proud of all the students that got sponsors and participated in this event and very thankful to all the volunteers that helped to make the Bomber Fun Run a wonderful event.

NCC to Hold Information Session on Architecture and Interior Design Programs submitted by KATHERINE NOLL

Northampton Community College (NCC) will hold a free information session about its architecture and interior design programs on Thursday, November 8, 5:30 - 8:00 p.m., starting at the College's Enrollment Center, Bethlehem Campus, 3835 Green Pond Road, Bethlehem Township. Graduates of the NCC architecture program will be prepared for transfer into an accredited five-year bachelor of architecture professional program leading to a three-year internship and NCARB Examination to practice architecture. NCC architecture graduates have transferred to 30 different universities. Graduates of the interior design program are prepared to meet the demand for professionally trained interior designers in both residential and contract design. The associate's degree holder may gain employment upon graduation or pursue a four-year degree. Computer technology and presentation skills are woven through the curriculum. The four semester design studio sequence is the heart of the program.

Romano says there are three main reasons to avoid or put off knee replacement surgery: Plastic debris. A total knee replacement consists of metal moving on plastic. The plastic wears down over time, and that can be a pain – physically and financially – to patients who may have to get the prosthesis replaced once, twice or more.“The plastic debris accumulates in the knee joint,” Romano says. “The more active you are, the heavier you are, the more debris. The white cells, which attack foreign invaders, start attacking the surrounding bone. When it’s time to replace the plastic joint, we also have to replace the bone – and that’s a significant and unpleasant surgery.” A prosthesis doesn’t last 30 years. This is a key reason why Romano thinks younger replacement candidates should wait as long as possible.“A total joint replacement in a 70-year-old patient will typically last 15 years,” Romano says. “With the average life expectancy being 85, chances are this would be the only knee replacement that patient would need. But for a 40-year-old who’s more active, it may only last 10 years. And remember, recovery is challenging. So it’s better to wait for technology to catch up. As it does, the better the knee replacements will be.” Other remedies may work. Many people experiencing chronic knee pain are overweight or obese. “A healthy diet and exercise program can bring the weight down and take pressure off the knees,” Romano says. “Also, a hinged knee brace, supplements that aid in repairing worn cartilage, and injections such as cortisone or hyaluronic acid could reduce pain and restore quality of life.” “There are ways to at least buy time,” Romano says. “And there are patients who were told they needed a knee replacement, but with conservative therapy options, happily discovered otherwise and returned to their favorite activities without pain.” About Dr. Victor Romano Dr. Victor Romano (www.romanomd.com) is an orthopedic surgeon in Oak Park, Ill., and the author of Finding The Source: Maximizing Your Results – With and Without Orthopaedic Surgery.

This month, sites in the Lehigh Valley will be among 5,000 U.S. drop-off locations collecting shoebox gifts for children overseas during Operation Christmas Child's National Collection Week, Nov. 12-19. Lehigh Valley families, churches and groups are busy transforming empty shoeboxes into fun gifts filled with toys, school supplies and hygiene items. The Samaritan's Purse project partners with local churches across the globe to deliver these tangible expressions of God's love to children affected by war, disease, disaster, poverty and famine. For many of these children, it will be the first gift they have ever received. This year, Lehigh Valley-area residents hope to collect more than 56,879 gifts to contribute to the 2018 global goal of reaching 11 million children. "We are honored to be linking arms with our community to help children around the world experience the true meaning of Christmas," said Regional Director Bill Rumbaugh, "These simple gifts show God's love to children facing difficult circumstances."

Remember: It’s best to allow four to five days for it to thaw. • Floral centerpieces finish off a well-set table. Florists are busy this time of year, so order flowers now. 4 Days before Thanksgiving: • Compose a shopping list, and purchase all nonperishables. Wait until the day before Thanksgiving to buy salad greens, fresh bread, or seafood. • If you’re baking pies for dessert, make the dough for the crust, roll it out, lay it into pie plates, and freeze. • Start defrosting the frozen turkey in the coldest part of the refrigerator. Plan ahead to allow a full day for every 4 pounds of turkey being thawed. 2 Days before Thanksgiving: • Homemade stuffing often calls for stale bread; cut and cube the bread now, and set the cubes out in a single layer on a baking sheet.

• If using cloth napkins or tablecloths, iron them now. • Make the cranberry sauce; a couple of days in the refrigerator will give the flavors time to develop. • Prepare the serving pieces, plates, flatware, glasses, etc. 1 Day before Thanksgiving: • Defrost pie dough; assemble and bake pies. • Make the giblet stock for the gravy. • Make the vegetables and side dishes that require baking, such as casseroles, and reheat them tomorrow; or assemble them today, and cook them right before dinner. • Peel the potatoes, and then refrigerate them in a pot of cold water. • Pick up the fresh turkey from the market. • Prepare the stuffing, but leave out any raw eggs until you stuff the bird. • Set the table tonight or first thing in the morning. Closer to dinnertime, place them in a heat-proof bowl and set them at the back of the stove over simmering water. • 2 p.m.: Whip the cream for the pie; prepare the coffee, but do not brew it until about 20 minutes before it will be served.

• 4 p.m.: Check the temperature of the turkey at the thigh, which is the thickest part. If the thermometer reads 165 degrees, remove the turkey from the oven. If not, check the temperature every 15 minutes until the bird is done. • 4:15 p.m.: The turkey will need to sit for 30 minutes prior to carving. Take advantage of the break to make the gravy and any last-minute vegetables. Remove stuffing from bird; transfer to a baking pan. Bake until stuffing reaches 165 degrees. • 4:30 to 5 p.m.: Call everyone to the table. Start the coffee maker just before sitting down.

Are you happy with your appearance? If the answer is no, you are hardly alone. The rise in gym memberships and cosmetic surgeries in recent years indicates as much, and surveys further underscore Americans’ insecurity with their looks. A study conducted at Chapman University and published in the journal Body Image found that women and men were about equally unimpressed with their own appearance. Out of 12,176 respondents, only 26 percent of women were “extremely satisfied” with their looks, and just 28 percent of men were. Many people cite being overweight as their main appearance issue, but for others it’s often traced to the effects of aging. Confidence suffers collateral damage, says Dr. Dennis Schimpf, a plastic surgeon who adds that improving a physical flaw can become a quest to find “inner beauty” as well. “Many people really aren’t confident in their own skin,” says Schimpf , author of Finding Beauty: Think, 28

But it can help improve a person’s sense of well-being.” Schimpf says people can rate their own “body confidence” by answering these five questions in terms of low, moderate or high confidence: Are you satisfied with your outward appearance? “Low confidence scorers are usually feeling and seeing the effects of age and are frustrated, sensing that their physical flaws are affecting their self-identity,” Schimpf says. “Those on the high end say their physical flaws don’t detract from their overall happiness and productivity.” How self-conscious are you? Many people are hesitant to attend high school reunions because their appearance has significantly worsened, in their mind, over the years. “If you were headed to a high school reunion tomorrow, where you were going to see people you have not seen in years, how confident would you feel?” Schimpf says. “Those rating low confidence will find some way not to go because of how they feel about themselves.” What physical change would you make? Just about everyone has a physical feature that bothers them. “It may be something you’ve had since childhood,” Schimpf says.“For women, it could be changes resulting from childbearing. For men and women, it can be the natural body changes that come with aging. The Story of Veterans Day Excerpted from ESL Teacher’s Holiday Activities Kit, by Elizabeth Claire.

This simple story defines Veterans Day for young children and provides a small history, filled with important dates and battles that have made the holiday what we know today. • November 11 is Veterans Day. A veteran is a soldier who has served his/her country. • Thirty-five countries fought in World War I. They fought for five years, from 1914 to 1918. The United States fought in the war from 1917 to 1918. • Finally the countries stopped fighting. The leaders signed an armistice. They signed the armistice on the eleventh hour of the eleventh day of the eleventh month. The armistice meant that the war was over. • Americans were very happy to hear about the armistice. No more soldiers would die in the war. The soldiers could come home. • People went out into the streets and laughed and danced. They blew horns and whistles and rang bells. They sang songs. They thought that there would never be another war. • President Wilson made November 11 a holiday to remember the end of the war. The holiday was called Armistice Day.

• At eleven o'clock in the morning, everyone stopped doing whatever they were doing. People were completely silent for one minute. This minute was to remember all the soldiers who have died in wars. • The body of an unknown soldier was brought to America from the cemetery in France. His body was buried in a tomb at Arlington National Cemetery. It was called the Tomb of the Unknown Soldier. • The US was in three more wars: World War II, the Korean War, and the Vietnam War. The name of the holiday was changed to Veterans Day. • The bodies of three more unknown soldiers were brought to the cemetery. On Veterans Day, there are special services at the Tomb of the Unknowns. • Americans remember and honor all the veterans.

SLOW-COOKER GARLIC-PARMESAN CHICKEN

Directions In a large skillet over medium-high heat, heat 1-tablespoon oil. Add chicken, season with salt and pepper, sear until golden, 3 minutes per side. Meanwhile, in a large slow cooker, toss quartered potatoes with remaining 2 tablespoons oil, butter, garlic, thyme, parsley and Parmesan and season generously with salt and pepper. Add chicken and cook on high for 4 hours or low for 8 hours until potatoes are tender and chicken is fully cooked. Garnish with Parmesan before serving.

This recipe was absolutely delicious! This was my first time making it and I can’t wait to make it again. I followed the recipe pretty closely but did not add 5 cloves of garlic, I felt like that was a lot. It was a big hit and I’m pretty sure we even finished all of the leftovers, which is rare. It’s such a simple recipe but the end result was amazing; I would definitely advise adding it to your future dinners list if you have one! It smelled wonderful and everything about it was delightful, I hope you love it as much as my family did. Good luck and enjoy!

What Veterans Day Means to Me

It is difficult to put into words the feeling that comes to mind each year around Veterans Day. Looking back on my time as an officer in the United States Army, I still feel the pride, discipline, strength, and sense of service that characterized my experience. For over five years, I wore combat boots, practiced shooting machine guns, led soldiers in Iraq and Afghanistan, and throughout it all learned about the meaning of service. As a young woman and soldier, I had the privilege to serve side by side with some of the most incredible people I have ever met. This is an experience—albeit one full of challenges, long days, and late nights—upon which I still look fondly. I remember when I first came home from Iraq at the age of 23, and a friend pointed out to me that I was now a “veteran.” It seemed strange to hear. I always thought of “veteran” as a term referring to an older generation. For me, it described those who fought in the wars of our parents and grandparents, World War II and Vietnam, who wear military pins Continued on page 44

group of citizens I had become a part of through my service. I also realized that now is a tremendous time to be a veteran in America: There is incredible support, encouragement, and appreciation shown to us in so many different ways. After years at war in the Middle East, the new, younger generation of veterans returned home with a shared sense of camaraderie. Beyond shared memories, there has also been an evolution in the support groups that are there for veterans—something that has not always existed. Groups such as the Wounded Warrior Project, Team Red, White and Blue, and the Iraq and Afghanistan Veterans of America have become my generation’s solution to providing modern-day support for veterans. And that is what I celebrate on Veterans Day: the support of America and the incredible network of veterans both young and old—the people who raised their right hands and voluntarily committed their service to our country to ensure that it is safe and successful. November 11 is a day to recognize those who have served and to pause a moment to reflect on the importance of their combined impact on this great country and the immense sacrifice of our fallen heroes. Knowing that the country we’ve fought for stands behind us is incredibly powerful and inspiring. So even after Veterans Day this year, I’d like to encourage you, the next time you are in an airport or walking in a mall and come across a veteran, to shake his or her hand and say “thank you for your service.” Every single time that I this has happened to me, I am humbled—and reminded of the pride I have, and the privilege I have, in being a part of this amazing group of citizens who chose to serve their country.
