FROM THE PUBLISHER’S DESK This issue we honor all Veterans. Veterans Day is November 11- the anniversary of the signing of the armistice, which ended the World War I hostilities between the Allied Nations and Germany in 1918. Thank you to all who have served and are currently serving. I can hardly believe how fast this year has gone by. We are already in November and before we know it, the cold weather will be here along with the snow. I think it’s time to think about a remote car starter. There’s nothing I dislike more than getting into a cold car. I’m putting that at the top of my Christmas list. I hope everyone enjoys this issue and remember to thank a Veteran for their service. -Kathy Marsh

VETERANS DAY 2016 IN MEMORY AND HONOR… During the past year, we have had the privilege of serving the families of Veterans. We are honored to be of service to them in their time of need, just as their loved one was there in our time of need. On Veteran’s Day, we pay tribute to those who served our country in the name of Freedom, the same Freedom that allows us to serve them. Our prayers are with all the Veterans, their families, and with the brave men and women serving our country today. We also wish to thank those from our area’s veteran service groups who volunteer their time in honor guards and firing squads bestowing the greatest honor for their deceased comrades. John R. Recipe from BuzzFeed.com
Lemon Dill Salmon
COOKING WITH CATHERINE INGREDIENTS Parchment paper or aluminum foil, 12 x 18 7 oz. asparagus Olive oil to taste Salt and pepper to taste 6 oz. skinless salmon 3 slices white onion 2 slices lemon 1 sprig fresh dill DIRECTIONS Preheat oven to 350ໍ F. Fold foil or parchment paper in half. On one half, lay down the asparagus. Drizzle on oil and sprinkle salt and pepper. Lay the salmon on the asparagus, add more olive oil, salt and pepper.
Place the onion, lemon and dill on the salmon. Fold the foil/parchment paper over the salmon and cinch paper together. Bake for 20 minutes or until the salmon is done. The internal temperature of the salmon should reach 145 F. I discovered this recipe on BuzzFeed; it was one of four ways to prep a salmon dinner. I didn’t follow the recipe to the T, I was just looking for something to use as a guideline. I opted out of using the onion, mainly because I did not have one. This dinner was for two people, so I purchased a pound of salmon and adjusted my ingredients accordingly. I highly suggest trying this recipe, it was ridiculously good, easy, and had little to no cleanup! Oh, and it’s healthy too!

Every year there were many walnuts there, The tree produced well; And this year it is hanging full, This will give something for the stomach. The boys intended to be there, Were however not saying that; And when the walnuts fall down, Then they were going to steal them. Now late in the year the walnuts fall, It was a still, dark night;

In the darkness they fetched them, A basketful for each; There were still other there, They will get those later. Then they went to the cemetery, And were counting the walnuts. And right there at the high fence, They were dividing them equally: “One for me, One for you – One for me, one for you.” Now a fellow goes home from his girl, Late that dark night; He comes up to the cemetery, And there hears a little noise. Then he stopped and listened a while, This was already tantalizing him; So he put his ear against the fence, And he heard someone counting: “One for me, one for you – one for me, one for you.” The fellow being alone,

Already ‘became weak-kneed’; He was so trembly, pale and afraid, This broke his courage.
He thought his heart would stop, He was out of breath; An angry spirit was behind him, So he ran home hard.
He thought the devil and God were there counting the dead; They were there right next to him, They were dividing the dead. The frightfulness took away his strength, He stood yet for a while and listened; He was so scared, this took away his courage, he was so terribly afraid. The nuts divided, everything was still, So quiet that he heard nothing stirring; Then a boy says in a soft voice, “Now we will fetch yet more.”
[D. George Knecht (1876 – 1966). He was born in the Schnecksville area and grew up in rural Lehigh County near Neffsville. He became a dentist by profession with a practice in Allentown until 1963. But he is equally well known for his two hobbies. He was a member of the Lehigh Valley Astronomical Society, even having built his own telescopes. And later in life he began writing Pennsylvania Dutch poems, sending them to Preston Barba for his “Eck” column in the Morning Call. A version of this poem appeared in that column on 21 November, 1953.]
The fellow thought they would fetch him, And he started to run; “We want more, we want more,” Was ringing in his ear. The fear was great, there was no help here, No mercy for a poor soul; The devil would have him soon by the back Of the neck, and take him to the ‘lower place.’

For His Love of Books Plaque Dedication submitted by DONNA BACHMAN
H. Vaughn Reese was memorialized with a name plate added on the donation plaque at the Slatington Public Library on Tuesday October 11. This name plate was funded by more than $1,000 in donations made in his honor. This plaque is a positive way to remember the Northern Lehigh honor student who’s sudden passing left parents and the community with many unanswered questions. Vaughn was passionate about reading and writing. He had published his own written works of poetry as well. A Northern Lehigh retired educator and Library Board Trustee, Renee Evans read aloud from “Collection of Poems” at the service. He loved books from little on, and when you would see him, he most likely had a book and a pen with him. This was what he loved to do, so this dedication was perfect. His spirit will be at the library among the books. The funds donated in Vaughn’s memory will be used toward the operations for the historic Slatington Library.

Meet Jackson!
Jackson is a 3-year-old Border Collie mix who came to us when his family moved and could not take him with them. Jackson looks like a Bassett mix - he's got short little stubby legs! Jackson is a bit nervous in the shelter but he warms up quickly. He'd do best in a home with a large fenced yard. Border Collies are known to be highly intelligent and extremely high energy - experienced adopters preferred. He will need lots of daily exercise and mental stimulation. Jackson is very sweet and loves head rubs. He seems interested in other dogs, and can be cat tested upon request. Adult dog adoptions include - spay/neuter, vaccines, microchip, 4dx, fecal, and flea preventative. Puppy adoptions include - spay/neuter, vaccines including boosters, microchip, fecal, and flea preventative Adoptions are held every Saturday from 10 a.m. to 3 p.m. at our shelter (1049 Macarthur Road in Whitehall across the street from the old Lehigh Valley Dairy). For more information please email us at pk.dogadoptions@gmail.com. Applications can be downloaded at www.lvpeaceablekingdom.info. All adoptions must be completed in person - we are unable to ship or transport dogs.

United Presbyterian Holds Apple Festival Submitted by WANDA OWENS
On Saturday, October 8, the United Presbyterian Church of Slatington hosted their annual Apple Festival. The public was treated to soups, sandwiches, and salads made by members of the congregation. Apple dumplings and cider were also very popular items, and a huge bake sale provided goodies to satisfy any sweet tooth. The basket raffle offered over 50 wonderful gifts, and a special "basket of cheer" provided the winner with assorted wines and coolers in time for the holiday season. Several vendors set up tables to sell their crafts as oldies music serenaded the gathering. 28

Walnut Street Playground Association Seeks Secretary & Volunteers Submitted by ROBERT STETTNER
The Walnut Street Playground Association, Slatington is seeking an interested person to serve as the association’s recording secretary. The person needs to be a resident of Slatington. Residing in the neighborhood surrounding the playground is preferred, but not necessary. The duties of the recording secretary are to attend the association’s monthly meetings, take notes and then prepare typed minutes. The association is also seeking interested residents to serve as volunteers to help with fundraising and maintain the playground. Walnut Street Playground Association was formed in 1982 to rehabilitate and maintain the former Roosevelt Playground, which had been neglected for many years since the closing of the former Roosevelt Elementary School. The playground is a popular destination for children and teens who not only reside in the neighborhood, but throughout Slatington. The association is the primary caretaker for the playground, and help is needed to continue providing a safe place for Slatington children to safely play. Interested persons can contact Robert at 610-767-7626, or attend the
next monthly meeting of the association on Monday November 21 at 7 p.m. in the Vigilant Fire Company Meeting Room, 1st Floor, 110 S. Walnut Street, Slatington.

Slatington Veterans Memorial Dedication Date Set submittted by ROBERT STETTNER
The Slatington Veteran’s Memorial Committee announces that the dedication for the soon to be completed Slatington Veteran’s Memorial will be held on Friday, November 11 – Veteran’s Day at 11 a.m. The ceremony will be held at Slatington Memorial Park, located at Second and Main Streets. In the event of inclement weather, the ceremony will be held at St. John’s U.C.C. Church, located directly behind the park, 15 S. 2nd St., Slatington across from Kuntz Alley. Following the ceremony everyone is invited for light refreshments and fellowship at the Slatington American Legion, Post 16, located at 510 Main Street. The dedication caps off an approximate year and a half journey to bring the Slatington Veteran’s Memorial to fruition. It included finding a suitable location, designing the memorial, drawing plans, selecting contractors, fundraising and planning the dedication. To date over 600 engraved bricks have been purchased, which brought in the bulk of the fundraising monies. Engraved bricks can still be purchased, and donations are still accepted to help defray the final costs of constructing the memorial. The engraved bricks will be displayed in raised brick beds, on both ends of the memorial stone, and on a walkway in the lower portion of the park. The patriotic, but solemn dedication and unveiling ceremony will begin at 11 a.m. with St. John’s U.C.C. pastor Henry Distler serving as
Master of Ceremonies. The program will include music, singing, and special recognition of the servicemen from the Northern Lehigh area who paid the ultimate price for their country. Lehigh County Court of Common Pleas Judge and retired Marine Corps Colonel James Anthony will be the guest speaker. Brick forms are available at area businesses and municipal offices. Donations can be made by writing a check made payable to Northern Lehigh Historical Society and mailed to: Slatington Veteran’s Memorial Committee, P.O. Box 224, Slatington, PA 18080. For more information on the engraved bricks or the dedication ceremony, call Dave at 610-767-5519 or ddcreat@ptd.net.
