Welcome to the 2021 Blue Mountain Town & Country Gazette Christmas issue. ‘Tis the season! We are very fortunate to live in Pennsylvania at this time of year that includes the Christmas and New Year’s holiday celebrations. In addition to the winter beauty in Pennsylvania, we also have excellent proximity to New York City and everything “holiday” it offers as well. B L U E MO U N TA I N

In case you’re heading into the “Big Apple” this holiday season, be sure and read “The Rockefeller Center Christmas Tree” for some interesting historical notes around that annual New York holiday tradition. By the way, it is a tradition that is a holiday highlight for hundreds of millions of people around the world, including those of us here reading the Gazette. As we probably all know, Pennsylvania is home to the Pennsylvania Dutch, who settled in the central and south-central areas of the state as much as 300 years ago. When the PA Dutch came here, they brought Old World recipes and traditions. We take a look at some of those traditions and one of those recipes in “PA Dutch Christmas Cookies: History & Recipe” and “Pork & Sauerkraut: PA Dutch New Year’s Tradition.” Now at Christmastime, sometimes there is a need for a last-minute gift. That can cause a latein-the-game scramble. One way to avoid that – if you know how to sew – is to create a fabric gift. We found a few ideas that are fun to make when there isn’t a lot of time. The Rockefeller Center Christmas Tree

The official website of the Rockefeller Center Christmas Tree describes the holiday tree as a “world-wide symbol of Christmas.” That’s tough to argue with, especially since 125 million people visit the attraction each year. 2021 has marked the 89th Tree Lighting in Rockefeller Center. Here are some of the highlights from the last 89 years. Background Specs The Rockefeller Center Christmas Tree is a large Christmas tree placed annually in Rockefeller Center in mid-Manhattan. The tree is put in place in mid-November and is lit in a public ceremony on the Wednesday evening following Thanksgiving. Since 1997, the lighting has been broadcast live, to hundreds of millions, on NBC’s Christmas in Rockefeller Center telecast. The tree lighting is aired at the end of every broadcast, following live entertainment. The tree, usually a Norway spruce will be 69 to 100 feet tall. This has been a national tradition each year since 1933. The First Tree The first tree at Rockefeller Center was erected by construction workers in 1931 shortly after the site was cleared. The tree was adorned with garlands made by the workers' families. That year, workers decorated a smaller 20-foot balsam fir with "strings of cranberries, garlands of paper, DECEMBER 16, 2021 || townandcountrygazette.com

and even a few tin cans" on Christmas Eve. The first official tree, 50 feet tall, was lit two years later. That tree became what Rockefeller Center dubbed "a holiday beacon for New Yorkers and visitors alike." A skating rink was opened below the tree in the plaza in 1936. Since then, the Rockefeller Center Christmas Tree has been an annual tradition. Selection and Decoration Trees are traditionally donated to Rockefeller Center, which in turn donates the lumber after display. Rockefeller Center, scouted for the desired tree in upstate New York, surrounding states and even in Ontario, Canada. Today, Erik Pauzé, Head Gardener at Rockefeller Center, looks for each year's Rockefeller Center Christmas tree. He visits locations throughout the tristate area and also looks for unique backyard trees. Pauzé and his team choose each year's tree based on its heartiness and "Christmas tree shape," as well as its ability to support the heavy ornaments. The 2021 tree has come from the State of Maryland. Cutting and Moving the Tree Once a tree is selected, a crane supports it while it is cut. It is then moved to a custom

telescoping trailer able to transport trees up to 125 feet tall, although the narrowness of the streets around Rockefeller Center limits the height of the tree to 100 feet. On its way to Manhattan, the tree is often dressed in giant red bows or banners extending holiday greetings as it makes its journey. Over the years, trucks, barges, and a transport plane have all been used to help the tree make the trip. Once at Rockefeller Center, the tree is supported by four guy-wires attached at its midpoint and by a steel spike at its base. Scaffolding is erected around the tree to assist workers in hanging about 50,000 multi-colored LED lights and the star on top. A new crystal star of Swarovski crystal which tops the current tree was created in 2018. The beautiful star features 70 spikes and three million crystals with LED lighting. In total it weighs 900 pounds.

Lehigh Township Lions to Resume their Fruit Basket Deliveries in 2021

PA Dutch Christmas Cookies: History & Recipe SOURCE: padutchcompanion.com

Among the few possessions early German immigrants brought to America were family recipes. Today’s PA Dutch Christmas cookies descend from those handwritten treasures. It’s difficult to pinpoint exactly how old many of the recipes are, but some date back centuries. In Pennsylvania German Cookery by A. Hark and P. A. Barba (1956), a lebkuchen recipe note tells the story of the Abbess of Rosenthal sending her brother, the Count of Nassau, a New Year’s gift of latwerg (plum butter) and lebkuchen in 1556. In general terms, lebkuchen, apeas cookies (spelling varies), sand tarts, and gingerbread cookies seem to have the longest histories. However, there were many family, local and regional variations. To create the cookies, German and PA Dutch bakers used ingredients they had available to them. Lard Cans and Wash Baskets No matter the kind of cookie, Christmas cookies in PA Dutch areas had a few things in common.

All of them were made in great quantities, with some families measuring by lard cans or even wash baskets. In Alfred Shoemaker’s Christmas in Pennsylvania, he quotes an unnamed grandmother lamenting that “people don’t bake Christmas cookies like they used to. When I was a child we baked several wash baskets full. And people don’t bake the dunking kind either anymore, as we did. Ours were great big cookies, perhaps six to eight inches across the middle.” For your enjoyment, adapted from the Mennonite Community Cookbook, here is a recipe for the classic PA Dutch Christmas Cookie, sand tarts. This is a simple and delicious recipe for sand tarts, also known as Saint Hearts. These are best paired with eggnog on Christmas Eve night, and again with tea on Christmas afternoon. Recipe: Sand Tarts (or Saint Hearts) YIELD: 4 to 5 dozen cookies PREP TIME: 15 minutes COOK TIME: 10 minutes TOTAL TIME: 25 minutes Ingredients • 1 cup butter • 2 cups granulated sugar • 3 eggs • 3 1/2 to 4 cups flour • 1 teaspoon salt • 2 teaspoons baking powder • 1 teaspoon vanilla or lemon extract • 1 to 2 tablespoons of whole milk • Cinnamon sugar mix • Chopped walnuts (may substitute pecans or almonds) Instructions Start by creaming together the sugar and butter. Sift flour, and measure and add the salt and baking powder to the sifted flour. Add the combined dry ingredients to the sugar, butter and eggs, and stir until medium-soft dough is formed. Chill for several hours in refrigerator. Roll very thin and cut into fancy shapes. Brush tops with milk and sprinkle with cinnamon and sugar and chopped walnuts or pecans. Place 1″ apart on greased cookie sheets, and bake at 350° for 8 to 10 minutes. Cool on a cooling rack, then enjoy!

They do amazing things for pains in the neck and shoulders. Start with a pretty tea towel folded lengthwise. Then stir a dropper full of lavender oil into the dried rice to release a relaxing scent every time it is heated. You can also freeze these, making them wonderful for easing headaches. The Pennsylvania Dutch believe that pork and sauerkraut on New Year’s Day is the luckiest meal of the year. The pig “roots forward,” unlike chickens that “scratch back” and that represents progress. And the green color of the kraut when it’s still cabbage looks just like money (cash). There’s nothing quite like New Year’s Day in a 28

Pennsylvania household as the smell of fermented cabbage comes from the kitchen. If you’re not Pennsylvania Dutch, you may have missed out on this long-standing tradition of eating pork and sauerkraut on New Year’s Day to ensure good luck in the coming year. A German Tradition The dish is a German custom that was brought over by the Pennsylvania Dutch when they settled largely in the central and southcentral portions of the state. Winter butchering often took place in the months just before Christmas and New Year’s, so celebratory meals happened around those times with a feast of roasted fresh pork. Sauerkraut was often added to the meal as a side dish because the peak time for cabbage harvesting is the fall. At-home cooks would historically pickle the cabbage to turn it into sauerkraut, as well as to preserve it before refrigeration became common. Unless you’ve brined your own cabbage, you probably aren’t aware: It actually takes between six and eight weeks of soaking before the cabbage turns to full-blown kraut. The last month of the year means a lot of things – holidays, parties, bowl games and more. It's also an opportunity for year-end tax planning. By now, you should have a good idea of where you will end 2021 in terms of income earned, as well as your deductions. Here are a few taxplanning tips for this time of year – a few, but certainly not all – that you might find helpful. Analyze Expenses and Deductions One key end-of-year activity is to analyze your expenses to see if you might be able to itemize. An expense analysis done now also allows you the extra time needed to determine if there are any additional expenses you should create that would benefit you on your upcoming taxes. Common itemized deductions include real estate taxes, mortgage interest, state income taxes, charitable donations and medical expenses. If itemizing doesn’t work for you, you would take the standard deduction, which has become

much more widespread since the tax law changes in 2017. Currently, about 90% of taxpayers use the standard deduction on their taxes. For 2021, the standard deduction is worth $12,550 for singles and $25,100 for married couples filing jointly. It's $18,800 for heads of household. If your qualifying expenses exceed those amounts, you would likely want to itemize. Determine Your Tax Bracket Figuring out what your personal tax bracket is will also help guide your year-end planning. The

lowest tax rate (bracket) is 10% for singles earning $9,950 or less, or $19,900 or less for married couples. Rates top out at 37% for singles with income above $523,600 and married couples above $628,300. In between there are tax rates of 12%, 22%, 24%, 32% and 35%. Donation Opportunities One special note for nearly all taxpayers is that a special deduction for cash donations of up to $300 per person is available ($600 for married couples). No itemizing is required. Cash donations

include those made by checks, credit cards and so on. For seniors who don't need to live off all of their retirement money, making a qualified charitable distribution or QCD can come in handy. If you're at least 70½, it enables you to directly transfer up to $100,000 from an Individual Retirement Account to one or more charities. Medical Deductions Tax reform was supposed to boost the medicaldeduction floor to 10% from 7.5%, meaning people who itemized could write off only those health expenses that exceeded 10% of their income. But Congress lowered the threshold back to 7.5% on a temporary basis and then made it permanent. If you’re itemizing, that makes it easier to deduct medical and dental costs. Capital gains might be worth taking Plenty of investors are sitting on paper profits in taxable accounts from the stock market or gains in other assets. Often it's wise to delay selling to defer paying taxes on a gain. But if your taxable income is modest, it can pay to take your gains and pay the taxes on them this year, especially if you qualify for the 15% long-term capital-gain rate or even the 0% rate.

On Thanksgiving Day, St. John’s UCC, 15 South Second St., Slatington, served 317 meals, (63 were delivered to shut-ins). This was a record breaking event! We want to thank all of our members and church friends who had any part in making this year’s dinner drive-thru a huge success. This could never have occurred without all of your help Much of the food and cash was donated by local businesses – namely Crystal Spring Dairy Farm, GIANT Food Stores, Jaindl Farms, Mr. Bill’s Poultry Market, Sal’s Pizza & Family Restaurant, Sam’s Club, Thomson’s Meat Market, Valley Pizza and Weis Markets. The free-will donations on Thanksgiving Day and the excess money after expenses was donated to the Northern Lehigh Food Bank.
