our outstanding Easton Farmers Market – the oldest continuously operating farmers market in America – for more than thirty years. In the summer months especially it’s the only place I get my produce – in addition to my own backyard, buying directly from the farmers who have stands there. I have also participated with two friends in a CSA program with one of the farms – where you get a box of fresh produce every week. In the first couple of years the produce selection in the boxes was assembled by the farmer, but now we actually receive a “menu” each week, by email, that lets us order exactly what we know we want for that particular week. It’s a pretty incredible way to get your produce. If you’re not familiar with how farmer CSA programs work, ask your local farmer for more info. I’m sure they’ll be able to help you. Two farming-related things we’re going to look at in this issue are the origins of farming and what farming actually entails. Be sure and read “Farming: What Does It Entail?” for all that information. In terms of fruits and vegetables, I happen to be a huge fan of rhubarb. My grandmother used to grow it in her “Victory Garden” in San Jose, California long before Silicon Valley took over the area. I remember the grapes growing on the wooden fence between her house and the one on the corner and her greens and Meyer Lemon tree over on the side by Mrs. Ward’s house. I credit both my grandmother and my father as Continued on page 4

the people who showed me the joy and pleasure found in gardening. Most of all however, I remember grandma’s rhubarb and what she made with it. In this issue we’re going to look at rhubarb. It’s a tart delicacy that I can’t get enough of. Be sure and read “The Mystery of Rhubarb (and recipes)” for the “how-tos” on rhubarb, as well as three links to rhubarb recipes for the dinner plate, as well as the dessert plate – from the savory to the sweet. Catch a wave at the Northampton Area Public Library this summer as we celebrate Oceans of Possibilities. Summer Quest kicks off with Family Fun Day on Saturday, June 4 from 9 a.m. to noon. Prepare with sand art, sign ups, and water games and find out what’s in store for you this summer at NAPL. Join us at Northampton’s Municipal Park in the large pavilion (A) for Eyes of the Wild on Thursday, June 23 at 6 p.m. Eyes of the Wild will bring some of their wild and wacky animals that need water to survive just as much as we do. The presentation will be about an hour long. So much is going on for children and teens this month. Stay up to date by grabbing a newsletter or checking out our website. Children’s highlights include a stuffed animal sleepover (June 8 at 4
p.m.) and seashell identification (June 27 at 10 a.m.), and teen programs will be in person again (Mondays at 1 p.m. starting June 20). Adults, we have just as much in store for you. All-Veggie Farmers Market Recipe Source: Various
Here is an all-veggie farmers-market recipe where you can really incorporate any fresh vegetable you buy at the farmers market. In this particular recipe we are focusing on skillet-sautéed zucchini, squash and tomatoes. This is a perfect side dish to include with your favorite summer meals. It is a simple dish that is filled with flavor thanks to the fresh vegetables, plus garlic and freshly grated parmesan cheese. Not only is it delicious, but it’s also a visually colorful blend of vegetables that will brighten any plate. Top it off with a drizzle a balsamic glaze (recipe below) and you will be set for a delicious experience. Total Time: 18 minutes Ingredients 1 Tbsp olive oil 1 Tbsp butter 12 oz. Zucchini (about 2 medium), diced into 1/2-inch pieces 12 oz. Yellow Squash (about 2 medium), diced into 1/2-inch pieces 1 1/2 cups grape tomatoes 3/4 tsp Italian dressing 3/4 tsp garlic powder Salt and freshly ground Pepper to taste 1/2 cup finely shredded parmesan cheese Instructions 1. Heat olive oil and butter in a 12-inch non-stick skillet over medium-high heat. Add in zucchini and squash and sauté 2 minutes. 2. Add tomatoes and then evenly sprinkle in Italian seasoning, garlic powder and salt and pepper to taste – about 3/4 tsp salt and 1/4 tsp pepper. 3. Continue to sauté, tossing occasionally, until

squash is tender and tomatoes are beginning to burst – about 3-5 minutes longer. 4. Sprinkle in half the parmesan and toss. Then sprinkle remaining parmesan over the top. Serve warm. Recipe: Balsamic Glaze Before we get to the “how to” of creating the balsamic glaze, it can be good to understand the difference between balsamic vinegar and a balsamic glaze. A balsamic glaze is basically a reduction of balsamic vinegar, which is why the glaze is often just called a "balsamic reduction." To create a balsamic glaze, or “reduction,” you simmer balsamic vinegar in a sauce pan for about 15 minutes until it's reduced in half and has the consistency of maple syrup or warm honey. Start by bringing one cup of the vinegar to a gentle boil, then reduce the heat to medium-low and let it simmer, stirring occasionally. In 15-20 minutes the vinegar will thicken and reduce to about 1/2 cup. It should be thick enough to coat the back of a spoon. From there just drizzle it over whatever dish you have prepared, such as the Sautéed GarlicParmesan Zucchini Squash and Tomatoes recipe above. Your balsamic glaze can be drizzled over

As the season warms up, many gardeners begin looking forward to their first rhubarb harvests. Although it was first cultivated in central Asia more than 2,000 years ago for its medicinal properties, rhubarb is best known today as an ingredient in early-summer pies. Rhubarb forms thick red, pink or green stalks with large, extravagant green leaves. It grows best where plants will receive full sun in fertile, well-drained soils that have good organic matter. If you have just put in your rhubarb this year, completely avoid harvesting the plants this year, and only lightly harvest for 1 to 2 weeks next year. Full harvesting of your rhubarb may begin the third or fourth year, depending on the plant size. At that point, you can go on to harvest for 8 to 10 weeks.
Tart Taste and Types Rhubarb’s sour, tart, tangy flavor is sometimes described as mouth-puckering. Most people find it necessary to sweeten rhubarb with sugar, honey or fruit juice to minimize the tartness. In pies, rhubarb is often combined with strawberries, although a classic rhubarb-only pie is hard to beat. Continued on page 16

Reliable red-stalked rhubarbs include: Canada Red, Cherry Red, Crimson Red, MacDonald, Ruby and Valentine. Victoria is a reliable green-stalked cultivar. In general terms the deeper red stalks are the more flavorful. Also, medium-size stalks are generally more tender than the larger ones. How to Harvest To harvest your rhubarb wait until the stalks are 10-15 inches tall. It is then best to snap them off, rather than cutting them off. Grab a stalk down where it emerges from the ground then pull it up and slightly to one side. It is important to harvest only one-third of the stalks from a plant at any one time. Immediately after harvesting, cut off and discard the leaves. Rhubarb leaves should never be eaten. They contain oxalic acid, a toxin that can cause poisoning when large quantities of raw or cooked leaves are eaten. How to Store and Prepare Rhubarb can be stored in the refrigerator for two to four weeks, if the refrigerator is set between 32 to 36 degrees Fahrenheit and at 95 percent relative humidity. For best results, store unwashed stalks in perforated plastic bags in the crisper drawer. 16
Rhubarb is 95 percent water, and one cup of diced rhubarb contains about 26 calories, 2 grams dietary fiber, and 351 milligrams of potassium. Due to its acidic nature, avoid cooking rhubarb in reactive metal pots such as aluminum, iron and copper. Rhubarb can be prepared and served many different ways. We’ve all heard of rhubarb pies, but rhubarb can also be prepared in tarts, breads, cobblers, cakes, jams, sauces, puddings and salads. If purchasing rhubarb, look for flat, crisp stalks, and leave any curled or limp ones behind. Rhubarb Recipes There are many different rhubarb recipes from the “classic” to more experimental. Farmers markets are thriving locations where communities gather. A visit to a farmers market is a low-stress outdoor activity your whole family is sure to enjoy and it is filled with so many learning experiences for children of all ages. The younger child can marvel and get excited about the bright colors of all the peppers and fruits, while an older child can gain an understanding of why some vegetables are available now, but others won’t be until later in the summer. Before you take the kids to a farmers market for the first time, explain what it is. Explain that it is an open area where local farmers set up stands to sell their local goods to the community. Explain that each stand at the farmers market is run by someone different and because of that will offer something a little different from all the rest, making the farmers market a fun and unique experience. The People Farmers markets are made up of people who are passionate about the food they grow and how they grow it. Even more than that, they are the experts on what they are selling. You will find they are often very willing to talk with you (and especially with your kids) about the food they are selling, as well as their processes and backgrounds. The farmers and the other vendors are a great learning resource for your children and maybe for you as well. Take advantage of their knowledge and let your kids ask lots of questions. The farmers may even offer you a tour of their farm, a demonstration, or a free sample. New Foods Farmers markets are obviously some of the best places to take your kids to get them more interested in new foods. In addition to fresh fruits and vegetables, a visit to the farmers market will give them an opportunity to see – and ask questions about – a huge variety of fresh food they probably don’t see on a regular basis. In addition to the fruits and vegetables, farmers markets usually have meats and cheeses, sausages 18
and eggs, local honey (great for allergies) and salsa. If vendors are offering baked goods and jams your children can learn what ingredients from the farmers market were used to make them. If your child is not familiar with the fruits and vegetables available, let them pick out a seasonal fruit or an exotic fruit to try when you get home. It’s like a treat or a reward that they helped pick out. Including kids in the act of choosing new foods from the farmers market can get them excited to try something different. With so many different colors and textures of foods for them to experience you may be surprised what they pick out. If they pick out something they end up loving, you might consider having them help plant it in your own vegetable garden next year. Farmers Market Tips • If you’re looking for the freshest produce, arriving early in the morning gives you the best chance of getting the most variety. • Bring a basket or reusable bags to carry your produce. • Carry some cash. While many vendors accept cards, some may not. It also makes it faster and easier to pay with cash when you’re browsing and trying to purchase a few small things from various vendors. The origins of most food products we enjoy today, such as bread, milk, meat, fruit, vegetables, sugar and so forth, are in agriculture (farming). They are either produced directly on farms or based on food that comes from farms. Our local farmers grow food, which they then harvest and either sell in their farm stores or at regional farmers markets. If they have significant surplus they may also transport it to processing plants for preservation and transformation into a variety of food products, or even sell directly to suppliers for larger grocery stores.

We all know that farmers are part of our world. We know they are our food producers and the more local we buy, the fresher and healthier the food will be and the more we will be supporting our local farmers and the local economy. But how many of us have a good understanding of how farming began and what farming entails? Let’s take a look at that. What is Farming? Farming is the practice of cultivating plants and breeding livestock. As man began settling down after wandering as a nomad, farming was a key development. Over time the farming of selected crops created food surpluses and that let people live in cities. In ancient times, man's food came from the wild. Then about ten thousand years ago, man began to select and promote specific plants and animals
Farming entails the use of natural resources, land and water to produce food for human and animal consumption. In this century alone, new technologies and methods have been developed which have greatly increased the quality and productivity of farming, but the basic concept of farming has remained a constant. The Farmer’s Day Farmers start by making certain their tools and materials are clean and ready for the workday. For the rest of the day, activities include checking on crops, plowing or bailing hay for cows to eat in the winter, and general farm maintenance. A farmer’s day usually ends around 7.30-8pm. Farmers and ranchers oversee and contribute to every step of the ranging process of their animals and crop production. This activity includes herding, planting, harvesting, and fertilizing. They also purchase farm machinery, seed, fertilizers, and any other supplies the business requires.

The Farmer’s Risk Farmers have to run their business very aware of the risk involved, because risk is a significant part of the farming business. The uncertainties of weather, crop yields, prices and more impact a farmer’s business. Big variations in any one of these things can cause wide swings in a farm’s income. Farmers also have to protect their crops and animals against a range of threats. Those can include invasive pests and other organisms such as fungi, bacteria and parasites, and animal predators looking for a good meal. All of these are potential hazards the farmer must be aware of and act against to protect the business. Farming, therefore, is a highly complex enterprise that requires various elements, including adequate soil and water, efficient machinery to plough and plant the crops, as well as the machinery needed to harvest and transport them. It also requires fertilizers – organic or otherwise – to supplement natural soil nutrients and more. The strawberries and the cherries are due. And one’s mouth waters for them. One can sit on the porch, especially if one is old, and see the people walking to and fro. Some days are very hot, but at night it is cool enough for good sleeping. 24
Many young men and women don’t forget the Month of June. A lot of them married in that month. Now and then some wish they would not have. All sort of people marry in June. Most of them are very young. Occasionally, one thinks, too young. But most time this creates good families. Then often also old fools marry and carry on like fools when they are married a while. Married life is heavenly, when the two pweople have good common sensde and work togerther. Occasionally however, it doesn’t go and it gives a racket that one hears throughout the entire neighborhood. After the marriage ceremony comes the honeymoon. The two young people are so very much in love, that they could eat one another up. For some it would be good, if they would do this. Then no more trouble would come. There were once two newly married people that came to the railroad station to start their honeymoon. They sat tight against each other. One could not put a house wren between them. Then he said, “Don’t take it to heart. We must part from one another, until I purchase our tickets.” He then gave her a kiss and she cried a little. He hurried and soon returned with the tickets. Then their misery was over.
Dutch Days. He was constantly in demand as a speaker in, as well as about, the Dialect. He wrote a column in Pennsylvania German for the Lebanon Daily News, under the pen name, Kaspar Hufnagel (Casper ‘Horseshoe-nail’) from 1948 to 1962. In 1949 the Ephrata Ensign also began carrying his column. Swope was still active at 84, lecturing and writing on the heritage of the Pennsylvania Germans, when the Lebanon County Historical Society published a booklet containing some of his columns and a few of his poems. He died on the 9th December 1968 at the UCC Home at Annville.]

He enrolled in Central Theological Seminary in Dayton, Ohio, and was ordained in 1910. After brief pastorates in Franklin and Carbon Counties, he became minister of St. Stephens Reformed Church, in Lebanon, PA, a position he held until 1954. Pierce Swope spent much of his lifetime furthering the cause of the Pennsylvania German dialect and culture. The first (and perhaps the only) person licensed to teach PA Dutch in public schools, he taught the Dialect in the Lebanon High School and, more especially, evening classes at Hershey, the latter resulting in the founding of Hershey's annual folk-festival, the Pennsylvania

School is almost out! But the church here at St. Peter’s remains busy all the time. On Sunday start the week with The Bible study/ Sunday school hour at 9am, this is followed by the regular service at 10am. Communion is celebrated the 1st Sunday of the month with the use of pre-packaged elements. Monday morning Bible Study is off for the summer but look out September. “Grief Share” meets on Tuesday morning at 10am, at the Helping Hand Community Center of Slatedale, located at 4019 Main Street, Slatedale. The Wonderful World of Wildlife Reading program is back! The library’s summer reading program, sponsored by the Lehigh Gap Nature Center will return on June 22nd at 1:00 p.m. Children from preschool to 5th grade are invited to participate. The program will run each Wednesday through Aug. 10th. There will be stories and crafts, all about the cute and cuddly in nature. The Library is once again having their summer reading incentive program for all pre-school age children and students. It will start June 10th and end August 26th. Each child must read/or be read ten books, write down the titles and return the form to the library. A raffle ticket will be given for each 10 titles read. The more you read, the more raffle tickets you have in the drawing, which will take place August 26th. The library will give away 10 prizes. The books do not have to be library books. Forms will be available at the library in June. The Book Club is currently reading “Virgin Earth” by Philippa Gregory. They will meet in person and virtually on June 6th, at 1:00pm to discuss the first half of the book. They will meet again, Tues., July 5th to discuss the rest of the book. It is a very long book. There are copies of the book available at the library. If you are interested in joining the book club, please contact the library. The Library is looking to start a Teen Advisory Board. Diesel still has lots of puppy energy and he will need a home where someone is home more often than not since he does not like to be crated and confined for long hours. Lehigh Township Historical Society News Submitted by Ruth Hall Kent
The Lehigh Township Historical Centre Museum will again be open for visitors on Sunday June 5th between Noon and 5 pm. Please consider taking time to stop in to see our displays of items from the past. We will also be having a bake sale as well as our annual BBQ to GO during that time. The previous two issues of the Gazette had our ads about the event and may have extras available if you did not order by last week. Having just observed Memorial Day, many people visited their local cemeteries to put flowers on the graves of loved ones and also to research their family history. The Society has some information on various families who were long-time residents of Lehigh Township. We also have some information on the local cemeteries. In October 2018 we recognized a local Boy Scout who revitalized the small Pennsville Cemetery. The early history of the cemetery and former church is mentioned in the following information submitted by Alton Ziegenfuss along with a copy of a painting of the small church that once stood next to the cemetery in Pennsville along Walnut Drive.
ln the village of Pennsville, PA, overlooking fertile fields, lies the Pennsville Cemetery. Many years ago there was an United Brethren Christ Church standing just 35 feet off the road. Approximately 18 by 36 feet, it was the house of worship for several families, mainly comprised of Easterdays, Gangawares, Kleppingers, and Oplingers. Some of the early pastors were G.W. Hess and J.B. Koons. They were paid $180 yearly. ln March 1925, the members moved to a larger church in Cherryville, PA and united with the Pilgrim Holiness now known as the Wesleyan Church. The church was torn down in 1932 and used to build a chicken coop, according to Florence Opllnger Ziegenfuss, one of the former members. Many of the members of the United Brethren Christ Church are buried in the cemetery at the site of the United Brethren Christ Church. These graves are tenderly taken care of by members of their original families. Submitted by Alton Ziegenfuss

The wood-frame Walnutport train station was built by the Lehigh & Susquehanna Railroad, circa 1968. Located 150 feet south of present-day Main Street on the east side of the tracks, it served Walnutport as a passenger and freight station for 86 years. Passengers could ride local trains between Mauch Chunk and Easton, stopping at many stations in between. All types of freight were delivered to the station on a railroad siding. From 1883 until the mid-1900s mail for the Walnutport Post Office was delivered by rail to the Walnutport station. Before local telephone service was established, messages were sent and received at the station by telegraph. The last passenger service north of Allentown ended in 1952. The railroad station was razed in 1957 or 1958. One of the two original WALNUTPORT signs is on display in the Walnutport canal pavilion. The men in the picture are all unknown. June is PTSD Awareness Month submitted by Scott Knight
National PTSD Awareness Month is observed in June and it ushers in an array of awareness campaigns run for the benefit of PTSD Survivors. PTSD which stands for post-traumatic stress disorder, occurs in people after they have experienced a particularly traumatic event like war, violent physical/sexual/verbal assault, accidents, and so forth. Symptoms include depression, anxiety, nightmares, paranoia, insomnia, disturbing thoughts, and much more. Many people recover from PTSD after a few days, weeks, or months. Yet, for others, the recovery road might mean one year or more. This mental disorder is treatable, but due to the lack of knowledge around it as well as the stigma attached to seeking mental help, many choose to ignore the problem and suffer through it. Some studies suggest that suicide risk is higher among those who experienced trauma due to the symptoms of PTSD. A study from the National Comorbidity Survey, a national representative sample, showed that PTSD alone was significantly associated with suicidal ideation or attempts. A later study by the Canadian Community Health Survey data also found that respondents with PTSD were at a higher risk for suicide attempts. Among people who have had a diagnosis of PTSD at some point in their lifetime, approximately 27% have also attempted suicide. Another large-scale survey found that 24% of military personnel diagnosed with PTSD had experienced suicidal thinking within the past year. According to the Journal of Emergency Services, there is a silent crisis happening worldwide. First responders are quietly suffering because of the stigma surrounding the utilization of mental health
services. First responders are approximately ten times more likely to have suicidal ideations and/ or attempt suicide compared to the CDC national average. The National Suicide Prevention Lifeline, 1-800273-TALK (8255), is a free resource, available 24 hours a day for anyone who is in suicidal crisis or emotional distress. The crisis text line is a free 24/7 text line where trained crisis counselors support individuals in crisis. Text “Jason” to 741741 to speak with a compassionate, trained Crisis Counselor. Confidential support 24/7, for free. The Jason Foundation is another available resource. The Jason Foundation offers the First Responders Training Module: Addressing Suicide with Youth in the Community and Within the Profession. The goal of this training is to provide First Responders with the knowledge, skills, and resources to enable them to be better able to recognize the signs of concern and elevated risk factors for suicidal ideation in youth within their community, as well as in co-workers and fellow first responders.
