enjoying the outdoors (they are generally outdoors), you will sometimes find produce you never see at the grocery store. That’s particularly true when you speak about a greater variety of certain types of produce. But produce isn’t the only thing you’ll find at a farmers’ market, you’ll also find baked goods, farm-raised meat and poultry, prepared foods that can reflect the cultures of the area, and more.
The specific farmers’ market we’re going to look at in this issue is actually the very first public
farmers’ market established in our country. It is still completely active and it just happens to be very close by. See “America’s First Public Farmers’ Market” for all the details. You will probably want to go visit it sometime this summer.
Now as the days get warmer, we start to yearn for lighter fare. That's when it's time to start adding fresh vegetables to our meals. See “14 Great Vegetables for Flavor” to learn which veggies you can be on the lookout for at farmers’ markets to bring healthy flavor to your meals and snacks.
In terms of baked goods, a regional favorite you can definitely find at many farmers’ markets is the shoo-fly pie. We are going to highlight one recipe, as well as give you the historical significance of the pie and highlight information you may not know about three of its basic ingredients. For this issue’s “Short Getaway:…” we thought it would be appropriate to focus on the Amish Country. The City of Lancaster, PA, was designated as a market town in 1730. The Lancaster Central Market was born that year on a 120-square-foot plot of land conveyed by Andrew and Ann Hamilton from their private estate. There, farmers would cart their bounty from the surrounding fruitful land to the heart of the newly settled municipality to sell their wares in the nowpublic, open field.
According to the Library of Congress, it is the oldest market of any kind in America. The U.S. Department of Agriculture (USDA) confirms farmers’

The early market was an important, encouraging factor in King George II designating Lancaster as a market town. George Lett of Slatington receives Angler of the Year award from Proline Bassmasters fishing club at Proline’s annual awards banquet held on April 20, 2024 at Williams Family Restaurant in Easton, PA. The local fishing club fishes ten bass tournaments a year at local lakes in Northeastern Pennsylvania and Northwestern New Jersey. Sorrel / Sorrel has a tangy, lemony taste that works well in salads or soups. It’s a lesser known heirloom perennial green.
Swiss Chard / Swiss chard is both beautiful and delicious with its rainbow-hued stalks and bright green leaves. You can chop it and add to egg dishes, soups, or side dishes.
Snow Peas / You can eat the entire pod of snow peas, which makes them easy to cook and amazing in stir fry dishes or salads.
Spring Onions / Often confused with scallions, spring onions have more of a bulb-shaped end. Sweet and delicious, roast them whole to savor their flavor, or add raw slices to salads, or pickle to enjoy all year.
Lettuce / Of course, you'll find every kind of lettuce imaginable year-round in supermarkets. But farmers' markets have an even wider selection in spring that’s been harvested locally.
Rhubarb / Rhubarb’s tart kick makes it ideal in both savory and sweet recipes; generally available fresh from late spring through early summer.
Radishes / The spicy bite of radishes makes them tasty for snacking or adding to salads. Plus, the leaves are edible, too. You’ll often find delicious heirloom or unusual varieties when purchased fresh from the farmers' market.
Spinach / Spinach is available year-round. Use raw in spinach salads, baked in classic spinach pie, or mixed into a super-easy spinach dip.
Shallots / Shallots are related to onions, but they have a much milder flavor, like a buttery onion or mild garlic.
Ramps / Ramps are actually wild leeks, which have an oniony-garlicky flavor that mellows when sautéed. Their season is incredibly brief, so snag them when you see them. Typically, you'll only find them at farmers' markets.
Carrots / Carrots love cool weather, so they're sweetest in the coldest months of the year. They're sold at supermarkets year-round, but fresh baby carrots are often available only at farmers' markets. Remove the tops but do not peel them until you're ready to use.

Local teens awarded 4-H scholarships

A Northampton County teen from Northampton, Payge Haydt, and a Lehigh County teen from Germansville, Kamryn Fink, have been awarded scholarships from the Lehigh County 4-H Development Fund Board.
Payge Haydt, daughter of Leon Haydt and Tammy Lorah-Haydt of Northampton, will graduate from Northampton Area High School. She plans to attend college for elementary education with a music concentration. Payge has been a member of 4-H for 11 years, participating in Lehigh County Equine, Farm to Table, Teen Council, Textile, Neffs Clovers and Potato Judging. In addition to her club involvement, she has served as a counselor at 4-H camp and 4-H horse camp.
Kamryn Fink, daughter of Travis and Stephanie Fink of Germansville and Linda and David Dries of Slatington, will graduate from Northwestern Lehigh High School and the animal science program at LCTI in addition to being dual enrolled at LCCC. She plans to attend Delaware Valley University next fall for large animal science. She has been a member of the Lehigh County 4-H program for eight years and has been heavily involved in the Livestock Club, Teen Council, Program Development Committee and Potato Judging clubs.
4-H provides hands-on learning in a wide variety of subject areas for boys and girls, ages 8-18. It is part of the youth development programming of Penn State Extension. For more information about 4-H, contact the 4-H coordinator weekdays at 610-391-9840.

Amish Country Adventure
An Amish Country getaway revolves around witnessing the extraordinary way of life embraced by a community that wholeheartedly upholds centuries-old historical and religious practices. While exploring the area, you’ll encounter individuals dressed in traditional attire. The Amish, like the Mennonites, are a branch of the Anabaptist sect of Protestant Christianity. As such, they must adhere to a strict dress code in an effort to avoid vanity and preserve modesty.

The library will hold a “Night of Recognition” on Tuesday, June 11th at 6:00pm. We will be honoring Rodney Mummey whose name will be placed on the Louise Hallman Memorial Plaque, and ten local businesses and organizations who will be recognized as our Business and Organization partners.
The Wonderful World of Wildlife summer reading program will return to the library on Wednesday, June 19th from 1:30pm to 2:30pm. Children from preschool age to 5th grade are invited to come learn about animals.

[So, what bird visited Rev. Henry Harbaugh’s place? As Earl C. Haag suggests, it was probably a Phoebe, a bird that looks similar in appearance, but has a different nesting habits and wintering locations. Read their brief descriptions below and then decide!
Eastern Wood-pewee Contopus virens
The eastern wood-pewee breeds throughout eastern North America from southern Canada to the Gulf of Mexico. To locate this drab, olive-gray, sparrow-size bird, listen for the male’s namesake call—pee-o-wee—which is given throughout the day but particularly at dawn and dusk. Pewees use almost every woodland habitat, including woodlots, woods edges, mature forests (both deciduous and mixed), parks, and urban areas with shade trees. They perch in one place for an extended period, flying out to snag passing insects; one study found an average perching height of 35 feet above the ground. Pewees eat flies, beetles, small wasps, and moths. They also consume elderberries, blackberries, and fruits of dogwood and pokeweed.
Males defend breeding territories of 2 to 6 acres. Pairs begin nesting in late May. The nest is a compact cup woven of plant matter, hairs, and spider silk; its outer surfaces studded with lichens; it looks like a larger version of the ruby throated hummingbird’s nest. The three eggs are incubated by the female and hatch after 12 or 13

They typically place their mud-and-grass nests in protected nooks on bridges, barns, and houses, which adds to the species’ familiarity to humans. In this article we have a recipe for a wet-bottom shoo-fly pie, but first, a little history.
The shoo-fly pie began as a crust-less molasses cake called centennial cake in 1876, to celebrate the 100th anniversary of the signing of the Declaration of Independence in Philadelphia. There doesn’t appear to be any evidence of it being made before the American Civil War.
In the 1880s, home bakers added a crust to make it easier to eat alongside a cup of coffee in the morning, without plates and forks. Because shoofly pie traditionally contains molasses but no eggs, historians conclude that it was typically baked during the winter, when chickens laid fewer eggs and molasses could be stored in the cold weather without fear of it fermenting. The use of baking powder places its invention firmly after the Civil War and in the 1870s.
And now enjoy this “Horse & Buggy WetBottom Shoo-Fly Pie” recipe, along with three informational “pull-outs” at the end on some of the ingredients:

Serves: 8
Ingredients
• 1 cup flour
• 2/3 cup brown sugar, firmly packed
• 1 tablespoon vegetable shortening
• 1 egg
• 8 fluid ounces molasses
• 6 fluid ounces boiling water
• 1 teaspoon baking soda
• 1 (9 inch) unbaked pastry shell
Directions
1. Mix together the flour, brown sugar and shortening. You might also consider adding 1/4 tsp each of Ginger, Cloves and Nutmeg.
2. Set aside 1/2 cup of this mixture for the topping.
3. Add to the remaining mixture the egg, molasses, boiling water and baking soda.
4. Spread this mixture into the un-baked pie shell.
5. Spread the 1/2 cup of crumb topping over the pie.
6. Bake at 375°F for 10 minutes.
7. Reduce temperature to 350°F and bake for 30 minutes or until firm.
Speaking of brown sugar, did you know? / Brown sugar is white sugar combined with molasses, which gives it a soft texture. Light and dark are the two most common styles of brown sugar. Lighter brown sugar generally has the more delicate flavor. Very dark or old-fashioned brown sugar has a more intense molasses flavor. Store brown sugar in a plastic bag. To re-soften, include an apple wedge with the brown sugar in a plastic bag and seal tightly for 1-2 days.

The public education from the mid-1800s to 1956, taught in one, two and multi-room schools throughout Lehigh Township, Northampton County, PA. Most of the former schools are now either residences or are being used commercially. Some of them no longer exist. The last remaining oneroom schoolhouse in Lehigh Township not privately owned is St. Paul’s Schoolhouse.
The children walked far every day to attend school, usually walking through all kinds of weather. Students brought their own lunch to a school building with no electricity (early on), no running water, outhouses for their personal needs, and heated by a coal or wood stove. The teacher taught all ages and grades in one room and was also responsible for cleaning the classroom and tending to the coal stove. Recess was also a special part of the day that the students looked forward to, playing Ring Around the Rosie, London Bridge, baseball, to name a few. The new Lehigh Township Elementary School opened in 1956.

Dry Drowning: What to Know this Summer

Dry drowning is an airway closure from choking on water without getting fluid in your lungs. Dry drowning is defined as a respiratory impairment – that is, being unable to breathe – because you’ve been submerged in water. You may also have heard the term secondary drowning. Thankfully, dry drowning, as well as secondary drowning, aren’t quite what you may think they mean.
For starters, “dry drowning” is not a real medical term. That said you can be seriously injured if you survive a near-drowning experience, especially if you have a water incident where you can’t breathe or you get water in your lungs. Here is what the term “dry drowning” means, when you should be worried, and what symptoms to look out for.
What is Dry Drowning?
All drowning events require exposure to water. But the term “dry drowning” emerged to explain what happens during certain drowning experiences.
When you are struggling underwater and unable to come up for air, you experience a reflex called
a laryngeal spasm. This spasm shuts off your airway, meaning you can no longer breathe.
When this airway closure happens and no water goes into your lungs, that’s technically dry drowning. The injury happens from a lack of air and asphyxiation.
What is Secondary Drowning?
What people refer to as secondary drowning is better described as a secondary injury from a neardrowning. This injury most often happens when water does get into your airway.
For example, inhaling water before your airway clamps shut from a laryngeal spasm can be a big concern. Too much water can cause lung damage and breathing problems that become serious six to 12 hours later.
One of the most serious conditions you can get from ingesting water into your lungs is pulmonary edema. That’s when fluid starts accumulating in your lungs, causing swelling. Your lungs stop functioning correctly. This can be a serious medical emergency.
Signs and Symptons of Dry Drowning
The signs and symptoms of dry drowning are the same as the ones you experience when drowning. So, if you come up sputtering after a cannonball, you’re not necessarily at risk of suddenly drowning the next day. However, if you’ve had a near-drowning experience, symptoms can show up after you’ve left the water.
In other words, you’ll cough a lot and may think any water you inhaled is gone, but 12 hours later, you might start to experience breathing problems because your lungs are swelling from water. You should immediately get checked out by a medical expert to make sure your lungs are clear and undamaged.
But you will likely know if something is wrong soon after you leave the water, as the signs of pulmonary edema emerge quickly. Warning signs

On May 28th a group of 16 students and 2 teachers from the 4th and 5th grades gifted challenge classes from the Northampton Area School District visited the St. Paul’s One-Room Schoolhouse on Almond Rd in Indianland as part of their annual Magical History Tour. The tour field trip was organized by Gifted Support teacher Pam Kremus. A short program discussing what school was like almost 100 years ago was led by Ruth Hall Kent, LTHS President and Earl Buss, LTHS Director. Earl attended St. Paul’s school from 1937 to 1945 and he shared stories from his school days. The students completed a photo scavenger hunt searching for various items throughout the school building. Next year the group hopes to visit the Lehigh Township Historical Centre Museum in Pennsville. We invite small groups such as Scouts or other school or civic groups to plan to visits either location. Fireworks are common throughout the summer, especially on holidays like Independence Day. What we might see as a fun way to celebrate can be terrifying for our furry friends. Loud booms and bright flashes of lights can be seriously distressing for your dog.
What Is Noise Aversion?
At least one-third of dogs suffer from noise aversion, a fear and anxiety exhibited upon hearing loud noises (including fireworks) that leads to stress, suffering and potentially-destructive
behavior. Other terms used to describe this response to noise include noise anxiety or noise phobia. Noise aversion shouldn’t be a normal part of “being a dog,” as it’s actually a serious medical condition that can be treated. Even though noise aversion is a medical condition, only 40% of owners of dogs that display noise aversion signs seek help from their veterinarian. This is particularly sad, as delaying the diagnosis and treatment can increase both the frequency and severity of a dog’s symptoms, worsen their overall quality of life,

Your veterinarian may also recommend ways to modify your dog’s environment. You can create a safe haven for your dog following these tips.
• Create a safe zone in an interior room, away from windows, if possible (a bathroom or closet works best). If not, draw the blinds or use blackening shades to help prevent flashes of light, which are associated with fireworks.
• Place their crate, blankets, food and water, and a favorite toy in this area to help them relax and like spending time in this space.
• Add white noise or use a fan to help muffle the noises associated with fireworks. Alternatively, turn on music (loud enough to drown out the noise but not so loud that you frighten your dog even more).
Remember that your dog is reacting to the noise out of fear and anxiety, so never punish your dog for their noise aversion signs, as that will only make your dog more fearful and anxious.
Noise aversion is a terrible experience for your dog. By identifying the signs and speaking to your veterinarian to initiate treatment early, you can prevent your dog from suffering and keep her a

Quota USA Northampton Celebrates 95 Years
QUOTA club has been in the Northampton area for the past 95 years Our service club’s main philanthropic focus is Disadvantaged Women & Children and Speech & Hearing Issues
For over 25 years, “QUOTA KIDS” has been a Christmas program where we buy gifts for several children. This includes clothing and toys from a wish list from the children's family. This is a community effort where local businesses either donate funds or shop for the kids.
The neediest of these disadvantaged families are also given gift cards for Christmas and holiday baskets of food at Easter.
During the year we usually play bingo at a local nursing home, Donations to turning point, the library, annual commencement award to high school senior.
During COVID we had some other projects : We sewed and delivered 8 doz. masks to local school kids the first year of the pandemic. Provided lunch to the Northampton ambulance, Fire company, and Police Department.
RECENT PROJECTS INCLUDE: Donated to a local woman fighting ALS . Sponsored a walker in ALS walkathon at Cedar Crest

We did have a Jr Quota group for about 2 yrs.at Bloomsburg College.
Quota club has given several scholarships for a student who was going on to college and was either hearing or speech impaired or studying these subjects. We have also assisted children who have issues and need things like special alarm clocks or whatever to assist them in their daily life.
We are considering a participation with QUOTA USA with the ongoing “Save The Children” program.
Recently attained 401C (3) status so we can apply for grants to create new projects. This will allow us to focus on service instead of fundraising.
Quota was an international group that had an
emphasis on hearing and speech multiple countries were involved cochlear implants originated in Australia and the testing of the newborn children. A few years ago quota became USA only.

Everyone can be a father, but it takes a really special person to be a Dad -Wayne Boggs It takes a big man to bend over and touch the heart of a little child -Unknown
A dad is a horsey for this little buckaroo, He can dry my tears with his smiles.
He can lift me so high, yet cuddle me to be safe and warm, He showed me how to love when he hugs and kisses my Mom.
He always loves us by teaching us what is right. And has the patience to correct us when our choices we make are wrong.
Dad taught us to be leaders, independent and pioneers. We go camping, play ball and have quality time together.
We go fishing, hunting and sleigh riding. I get so tired, he would pull me home on the sled. I thought this was neat cause I’d fall asleep.
Dad always picked mom to go play hide n seek. I never could figure that out until I was older.
Dad worked really hard, he put food on our table. Taught us how to drive as we became able.
He sent us to college, walked the girls down the aisle. Then he became Pop Pop, Boy did he ever smile!
Yes Dad is love, caring, a very generous man, his time, his money and his services so grand.
Even today I can ask for advice, he’ll say Son tell me all about it. We’ll go thru it together.
So this Father’s Day, if I touched on a point or two. Call your Dad and make him feel glad. Send him a gift, give him a card and say “Happy Father’s Day Dad”
Better yet be like the Hallmark Company, care enough to send him your very best. Show up in person with an “I love you”
