In terms of holiday shopping, we’re actually going to focus on “Small Business Saturday,” which in some communities has been extended and is now celebrated as “Small Business Weekend.” That weekend is also the kick-off of many holiday festivities in towns and communities in our region. We will take a look at quite a bit of that in “Holiday Shopping and Festivities.” Of course this is the time of year when many of us start our hardcore holiday decorating. For some, holiday decorating itself is a Thanksgiving weekend tradition. We have found some beautiful holiday decoration ideas that we hope will inspire you. We also gathered some suggestions on how to share your personal holiday spirit with neighbors and friends in the community. Please see “Holiday Décor and Community Spirit” for all the details. Lastly, because this is still National Diabetes Month, we are going to take one more look at diabetes. In this issue we will focus on the risks
of the disease and how to calculate your response to it if you ever receive a diabetes diagnosis yourself. Read “Diabetes: Know Your Risk, Know Your Response” for some solid information. until the Civil War, early America had many different “thanksgiving” days. Abraham Lincoln was the first president to declare one day of the year as Thanksgiving Day. Every president after Lincoln continued to declare a national day of thanks on the last Thursday in November. This continued until Franklin D. Roosevelt took office. In November of 1939, there happened to be five Thursdays instead of the usual four, so Roosevelt took it upon himself to declare the fourth Thursday in November as the official day for Thanksgiving and that’s when it’s been celebrated ever since. Thanksgiving Traditions Americans have developed various traditions when it comes to Thanksgiving. The most important of these traditions is, of course, the food. Eventually, it became the meal that we know today that includes mashed potatoes, stuffing, sweet potatoes, cranberry sauce, corn, green bean casserole, and of course, turkey and pumpkin pie. Other Traditions Additional modern Thanksgiving traditions include football and parades. Football has been synonymous with the Thanksgiving holiday for nearly a century. The 1934 football game between the Detroit Lions and Chicago Bears started that tradition for many people. Since the early part of the 20th century, Thanksgiving-themed parades have become a traditional part of the holiday. The most recognized parade is Macy’s Thanksgiving Day Parade which began in 1924. That parade features massive floats and themed balloons, as well as Broadway performances. It is televised nationwide and is a favorite part of Thanksgiving Day for many Americans. Arguably, the most important part of
Thanksgiving is where we give thanks. It is the time of year when people come together with their family and loved ones and reflect on everything they are thankful for. So whatever your family traditions may be, or whatever your family looks like, take some time this Thanksgiving to reflect on the things you’re grateful for.

Food and Thanksgiving Because food is central to the celebration of Thanksgiving, we went in search of a Pennsylvania Thanksgiving recipe. We were reviewing recipes from different sources when we stumbled onto a true, classic Pennsylvania Dutch side dish recipe. You are probably familiar with television personality Rachael Ray. Her fame and her show have always been built around food. Evidently when her celebrity guests would come onto the show they were asked to share a favorite recipe. One of the recipes we found in her show archives immediately jumped out for us. It jumped out not only because it’s a classic Pennsylvania Dutch side dish perfect for Thanksgiving, but also because it has a very strong local connection.

The recipe we’re sharing with you is for “Grandma’s Pennsylvania Dutch Potato Filling.” It turns out this particular recipe – a family recipe – was shared on Rachael Ray’s show by one of our region’s most famous natives, television personality Carson Kressley of Queer Eye for the Straight Guy fame. This recipe is a favorite whenever his family sits down for a celebration. PA Dutch Potato Filling Pennsylvania Dutch Potato Filling is a combination of mashed potatoes and stuffing and is a Pennsylvania Dutch staple that has been made by generations of Pennsylvania Dutch farm families. According to a 2014 article in the New York Times, Pennsylvania Dutch Potato Filling was even more popular than pineapple stuffing and baked corn as PA’s most googled Thanksgiving recipe at that time. For your enjoyment, here is the recipe for “Grandma’s Pennsylvania Dutch Potato Filling” as shared by Carson Kressley on the Rachael Ray Show. This serves 4-6. When the bread has absorbed most of the milk, fold the bread into the potato mixture. The consistency should be slightly runnier than very soft mashed potatoes; if not, add a touch more milk. From 'Tingling' Feet to Eye Injections More than half of all people with diabetes will develop some type of neuropathy, a nerve condition that can lead to pain, numbness, weakness or tingling in one or more parts of the body. Many experience sharp, stabbing pains in their feet or numbness and cold feet due to diabetes-related circulation problems. The really worrisome complications of diabetes include diabetic retinopathy. This occurs when too much sugar in the blood leads to blockages in the tiny blood vessels that nourish the retina, the light-sensitive tissue at the back of the eye. In some cases, the tiny blood vessels can close off completely, and the eye will attempt to grow new ones. But these new vessels don't develop properly and can leak and lead to a buildup of fluid (called edema) in the center portion of the retina. discuss your options for response with your doctor. The A1C Test When sugar enters the bloodstream, it attaches to hemoglobin, a protein in your red blood cells. The main way that clinicians monitor your longterm blood sugar control is through a hemoglobin A1C test. This test measures your average blood sugar level over the past three months. The A1C test measures the percentage of your red blood cells that have sugar-coated hemoglobin. The higher your A1C, the higher your likelihood of developing complications from the disease. Peripheral Neuropathy When you have diabetes one of the dangers is the development of peripheral neuropathy. This happens when nerves outside of your brain and spinal cord are damaged. The result can be that you don’t feel pain in your feet, so you could have a foot injury or infection and not realize it.
In addition to slowing blood flow to the feet, damage to blood vessels caused by high blood sugar can increase the odds that small injuries will become infected. It also slows the healing of wounds. Kidney disease Kidney disease is also a complication of diabetes. A key thing to know is that kidney damage cannot be reversed. Once kidneys fail, you either require a kidney transplant or dialysis. Dialysis is a procedure to remove waste products and excess fluid from the blood when the kidneys can no longer perform those functions. All you can do with kidney damage is try to keep it from getting worse. Bottom line: Take the risk of diabetes seriously and see a doctor to evaluate your blood sugar levels. There is a price to be paid for years of poor diabetes management or denial. As the slogan says, know your risk, know your response.

The Pennsylvania Higher Education Assistance Agency (PHEAA) and the Pennsylvania Department of Education (PDE) together are encouraging college-bound students and their families to take the first step in the 2024-25 Free Application for Federal Student Aid (FAFSA®) process now, to prepare for the form’s launch in December 2023. The FAFSA for the upcoming academic year is typically available on October 1, but it was delayed this year as the FAFSA undergoes changes as a result of the FAFSA Simplification Act. The 202425 FAFSA will be available in December 2023. “While the FAFSA itself will not be available until December, students and families can be proactive and take the first critical step in the financial aid process now,” said Pennsylvania Secretary of Education, Dr. Khalid N. Mumin. “Every applicant needs their StudentAid.gov Account, or FSA ID, to successfully submit their FAFSA and now is the perfect time to accomplish that step.”
The StudentAid.gov Account (FSA ID) is a username and password combination used to log in to U.S. Department of Education (ED) online systems. Students and parents will each need their own unique StudentAid.gov Account number; they should not create one on the other’s behalf. USDA Increases Minimum Annual Payment for Conservation Stewardship Program
The U.S. Department of Agriculture (USDA) is increasing the minimum annual payment for agricultural producers participating in the Conservation Stewardship Program (CSP) from $1,500 to $4,000 starting in fiscal year 2024. The increase addresses challenges faced by small scale, underserved, and urban producers and improves equity in the program by making participation more financially beneficial for smaller operations. The program is designed to compensate agricultural and forest producers who agree to increase their level of conservation by adopting additional conservation activities and maintaining their baseline level of conservation. Examples of CSP enhancements that are suitable for being adopted by smaller scale and urban producers include: · Planting multi-species cover crops · Mulching with natural materials · Establishing pollinator habitats · Soil health crop rotation Inflation Reduction Act and CSP
Currently, an unprecedented amount of funding is available for CSP through the Inflation Reduction Act and Farm Bill. The Inflation Reduction Act provided $19.5 billion in additional funding for NRCS’ oversubscribed programs like CSP for five years. Inflation Reduction Act funds are available to help producers adopt climate-smart practices. NRCS recently announced it increased the number of Climate-Smart Agricultural and Forestry Mitigation Activities eligible for Inflation Reduction Act funding for fiscal year 2024 through CSP, the Environmental Quality Incentives Program (EQIP), and the Regional Conservation Partnership Program (RCPP). To learn more, download the list of practices and a fact sheet. How to Apply NRCS accepts producer applications for its conservation programs year-round, but producers interested in this cycle of Inflation Reduction Act funding should apply as soon as possible. Producers interested in EQIP should apply by Nov. 1, 2023 for round 1 and Jan. 1, 2024 for Round 2 or CSP should apply by Jan. 1, 2024 for Round 1 consideration this year. All age Girl Scouts in the Northern Lehigh area have recently been participating with the community and having lots of fun! The girls who are Daisy, Brownie, Junior, Cadet, and Senior levels worked together to participate in the Walnutport Canal Festival by making and selling trail mix in various varieties. With flavors like s’more, pumpkin spice, traditional gorp, strawberries and cream, and trick or treat— it was a big hit with their customers! The scouts also participated in the Slatington

Whitehall Lions Club- Where There’s a Need, There’s a Lion Hungry and shivering in his thin jacket, homeless veteran George shuffles into the Allentown Rescue Mission. He hasn’t eaten since early yesterday. George’s feet, clad in ill-fitting cloth sneakers, are cold and wet. Where there’s a need, there’s a Lion. Whitehall Lions Club members collect and donate new and used clothing, personal hygiene items and food for Rescue Mission clients. Inside the Rescue Mission, George breathes a sigh of relief upon receiving a dry pair of shoes and socks, a warm winter coat and a hot meal. Her parents try to hide it, but Julissa knows they are beside themselves with worry. Since her cancer diagnosis last year, twelve-year-old Julissa has been hospitalized five times. The dark circles under her parents’ eyes are evidence of the sleepless nights spent dwelling on their daughter’s fragile health, unpaid medical bills and past due rent. Where there’s a need, there’s a Lion. Thanks to the Whitehall Lions Club’s annual luminaria fundraiser, the club is able to support families affected by childhood cancer. Julissa and her family enjoy the homemade meals provided by the Lions Club. The gift cards for gas stations, supermarkets and retail stores donated by
the club help ease the family’s tight budget so they can focus on Julissa’s health. Eighty-three year old Masha’s monthly social security check doesn’t stretch as far as it used to. After making her subsidized rent payment and purchasing her medicine, Masha can afford only one week’s worth of food. Where there’s a need, there’s a Lion. Members of the Whitehall Lions Club donate their time assisting clients at the Whitehall-Coplay Hunger Initiative’s food pantry. Masha chats with the Lions Club volunteer as she pushes her shopping cart along the racks at the food pantry. She selects her food items and the volunteer loads them in her cart. Masha smiles as she anticipates the delicious meals she’ll be able to prepare. WE SERVE, and you can, too! We are always looking for new club members. You are welcome to attend one of our meetings to find out if Lions Club membership is a good fit for you. Program and many other community programs. In 2023, NLRA also took over the operation of the Northern Lehigh Swimming Pool and is working hard to continue improving the facility, including making it fully ADA compliant adding amenities for patrons that will make their visits all the more enjoyable. The people liked him because he seemed to be industrious and at the same time goodlooking. But the better that he became known, the more girls he found whom he also liked until finally Beth was almost forgotten. It just goes to show how quickly one forgets his best friends when everything is going well. He went to card parties, to the opera houses, wore fine clothes, and was in a kind of half-baked society, and Beth was at home in misery. But one day there was an accident that nearly finished off Jakey. His left leg was broken, and his right arm was crushed. So, he couldn't run after other girls, and by golly, he couldn't hug anyone anymore. Then he thought about Beth again. So, they put Jakey on a stretcher and sent him home. Beth was at the train station three hours before the train came. The good angels always watch out for one when one doesn't expect it at all. As they unloaded Jakey, the old love broke out like a fire in a powder mill, and the first help that he got was a warm, loud kiss from Beth so that

his ears were almost closed shut. His pulse got better; he began to breathe like a horse that has the heaves, at least for a few minutes; and then he cried like Beth did at the farewell. Tears/eye water always freshens one like the summer showers do for the flowers. It is a good sign when one has done wrong and one can wash it off with sad tears. In six weeks, Jakey was on crutches, and in two months he could hug/press Beth again so that she moaned. Everything was talked over nicely, and—to make the story short—they ordered the wedding for Thanksgiving. It was an appropriate day. They slaughtered the fat goose and had a great time. Beth was thankful that Jakey got his leg and his arm broken, and Jakey was thankful that there are such crazy women who can forgive a man for everything. [Perhaps these last two points could have been stated a little more delicately; but remember this was written over a hundred years ago!] [A reason to be thankful from the Scriptures: “Give thanks to the LORD, for he is good; his love endures forever.” Psalm 107:1 (NIV) Ich winsch eich all en hallicher Betdaag!
