we had last year. For that I’m very thankful. It’s also time to share good Thanksgiving thoughts and greetings with friends, family and co-workers – all the people we have shared the last 12-18 months with. It’s time to communicate our gratitude and appreciation of each of them in a special way. In our annual Thanksgiving issue, we usually focus on the elements of a traditional Thanksgiving meal – the delicious turkey, the stuffing, cranberry sauce and so forth. Since we did that so extensively last year, we thought this year we would take a look at a different approach to this holiday meal. There’s no turkey or pumpkin pie in “The Holiday Meal: A Different Approach,” but there is some awfully good eating. And then in “Main Course: Lasagna Bolognese” we give you an exceptional recipe for this classic Italian dish that you could also easily deploy as the main course this Thanksgiving or at any other holiday season dinner. The Holiday Meal: A Different Approach SOURCE: Various

At this time of year, the Gazette often talks about a Thanksgiving meal that is “American Traditional” (turkey, etc.). This year we are taking a slightly different approach, but whether you try these recipes for zucchini lasagna and light ricottastuffed crepes, or stick with the classics, have a happy and delicious holiday. Main Dish: Zucchini Lasagna Source: PrimaveraKitchen.com With this lasagna, the “assembly” is essentially the same as with traditional lasagna, the core difference being you build it with zucchini slices (sliced lengthwise) to replace the pasta sheets. As with traditional lasagna, it’s all about the layering. You can slice the zucchini using a sharp knife, a mandolin slicer or a vegetable peeler. The mandolin slicer, if you have one, makes the job the easiest and the slices the most even, which is important for the zucchini to cook consistently throughout the entire dish. Ingredients 1 tablespoon extra-virgin olive oil ½ onion - finely chopped 4 garlic cloves - crushed 2 tablespoons tomato paste 1 28-ounce can crushed tomatoes with the juice or 1¾ pounds of fresh tomatoes - peeled, seeded, and diced Salt and ground fresh black pepper to taste 1 tablespoon fresh basil - chopped 3 cups spinach 15 ounces part-skim ricotta 1 large egg ½ cup freshly grated Parmesan cheese 4 medium zucchini - sliced ⅛-inch thick 16 ounces part-skim mozzarella cheese shredded ½ teaspoon parsley - chopped Preparing the Lasagna In a saucepan, heat the olive oil over medium heat. Add the onions, and cook 4-5 minutes until soft and golden. Add the garlic, and sauté, being careful not to burn the garlic. Add the tomato paste and stir well. Add the chopped tomatoes, including the juice if you are using canned tomatoes. Add salt and ground fresh black pepper. Bring to a low simmer, NOVEMBER 18, 2021 || townandcountrygazette.com

cover, and cook for 25-30 minutes. Finally, remove from the heat, and add the fresh basil and spinach. Stir well. Adjust the seasoning if necessary. Arrange the zucchini slices in a single layer on a baking sheet coated with cooking oil spray. Broil for 5-8 minutes. Remove from the oven. Wait about 5 minutes to remove any excess moisture with paper towels if necessary. (This part is very important to avoid the lasagna becoming too soupy.) Continued on page 6

Preheat the oven to 375°F. In a medium bowl, mix the ricotta cheese, Parmesan cheese, and egg. Stir well. In a 9x13 casserole, spread some tomato-spinach sauce on the bottom. Layer 5 or 6 zucchini slices to cover. Place some of the ricotta cheese mixture on the zucchini slices, and top with some mozzarella cheese. Repeat the layers until all your ingredients are used. Top with sauce and mozzarella. Cover the casserole dish with aluminum foil, and bake for 30 minutes. Uncover, and cook an additional 10-15 minutes. Let stand about 10 minutes before serving. Garnish with parsley. Dessert: Light Ricotta-Stuffed Crepes Source: LaCucinaItaliana.com This recipe is for simple, mint-infused crepes stuffed with ricotta and fresh strawberries. Cooks in 40 minutes, serves 4. Ingredients ½ pound strawberries ¾ cup ricotta ¾ cup all-purpose flour 2 tablespoons powdered sugar 2 egg whites Granulated sugar Unsalted butter Lemon 2 Mint leaves, chopped Salt Preparing the Crepes Beat the egg whites with 4 tsp. powdered sugar and a pinch of salt. Add chopped mint leaves and flour. Dilute with 1/2 cup water while stirring

with a whisk. Melt butter in an 8" pan and cook the crepes (8 total). Filter the ricotta through a sieve to make creamier and mix with the remaining powdered sugar. Wash and trim the strawberries, and cut into slices. Moisten the surface of each crepe with half a lemon. Dip the moistened side into the granulated sugar. Spoon the ricotta and 5 strawberry slices onto the opposite side of the crepe. Fold in half and broil them for 3-4 minutes until the sugar caramelizes. Serve 2 crepes per person.

He depends on his wife and cane and trust in the faithful God. So he sits there in the rocking chair and thinks on another day. The children, O, where are they all? One, blessedly, sleeps in the grave. The others come once a year; he wishes they would come today! His heart is heavy; I don’t blame him if he wept a little. “Look, what is coming up the road there now, a group of well-dressed people! Anyhow, somebody is getting visitors once in this neighborhood today. What large fine men there are and pretty women, well! And little girls and boys also, perhaps a dozen, yes? “They are stopping here, – I certainly say so – we are definitely not prepared. And I am so mixed up now; I do not know whoever it is. They are coming in; they did not knock long and each one extends his hand [to me]. Main Course: Lasagna Bolognese

Back at the Thanksgiving table, Lasagna Bolognese is a magnificent Italian classic that would be a very satisfying main course this Thanksgiving or at any other holiday meal this year. This recipe cooks in 3 hours and serves 6. Here are the specs:

Ingredients ¾ lb. ground beef ¼ lb. pancetta (or bacon) 2 oz. carrot, chopped 2 oz. celery, chopped 2 oz. onion, chopped 1 ¼ C tomato purée or peeled, chopped tomatoes ½ C dry white wine ½ C whole milk Broth Olive oil or unsalted butter Salt Pepper 2 2/3 C all-purpose flour 2 large eggs ½ lb. spinach 1 C all-purpose flour ½ C unsalted butter 1 Qt. fresh whole milk Fine salt Nutmeg ½ C Parmigiano Reggiano PDO, grated Preparing the Lasagna Begin by preparing the ragù (meat sauce). First, cut the pancetta into 1/4" cubes. Chop the cubes and sauté them in a pan. In another pan, add 3

Tbsp. oil or butter, the celery, carrot, and onion, and cook until soft. Add the ground beef and cook until well browned, 25-30 minutes. Add the wine and stir until it evaporates. Add the tomato purée, cover, and simmer slowly for around two hours, adding broth as needed. When nearly done, add 1/2 cup milk to cut the acidity of the tomatoes. Season with salt and pepper to taste. For the lasagna sheets: Bring water to a boil in a large pot and add salt. Boil and purée the spinach. Mix 2 2/3 cups flour, eggs and spinach into a compact dough. Roll into thin sheets (1/16") and cut into large rectangles. Line a tray with clean tea towels. Boil the pasta sheets until just softened (around 20 seconds) and transfer to the tea towels to dry. Preheat the oven to 325°F. For the béchamel: In a saucepan, heat 1/2 cup butter over low heat, add 1 cup sifted flour, and whisk constantly. Cook this roux until golden, then add 1 qt. milk, salt, and nutmeg. Remove from heat. Grease a 9"x13" baking dish with butter and top with a layer of the lasagna sheets, then a layer of sauce, then the béchamel, and top with spoonful of Parmigiano. Repeat process until the ingredients

are finished. Cover the final layer with béchamel, pats of butter, and bake for around 30 minutes. When the top is golden, you may remove it from the oven and serve. Or if you prefer, make it a day ahead, because baked pasta should always be left to rest. It’s actually better the next day.

Begin a new tradition that you genuinely enjoy. / Traditions are a major reason why people enjoy the holidays and research also shows that traditions can help calm feelings of anxiety, which is a winwin! Maybe your tradition will be seeing a movie, binge-watching holiday shows at home, or going to your favorite park. Whatever it is, making a new tradition is a great way to focus on things you enjoy. Consider volunteering your time to keep your mind off of loneliness and to connect with others. / Not only is volunteering a perfect way to alleviate any loneliness you might feel on Thanksgiving, but it helps you focus on others at the same time. Since many organizations serve community dinners on Thanksgiving and those meals are often led by volunteers, there shouldn’t be any shortage of options available to you. Foster an animal for the holiday. / If you’re up for having a furry friend spend time with you on Thanksgiving, many local animal shelters look for fosters during the holidays – this helps to give the staff some time off and if you do it, it will likely

Memorial Services announced for Lehigh Twp. Supervisor/ Sergeant Mike McGonigle Michael P. McGonigle, 59, of Walnutport passed away peacefully surrounded by his family and friends Monday, September 27, 2021, at Lehigh Valley Hospital. He was the loving husband of Kim R. (Schatz) McGonigle, whom he married July 24, 1999. Born in Stroudsburg, he was the son of Margaret (Baclasky) McGonigle of Whitehall, and the late Joseph McGonigle. Mike was a graduate of Allentown Central Catholic High School. He continued his education and earned a B.S. in Criminal Justice from West Chester University. Mike then enrolled in the Allentown Police Academy. Mike devoted his career as a police officer, serving the communities of Wildwood, NJ, followed by Lehigh Township where he served 32 years and was promoted to Sargent, and most recently, the Borough of Northampton. He was the D.A.R.E. officer for Lehigh Elementary School for 15 years, and was active with various police organizations, including the F.O.P. and the Blue Knights. Mike continued to serve his community until the day he died, where he sat as an elected official on the Lehigh Township Board of Supervisors. An active member of St. Nicholas Catholic Church, Mike was a founding member of the local Knights of Columbus Chapter 16656. In addition to his wife & mother, Mike is survived by a daughter: Jennifer Schatz and husband Joshua Willcocks; son: Jeffrey Schatz, both of Lehigh Twsp; Siblings: Thomas McGonigle and wife Monica, Joanne and husband Kevin Gaughan all of VA, Daniel McGonigle and wife Tina of DE; Father and Mother-in-law: Stanford and Rosalia McFarland of Lehigh Twsp; sister-in-law: Cynthia Knipe of NH; and many nieces and nephews. Mike was laid to rest at the St. Nicholas Parish Cemetery. A celebration of life with a Memorial Mass honoring Mike will be celebrated at 12noon on Saturday, December 4, 2021 St. Nicholas Catholic Church, 1152 Oak Rd, Walnutport, PA. Arrangements are in the care of Harding Funeral Home, Slatington. In honor of Mike’s dedication to the community, a public memorial garden and grotto, featuring a St. Michael statue representing Law Enforcement, will be placed at his church to honor all fallen first responders, and those who have served this country. Donations will be accepted and used toward the future construction of the memorial. until his passing. He continued to participate in township meetings from the hospital, because he truly lived to serve the community and wanted to do his part as long as he could. Mike touched the lives of so many people throughout his career, and everyone has a kind word to say, or a fond memory to share, or a story to tell that puts a smile on anyone’s face who is listening. Mike was also very involved and committed to his church: St. Nicholas Catholic church in Lehigh Township. It is with great honor to announce that we were presented a space on their lawn to create a public garden/grotto/park area as a memorial. Not just for Mike, but for all fallen First Responders and military who are, and have served, our country. This will serve as a place for First Responders to take a break, for people to sit and read a book or reflect on life, a place for people to visit and pay homage to the fallen, or a place to simply go and “watch the trees grow,” as Mike used to say. It is our goal to create a beautiful patio area that includes a bench, a flag pole, and a St. Michael’s statue to represent Law Enforcement. We are asking the community to come together and help raise the money in honor of Mike to make this memorial garden come to life. If we surpass our goal, it will go to making the park even more beautiful. So please consider donating to this tribute, especially if you knew Mike, or he has ever done anything to help you or touch your life in any way. It is a final way to say “thank you, Officer McGonigle, for all you did for your community.”

After a Thanksgiving and Black Friday that felt decidedly different in 2020, all signs point toward the holiday being nearly back to full power this year. Despite the pandemic raging on for a second holiday season, you can expect early-morning lines and crowded stores to return in force for this year’s retail holiday. While retailers will mostly be back to the preCOVID routine on Black Friday, the same can’t be said for Thanksgiving Day. In the past few years, major chains have gotten hammered by public opinion for making their workers come in on Thanksgiving just so Black Friday sales could begin a little earlier for eager shoppers. Costco This one won’t come as much of a surprise to any Costco veterans, but new members may be surprised to know they can’t stop in on the way to Thanksgiving dinner. The warehouse club is famous for keeping its employees happy and staying closed on seven different major holidays, including Thanksgiving. Sam’s Club Like its arch-rival, Costco, Sam’s Club will have its doors closed on Thanksgiving. The membersonly warehouse club lists four holidays that it’s closed for, and Turkey Day is one of them. Stores will be back open for regular hours on Black Friday. Like most retailers, Sam’s is also running sales throughout this month. Target Target was one of several major retailers that closed its stores on Thanksgiving in 2020 mostly due to the pandemic. The chain revealed in January its workers would have the holiday off again this year. As for Target’s in-store Black Friday hours, the retailer says to check the store locator as times may vary. Walmart also brought back its weeks-long “Black Friday” sales event from last year, which kicked off on Nov. 3. Walmart stores are expected to be open at 5 a.m. on Black Friday. Bed, Bath & Beyond As part of a sweeping announcement about new programs aimed at making employees happier, Bed, Bath & Beyond announced it would be closed on Thanksgiving back in June. It marks the second consecutive year the retailer has been closed on Thanksgiving. Workers will be back at the grindstone first thing on Black Friday however, as stores open at 6 a.m. Best Buy There’s really no reason to open on Thanksgiving when you’re offering “Black Friday” deals starting in mid-October. Best Buy is one of several big box retailers that have taken that step this year, kicking off its holiday deals on Oct. 19 and keeping the doors closed on Turkey Day. The chain’s true Black Friday event will last for a week, beginning on Nov. 19, and many stores are expected to open at 5 a.m. on the actual day.

Kohl’s Kohl’s announced its decision to shutter on Turkey Day in June. On Black Friday, Kohl’s stores nationwide will be open at 5 a.m. and won’t close until midnight. The retailer is already showcasing Black Friday deals online. Retailers Open on Thanksgiving As for the stores that will be open on Thanksgiving, it seems that most chain grocery stores, including Whole Foods, and pharmacies will have at least some hours of operation that day, but most will be working on reduced schedules. We all know about cleaning the gutters and downspouts, raking the leaves and even insulating pipes in November, but here we have some less obvious home maintenance tasks for this time of year. We found these in the Washington Post. Check Exterior Handrails and Steps With daylight savings time now in place, the days are shorter and people will be coming and going from your home in the dark. That, combined with slippery surfaces in damp weather, increases the chances of people falling. Make sure exterior

handrails are secured and easy to use. If steps are slippery, consider adding traction tape, which has sandpaper-like grit on top. Some types come with a reflective strip – a safety bonus. Improve Outdoor Lighting Ensure that walkways are safely lit. Solar lights with built-in battery-charging panels require no wiring, so they are simple to install. Solar lights work even in winter if they get enough sunlight – but that can be a big “if.” When the days are short, cold weather makes the batteries operate less efficiently. On the shady side of a house, outdoor LED string lights can be a better solution if you have an outlet nearby. Clean Carpets Don’t settle for looking at dirty carpets while you’re indoors all winter. Carpet cleaners available for rent at grocery stores and home centers aren’t as powerful as the equipment professionals use, but they can make a huge improvement – and the price is great. Be certain to follow the directions so you don’t drench your carpet. One suggestion, though: Don’t rush to clean carpets because visitors will arrive in a few days – especially those with pets or young children. Clean after they leave instead, so you can enjoy the results for a while.

Clean the Hearth Wood fires are beautiful, but there’s no denying the mess they create, and spilled embers that look as if they’re out can ignite and cause a house fire. Clean up each time you add wood. Make this step easier by keeping a whisk broom and dust pan in an attractive basket near the fireplace. Empty the dust pan into the fire, which is safer than dumping stray embers into a wastebasket or vacuuming them up, where they could set a bag of collected dust on fire. Clean and Stow Your Mower If you used your mower to chop up fallen leaves, November is the month to call it quits. Plug-in electric mowers just need cleaning. Turn the mower on its side to remove leaves matted around the blade, and wipe off the exterior. If your mower has a rechargeable battery, store the mower (or just the battery, if it’s removable) where the temperature stays within the range the manufacturer recommends, usually 40 to 80 degrees. For gas mowers note that standard gasoline contains ethanol, which can gum up the motor and cause parts to rust if left in the machine all winter. To prevent an expensive repair bill in the

Gardening Award Recipient Barbara Phillips Campbell has just been presented with the “Perennial Bloom Award” by District ll/ lll of the Garden Club Federation of Pennsylvania. After receiving the award at the district level she was voted by all district clubs to be recognized on the state level. To be nominated for the award, the gardener must have exceptional gardening skills and demonstrate service to promote knowledge and conservation. Barbara has achieved gardening certifications through attending national gardening schools in the areas of gardening consultant, landscape design, and environmental school. Barbara is a National Council Accredited Flower Judge and has for 22 years chaired the Parkland Garden Club annual home garden tour which funds the club educational scholarship. Barbara has held offices in the Parkland Garden Club locally, and offices at the district level. She has actively supported her club through projects, and shared her knowledge base with others. She is a Past President of the Parkland Garden Club and Past District Director of District ll/lll. After Thanksgiving Day we make a major pivot to Black Friday and the Christmas holiday season. This year there are special holiday events throughout our area from Slatington and Bernville to the Lehigh Valley Zoo, Jim Thorpe, Easton and more. Here are just some of the great holiday events you and yours might want to take advantage of this year. Events in Jim Thorpe Jim Thorpe is a beautiful place to visit any time of the year and the winter holiday season is certainly no different! This year, downtown Jim Thorpe will be decked out in Victorian splendor for its annual Olde Time Christmas celebration. Special events will take place over three “magical” weekends in December. Festivities begin with the tree lighting ceremony in Josiah White Park on December 3. The festival continues December 4-5, 11-12 and 18-19. The festival will feature strolling carolers and musicians, holiday shopping of course and plenty

of free family activities. Fees do apply for some of the events, with proceeds benefiting local charities. The Slatington Public Library Gives Thanks

We are approaching a very special time of the year. In a few weeks, it will be Thanksgiving. This holiday gives us a chance to give thanks for all the good things in our lives, in what has been a very stressful year. It is a time of reflection on the importance of caring and sharing with our family, friends, and neighbors. The Slatington Public Library would like to give thanks to Isaac and Patrick at Royal Roofing and Renovations, LLC, in Walnutport for donating their time and talents and materials to the library. This summer we had some brick repair done to the back of our building and the stonemasons noted a problem with our roof. The roofer we had used in the past is no longer in business, and we called Royal Roofing to give us an estimate of repair cost. Their response was to write a contract with no cost to the library. They expressed their love for the library and its mission of service to the Northern Lehigh Community as a reason for this donation. We were very grateful for this unexpected gift from these fine young men.
