In this issue, we’re going to continue our 2023 look at different areas of health, give you some shopping and cooking ideas for Thanksgiving dinner, and also some guidance on how to become a “winter-ready” senior. We will also tell you what you should have in your car for any unexpected breakdown in the middle of nowhere – you know, like you see in the movies. But first, on a much more serious note, we want to pay tribute to all of our country’s military veterans who have given so much for their country. Whether a member of the Air Force, Marines, 4

Be sure to also read “Complications of Diabetes” to see how this disease can slowly erode your health in many areas. On the “good news” side of things, it’s important to know that if you have been diagnosed with diabetes, proper management of your condition can delay or even prevent certain complications. This is truly a disease where knowledge is power. And finally, we look at how to be cold-weatherready when traveling by car. There are a few things you should definitely have in your car “survival kit” in case your car breaks down – and especially if you have to wait for help to arrive. For more information, be sure to read “Be ‘Cold-Weather Ready’ Traveling by Car.” So that’s what we have for you this time around. Please join us for the next issue when we will focus on Thanksgiving, Small Business Saturday, and other fall events and celebrations. See you then! But even as our grocery lists expand, there are ways to save without feeling too much of a pinch. Here are some shopping and cooking ideas for keeping more of your money in your pocket this holiday season. Rethinking Traditions While many of the pandemic disruptions were painful, some offered the chance to rethink things we’ve done out of habit. That has given us the opportunity to decide if we want to keep them, or toss them. Some holiday traditions might be worth the time and money, but if they’re causing you stress, or busting your budget, it makes sense to at least consider the possibility that they are optional. Holidays don’t have to follow a particular script. That could mean serving chicken if it’s more affordable, or going a completely nontraditional route. A Thanksgiving ham? A taco buffet? Braised turkey thighs? There’s no law against any of it. This year, you might even find that buying some or all of the meal ready-made could be less expensive than cooking at home. Also, although restaurant prices are rising, they aren’t rising at the same rate as groceries, so maybe this is the year to eat out or get takeout. Downsizing the Meal Downsizing the meal doesn’t mean having fewer people join you, it means avoiding food waste. Consider pulling back your menu; do you really need five sides and two kinds of rolls? maybe drop it. And think about your bird size. Many people go too big. The Agriculture Department suggests one pound of turkey per person. In American households a lot of food is wasted, especially around the holidays. Limiting the number of dishes overall could be a win-win-win for your budget, the environment and your health. And when the Thanksgiving meal is over and the turkey sandwiches have lost their appeal, do not throw away that carcass! Throw the carcass into a big pot of water, bring it to a boil and then

simmer for a solid hour to 90 minutes. Let the water cool, lift the carcass out and into a big bowl – to pick off any remaining turkey meat, strain the broth and get to work creating your turkeyvegetable soup. Consider a Thanksgiving Potluck If you usually handle most of the cooking – and the shopping that goes with it, you might want to change things up and ask people to bring parts of the meal. Your family and friends probably won’t mind. Having guests bring part of the meal can be very efficient. No matter what ends up on the table – and you can certainly provide direction on what you feel is needed for the meal – it’s still less important than the time spent with the people around it. Well-documented research shows it’s the experience of coming together that creates more and longer-lasting satisfaction than any of the other elements. And you never know: Some of the adjustments you make because the ingredients are more available or more affordable might wind up as new traditions. The important thing is to be thankful and celebrate the holiday with people you love.

Becoming a “Winter-Ready” Senior By John Hall for Blue Mountain Town & Country Gazette

If you’re a senior, being “winter ready” at home can cover a number of things. This isn’t going to be an article on blocking the cold air leaks around your windows or doors – although you should give that adequate attention. It’s also not going to be about replacing your furnace filters or confirming that you have enough oil, wood or pellets to get through the coldest months – although again, you want to be sure those things are in order. Nasty Weather If the weather outside is nasty, or just too cold for your bones, remember that depending on where you live and where you buy them, you might be able to have your groceries delivered. There will most likely be a delivery charge, so be sure and ask about that when you call to place your order. The same goes for prescriptions and over-thecounter medicines. Your pharmacy might deliver as well, but even if it doesn’t, if it has a drive-thru

More than snow, ice is the villain on stairs and a secure and sturdy handrail could save the day for you. This entire area of food delivery is one of the things that came out of the pandemic, and fortunately it’s here to stay. If the restaurant itself doesn’t have the staff necessary to make the delivery, you can also use delivery services like DoorDash, Uber Eats and Grubhub that will pick up your food from any restaurant and bring it over. If you have a smartphone, tablet or computer, you have everything you need to order your food

and delivery. If you’re not tech-savvy, pick up the phone and call the restaurant. It’s very likely the restaurant already has a relationship with a delivery service and can make it happen for you. Diabetes is a chronic (long-lasting) health condition that affects how your body turns food into energy. Your body breaks down most of the food you eat into sugar (glucose) and releases it into your bloodstream. When your blood sugar goes up, it signals your pancreas to release insulin. Insulin acts like a key to let the blood sugar into your body’s cells for use as energy. With diabetes, your body doesn’t make enough insulin or can’t use it as well as it should. When there isn’t enough insulin or cells stop responding to insulin, too much blood sugar stays in your bloodstream. Over time, that can cause serious health problems, such as heart disease, vision loss, and kidney disease. There isn’t a cure yet for diabetes, but losing weight, eating healthy food, and being active can really help. Other things you can do to help: • Take medicine as prescribed. • Get diabetes self-management education and support

• Make and keep health care appointments. Types of Diabetes There are three main types of diabetes: Type 1, Type 2, and Gestational diabetes (diabetes while pregnant). Type 1 Diabetes Type 1 diabetes is thought to be caused by an autoimmune reaction (the body attacks itself by mistake). This reaction stops your body from making insulin. Approximately 5-10% of the people who have diabetes have Type 1. Type 1 diabetes can be diagnosed at any age, and symptoms often develop quickly. If you have Type 1 diabetes, you’ll need to take insulin every day to survive. Currently, no one knows how to prevent Type 1 diabetes. • Being active. Gestational Diabetes Gestational diabetes develops in pregnant women who have never had diabetes. If you have Gestational diabetes, your baby could be at higher risk for health problems. Gestational diabetes usually goes away after your baby is born. However, it increases your risk for Type 2 diabetes later in life. Your baby is more likely to have obesity as a child or teen and develop Type 2 diabetes later in life as well. Prediabetes In the United States, 96 million adults – more than 1 in 3 – have Prediabetes. More than 8 in 10 of them don’t know they have it. With Prediabetes, blood sugar levels are higher than normal, but not high enough for a Type 2 diabetes diagnosis. Prediabetes raises your risk for Type 2 diabetes, heart disease, and stroke. Complications of Diabetes

The high blood sugar levels of diabetes can seriously damage parts of your body, including your feet and your eyes. These are called diabetes complications. But you can take action to prevent or delay many of these side effects of the disease. There are two types of complications of diabetes. Chronic complications build up over time, and acute complications can occur at any time. In this article we’re going to look primarily at the common chronic conditions. Chronic Complications These are long-term problems that can develop gradually, and can lead to serious damage if they go unchecked and untreated. Eye problems (retinopathy) / Some people with

diabetes develop an eye disease called diabetic retinopathy which can affect their eyesight. If retinopathy is picked up – usually from an eye screening test – it can be treated and sight loss prevented. Foot problems / Diabetes foot problems are serious and can lead to amputation if untreated. Nerve damage can affect the feeling in your feet and raised blood sugar can damage the circulation, making it slower for sores and cuts to heal. That’s why it’s important to tell your doctor if you notice any change in how your feet look or feel. Heart attack and stroke / When you have diabetes, high blood sugar for a period of time can damage your blood vessels. This can sometimes lead to heart attacks and strokes. Kidney problems (nephropathy) / Diabetes can cause damage to your kidneys over a long period of time making it harder to clear extra fluid and waste from your body. This is caused by high blood sugar levels and high blood pressure. It is known as diabetic nephropathy or kidney disease. “Sharing One-Room School Memories” is the LTHS program, on Saturday November 4th, in conjunction with the Open House visitation of our restored St. Paul’s One Room School in Indianland. This event is free and open to the public. Please plan to attend and bring along any friends, relatives or neighbors who attended a one or multi-room school. You can visit the school between 12 Noon and 1:15 pm. The St. Paul’s School, unfortunately, is not handicapped accessible but the church social hall is where the program will be held. Following your visit to the school, join us for refreshments and our “Sharing One-Room School Memories” program in the St. Paul’s UCC social hall at 787 Almond Road, Walnutport (in Lehigh Township). At 1:30 pm we welcome our speaker Mr. Joel Hoffner of the Lehigh Valley Historical Maps Consortium, (LVHMC) to explain his project, using historical maps, marking the locations of more than 300 early schoolhouses in Northampton County including the roughly 22 schools in Lehigh Township. their own congregations. Today they are known as Midwest Beachy Amish Mennonites or Old Beachy Amish. The Beachy church arose from a 1927 division in the (Casselman) River Old Order Amish congregation in Somerset County, Pennsylvania. Bishop Moses M. Beachy led the congregation during that time and his name became associated with the faction. The Beachys favored a milder discipline for members whose only offense was transferring membership to other Anabaptist churches, specifically the conservative Amish Mennonite congregation that broke from Moses Beachy’s congregation (then not under Beachy’s leadership) in 1895. The Beachy Amish were transformed at mid-20th century into a more evangelical group by both the incorporation of revivalist Amish who had left their original churches and joined the Beachy Amish and by a growing revivalist influence within the Beachys. In contrast to the Old Order Amish, the Beachys have meetinghouses, Sunday School, and a Bible School for young adults, and most also support missionary work. Excommunication is used less

frequently and accompanying bans are even rarer. Many Beachy churches identify as being a part of the Conservative Mennonite tradition, though they have retained certain practices and a lifestyle still similar to the Old Order Amish: • Women wear head covering. • Married men have beards in most congregations. • Television and radio are forbidden Practices that distinguish a Beachy church from the Old Order Amish include: Ownership of personal automobiles. • Most do not speak Pennsylvania Dutch. • Filtered Internet is permitted by most congregations. • Men wear ready-made clothing. How will I manage, what is my name? Fear of no job, or will I heal? Crazy from flashbacks what an ordeal.

Guns are firing, shot after shot Way too many, and I mean a lot! All of a sudden, I hear a pop-pop-pop I fall to my knees And I’m feeling great pain, Will anybody notice me or Even know my name?

I know I need help but who even cares My mental, physical, and emotional problems, Are more than this vet can bear Will I be able to forgive or forget Will I ever get over horrible nightmare dreams and sweats?

Over time my life feels like a curse I need my meds, not even a nurse Will I live or will I die? I’m being sent home I don’t even know why! Where is my home, what will I do? Without my arm or my legs, I must learn everything new. There is this fear of how I would change

Historic Cemetery Gets a New Life Submitted by the Slatington History Preservation Committee

The Williamstown Baptist Church Cemetery along with the church, school, store, and homes were built around 1859 by slate quarry owner and operator Henry Williams. Tombstones and obituaries for the Cemetery burials start in 1865 and end in 1893. The Church eventually ceased operations and burials stopped as a new Baptist church was started in Slatington. Since then the Cemetery has been at

times maintained by individuals or group volunteers such as the Boy Scouts. The Slatington History Preservation Committee noted that the Cemetery was overgrown and covered with fallen trees. They were told that the Cemetery probably hadn’t been maintained for over thirty years. In the spring of 2023 they started the cleanup, realizing that it was a monumental

task. Then along came Shawna Laudenslager She saw an SHPC member working at the Cemetery and told him that she would hire and pay a private contractor to do the cleanup. Several weeks and $5000.00 later she fulfilled her commitment. Shawna said that as a neighbor of the Cemetery she thought it was historically important to preserve the Cemetery. On Saturday, October 21, 2023, Judy Snyder, President of the Slatington History Preservation Committee, presented a plaque to Shawna in recognition of her contribution to the maintenance and preservation of the Williamstown Baptist Cemetery. In addition, she also presented her with a copy of their 2014 History Book and a lifetime membership in the organization. The Committee also purchased and placed a new Cemetery sign. Rev. James LeVan of the Slatington Baptist Church explained the histories of both Baptist Churches. Josh Friebolin, Washington Township Supervisor, thanked the Committee and Shawna for their work to preserve local history. Also, contributing to the preservation were Lanny Lewis for the railing, and Bryon Reed and Chris Thomas for the repairs to the slate steps and for the installation of the signs. Tim Snyder, SHPC Vice President, said that it was

especially rewarding to learn that out of only 30 known burials, there are several recent descendants. They include: Ronald Jones - (deceased SHS class of 1962) and Brian, Robert, Brent, Connie, Lois, and Carol Williams, all descendants of Catherine and Thomas Jones. Some of the descendants of Jane and Griffith Pritchard are James, Christy, Kerry, Judy, and Joan Haydt. There are several descendants of the three children of Henry and Laura Williams including surnames of Andreas, Craig, Henry, Mills, etc. The SHPC is very appreciative of the interest and assistance of the public in this and it’s other local history preservation activities.

Happy Birthday to You, Big Blue! Crayola Experience recently celebrated 1,166 lb Crayon’s 20th Birthday. Crayola’s “Big Blue” crayon has left its teens and entered adulthood, and Crayola Experience in downtown Easton had a party. Families that visited the colorful attraction recognized the colossal blue crayon’s birthday by crafting birthday cards and posting them on Big Blue’s case. This GenZ-er was introduced to the world 20 years ago today at a hometown parade marking the 100th birthday of an American icon—the Crayola crayon. Affectionately known as “Big Blue”, the crayon weighs 1,166 lbs. (1,500 lbs. including the case), is 15 ft. long and 1.33 ft. in diameter, and was made in America’s favorite color. Big Blue was born with the help of kids across the country who contributed their blue “leftolas”— left over broken crayons. The waxy blue nubs were melted down with hot liquid paraffin wax to form a crayon equaling 123,000 regular size crayons. Bib Blue is so big it could color a straight

Nov. 13-20 Drop-off Locations to Open for Operation Christmas Child More than 4,500 locations will open to collect Operation Christmas Child shoebox gifts for the Samaritan’s Purse project. Volunteers are preparing to collect shoebox gifts during National Collection Week, Nov. 13-20. Operation Christmas Child has been collecting and delivering shoebox gifts—filled with school supplies, personal care items and fun toys—to children worldwide since 1993. In 2023, Operation Christmas Child hopes to collect enough shoeboxes to reach another 11 million children. Anyone can pack a shoebox! Individuals, families, and groups still have time to transform empty shoeboxes into fun gifts. The project partners with local churches across the globe to deliver these tangible expressions of God’s love to children in need. Find a step-by-step guide on the How to Pack a Shoebox webpage. “Children around the world need to know that God loves them and there is hope,” said Franklin Graham, president of Samaritan’s Purse. “A simple shoebox gift opens the door to share about the
