The later we go into the fall, the closer we get to the holidays themselves. Of course with the cooler temperatures we will be spending more time indoors. Here is a delicious “gingerbread muffin with sweet lemon glaze” recipe that will not only please your taste buds straight through the holidays, but will fill your house with that sweet and spicy scent of gingerbread. The prep time is just 15 minutes with a cook time of 20 minutes. This recipe will yield 12-14 muffins – the perfect number for a small autumn or holiday gathering. Ingredients Gingerbread Muffins • 1/2 cup (1 stick) unsalted butter • 3/4 cup unsulphured or dark molasses (avoid the bitter taste of blackstrap) • 2 and 2/3 cups all-purpose flour (spooned and leveled) • 1 and 1/2 teaspoons baking soda • 1/4 teaspoon salt • 1 and 1/2 teaspoons ground cinnamon • 1 and 1/4 teaspoons ground ginger • 1/2 teaspoon ground cloves • 1/2 cup packed light or dark brown sugar • 1 large egg, at room temperature • 1/2 cup plain yogurt or sour cream, at room temperature • 1/2 cup milk, at room temperature • OPTIONAL: coarse sugar for sprinkling Lemon Glaze • 1 cup confectioners’ sugar (or more, as needed) • 2 Tablespoons fresh lemon juice • 1 Tablespoon milk Instructions 1. Preheat oven to 425°F. Generously grease a muffin pan with butter or nonstick spray or line

with muffin liners. Set aside. 2. Cut the butter into smaller pieces so it melts easier. In a large microwave-safe bowl, heat the butter and molasses together in the microwave on high for about 1 minute. Whisk until thoroughly mixed. Set aside to slightly cool as you mix the dry ingredients. 3. Whisk the flour, baking soda, salt, cinnamon, ginger, and cloves together. 4. Into the molasses/butter mixture, whisk the brown sugar, egg, yogurt, and milk until all wet ingredients are combined. Pour wet ingredients into dry ingredients and whisk until *just* combined. Bake at 425°F for 5 minutes, then, keeping the muffins in the oven, reduce the oven temperature to 350°F (177°C) and continue to bake for 15-16 minutes until the tops are cracked and centers are set. Use a toothpick to test. Allow to cool for 5-10 minutes in pan before glazing and serving. 6. Make the glaze: As the muffins cool, prepare your lemon glaze by mixing all of the ingredients together in a medium bowl. If desired, add more confectioners’ sugar to thicken or more milk to thin out. Drizzle on top of warm muffins. Icing will set as the muffins cool. 7. Cover leftover (iced or plain) muffins and store at room temperature for 2 days or in the refrigerator for 1 week. Muffins (iced or plain) freeze well for up to 3 months. Thaw in the refrigerator or on the counter. BAKING NOTE: For 6-7 jumbo muffins, bake in a 6-count jumbo muffin pan increasing bake time to 26-30 minutes total: 5 minutes at 425°F and 2125 minutes at 350°F. For about 50 mini muffins, bake for 11-12 minutes at 350°F.

Lehigh Township Rails to Trails will be conducting a walk around Slatington on Saturday, November 4, beginning at 1:00 pm. The meeting place is the Slatington Trailhead. The rain date is November 11. Local historian, Dave Altrichter, will be providing commentary during the walk, pointing out the locations of former buildings and the remaining structures that are part of Slatington’s history. Included in the walk will be climbing the 100 steps, a set of concrete steps connecting the lower and upper areas of town. There are so many things to do this fall in our region. We have great entertainment venues and of course, we currently have activities that are leading up to and will include Halloween. In this particular period of time there are a lot of fun activities to take part in and enjoy. Be sure to watch your local news and other listings for Halloween costume parades, as well as classic “Trick or Treat” and “Trunk or Treat” events. Regarding Trick or Treating, check your town’s website for the official day and time. In years past, these events have been spread out over a couple of weeks and oftentimes, towns will coordinate their trick or treat timings to avoid conflicts so area children and families can actually enjoy more than one such event. Churches and other organizations will often have “Trunk or Treat” events for their communities as well. So again, check your local news sources, including church bulletins, to find out more

specific information and enjoy this festive time of year. Entertainment Venues In terms of our entertainment venues, where you can experience everything from local bands to touring shows, standup comedy and more, this is the time of year to really get out and enjoy the shows. From now through the holidays and all the way through New Year’s Eve, the entertainment offerings in our area will be plentiful. Again, the advice is to check local news sources and event listings, as well as information from venues you frequent, to see which entertainment offerings are taking place that might interest you specifically. They made a band/tie out of long straw, got a good armful of wheat and tied it together, and voilà! (oops, that is French!). They now had a sheave. And then they stood up eight of those sheaves on their butt ends and then laid two more on top for a cap – a rain cap, you could say – and look here. They made a shock!

Now a wagon (it could well be the same ladder wagon that they used during the haying) is driven out into the field, and the shocks are forked up onto the wagon. Usually that was work for a man; women stood up on the wagon and nicely laid down the sheaves lengthwise and crosswise in the wagon [bed]. If that was not done correctly, the sheaves could fall out of the wagon, or the whole wagon could perhaps fall over/tip over when they drove the sheaves back to the barn. (Then you could have heard the finest words and expressions in the mother tongue!) The wagon was driven onto the threshing floor, and the sheaves were then forked into the mows [haylofts]. Many times, he threshed only when he needed the grain kernels or a little bit of flour.
