„….like the tales of Gerald Durrell I read to my two boys. „My childhood in Corfu shaped my life. If I had the craft of Merlin, I would give every child the gift of my childhood.“

S

he is as elegant as her creations, simple and stylish at the same. „I always admired stylish women“, says Christina Martini, co-founder of Ancient Greek Sandals, the brand that was born and grew in Corfu and conquered the fashion world with fans as Gisele, Angelina Jolie, Sarah Jessica Parker and Anne Hathaway. Not by chance though. Christina was shoe designer for luxury houses as Louis Vuitton and Balenciaga, enjoying the glamorous Paris lifestyle with a promising career that one envies. While expecting her first baby she decided to take a break and return to Corfu to spend together with her partner Apostolos Porsanidis – a product designer himself for Rena Dumas – a meaningful first year with their newborn. „This beautiful Greek island soon became our home. The idea of the AGS, which I always had in the back of my mind, flourished to a fashion brand with international appeal together with my business partner Nicolas Minoglou“, she explains while enjoying the slow rhythms of a Friday afternoon in the beautiful verandah of their family olive farm in Tzavros.

Set amidst olive and cypress trees Martini’s home incorporates all the charm of the Mediterranean, with sweeping views from your bedroom window to the deep blue of the sea. Feeling relaxed by the warmth of the Greek sun and the fresh scent of flowers scattered

„I always admired stylish women“ in terracotta pots around the porch I try to imagine how my life would be here, sun-filled and away from fuss of crazy schedules, like the tales of Gerald Durrell I read to my two boys. „My childhood in Corfu shaped my life. If I had the craft of Merlin, I would give every child the gift of my childhood.“ I recall his words and this, I assume, is what Martini was looking for Stefanos and Daphne – now 8 and 5 – playing happily in the garden along with dogs and cats, chickens and goats.

Apostolos business is also doing amazingly well producing the high quality extra virgin olive oil Dr. Kavvadia. „I loved Paris and my life there but I could not imagine raising my kids in a big city. We are blessed that we are able to live as close to nature as we now do, with our fresh-cut vegetables and eggs from our chickens“, Martini explains. Her office is just 20 minutes drive away, and she usually leaves at 2 to pick up the kids, and spend the day together – playing, reading „all the usual stuff mothers do“ (she laughs) and of course checking her emails in the meantime. „We wanted our sandals to be hand-made in Greece. Our collections are inspired by Ancient Greece either from architecture, sculpture, pottery … I look for inspiration in museums, archeological sites, books, everywhere, but it can be something so simple as the turquoise waters of Paxoi matched with white-washed pebbles

– Greece is so generous in natural beauties. Simplicity, uniqueness and high quality are elements that are at the core of my design philosophy, hand in hand with tradition and feeling to everything I do“, the designer explains while recalling the very first AGS collection which launched in Paris 8 years ago through their collaboration with Maria Lemos Rainbowwave Showroom. „We were expecting to sell around 1000 pairs, and we finally

„We wanted our sandals to be handmade in Greece. Our collections are inspired

by Ancient Greece either from architecture, sculpture, pottery …“ counted more than 6000 with orders from the top retail shops in the world.“ Business grew big and today AGS sells to more than 60 countries, featuring apart for the main collections, collaborations with Peter Pilotto, CARAVANA Montaecristo, lemlem and Greek Jewelry brand LALAoUNIS. For this season an exciting new capsule collection is set with Martini’s, long-time friend and former colleague, Fabrizio Viti, leader of the shoe design team in Louis Vuitton. Drawing inspiration from Viti’s debut shoe collection „Don’t Eat the Daisies“, applied to the natural and raw aesthetic of Ancient Greek Sandals, the capsule is composed of seven styles, each an AGS signature shape, hand-made with traditional techniques.

Every sandal is beautifully decorated with deli-

cate white and yellow leather daisies, forming an elegant collection with a 60s flair mostly in a neutral, earthy colour palette of black, white, burnt orange and natural. „I admire Fabrizio’s talent and personality. He was my mentor when we worked together at Louis Vuitton. This collaboration brings back so many fond memories of working together on the shows; we have been through a lot!“

1966, Truman Capote, Black & White Ball This is the man who coined the term „celebrityauthor“. Truman Capote inspired a new type of journalism and was the favourite socialite of business circles and of high society ladies of his time. He organised what is perhaps the most memorable party to ever take place in the Big Apple in the second half of the 20th century - often referred to as „The Party of the Century“! The date was November 28, 1966.

The 540 guests crossed the threshold of the grand ballroom of New York’s renowned Plaza Hotel, in order to attend the Black & White Ball organised by Capote in the honour of Pulitzer Prize Winner and President of the Washington Post and Newsweek, Katharine Graham. The guest list was an ideal mix of artists, intellectuals, businessmen and socialites.

From Frank Sinatra and Marlene Dietrich, to Andy Warhol, Jacqueline Kennedy-Onassis, the Rockefellers, and the Rothschilds. An aesthetics perfectionist, Capote placed some severe restrictions on his guests. The dress code was exclusively black-white and masks for ladies. When asked why, he responded: „I wanted the result to look like a painting“.

’70s, The parties at Studio 54 In New York, once again, the city that truly never sleeps! The night club that was identified with crazy parties and life on the wild side in the 1970s is

none other than Studio 54. Absolutely the place-tobe for showbiz and music stars, as well as socialites everywhere, its nights marked by tons of alcohol, illegal substances, glitter and strobe lighting. One of its most legendary moments was Bianca Jagger’s entrance on a white horse at the party celebrating her 30th birthday! At its tables sat the entire music industry and artistic avant-garde of the era, such as Andy Warhol, Madonna, Duran Duran, the Rolling Stones and many others. To this day, Studio 54 remains synonymous to a world of wild disco parties.

1971, The Proust Ball The party titled the Proust Ball was organised in 1971 to celebrate the 100th anniversary since the birth of Marcel Proust, and it is considered a triumph of Marie-Helene de Rothschild. Around 350 guests attended an exceptionally luxurious dinner at the family château, Château de Ferrières, on the outskirts of Paris, while 350 more guests arrived for a second dinner that was held shortly thereafter. Among the guests were Audrey Hepburn, Princess Grace of Monaco, Elizabeth Taylor and Richard Burton, while the evening was captured by renowned photographer Cecil Beaton. French actress and model Marisa Berenson recalls that night: „As soon as you got to Château de Ferrières it was like you had travelled back in time, albeit to a much more luxurious and tasteful past. The women wore gowns, corsets, grand fascinators, tiaras and lots of jewellery.

It was a true re-enactment of Proust’s era.“

A year after the Proust Ball a party was held, called the Surrealist Ball. And although the party for the French author may have been a Rothschild triumph, it is the photographs from the Surrealist Ball that made history. Among the 150 guests were Salvador Dali, Audrey Hepburn, and members of European royal families. The hostess was wearing a stag’s head with enormous diamonds for tears. The invitations were written backwards, forcing guests to read them in a mirror, while dessert was served on the body of a naked mannequin made from sugar, laying on a bed of roses!

1972, Elizabeth Taylor’s 40th birthday party The actress’ 40th birthday coincided with the period during which Richard Burton was shooting „Bluebeard“ in Budapest – which, unfortunately, was not as successful as everyone had expected. This may have made things difficult for the couple temporarily, however for the good fortune of the history of luxurious parties Burton decided to organise such an affair for his wife’s birthday, abroad. He paid for airplane tickets for all the guests and their dates, while the guest list, according to Nicholas Tomalin of the English Sunday Times, included the likes of Marlon Brando, Michael Cain, Baron Guy de Rothschild and his wife, Baroness Marie-Helene de Rothschild, Princess Grace of Monaco and Raquel Welch. According to another journalist, who used to interview Burton and Taylor on their travels, this was an „all expense paid party that included caviar and lightly smoked herring“.

1978, Yves Saint Laurent, release of Opium The golden decade of the 70s was coming to an end and the international fashion scene was flirting with the exotic Far East. One of the most fervent supporters of this new trend was innovative designer Yves Saint Laurent, the man behind

the Mondrian collection and the woman’s tux.

Enchanted by China, he decided to launch a new fragrance, the emblematic „Opium“, whose official presentation was accompanied by an equally legendary party on super-luxurious yacht in New York, its theme inspired by the distant land. It was attended by 800 people, among whom were Diana Vreeland, Cher and Truman Capote, who enjoyed themselves under the watchful eye of an enormous Buddha. The decorations were the highlight of the evening: Chinese temple replicas, 2,000 orchids flown in from Hawaii, as well as impressive fireworks.

The 1995 & 1996 Met Galas On the one hand, they are charity events; on the other they are incredibly glamorous. The annual parties of the Metropolitan Art Museum – also known as the Costume Institute Gala or the Met Ball – are a New York institution in celebrity, movie star, publishing and fashion circles.

Every Met Gala provides fodder for days to come to all publications that occupy themselves with high society. One of the events that truly stood out and was a landmark in the history of the institution was held in 1995, hosted by Anna Wintour. Its theme was inspired by Haute Couture – a similar theme from the world of fashion had been proposed by Diane Vreeland in 1983: Yves Saint Laurent. The director of American Vogue elevated the combination of fashion and art with the Haute Couture theme, and her party had glittering party guests, such as the elite of the 90s super models Kate Moss, Elizabeth Hurley, Naomi Campbell and Christy Turlington.

The following year the host of the Met Gala – the theme of which was Christian Dior – was editor in chief of Harper’s Bazaar magazine, Elizabeth Tilberis. An outfit that is considered one of the most successful appearances of all times was worn by Princess Diana, who wore a creation by John Galliano – who was making his debut as a designer for Dior at the time. The unavoidable buzz in the media was made obvious by the obsession with the event that lasts to this day.

Julianne Moore We met up with the ACTRESS over an egg white truffle omelette with spinach and a cup of ginger tea in Berlin, where we discussed empathy, walls and grown women in lingerie.

Very casual, the way she wanders in, free of make–up, her hair slightly wet and a greeting in very good German.

T

here aren’t many women in showbiz you’d rather get to know than Julianne Moore. She’s beautiful, elegant, an impressive thespian and an even more impressive woman. Everything about her is enviable: her looks despite her 57 years of age, her looks because of her 57 years of age and the attractive husband that fathered her two teenage children, film producer Bart Freundlich with whom she’s been together since 1996. Then of course, there are her acting capabilities. After four previous nominations, her empathetic portrayal of an Alzheimer sufferer in the film „Still Alice“ earned her an Academy Award for Best Actress in 2015. Her acceptance speech was classy, emotional and considering the movie’s message, simultaneously pensive. Needless to say, I have high expectations before meeting with the superstar in Berlin’s „Hotel de Rome“. A cosy booth near the hotel bar has been arranged for the interview. The spot affords direct views of both the Bebelplatz and the freshly renovated State Opera House. The sky over the capital is grey and gale force gusts whip at the coats of those few that shuffle quickly between shelters.

Before Julianne Moore arrives, a waiter brings a cake stand with scones, petit fours, fresh fruits and two bottles of water. Then she wanders in, almost as if just passing by, no entourage in tow, just her manager who introduces herself before taking a seat a discreet distance from us. A smile spreads across Moore’s face, a visage that’s completely free

of make-up. Her red hair is still slightly wet and tied up into a bun. Her graceful body is clad by a black and white spotted silk blouse and loose cut black slacks. Bare feet and black Birkenstocks reveal a dark toenail polish that matches the sandals.

The freckles in her face and on her arms lend her a somewhat girly air. Before sitting, the cake stand catches her attention and she turns to the waiter to order an egg white truffle omelette with spinach and a cup of ginger tee. Then she shakes my hand and says in German: „Es freut mich, Sie kennenzulernen“ – It’s a pleasure to meet you. She tells me that she’s just come back inside after a stroll. Is that really possible without being bothered? „I simply keep up a good pace and avoid too much eye contact. It works pretty well“, she answers with smile. She learned the trick from Harrison Ford during the filming of a movie they did in Chicago. „I still remember, looking out of the window of the Four Seasons back then and thinking, if he can do

it, so can I!“ She feels safe and sound in Berlin. „We filmed the Hunger Games here not long ago and how to get around the city’s central borough is still fresh in my mind.“ She likes the „Monsieur Vuong“ restaurant and the „The Store“ concept shop in the „Soho House“ hotel – and the city’s Museum Island as well. She was very impressed with the German Historical Museum that overlooks the island. She speaks a little of the local language because her father was a judge with the US Army stationed in Frankfurt. She attended high school there for two years in the late ’70s. „We really lived in an American bubble back then, the reason why my German isn’t as good as it could be“, she explains apologetically. At the time, Berlin was divided by a wall. „I remember visiting Checkpoint Charlie. It was a gloomy place back then, the barbwire, the soldiers.“ The bleak memories of Berlin’s rocky past pave way to the topic of today’s political situation. „Pretty scary times by the way. We live in a world that is globalised on all fronts with millions of refugees. This is an issue we all have to deal with and closing borders is no answer.“ To say that Moore isn’t a big fan of her country’s current president is putting it mildly to say the least. In fact, at the very mention of Donald Trump, a cold shiver runs down her spine and she reaches for the com-

fort of her warm tea. „I do my best not to speak his name“, she says. „There are no arguments to defend such a people-disprizing person.“ According to Moore, he’s unbearably horrid, emphasising that America used to draw its strength from its cultural diversity. These days however, the country is divided by deep trenches. People are so riled up that some can’t even be in the same room with those they perceive as enemies, a seemingly hopeless starting point for much-needed discussion.

Almost as if to provide some kind of antidote to a devastating poison, she tells me about the empathy course her 15 year old daughter Liv has just completed at high school. „The students don’t just learn how to listen to others during the course, but how to genuinely sympathise with others, in particular those that are different from themselves.“ Great value is placed on cultivated conversation within the Moore/Freundlich household. Electronic devices are banned from the dining table. In fact, Moore’s 15 year old daughter is one of the few American teenagers left, who isn’t allowed to take her smartphone to school with her. „My husband likes to poke fun at me because he can never reach me on the phone“, she laughs. The waiter arrives with the egg white omelette. After thanking him, she takes the warm plate from our knee-high small table and rests it on the napkin she has laid across her lap.

While gracefully accomplishing this balancing act, she asks me if I myself have children. Yes – and it really is difficult to anticipate the ramifications of the technologies and innovations we’re constantly

There are lots of stairs in my house in New York. I also walk a lot at a brisk pace.

That and ashtanga yoga keeps me fit. confronted with. If it were up to our kids, they’d pretty well limit their communication with us to Snapchat. Everything else is too slow and Facebook is only for old people. „She might be onto something.“ Moore laughs. „I never had an account, but my father does.“ She picks up her knife and fork and begins to eat. As she does so, I tell her of a recent study that claims that multitasking such as texting your boss an e-mail on your phone during a meeting leads to diminished cognitive capacity including reduced memory capabilities and concentration levels. She nods her agreement and says that a friend of hers who suffered brain damage was advised to do only one thing at a time during her rehabilitation: eat, drink, talk on the telephone – one after the other and never simultaneously.

The topic brings us to her film, „Still Alice“. Can a movie like this change the world? Change how we interact with Alzheimer sufferers? „No“, she answers decisively. „A film can’t create a culture, only reflect one. People relate to the figures portrayed.

It’s about empathy and identification. Films can help us gather our thoughts, perhaps even give some thought to the issues we should consider important in our lives.“ How does Julianne Moore choose her roles? Is there any movie in which she finds her performance particularly good? „I have the idiosyncrasy of forgetting what I’ve done“, she

laughs. „I love what I do so I’m always looking forwards, to new projects, to what the future may bring.“ Julianne Moore doesn’t just leave an impression on the silver screen, but on the red carpet as well. Two days before our meeting in Berlin, she was invited to attend Louis Vuitton’s show in the Louvre during the Paris Fashion Week. „The location was cool“, she swoons, describing the recently restored moat pavilion that housed the catwalk. „I found the idea to take one’s own history, to literally take one’s foundations and place them in the spotlight, sensational. You can’t always make everything new, new, new.“ Moore states while parting a scone she’s taken from the cake stand. What does she do to stay in such great shape? „What I have to say is pretty boring, but my tip to all women is: eat well, get plenty of sleep and find a sport you really like.

I tried a lot of different things over the years, but Ashtanga yoga is the only exercise that I unequivocally like.“ She engages in the discipline four times a week. On top of that, Moore walks a lot and takes the stairs rather than the elevator whenever she can. „My house in New York has lots of them.“ The pressure from Hollywood to present oneself as a youthful, wrinkleless actress is something to which she refuses to bow. Convincingly, Moore assures me that her face is a botox-free zone. According to the 57 year old, her 9 year younger husband Bart once said, „I’m leaving you if you do it.“ She claims to have little patience with people that complain about getting older. „We should be utilising the time we have, knowing that life is continually changing and can be over in the wink of an eye. It’s a gift.“ Moore and her manager exchange quick glances and the time has come for her to begin preparing for the evening’s event. She shakes my hand warmly before disappearing as inconspicuously as she arrived.

The installation South Beach, Miami sets the scene for „Slow-Moving Luminaries“, realised by Lars Jan in conjunction with the Audemars Piguet Art Commission

Complex, multimedial, penetrating: through installations and performances, the ARTIST LARS JAN deals with climate change and transience in general

T

he sun shimmers over the Art Basel in Miami on this December day. It deepens the hue of the endless blue sky stretching over The Sunshine State – and intensifies the white of the installation located right on the South Beach waterfront. A perfect day! Lars Jan, American multimedia and performance artist, quickly strides through his work. A visitor that has been winding her way through the labyrinth of cloth and hoists stops him before charmingly requesting a photo together. „I’m seldom recognised“, says the amused American with Polish-Afghan roots and a Scandinavian name (more on that later). Created in conjunction with the 3rd Audemars Piguet Art Commission, the new work is called „Slow-Moving Luminaries“. The piece has a purpose: to remind people visiting the glamorous art fair in this party possessed seaside city just how fragile the ecosystem is, as well as how detrimental it can be to upset the delicate balance. Visitors entering the large pavilion follow a path that spells out the letters SOS. The letters are repeated on the roof, weaving through the skeletal models of office buildings that rise and

sink into reflective waters. Jan’s statement on climate change here is anything but subtle: „Water can be both beautifully alluring and primitively terrifying. Think about how often we hear news of flooding around the world these days. Devastating entire areas.“ Jan has witnessed many examples of nature’s conquering perseverance first-hand. During a tour of the world’s largest religious monument, the Angkor Wat temple complex in Cambodia, he saw how plants and trees were slowly but surely demolishing the ancient walls. „The oceans are also in the process of taking back the shores they once covered. The whole planet moves in cycles.

Unfortunately for us, we seem to be doing everything in our power to speed up the process.“ The artist believes that art can help provoke a reset to our mindset. His goal: to make a better version of reality possible. He quotes Brian Eno: „Art is a safe place to look and talk about terrible things.“ Art opens pores, it enables one the time it takes to contemplate long thoughts and it makes the artist a platform for intellectual endeavours.

Lars Jan realises his projects in the Early Morning Opera, a performance and art laboratory in California that he founded. It is the scene for an extremely diverse range of expertises, a culmination of competencies that combines technical, kinetic and visually fastidious work to express the artist’s message. One of the works is called „The Institute of Memory“ (TIMe), a performanceinstallation that deals with Lars Jan’s own past. His father left the family when Lars was 20 months old. „He was a misanthrope and very paranoid. I never knew anything much about him. Not even when his birthday was, or whether or not he had any brothers or sisters. I only knew that he worked for an intelligence agency. There was just this big hole and I formed my existence around it. It took me a long time to understand that about myself.“ In addition to dealing with his own biographical history, TIMe also explores how we will remember things in the future and which role the transformation from analogue to digital archiving might play.

As we emerge from the shady labyrinth on the roof with views over the reflective water surface and the ocean beyond, Jan’s demeanour changes. He’s irritated by the relaxed chill-out beat that wafts from the speakers. The music decision was definitely not his, and he asks an assistant to rectify the situation. The views from the rooftop are spectacular and the installation ensures one’s horizons are broadened in more ways than one. Does the origin of his parents still influence his sense of perception? „I travel a lot“, he says. „It tends to give you an international perspective on things. If you consider that 70 % of all Americans don’t even have a passport … I believe that the way people view the world counts more than the actual reality.“ Lars Jan, his story and his name in particular, are perfect examples. The Scandinavian name Lars Jan came from his father. „He forced my mother to give me the name because he was convinced that I would be able to move more freely across borders during a third world war. My father had been tortured as a younger man, so some PETRA WINTER of his ideas might have made sense.“

nd she did just that. „I used to live in an apartment in the town of Corfu that had no garden and I couldn’t stand it.“ So when some friends suggested the location where her current home is built, somewhere near Mon Repo Palace, she didn’t give it a second thought. Mrs. Dandos was born and raised in Corfu, while also having Italian roots, which have played a role in the development of her exquisite sense of style. She and her husband managed to create a home where innate spiritual curiosity meets the universe’s positive energy.

Surrounded by an all-green „carpet“, the house is arranged across two levels. In the lower level, apart from the auxiliary spaces and kitchen, there is also a majestic living room, where the huge mural by Corfiot painter Spyros Skarvelis steals the

What is quite special about this house is that it doesn’t have many walls. „I preferred one large open space, which would include the living room, the dining room and my den, and of course I went for quite big windows, so that each of them could work as a virtual picture frame, portraying the natural landscape“, she explains. Moving to the upper level, we find the bedrooms, with the owner’s bedroom standing out for its impressive nightstands, purchased during one of her journeys abroad. Blue, in all its possible variations, sets the palette for her bedroom and personal bathroom. The entire house is surrounded by a positive aura. „I didn’t want a house that would be too big or too small. I wanted a home that would be like a retreat for my soul; a home both practical and functional that would allow us to really live in it“, she says, while taking off her shoes in the most elegant way. „Not having conventional radiators was a conscious choice. We went for heated floors instead, because we wanted to be able to walk around barefoot even in the winter.“ One of the house’s greatest advantages is its outdoor spaces and garden. Charming view, endless garden, filled with all kinds of trees and colourful flowers. „Nothing was left to chance“, explains the hostess. „Just like the rest of the house,

we wanted the garden to also be governed by a sense of proportion.“ A typical example is the trellis-work above the couch, near the pool. The climbing flowers have all been carefully chosen in order to blend harmoniously with one another, even as the seasons change, without disrupting the colourful harmony. A few steps further we find the main part of the swimming pool lounge. A huge couch made from a piece of rock contributes effectively to the creation of this sense of tranquility and relaxation. There are rocks in virtually every corner of the house; some are small and elegant, others big and imposing. „They are part of my collection. I’ve been collecting rocks for ten years now. I believe in their energy and power, like I also believe in the power of crystals, which I also collect.“

C

orfu, Koryfo, Kerkyra, island of the Phaeacians, Scheria. These are some of the names and characterisations attributed to the „countess“ of the Ionian Sea, Corfu. This island has a rich history, it is renowned the world over from ancient Greek mythology, and functions as an attraction for millions of visitors every year. It harmoniously combines traditional neoclassical buildings with new architectural trends, while its dozens of small and narrow alleys were, in the past, explored by kings, nobles and countesses.

Corfu is undoubtedly a land that can provide visitors with a large variety of choices for a carefree holiday. It combines the mountain and the

sea, good food, traditional drinks and a long history, which is ready to be packed away into tourists’ luggage and travel away with them.

According to Homer, Corfu is the land in which Ulysses, exhausted and half-dead from the tenyear adventure Poseidon forced him on, received the warm welcome and affection of the hospitable locals, as well as that of the princess Nausicaa, for whom he almost forsook his wife, Penelope. Corfu, according to other versions of ancient Greek mythology, remained an island and was not connected to land opposite it, because the goddess Athena asked the god Poseidon to stop the mud being carried by a river on the shores of the mainland opposite. It is one of the northernmost and westernmost islands of Greece, at the entrance of the Adriatic Sea, with a coastline of almost 217 kilometres and imposing Pantokrator – the mountain with the highest peak (which produced the name Koryfo – peak – or Corfu in English). This is the first image one has when taking the ship from Igoumenitsa to the island’s welcoming port.

Those who find themselves on the island have many forms of recreation and entertainment to choose from in order to make their holiday unforgettable. First and foremost is shopping in the old town and new town, with the small craft shops ready to provide you with every type of souvenir.

As soon as you set foot on this island of the Ionian and walk in its alleys, you will feel its Venetian air. Don’t miss Spianada on your way to the historical old town centre. It is the largest square

in Greece and the Balkans, known for the pots that are thrown off the balconies and out of the windows during Easter every year on the days of the Resurrection. It is opposite the Old Fortress and is surrounded by impressive buildings, such as the English Saint Michael and Saint George Palace and the two arched building complexes in Liston. A large portion of the square is covered in grass and is used as a cricket pitch. At the Saint Michael and Saint George Palace one can visit the renowned Museum of Asian Art. You also absolutely have to visit the Old and New Fortress.

On the way to the old town palace you will find the „Garden of the People“. For Corfiots, it is considered the best place for visitors to rest under the cooling shade of the trees and to take pictures with the Old Fortress in the background.

ACHILLEION PALACE In the island centre, known for its cosmopolitan character, one can admire the Town Hall, the Mon Repos summer palace and the Museums of Byzantine and Post-Byzantine History.

Another „unmissable“ location is the renowned harbour of Garitsa, which is one of the most beautiful spots on the island, as well as Achilleion, Princess Sisi’s palace. This famous royal mansion – known throughout Europe – is located in the picturesque mountain village of Gastouri, just 10 kilometres outside the city. The palace was built in 1890 and was dedicated to Achilles. When visiting, you can see the enormous oil painting depicting a young Achilles dragging Hector’s body behind his chariot. This truly impressive painting attracts a lot of visitors to Achilleion. It was created by Austrian painter Franz Matsch in 1892. Among the many sculptures in the palace court, one will see Achilles Dying by Herter, depicting Achilles suffering and trying to remove the arrow after being struck in the heel. The statue was created in 1884.

The island’s trademark is renowned Pontikonisi, a small lush green islet just beyond the airport. Here you can experience a rare phenomenon.

Watching an airplane take off or land on a floating runway, a few metres above the tourists. Right

next to Pontikonisi you will see imposing Panagia Vlachernon church.

MUSEUMS Visitors to Corfu who are interested can also visit the Solomos Museum – the house where Greece’s national poet lived in the area of Mouragia. There is also Kapodistrias Museum in Koukouritsa, Casa Perlante, with outfits and old household utensils presenting what daily life was like in the past for the area’s nobles, the Reading Society building, the Banknote Museum, the Ionian Parliament, and the Music Museum, which houses the old Philharmonic Society of Corfu. The island has dozens of philharmonic orchestras that promise to be your musical accompaniment on your walks through the island’s narrow streets.

DINING RECOMMENDATIONS If you want to take photographs you absolutely must visit Pelekas and for some good food we recommend Venetsianiko Pigadi restaurant. You can enjoy good food in most of the city’s Italian restaurants. For the connoisseurs we recommend „Stamatis“ in Viros, and Fisherman’s Cabin on Agios Georgios beach for good fish.

There are often concerts and cultural events for music lovers in the Old Fortress area. For a cup of coffee with a view and a wonderful sunset try out the area of Paleokastritsa.

Nature lovers have the opportunity of seeing the dozens of pink flamingoes up close at the Lefkimi Salt Pans or horses at the Corfu Horse Riding Club. The most famous visitor of the island for thousands of years . . . is Odysseus. According to Homer, Odysseus was found on the island, beaten and defeated after his controversy with the god of the sea, Poseidon. According to the information in 1861 Sissi visited Corfu with the yacht „Victoria & Albert“, which was granted to 2 her by Queen Victoria of England. Sissy loved Corfu and in 1890 she decided to build her villa there: Achillion. The palace is located in the village of Gastouri and is one of the most beautiful and most famous royal villas in Europe.

Today, the Prince of England, Charles, enjoys making his holidays on the island and swimming with Duchess Camilla Parker in the blue waters of the Ionian Sea. Enthusiasts of the island are members of the Rothschild dynasty,

TSIGARELI This is an intrinsically Corfiot dish. It is a way of sautéing boiled wild greens (chard, poppy, Mediterranean hartwort, tzatziki, sowthistle, leek, sorrel, etc.) with finely chopped onion and garlic, tomato, salt and lots of hot red pepper. It is an ideal wine meze.

PASTITADA With rooster or veal. This dish smells of Corfu from miles away. It is a holiday dish. After sautéing the meat with the spices, onions, and garlic and adding red wine, it is cooked with cinnamon, bay leaves, nutmeg, freshly chopped tomatoes, tomato puree and sugar, while the thick rustic pasta is added at the end.

BERGAMOT Corfu Bergamot is a rare variety of citrus that has thrived on Corfu since antiquity. Its flavour is renowned the world over, as it is the basis for Earl Grey Tea. On Corfu it is mainly encountered in mansions or in areas where citrus trees are cultivated. whose recipe remains a secret to this day, and which adds flavour to traditional Phaeacian dishes. It adds colour and a unique „peppery“ flavour to traditional dishes. In the past you would find it exclusively at Karmela Deleonardou’s pharmacy, who inherited the recipe from her parents.

It is now sold at various shops and pharmacies on the island. Among the flavours one can identify sweet paprika, hot pepper, cinnamon, clove, nutmeg, allspice, bay leaves, etc. Its takes approximately three hours to prepare. CORFU SYKOMAIDA This is a spicy sweet with dried figs, ouzo, herbs and spices. It is served as a dessert, but more often as a meze. It is kept in fig leaves.

FOGATSA This is a traditional Corfu dessert with an intense aroma of mahaleb cherry and brandy. The recipe dates back to 17th century Venice and in the past it replaced bread during Easter. It is offered on its own as a dessert, but one may combine it with Corfu cold cuts.

MANTOLATO – MANTOLES This is a Venetian dessert borrowed by the Corfiots. Its name comes from the Italian word „mandorla“, and apart from almonds it contains a great deal of honey, a little sugar and meringue. Corfu mantoles are caramelised almonds with sugar and, sometimes, sesame. Renowned and delicious!

KUMQUAT This citrus fruit has an intense sweet and sour flavour. It comes from China and it is estimated to have started being cultivated in Corfu in the 18th century. It is usually encountered in its processed form, as a dessert or as a drink.

BOLSEVIKOS (BOLSHEVIK) This is a predominantly white and creamy Corfu dessert.

CHIMARIOS GINGER BEER It has an exotic flavour. It is not just a refreshment; it is a beverage with beneficial properties for your body due to the ginger it contains. Its slogan is „healthy thirst-quencher“ and it has been cooling down people of all ages since 1975 – and not just on Corfu, seeing as this product can be found in select shops around Greece.

CORFU BEER Corfu Microbrewery, the producer of Corfu Beer, was founded in 2006 by Spyros Kaloudis in Arilla, north-western Corfu.

In 2009 the first Corfu Beers went on the market and at present they are considered one of the most well known Greek microbrewery products.

Corfu Beers are all real ales – naturally produced and full of life. Fermentation and aging is carried out in special tanks for several weeks, without stabilisers, colourants and other chemical additives.

CORFU SALAMI This is like dry cured sausage with an Ionian Sea twist to it. It consists of 80 % pork meat, fat, cooking salt, sugars and spices. It is sold in logs.

NOUMBOULO This is the most popular cold cut on the island. Some people call it „kerkyraiko prosciutto“ (Corfiot Parma ham). Until relatively recently noumboulo was prepared at home and by butchers that knew the tricks of the trade.

Since the mid 1980s, Kerkyraiki Allantopoiia (Corfu Charcuterie Products) – soon followed by others – have been producing larger quantities, thus noumboulo has travelled throughout Greece and abroad.

CORFU BUTTER This is one of the most famous types of butter in Greece. It is made from 100 % cow milk, according to the traditional recipe used on Corfu. It is used on bread, in desserts and in cooking. „THE GOVERNOR“ OLIVE OIL It is also known as the oil of Governor Kapodistrias.

The olive oil production and distribution unit is located in Agios Mattheos, Corfu. The response it has received abroad has been great. The fruit that produces this specific olive oil comes from the island’s centenarian olive trees. Its impressive packaging looks like a perfume bottle.

BOTIDES These are the traditional clay pots that one might encounter in most of Corfu’s shops. Botides are made by professionals on the island all year round, for one reason alone: to be thrown off the balconies of Spianada and Liston during the „First Resurrection“ at noon on Holy Saturday. The tradition of the Botides is one of the most impressive Easter customs in Greece.

and and sea. Green and blue. Organised and isolated beaches. Marinas and small bays. Lively nights and tranquil days. Luxurious and lavish hotel complexes on the one hand, and picturesque hamlets on the other. It is generally accepted that Halkidiki disposes a balance that satisfies the taste of all its visitors, famous or not. For this reason it is a top holiday destination all year round. It has been the choice of royalty, politicians, movie stars, and figures of the arts and culture from all over the world.

During our conversation with Yiorgos Brountzas from the Halkidiki Tourism Organisation, we learnt the story behind the decision to build a luxurious hotel complex on the „second leg“ of the peninsula. Melina Merkouri, the story goes, was aboard the yacht of an entrepreneur of the era.

They were about to sail to the section of Mount Athos where women are allowed to disembark, in order to attend the millennial anniversary of the Holy Mountain. They came across rough

seas as they travelled and had to stop in a bay in the region of Sithonia. Melina Merkouri was so enthralled with the rare beauty of the landscape that she encouraged the entrepreneur to purchase and utilise the land. From then on she visited the „second leg“ every year, be it winter or summer.

You hear stories like this one everywhere. In the traditional tavernas of northern Halkidiki, in the seaside seafood restaurants of the „first leg“, in the hotels that specialise in catering to VIPs, in Vourvourou, in Kavourotrypes, on Sani Hill, etc.

Another frequent visitor was ballerina Margot Fonteyn, as well as internationally renowned Greek pianist Gina Bachauer, while Maria Callas had been recognised on several occasions by locals.

A handful of Beauty The BREAST is the embodiment of sensuality, seduction and female sexuality. Every woman has their own perception of perfection and many feel there is room for improvement. Those contemplating cosmetic surgery as a way to achieve their dream breasts can benefit from several newer and safer procedure possibilities

T

he good news first: more and more women in Germany claim to be satisfied with the form and firmness of their breasts. According to this year’s „Female Confidence Report“, the amount of German women that still find fault with something about their breasts has dropped to 40 %.

By comparison: the number reported by the „International Journal of Sexual Health“ in 2010 was around 30 % higher. Despite the turnaround, cosmetic surgeons are fielding evermore queries with regards to breast modifications. This is quite possibly due to the fact that the word is out: attaining the harmonious bosom to compliment one’s body and lifestyle has never been simpler or safer. The technical developments on this front are fast and range from 3D visualisation tools to innovative lightweight implants. The risks involved are negligible and the results have become so convincing that be it the beach or the bedroom, the difference between natural and modified is practically indistinguishable.

ARMED WITH INFO Breast enlargement is the most common aesthetic procedure undergone by women in Germany – carried out more often than liposuction and eyelid lifting. In fact, the Association of German AestheticPlastic Surgeons (VDÄPC) noted an increase between 2014 and 2015 of almost 10 %. Without exception, all the doctors we spoke to confirmed that their patients want to know more about their implant manufacturer since the „PIP scandal“. Here’s a quick recap of what happened: In 2010, it was revealed that the French company, Poly Impland Prothèse (PIP) had been using cheaper industrial-grade silicone in the manufacture of their breast implants for almost a decade. Compounding the problem was the fact that the implants were also found to have a 500 % higher chance of rupturing than ap-

proved models. The number of women in Germany who received the PIP implants in question totalled around 6,000. Tens of thousands of women around the world were advised to have their implants removed or replaced. The scandal has proven an eyeopener for many. „A lot of patients now gather information online, give serious thought to what they expect from the procedure and write down any questions they may have“, says Professor Ernst Magnus Noah, president of the VDÄPC and chief physician in the Clinic for Plastic Surgery within Kassel’s Red Cross Hospital. „Not just the implant manufacturer is discussed, but the entire procedure as well.“ THE SAFE WAY The two main types of implant remain those filled with a saline solution and those made with viscous silicone gel. The tissue-like feel of the latter has made it the standard. Their consistence is akin to a soft gummy bear and the breast retains its natural feel.

The surface of the prosthesis also plays an important role. „Very few implants with a smooth surface are used these days“, explains Dr Volker Alt, specialist for aesthetic and plastic surgery in Düsseldorf’s KöBogen Clinic. „These implants led to a significant increase in capsular fibrosis, also known as capsular contracture. This describes changes to the tissue surrounding the implant that can arise in the years after the operation, such as calcification, hardening and tightening. The mechanisms behind the complication are still not fully understood and those with signs of CC are advised to have their implants removed or replaced“, says the expert. It’s still not clear why, but rates of CC are lower in patients receiving prostheses with textured surfaces. Those contemplating having foreign objects surgically inserted within their bodies should also make sure their medical implant has CE certification and FDA approval. „Modern, high quality implants provide

greater form stability and have device shells consisting of up to eight layers of medical-grade silicone that prevent filler leakage“, says Dr Alt. They have a lifetime guarantee and don’t have to be replaced after 10 years like those in the past. The VDÄPC has also recently created an encrypted online implant registry in which doctors log the model and serial number of every prosthesis they use.

KEEPING ABREAST OF TOMORROW The innovative implants from Motiva currently being tested within a clinical study by Holger Fuchs at his facility in Hamburg could prove a milestone in biocompatibility. FAT TRANSFER Dr Caroline Kim, specialist for aesthetic and plastic surgery, shows examples of very naturallooking breasts saved on a computer in her practice located on the Bavariaring in Munich. One of her specialities: breast augmentation using the patient’s own fat. „The word hasn’t really gotten out yet, that one’s own fat can be used to enlarge one’s breasts“, says Dr Kim. „But I think that’s going to change rapidly over the course of the next couple of years.“ This is in no small part due to the fact that more and more women are unwilling to subject their bodies to synthetic substances. After chemotherapy, many

butes. Professor Günter Germann, specialist for aesthetic and plastic surgery and chief physician in Heidelberg’s Ethianum Clinic, also relies on hi-tech solutions. In recently begun scientific trials, the Ethianum has become the only clinic in Germany to provide selected patients with a new generation of lightweight prostheses. These so-called B-lite implants weigh around 30 % less than their conventional counterparts. Currently only available in a restricted range of sizes, a proportion of the filler gel in the B-lite implants is replaced with hollow micro silicate pearls. According to Dr Germann, „because the manufacturing process is very complex, they’re priced at around 1,600 to 1,800 euros, double that what conventional implants usually cost.“ He’s already provided 15 patients with B-lite prostheses and says the advantages are obvious: The skin and the tissue surrounding the breast that’s responsible

breast cancer patients are also on the lookout for a more natural reconstruction option. The outpatient procedure uses the patient’s biological matter exclusively, requires no scalpel and leaves little to no scaring. Another advantage: in contrast to silicon implants that don’t assume the body’s temperature, breasts formed with fat are naturally warm. Costs start at around 6,000 euro depending on complexity. The downside: the procedure isn’t suitable for slender women that have so little fat depots on their stomachs, waists or thighs, that liposuction isn’t an option. „For this reason, the method is restricted to women with a BMI of at least 19“, explains Dr Murat Dagdelen, specialist for aesthetic and plastic surgery and director of the Medical Inn Centre in Düsseldorf. Risk factors are minimal. Patients that smoke cigarettes should refrain from doing so after the procedure as this negatively impacts the blood supply

to transferred fat. Women are also told to maintain their weight in the first months after the augmentation as dieting will shrink the breasts. Once the transferred fat has „settled in“, it reacts just like any other fat in the body. „One of the aspects that turns women off the procedure is the timeframe. Several appointments are usually required to achieve the desired augmentation“, says Dr Kim. „Using a cannula, we are currently able to transfer approximately 150 millilitres per breast per procedure. When all goes well, patients can then count on a permanent retention rate of between 60 and 70 % of this.“ The method has spawned a complimentary scientific procedure: stem cell fat production. Although the practice is currently not allowed in Germany other than in approved scientific studies, doctors have

decide between three common incisions to insert implants: inframammary (via the natural crease under the breast), transaxillary (via the armpit) and periareolar (via the pigmented area surrounding the nipple). Inframammary incisions afford the best operating conditions and the breasts usually hide the scars which can be between 3 and 6 centimetres long. Transaxillary procedures have the advantage of leaving no scars in the breast area, however, correctly positioning the prosthesis is considered more difficult. Periareolar incisions require cutting around the duct tissue and access to the breast interior is comparatively restricted. Each method has its pros and cons which doctors discuss with their patients, as well as whether or not the implant should be placed behind or in front of the breast

Dr Kim explains: „Fat is removed from the patient before half of it is replaced with catalysts, enzymes known as collagenase. This provokes the release of more stem cells.“ Because the cultured fat has positive attributes including more blood vessels, its retention rates are higher and once approved, it’s expected to become a competitive alternative to implants. Doctors performing fat transfers also claim that it is the ideal biological matter for modelling and forming. The only advantage of implants is their firmness. „But it’s this unnatural consistency that most women consider a disadvantage if anything.“ INCISION DECISIONS As far as operations go, be it breast enlargements or liftings, not much has changed in the last years.

Let’s begin by talking about your work.

Describe your typical day.

I usually wake up at 7 am. I take a herbal juice, check my e-mails and read the daily newspapers while having a healthy breakfast. Every other day I will spend an hour and a half with my personal yoga trainer to keep fit and escape from any daily stress.

Afterwards, I like to take an energising shower to revive my body, and get ready for a busy day at work.

First stop is usually our head office in the center of Paris, starting with phone calls. I also have meetings with our Marketing & Product Development Director to talk about new product development, upcoming product launches and activities, and take important decisions about company strategy.

I generally have a working lunch and take calls from journalists about the Anne Semonin brand, the products and our spas.

In the afternoon, I usually spend some time looking at our current design projects. Anne Semonin is now located in 39 countries and over 200 properties worldwide. As I have a passion for spa design, interior decoration, art and fashion, I like to put some time aside to think of new ideas and concepts, which help to make each Anne Semonin Spa unique.

After work, I often visit art exhibitions, attend charity dinners, or simply have dinner with friends.

I am passionate about my job, but I still make time to take care of myself because this is especially important for those of us working in the Spa & Beauty industry. I also devote a lot of time to my family and closest friends.

What do you like the most from what you do?

The research that goes into new products and treatments, creating new concepts from scratch and everything linked to our brand image and development. Over the last 30 years we have transformed the Anne Semonin range, and we are now stocked in some of the most prestigious locations such as Harrods in London, Tsum in Moscow and online at net-a-porter.com Let’s talk about the project you are up to now.

What’s new at Anne Semonin?

We launch innovative skincare products every year.

Most likely, it must be the Beaux-Arts area (7th district of Paris) where I did one part of my studies (École des Beaux-Arts and École du Louvre) and where the most famous art galleries are situated. I also used to walk down the Marché aux Puces where I have always found beautiful limited editions of design furniture.

Describe to us the most marvellous view you have ever seen.

I love the sunset on the horizon of the Maldives Lagoon, surrounded by a deserted beach. And I am very sad that unless we all take serious steps against climate change, this beautiful place will disappear in a few years !

Nothing is more delicious than a dish of pasta!

Describe a memory from your childhood holidays.

I have fond memories of the family house owned by my grand-mothers set among the Bordeaux vineyards, where I had the joy to spend my school holidays with all my cousins.

Tell us about a small, sublime spot you have visited.

A historic place: the Hotel La Colombe d’Or in

St Paul de Vence (in Provence area, south of France). A historic place, with the finest works of paintings from masters (paintings from Miro, Braque and Chagall) on all hotel walls, a true museum ! I love this place for its authenticity and for that special light of Provence, not to mention the singing cicadas in the background.

Which is the „smartest“ hotel you have ever stayed at?

No doubt, the Aman Tokyo.

You gave your heart to … my love.

Who is the most interesting individual you have met on your travels?

I have met a lot of interesting people during my travels but the most memorable conversation I had was with Dalai Lama. I admire his wisdom and philosophy.

When preparing your suitcase, what do you pack first?

ANAEROBIC EXERCISE Take a bottle full of water and, holding it out in front of you at shoulder height, begin swimming freestyle, kicking your legs quickly for 30 to 45 seconds, always ensuring that your head is out of the water. This is a very good exercise for the legs (triceps and biceps), as well as for strengthening the shoulders. If you can manage it, repeat but in the backstroke position, placing the bottle above chest level, at shoulder height.

THIS SUMMER, AIM AT KEEPING FIT, FULLY EXPLOITING YOUR TIME ON THE BEACH.

DIPS Find a rock / bench / sunbed / chair and support your body with the palms of your hands turned downwards and your outstretched arms at shoulder height.

Very slowly lower your body, bending your arms until your elbows are at a 90 degree angle and then quickly straighten them back to their fully stretched position once more. The secret of success is to modulate all your weight with your arm movements, while holding your pelvis and knees steady. Attempt to complete four sets of twelve repetitions at a relatively quick pace. This exercise strengthens the biceps and triceps of the arms, as well as the shoulders.

BOUNCES Also known as „the kangaroo hop“, leg springs with both legs and the simultaneous forward movement of the body, and on the spot hopping on one leg are ideal exercises for the beach thanks to the resistance from the so sand, which significantly increases the degree of difficulty, facilitating improved balance and the strengthening of leg joints.

JOGGING IN THE SEA With the water up to your knees, try to run as quickly as you can, covering whichever distance you wish. Your leg and arm movements should be fast and intense. The extra weight experienced from the water resistance makes things harder and results in this exercise being more effective, while the buoyancy of the water significantly lowers the pressure on the joints and bones. This exercise has multiple benefits: leg strengthening – in particular the triceps –, improved stamina and positive functioning of the cardiorespiratory system.

Nevertheless, our being unaware of the fact that we are perspiring makes such exercise more agreeable“, stresses Georgos Vaiou.

RUNNING IN SOFT SAND This is traditionally the most effective, tried and tested exercise for the whole of the body.

Running in so sand requires 1.5 times more energy than running on firm ground, thus making you stronger. The best spot, at least to begin with, is the wet sand next to the water’s edge. If you prefer dry sand, lower your speed and shorten your stride length. Tip: Run for ten minutes in the so sand, making for vigorous exercise but at a slower speed. Continue for a further ten minutes on firmer sand, near the water’s edge, repeating this exercise pattern for as long as you can endure it. This type of exercise will help you to burn off more calories.

Swim freestyle for 8 minutes, taking a single breath a er four arm strokes. This is a very good breathing exercise.

USEFUL ADVICE TEMPERATURE. Select times of the day when the temperature is relatively low. In high temperatures the load on the cardiovascular system significantly increases. PROTECTION FROM THE SUN. Always use sunscreen and wear a hat, especially if you choose to exercise around midday.

HYDRATION. See to it that you have 1.5 litres of cool water with you and are near a shady spot. Even slight dehydration can detrimentally affect your metabolism while exercising. A COLD SHOWER. Strangely enough, cold showers assist the body by burning off fat more quickly. That is why you should prefer them, not just a er training but also following your customary swim in the sea. TO SUMMARIZE, if you have any type of problem with your waist, knees, shoulders or any other point in your body, it is essential for you to consult your orthopaedic specialist prior to commencing any kind of exercise. Moreover, to achieve positive results, a basic precondition is a relatively balanced diet. The above programme is ideal for keeping you in good shape while on holiday, and, therea er, back home facilitating a smoother transition to your daily physical activity.

The culprit behind the blemish is Mother Nature: Our extremely elastic connective tissue consists of parallel fibres between which fat cells are located. When these are filled, they press their way through the collagen fibres. The unfortunate result is the uneven surface we call cellulite. Female hormones also play a decisive role: the higher the oestrogen levels, the higher the fat production. A new weapon in the battle on the bulges is a treatment that utilises acoustic waves emitted by the innovative device, „Swiss CellVibe“. According to Dr Hans-Peter Schoppelrey, dermatologist at the Haut- & Laserzentrum (Skin & Laser Centre) an der Oper in Munich: „The Swiss CellVibe makes it possible to firm up tissues without any injuries to the skin. This is achieved by pressure impulses that travel through the tissue after being emitted in quick succession.

The treatment triggers the body into shifting its metabolic processes into high gear that in turn accelerates fat reduction.“ Before undergoing a „round of sound“, the first order of business is to determine the grade of the cellulite. The Swiss CellVibe is then adjusted accordingly. A contact gel designed to enhance the transmission is then applied to the skin and the treatment can begin. The doctor then moves the applicator in circular patterns over the trouble spots for approximately half an hour. An anaesthetic is not necessary and the recovery time is zero.

HOT STUFF Another innovation that uses waves to combat cellulite is the „BTL Exilis Elite“. The device relies upon a combination of radio frequency and ultrasound. „During treatment, the machine warms the

INTO SHAPE?: WE’VE DONE THE LEGWORK FOR YOU body’s fat and connective tissues to a temperature of around 44° Celsius“, explains Dr Oliver Schuhmacher from the Kö-Bogen Clinic in Düsseldorf. „The heat causes the collagen fibres to contract which leads to an immediately noticeable improvement to the smoothness of the skin surface.“ Simultaneously, the high temperature simply melts the fat cells which are then eradicated via the lymphatic system. While the thought of cooking one’s cells might sound a little drastic, the treatment can be compared to a hot stone massage and is absolutely pain free. As with the CellVibe discussed previously, there is zero recovery time. The first significant improvements can be seen after three treatments and the final results can be enjoyed around eight weeks after the last heat wave.

COLD SHOCK EFFECT In addition to heat, fat cells also have an aversion to the other end of the temperature spectrum: cold! This little fact is something Zeltiq’s „CoolSculpting“ takes advantage of. The patented cooling process behind it is called Cryolipolysis. „Fatty tissue can be destroyed by cooling it down to 4° Celsius. The body then eliminates it via the lymphatic system over the next two to four months“, explains Dr Hans-Ulrich Voigt from Munich.

This is how it works: An applicator with a vacuum pump draws the area with the undesired fatty tissue between two cooling elements before dropping the temperature down for around an hour. The process is pain free. Around four sessions a fortnight apart are recommended for optimal results.

SAYONARA SADDLEBAGS! Slenderness alone is no guarantee and despite the slimmest of silhouettes, lots of women suffer from bothersome bulges on the thighs: the so-called saddlebags. Once again, the culprit is Mother Nature. „The body decides where to store fat at an early age. The total number of fat cells in the body remains relatively constant and once a fat cell has been formed, it is pretty well impossible to get rid of it under normal circumstances“, explains Dr Gerhard Sattler from the Rosenpark Clinic in Darmstadt.

Although fat cells can be „emptied“ through dieting and exercise, they’re quick to fill up again when you stop watching what you eat and let your training schedule slide. A vicious circle that is best broken with liposuction – the surgical removal of fat.

Dr Sattler: „During liposuction, disproportionately high levels of fatty tissue between the hypodermis and muscles are removed – and that long term.“ The expert prefers to use the local pain management technique known as tumescent anaesthesia. What’s special about it? Bigger areas can be locally targeted with large volumes of highly diluted anaesthetic. After the fat cells soak this in, they swell up and are then easier to extract by suction. Another advantage of this method: the fluid tightens the connective tissue fibres that hold the muscles and skin, making it difficult for either to be accidentally vacuumed during the procedure. Restricting the suction to fat only helps avoid the formation of unsightly bruising.

INFO & COSTS: The procedure is usually carried out on an out-patient basis but many doctors advise staying in the clinic overnight afterwards for observation. Most patients can go about their daily business after three days and the body’s healing process is complete after around four weeks. TRANQUIL ANKLES Culottes and 7/8 pants are great if you’ve got slender, elegant ankles. If you’re not blessed with such – and are also possibly frustrated by spider veins or „cankles“ – it’s a situation you don’t have to stand for any longer. One method that’s proven helpful for attaining slimmer ankles is laser lipolysis. „Treating fat deposits on the ankles with common suction procedures is very difficult because the amount stored there is relatively small and the risks of injury are high“, says Dr Afschin Fatemi, specialist for dermatology and head of the S-Thetic Clinic Düsseldorf. The „SlimLipo-Laser“ is considered both effective and less invasive. What makes this laser special is the two different wavelengths it emits. The first is designed to separate the fat from the surrounding tissue while the second gently heats the skin to tighten it. The detached fat cells are removed via ultra thin metal tubes – or cannulae. As far as other blemishes go, these methods can ensure your efforts are „not in vain“: not only are there laser treatments on the market that provide non-invasive solutions designed to combat spider and varicose veins, but the MFL laser developed by Dr Fatemi can remove wrinkles and improve the complexion. While standard lasers can penetrate the skin up to a maximum depth of 1.5 millimetres, his works by reaching the much deeper skin layers.

then, that this problem zone can be tackled medically. According to Dr Volkmar Rippmann, specialist for reconstructive and aesthetic plastic surgery in the Metropolitan Aesthetics Clinic Berlin/Cologne. „Fat dissolving injections represent an effective method of dealing with local fat depots in the knee area.“ By way of a needle, special substances are injected into the fat deposits which then begin to break down for long term results. Liposuction is another method that can successfully slim down the knee area. Particularly effective: ultrasound assisted liposuction.

Also known as „ultrasonic liposuction“, this form of fat removal claims to fight on two fronts: in addition to sucking up excess fat, the ultrasonic waves have a lifting effect. „For a lasting success, patients should wear compression hosiery for at least 8 to 12 weeks after the procedure“, says Dr Rippmann. „This is very important because it creates the even pressure necessary for the swelling to go down and the proper reseating of the skin.“ Many women are disturbed by the notorious „kninkles“ – wrinkles in the knee area. This can be treated by a lifting surgery that removes excess skin. „The surgery only makes sense if a significant amount of excess skin is present“, says Dr Rippmann. „It should also be mentioned that the procedure usually leaves visible scars, as the unavoidable movement of these joints during the healing process often leads to less than ideal healing.“ INFO & COSTS: Fat dissolving injection: prices start at 250 euro. MOURGA HAS MADE THE BIGGEST SPLASH IN THESSALONIKI

T

he recent intense buzz on Thessaloniki’s dining-out scene is a pleasant surprise. A new gastronomy culture is being born through small restaurants that are reinventing the concept of eating well in a very cool way, and with a lot of heart. Almost all of them are off the beaten track, searching for the trail and history of the city in areas that have been overlooked, once flourishing with craftsmen’s small workshops and cottage industries, or even in working class neighbourhoods that are starting to change. We don’t yet have our own Tribeca-NYC, Marais-Paris or Shoreditch-London, where old underdeveloped neighbourhoods became rising stars, but all these new bistros are starting to imbue areas which the locals never visited a new air, since they have become the hang out of those in the know. In these restaurants flavours take on a novel modernity based greatly on popular tradition, and foreign elements are introduced to the dish in a supportive fusion. Reasonable prices are a given.

FOOD

The restaurant that has made the biggest splash in Thessaloniki recently is MOURGA, just up the road from Acheiropoietos Church. This place is different, like a post-modern traditional Greek coffee shop, with the mosaic floors and old school chairs we are all familiar with. However, Yiannis Loukakis, the sui generis cook who created it three years ago, has transformed its kitchen into a „new-monumental“ work of art, with the hanging bronze decorations, pots and pans of varying shapes and sizes. A different kind of art, truly unique, can be found hanging on the walls, like this winter’s powerful photographs by Nikos Vavdinoudis of the kodonofori from the villages of Drama. Here Loukakis crafts dishes such as tuna pancetta with lentils – when trying to describe which the only words that come to mind are „divine junk food“ – which finds the delicious fat from the fish’s belly melt in your mouth, accompanied by delectable Beluga lentils. Raw bonito in a cream of olive oil and lemon juice is a happy marriage between Greece and Japan, while you will have a hard time finding better fried kalamari. It arrives with its flesh showing, milky and fine, contrasting its singed tips that have been caught in the fire, paired with shiitake mushrooms that are as sweet as marrow, and playfully decorated with lemon and rosemary.

The menu changes almost on a daily basis, depending on what is good at the market. ♦ Further still up the hill, at the foot of Ano Poli (Old Town), is NEA FOLIA on Aristomenous Street, another new „unmissable“ venue. This old traditional coffee shop from the 1960s has retained the vintage feeling of an old grocery store, with old mosaic floors, coffee shop chairs that have been given a pop onceover, and shelves stacked with groceries that are used in the kitchen. The fine selection of cheeses from all over Greece overflowing from the fridge is a temptation – and an extensive one at that – that is complemented by excellent cold cuts. This is how Chef Yiorgos Chlouzas has fun mixing the ingredients he finds at the market with his own ideas, forming the day’s menu, handwritten on paper. One day you might get rocket salad embroidered with pears and Ios

island graviera cheese in berry vinaigrette and spicy soutzoukaki that adds a pleasant intensity, beautifully contrasting the fruit, and the next a variety of greens with different tastes and textures, the brightness of spring onion and lots of pomegranate seeds.

You might encounter sour trachanas with poppies, heartwort and chicken, rooster with traditional chylopites pasta, eggs with kavourma cured meat and red pepper flakes, veal with caramelised pears and curry. Surprise never fails to join you on your date at „Nea Folia“ and it is always tasty. ♦ DUCK chose to lose itself in an industrial deserted part of the city that even GPS maps give up on and its daring wager paid off. Chef Ioanna Theodoraki and her husband Stefanos Antoniadis wanted to take people out into the fields, as they themselves have said, and they fully achieved their goal, since their restaurant is still a „must“. The major innovation of this beautiful space is that the kitchen is not just open plan; it is wide open, since the tables are right next to what looks like a tasteful home kitchen.

It is decorated elegantly with antique style pistachio-coloured chairs, while a padded leather ottoman rests in front of the main service table. The yard and vegetable garden further entrench the feeling of home. There is an indicative menu every day, but if you speak with Ioanna she might make your dinner the

way you like it. Fillet steak can always be tartare or rare, a tuna steak can be ceviche or it can go on the grill, wild mushrooms can be sautéed or add their flavoursome depth to a risotto. Foie gras is usually available due to the name. But most important is the super-friendly atmosphere in this mystic place of enjoyment that will have you visiting time and again due to its uniqueness. ♦ Moving to the upper Ladadika district, it is truly amazing how a completely uninteresting 90s-style space was turned into a bistro with the warmth of slightly Scandinavian office, with designer lightcoloured wooden chairs settled on mosaic floors.

It is tiny, but the message of its aesthetic concerns are made clear by the cinnamon-coloured cube with embroidered crosses that is exhibited above the open kitchen, the constructivist paintings and Mikhail Bulgakov’s quotes from „The Master and Margarita“ (which lends its name to the restaurant MAITR&MARGARITA) such as, „The tongue may

hide the truth, but the eyes – never“. Carrying forward Thessaloniki’s tradition of loving select produce, their collections of cold cuts, cheeses and salted products is addictive, while their wine list includes lots of choices from small Greek wineries, served using a Coravin and by the glass.

Chefs Lambros Rossios and Nikos Lalaridis look at Greek flavours creatively, at times exploring their finesse and at others diving into comfort food. The steamed devilfish with fennel and leek served with estragon lemon sauce is famous and delicate. This finesse might take the form of a cold melon soup with white chocolate, tsalafouti cheese and salty peanuts. The mezes are original, with corn flour pita cones filled with beef, chickpeas and barrel-aged feta cheese or roasted aubergine dip with marinated grilled octopus, fennel root and mastic oil. The salads are unusual – purslane with plums. The comfort foods featured – Karpathos island macaroons with loutza cheese, honeyed onions and staka cheese, pork cheeks with molasses and dates on buttered katsamaki (Macedonian polenta), or wheat risotto with oxtail, aged Cretan anthotyro cheese and truffle oil – are deeply flavoursome. ♦ CHAROUPI is one of the new restaurants making some noise in the Ladadika district. Firstly, due to its appearance, which is quite minimal, both in the widely recognisable subtractive sense, as well as in the sense of repetition, the use of certain motifs – in this case, small flower pots, wine bottles, and ceramic vases. The beetroot, chicory, pickled-bulb salad is decorated with carob-flour rusk crumbs, roasted sesame seeds, pink pepper and xygalo creamcheese. The myzithra pie is almost completely black, as it is made with carob flour, sprinkled with white and black sesame seeds and drizzled in honeyed

carob syrup. The dolmadakia are served with savoury strained yoghurt ice cream and fresh Cretan cheeses, the rabbit is fried in garlic and rosemary with a molasses sauce and mashed roast aubergines and xinochontro (ground wheat with goat’s milk), while the braised Sfakia lamb with staka is served with skioufichta carob flour roux pasta. And seeing as carob seals many flavours inside it, he also makes carob flour filo pastry sarikopita (myzithra cheese pie). ♦ Above Egnatia Street once again, inside Ptolemeon gallery, three friends, Antonis Moustakis, Vassilis Kyziridis and Savvas Michailidis opened a bar-restaurant, EXTRAVAGANZA, whose scruffy modernist decor and hip cuisine is a hit. Wood and metal tables, mix „n“ match chairs, walls that look like earthy stucco, avant-garde paintings, and the smokers find themselves at the outer tables of the graffiti covered gallery. On the balcony, a small old-school central-European style sitting room precedes the restrooms, radiating the warmth of the entire restaurant on a Sunday afternoon, when it fills up with several groups, couples and families. Antonis, the chef, has the knack of cooking both comfort food and clever fusion cuisine. For example, he will stuff crisp steamed „Cretan“ bao buns with apaki cured meat, tomato marmalade and cream of graviera with staka, slowcooked eel with sweet soya sauce like an enormous piece of sushi served on Japanese rice with marinated seaweed, roast chicken drumsticks on a legume mix of lentils and chickpeas and a modest green curry sauce (and the dish is Greek, not Thai), while his delicious burger is made with kavourmas cured meat, using what he calls a „kavourma-patty“. His fried potatoes with grated graviera cheese and truffle oil are incredible and the Bloody Mary is a perfect accompaniment for your meal.

The secrets to achieving total cuisine Michelin-starred ETTORE BOTRINI has captured the very essence of Italy in crafting the menu of Fresco – simple, fresh food, bursting with creativity ttore Botrini has a simple way of describing his culinary philosophy. „Total cuisine,“ he says, with the accent of a third-generation family of Tuscany restaurateurs brought up on cosmopolitan Corfu. „We try to give to the client 100% flavour.“ „After all these years,“ he expands. „I have learned that less is more. The produce gives us the technique, it’s a simple as that. We use the very best, always within season and touch it as little as possible.

But it must contain our personality, and respect our traditions. We look back, but with a fresh eye to the future. And always try to give people something they have never tasted before.“ How could it have been any different? Alongside the multitude of influences on Corfu (not least Venetian), he was exposed to the cuisine of France, Spain, Morocco and Tunisia through his father – a club Med Chef during its heyday – and on travels afterwards.

But it doesn’t take long to understand that, where food is concerned, his heart beats for Italy.

So much so that Botrini has become the standard-bearer for Italian cuisine in Greece. In orchestrating the evolution of Etrusco, the Corfu-based restaurant bearing his father’s name, he drew on the experience of working alongside his three Michelinstarred friend and mentor Martin Berasategui to achieve Michelin-star status of his own, and went on to establish the highly regarded Botrini’s in Athens.

More recently, he created the menu for the Ikos Resorts’ Fresco restaurants, capturing the freshest flavours of Italy in his authentic yet innovative style. „We create dishes from all around Italy – from

Sicily, Napoli, everywhere,“ he says. „Very light – because it’s summer – and always with respect to the produce and season. This is our philosophy at Fresco. Fish, meat, vegetables … dishes using excellent produce, simply made. And originality. Pane carasau with the best culatello (a traditional Sicilian flatbread with aged ham) – to which we add a mustard of apples. Very simple but the flavour is amazing – an explosion in the mouth!“ When carbonara is on the menu, he explains, it is made with seafood.

And the Corfiot-Venetian specialities – bourdeto, sofrito and pastitsada – are „absolutely authentic but more evolved, lighter.“ This, he says, is the evolution of Michelinstarred cooking. Where once it was all about beef fillet, foie gras, turbot and caviar, the humble sardine can now be the star of the show. „But it has to be the best sardine,“ he adds emphatically. „Bursting with creativity.“

efteris Lazarou points a thick finger to his temple, then his eyes and lastly his heart. „These are what you need to cook well,“ he says and it’s almost as if his characteristic salt-and-pepper moustache bristles with excitement at the thought.

He might as well have added olive oil, tomatoes, basil and garlic – the common ingredients of his formative years as a chef in Italy and Greece. And fish, of course.

Over the last 30 years, Lazarou has established himself as the undisputed leader in creating culinary magic with seafood in Greece. His restaurant Varoulko, in Piraeus’s postcard-pretty port of Mikrolimano, has rightfully boasted a Michelin-star since 2002.

There could be no more natural choice to create the menu for Ikos Resorts‘ à-lacarte Ouzo restaurants – an opportunity which, he says, he grasped with both hands. „As a drink, ouzo is Greece. It’s the sea, the sun. It’s letting sweet thoughts drift over you,“ he explains. „And so I began to think about this further, deciding that Ouzo should go towards meze.

So Ouzo perfectly marries my philosophy around seafood and good company: hospitality, a love of food, meze, Greece and enjoyment.“ When asked to put this philosophy on a plate for us, Lazarou duly obliged with a seabream dish that, he said, fully represents Ouzo. „Look!“ he points out. „A thin slice of sour dough bread coats one side of the seabream fillet, gently pan-fried first to allow the smoky notes to penetrate the fish.“ „And now for the marriage,“ he continues, indicating a mound of fine, rust-coloured dust on the plate. „Tomato dust!

There’s a rule in my kitchen: only the chef throws things away. No one else.

So after peeling tomatoes, we oven-dry the skins and turn them into a dust.

So easy and delicious.

It’s all the essence of the tomato.“ And then a tour of the four „marmalades“ artfully assembled around the fish: sweet pea puree, smoked aubergine, carrot and tomato. „I could have combined them to create the ultimate taste that accompanies the fish, but I leave this to the diner,“ he says.

The arrangement is a thing of beauty. What appears a casual swipe of pea puree in fact transforms into the shape of a fish. And of course those accompanying flowers are edible.

That it resembles a piece of art is no coincidence. „A recipe, for me, comes from an image of the whole dish, not of individual parts,“ Lazarou says. „I can’t explain it. It’s like a talented painter. They paint what’s behind the picture. What you see is in front.

And when I create a dish, I don’t see myself … I see the expression of the person who is going to eat it.

Being a mixologist at Ikos Resorts is to find yourself at the centre of the guest experience. And it’s a task that Aristotelis Papadopoulos, multi-award winner and co-owner of „soul shakers“, a leading bar school in Greece, has taken to heart. His cocktail menus shout colour, imagination and style – and, of course, something for every taste.

It is one thing to be locked up in a luxury cage, at a distance from the land you are visiting, and it is a completely different thing to take in a unique location with beautiful luxury details, that add a certain different aura to your stay. It is true that luxury succeeds in making you feel special, however what is of increasing importance is that your journey and stay provide you with unexpected, powerful emotions.

These important developments are taking place as the „weight“ of the Millennial generation is increasing and after significant changes in peoples’ mentality have taken hold. In the past, concepts such as „expensive“, „exclusive“, „status symbol“, „privileged“, and „complacently glossy“

They turn more to travel and collecting amazing experiences, which will increase their own „value“ on social media. And since travel is the main path down which they search for the new, meaningful form of luxury, apart from powerful experiences, they are also attracted by the potential of being granted access to places, things and people not accessible by just anyone, and which will inspire them to succeed in their life goals. Thus, today’s demanding traveller must be perceived as sophisticated explorers who want to enjoy new cultures and local traditions on their holidays, involving the arts, folk-tales and luxury products that they will find at their destination, and will express a unique tradition and fabrication technique. They want to go onto farms and taste amazing goodies, fish with the fishermen, enter kitchens and cook with renowned cooks, go into small workshops, crawl under the skin of local communities and feel them at their best. This type of journey goes beyond marble bathtubs and golden taps.

It provides one with the possibility of breaking through to a new destination and enjoying it without the pressure of time, experiencing a charming stay, exceptional tastes, and meaningful knowledge, without the standardized boredom provided by mainstream guides.
