From the Editor December Welcome to the Central Coast in December! It’s time to celebrate, going on holidays or partying with Family and Friends and offcourse the BIG one Christmas. I am also celebrating that I have found a Fantastic Butcher that has his own SMOKE HOUSE. Nestled in at the Peninsula Plaza Woy Woy, the Ham is one of the best I have eaten. The variety of sausages will also impress. From the Traditional to the exotic, most are Gluten Free. I have tried 4 different varieties and will try them all as I love Sausages. If it is something different you are after here is an example: Crocodile, Roo, Emu, Venison, Camel and Wild Boar... Then there are Mark’s Award Winning Sausages and believe me there are a few of those to try too. Back to the HAM... You can enjoy this all year round as it is made Fresh all the time, not in the freezer but straight out of the Smoke House.

Festive Fun on the Central Coast this December! December means one thing – Christmas on the Coast! As you’ll see with the “What’s On” list over the page, there’s more to celebrate this month than you can poke a candy-cane at! The last month of the year kicks off with a big weekend – the Tuggerah Lakes Mardi Gras Festival celebrates its 60th anniversary on Saturday 3 December from 1pm at The Entrance. The Central Coast Concert Band also celebrates a milestone – its 80th concert – on Sunday 4 December at the Laycock Street Theatre, North Gosford. Plenty of live entertainment including Catherine Britt, Dragon, Israel Cannan, The Black Sorrows, Diesel, Richard Clapton, and Dirty Dick’s Theatre Restaurant will be crammed into a month bursting with talent!

Festive feasts abound on Sunday 25 December, with a range of Central Coast dining venues featuring Christmas Day Lunches. Head to www.visitcentralcoast.com.au to view the full list of options, including special Christmas fare at Mingara Recreation Club and Crowne Plaza Terrigal! With Christmas wrapped up for another year, there are plenty of ways to ring in 2012. The Entrance hosts its annual family-friendly New Years Eve Celebrations in Memorial Park, while the Gosford New Years Eve Festival returns again, with horse racing, the Mariners v Gold Coast Football match at Bluetongue and live entertainment on the waterfront. Both locations conclude their celebrations with spectacular fireworks displays over the water at around 9pm. The Beachcomber Hotel at Toukley also hosts a huge “NYE” night with bistro specials, nightclub from 9pm and midnight fireworks.

For a New Years experience with a difference, don’t miss the Peats Ridge 2011 Sustainable Arts & Music Festival. Held annually over three days at Glenworth Valley, this extraordinary event attracts huge crowds each year and features incredible musical talent, with ARIAaward nominated Gotye the headline act at this year’s Festival. Peats Ridge runs from December 29 to January 1. For information on this event and so much more this summer, make sure you visit our website, or call into any of our Visitor Information Centres! Phone: 1300 132 975 for more information visit www.visitcentralcoast.com.au

...will take you there!

Christmas celebrations are the highlight of a month packed full of high-energy events across the region. From communitybased Christmas celebrations in Wyong and Blue Haven to major Carols events at Gosford’s Bluetongue Stadium, Memorial Park at The Entrance and Mingara Recreation Club, there’s something for all the family to enjoy! The Central Coast Christmas Fair takes place at Terrigal on the December 11, and a special “Christmas Party Picnic” Horse Racing Day will be held at Gosford Racecourse on December 17.

Seacoast Fishing Buy the freshest seafood on the coast. come and try our locally caught seafood. On Thursdays, Fridays and Saturdays our boys Peter Mark and Blane, bring in their daily catch for Sue and staff to sell direct to the public. Coming up to our warmer months Nov Dec Jan Feb our lobster season is under way. November the boys put out about 200 traps for lobsters and as the water warms the lobsters start to move out to sea in search of food after being in hibernation over the winter period. Our stocks of live lobsters are kept on our premises in large tanks for the public to choose. We then can cook them or the customers can take a live lobster home. We also catch and sell snapper, sea bream ocean jackets and trevally. NZ salmon, ocean trout, and fresh crystal bay prawns or fresh tigers or kings (what ever is the best this week) we buy in. Peter has been fishing for about 28 years and has plenty of experience, knowing where to place his traps, Mark is our youngest partner and is very knowledgeable also and Blane is our excellent deckey. Please call us anytime for updated catch info on : 43686160 Patanga Street, Kincumber

To honour motorsport legend Peter Brock a very unique rose was released in time for the V8 Supercars at Bathurst, NSW. September 2011 marked the fifth anniversary of Peter’s tragic death and the Peter Brock Foundation Rose is a growing symbol that honours the legacy of “Brocky” and continues his passion for helping others. When Peter retired from full time racing in 1997 his driving passion and energy took a turn away from the track to establish the Peter Brock Foundation. His kindness, drive and selfless devotion in giving back to society made a real difference to many Australians who needed a helping hand. Danees Denman, Director of the Peter Brock Foundation said “We are delighted and extremely honoured to be associated with this magnificent blooming rose, a truly perfect rose. The Peter Brock Foundation Rose acknowledges Peter Brock’s integrity and tireless dedication to provide a better quality of life for those less fortunate. Peter Brock was a wonderful individual who captured the heart of all those he meet. The Foundation hopes this rose will capture your heart. The Peter Brock Foundation is very grateful for Knight’s Roses inspiring passion and unyielding support to make a difference”. For two years Knight’s Roses have been propagating this magnificent rose. “This has been one of the most exciting projects we’ve ever undertaken. Out of the hundreds of rose varieties that we have grown this is by far the most outstanding red rose I have ever seen. When I think of Peter Brock, I like most Australians immediately remember the famous number 05 and the unmistakable bright red Holden race cars. This stunning red rose is big on impact just like the late great Peter Brock” said Knight’s Roses Director Daniel Knight. Peter’s brother Lewis Brock is very proud to represent the Brock family

in the release of the Peter Brock Rose. “Peter came from humble beginnings in Hurstbridge, outside Melbourne, to dominate race tracks around Australia and the world. He was a living example of the power of dreams and a great spokesperson for the underprivileged and downtrodden. His dream lives on in this rose”. To continue the legacy of Peter Brock, Knight’s Roses will proudly donate a percentage of the purchase price of the Peter Brock Foundation Rose to Variety, the children’s charity. Jack Cannons AM, National Chairman of Variety said “Variety, the children’s charity is proud to be associated with the Peter Brock Foundation Rose. Peter will be remembered as a generous man who did so much for charity. His legacy will continue through the sale of this beautiful rose and we are very grateful that a percentage of the proceeds will go towards supporting special needs children across Australia”. Knight’s Roses are one of Australia’s largest wholesale Rose suppliers, producing around 500,000 roses to nurseries in every Australian state. “As a young kid growing up in Gawler, I always admired Peter Brock. To have the privilege of actually naming a rose in Peter’s honour is an amazing opportunity. I’m also very proud to be taking the rose from Gawler to Bathurst for all to see” said Daniel Knight. The Parlour Room From Wyong District Museum & Historical Society 1 Cape Road, Wyong 2259 Phone: 4352 1886 Open Sat, Sun & Wed 12- 4pm While strolling through the Museum, I take a pause to sit on the window seat in the Parlour. The Parlour room has some beautiful displays of the past, kindly donated by local families. The table centred in the room gets me thinking about the family meals that would have been shared in this room over the years. With Christmas fast approaching, I think about the early settlers celebrating a traditional English Christmas in the roaring Australian heat. Before Federation doubts were expressed about whether the transfer of the Christmas festival from the winter of the northern hemisphere to the summer of the southern could possibly produce a successful or 'real' celebration.

Wyong District Museum & Historical Society Inc.

In 1868, Marcus Clarke scornfully wrote of those who felt compelled to keep up the traditions of England and stated “It may be rank heresy, but I deliberately affirm that Christmas in Australia is a gigantic mistake”. Although the majority of the Australian population did not share Clarke's ideas, the continued celebrations existed within a public discourse which aired doubts well into the 1930s and 1940s. These doubts related to the ability of the English Christmas to survive in the Australian climate and environment. The subject most often expressed was the hot Christmas dinner. The English Christmas has indeed survived, though now we have the blessing of Air Conditioning to enjoy our hot meal in comfort. Though Santa Claus has not adapted to our summer, he still wears that thick red suit, maybe he needs red shorts and a singlet for his trip down under? Tis the season to be jolly, and may this season be Merry for all.

This historic icon has charmed and delighted young and old at The Entrance since 1930. It has seen a number of owners since its arrival in Australia from France in the early 1900s and is now part of the National Trust classified Haas Family carnival, a family that has 400 years of carnival ancestry. The carousel, which was built in the late 1800s in Germany, was originally ‘powered’ by a pony but was converted to steam at the turn of the century. It remained steam driven until the 1950s when an old chev. engine was installed, and was converted to electricity in the 1970s. Its reed pipe organ, operated by bellows, remained in commission until 1950. Music is now supplied by tape, although the organ front has been restored. The carousel has pride of place on The Entrance waterfront where it is visited by not only today’s children, but by the parents, grandparents and great-grandparents of those children.

Sea Grill Restaurant Little Creek 220 Del Monte Place, Copacabana. Cheese Factory Phone: 0243823360 "What a wonderful surprise our lunch in this light, airy restaurant opposite the beach front at Copacabana was. We all chose an entree and my friend Klara (Imag owner) suggested we share a seafood platter for 2 for mains. I hate sharing. However, she is a great 'foodie' like me and is very knowing so I acquiesced... How right she was. The menu is a Seafood lovers' dream. The Seafood platter for two was absolutely magnificent with 2 whole crabs cut in half to adorn the platter. There were Sydney rock oysters succulent and tasty, beautiful big prawns, smoked salmon and then a selection of calamari, yabbies in Garlic butter, Tempura Prawns, a wonderful pasta full of seafood and the best 'melt in your mouth' Tempura fish I have had, (the owner tells me the secret is in the making of the tempura and I will attest to that). All served with a wonderful array of Lemon, Fruit, Salad and great chips.... I would have said impossible to top, however that was before we ordered sweets. I have eaten all over the world and will state I have never seen more interesting/ better presented sweets. The list was fascinating before we saw the presentation....WOW! I had the Liquorice All sort Ice Cream with Liquorice Ice Cream Bullets and Lime Coulees. Desserts are the Chef's speciality,(we didn't have to ask) not a crumb was left and our finger-marked plates attested to that. This restaurant is special, memorable, and has it all. (They even do take-away if you are having guests and need to impress and enjoy at the same time). I can't wait to visit again!" Carolyn Sinclair, Chef, Old Courthouse Restaurant, Minmi, 1990-2003

Most people think of cheese as something that you have with a nice glass of wine or grate on top of pasta or just plain good old sandwiches. Little Creek Cheese makes a selection of cheese that has many uses. If you haven’t tried their BBQ Cheese then you just don’t know what you’re missing out on. BBQ cheese is made to a similar recipe to what the Cyprus Cheese called Haloumi is made. The difference being Haloumi is made from Sheep’s milk and BBQ cheese is made from Cow’s milk. The cow’s milk gives the cheese a creamier flavour but still cooks up the same way as Haloumi. Cooks up?? If you haven’t tried it cooked then you’re in for a treat. Take a piece of BBQ Cheese approximately 1 to 1.5 cms thick and just pan fry in a small amount of oil or butter. You can also put it on the BBQ Hot Plate or even grill it. Cook till golden brown and flip over and do the same to the other side, when cooked squeeze a little lemon on it or spread a little basil paste and top with fresh cut tomatoes, then enjoy. Do not forget their wonderful Picnic Packs that are perfect to take to Christmas Parties. 141 – 155 Alison Rd , Wyong NSW 4353 CHEESE (4353 2433)
