For the fifth year running, Hunter Valley Gardens is set to host Christmas Lights Spectacular, Australia’s biggest Christmas lights display and the largest display of its kind in the Southern Hemisphere. Tasting in the Hunter Delightful New Season Menu at The Olive Mill Cafe Adina Vineyard As luck would have it the very day Klara (Central Coast iMag) asked us to share lunch was the first of the new items on the menu at the Olive Mill Cafe. It was suggested we just trust the chef to send out some of the new menu for us to taste. The first item we shared was the most light and fluffy Gnocchi di Olive with mushrooms, sun dried tomato and fresh herbs. Next the Funghi con Formaggio. The intense flavour of the field
mushroom with the baked cheese filling was sensational. We sampled the Papardelle Pasta with oxtail ragout and once again the flavours were subtle and left us eagerly anticipating the lasagne and the slow cooked duck with Speck, cannellini beans, polenta and spinach, which was 'fall-apart' gorgeous. Finally, as Klara said, 'just to think of the sour cherry compote makes my mouth water' and the delicacy of the Apple and Frangipani tart with homemade

Crispy Asian Noodle Salad 2 tbsp of Taste of the Country Dukkah A bottle of Taste of the Country Caramelised Balsamic Vinegar ½ bok chow or similar 2 carrots cut julienne 1 Spanish onion cut julienne style 1 bunch of coriander 1 bunch chives 2 cloves of garlic finely chopped 1 tbsp soy sauce 1 tbsp peanut oil 2 cups of asian fried crispy noodles 250gm of blanched slivered almonds Method Heat oil in pan, add almonds and brown. Add all vegetables thinly sliced and braise until soft but full of colour. Add soy sauce and dukkah. Mix together. Add the crispy noodles and serve with a drizzle of caramelised balsamic vinegar over the top. Serve immediately. Helen and Robert Dyball, snail farmers from The Congewai Valley still live by this poem that appeared on their first business card back in 2000. when they walked on to their newly purchased property and said ‘let’s fulfill a 15 year dream and start a snail farm’, they placed an add in the local newspaper for snails as breeding stock and have not stop since. ‘To-day we live at anything other than a ‘snails pace’,’ says Helen Dyball and love every minute of it. In the beginning we had no idea what to do, but were fortunate to have assistance from a snail farmer in the U.K.who walked us through his farming method. We soon realized that raising snails in the U.K. was a lot different to raising them in Australia, so we ‘bit the bullet’ and decided to go alone. After many sleepless nights, bottles of Hunter Valley wines, disagreements - Snails Bon Appetite was born and the concept we have to-day was founded. In 2002 we were invited to attend the Tocal Field Days. We went with great enthusiasm to display our beautiful, yummy snails and were amazed how many people were keen to taste and interested in snail farming. People were lined up 4 deep to talk to us for the 3 days. We then decided we should have a growers network to help with the supply of snail meat. Today, Snails Bon Appetite has a growers network of 10 growers in NSW, as well as growers in WA and NT. We assist with snail farming enquires from people overseas, supply restaurants in the Hunter Valley and Sydney with distributors in Brisbane and Melbourne. Art Bazaar, Newcastle December 3 at Civic Park is the date for another fantastic offering by Hunter Artists and Designers at Art Bazaar. It is the premier opportunity for Hunter arts, craft and design practitioners and artsrelated organisations to showcase their work. This year we once again will have the fabulous Strutt Sisters and their funky colorful jewellery. The Strutt Sisters have been described by critic John McDonald as “Newcastle’s next big thing waiting to happen” (Daily Telegraph, May 2003), and by Ruth Skilbeck as “Newcastle’s hottest contribution to contemporary art” (Australian Art Review, Feb. 2004), Twin sisters Catherine and Jennifer Strutt
are prominent Australian visual artists working collaboratively and exhibiting professionally since 1995. They started their unique jewellery label seven years ago in their hometown of Newcastle, NSW. It was born from a frustrating lack of lightweight funky jewellery in the common maketplace. Art Bazaar is a special market for The Strutt Sisters as this was their very first market where they tried out their very early pieces. The sisters were and are well known and respected for their art work but at the time of their first Art Bazaar, they were completely unknown for their jewellery making. They were received with great interest by customers wanting
unique, funky and lightweight jewellery and as a result, they have been at every Art Bazaar since. Their accessories are designed for everyday wear and each individual piece is finished to a very high quality using reproduction fabric with designs from the 1930’s – 1950’s. Fighter World Fighter World is a fighter aircraft showcase displaying Australia’s proud history in air defence, fighter operations and the hi-tech world of the RAAF’s tactical fighter force. Located adjacent to the entrance to RAAF Base Williamtown, FIGHTER WORLD is a totally ‘hands on’ family experience with over 20 aircraft in its collection, exhibited in two hangars. Carols in Maitland Heritage Mall 17th December 5pm - 9pm
This wonderful machine, called “Australia Fair” is coming to Quirindi, NSW all the way from Victoria courtesy of the generous sponsorship of the Liverpool Plains Shire Council. It will be operating at the Christmas in Quirindi Carnival on Thursday, 8th December, that is being organised by the Quirindi Chamber of Commerce, Industry and Tourism Inc. The main street will be closed to traffic from Henry Street to Dally Street for the late afternoon and evening festivities, which will run from 5pm to 8pm. Late Night Shopping, Entertainment, Kids Corner, Santa Photos, Rotary Chocolate Wheel, Markets and Lions Barbeque are planned for the festive event plus more. “Australia Fair”, is the only travelling Concert Organ in Australia. Built in Belgium, probably in the 1800’s, it has entertained at all levels from

local functions to “Yarralumla” – the residence of the Governor General of Australia. The organ has the equivalent sound of a 20-piece band and operates on air pressure generated by a bellows and regulated by a reservoir. The music is played by way of traditional punched cardboard books that are read by the keyframe, which activates valves that in turn cause the organ to play. The organ has some 442 pipes together with drums, cymbals, bells, woodblocks and animated figures. The organ also has a large library of music and can play all day without repeating selections. The music appeals to all age groups and covers all types from Strauss to Walt Disney including marches, waltzes, musical theatre, children’s and popular music.

Valley View, Cessnock
Cessnock Cessnock is a sub-region of the Hunter Valley, 120 kilometres north of Sydney, 40 kilometres west of Newcastle and 30 kilometres from the coast. Pastoralists commenced settling the land in the 1820’s. The township of Cessnock developed from 1850, as a service centre at the junction of the Great North Road, with branches to Black Creek (Branxton) and Maitland. During the 1860’s, land settlement was extensive between Nulkaba and Pokolbin with wheat, tobacco and grape growing, the main crops. The vineyards of Pokolbin, Mount View and Allandale, with their

The Convict Trail is a conservation project that is restoring the convictbuilt Great North Road. This is one of Australia's national historic treasures.

Circus Workshops Circus Avalon has been running for more than 20 years, with the last decade spent in Newcastle. During that time, it has evolved from a performing adult community group to a training circus for both adults and youth. Avalon Trainers have taught in over 100 different schools, and performed at events including the Woodford Festival, the National Folk Festival, the National Circus Festival and many smaller events. Sessions will normally involve running games, a warm up and then group balances. Then participants work with whatever equipment they like for the remainder of the sessions - unicycling, juggling, trapeze, hoops, diablo, devil sticks, cigar boxes, balancing chair and rings. The workshops are Monday afternoons 5pm-6.30pm. Cost $10.

Ngurra Bu Wollombi Ngurra Bu in the ngempa language means ‘little lore camp’. The organisation was established in 2009 to teach and share traditional Aboriginal culture and lore. Ngurra Bu’s Wollombi Camp is a 40ha property located approximately 4.1kms from the township of Wollombi. The newly renovated camp comfortably houses up to 30 guests in bunk style accommodation. Larger groups are often accommodated in tents or you can camp in your own tents on the property. The large bunkhouse has a fully functional commercial kitchen and dining hall along with a separate conference room. They offer a range of experiences from self-drive guided day tours of sites through to week long camps full of traditional cultural experiences. The Wollombi/Broke Valleys are home to numerous teaching and lore sites (usually described as rock art and cave painting sites). Each guided tour will visit these sites to explain the cultural significance and associated stories. Stories that explain the creation of the earth, animals, plants and people have provided Aboriginal people with a

Coffee is always available, and the local Rotary Club staffs its mobile canteen for hot breakfasts and lunches on a bun. For nearly 10 years the murals have been a very popular feature of Kurri Kurri. There are now over 50 murals, making Kurri Kurri the largest mural town in Australia. New murals are currently underway. Don't forget to look for the kookaburra in every mural, some are quite difficult to find. Bus and walking tours of the murals can be organised through the Visitor Information Centre. Please allow one week as all guides are volunteers who fit in tours in their time between staffing the Information Centre and other work. A mural guide will travel with you to give information on the murals and the many artists, a local history lesson, and of life in Kurri Kurri when mining was at its peak from the turn of the 20th Century. The price of
the tour is $5 per person. However, the Information Centre will be happy to organise a tour followed by lunch or dinner at one of the local restaurants or hotels for $20 per person. Tours take about one and a half hours, either by bus or walking. The advantage of using your own bus and driver is that out of town murals can be included in the tour. Free mural tour maps are available from the Information Centre and some local retailers. More volunteers are required to staff the Visitor Information Centre as we stay open for longer hours. She works in watercolour and oils, pencil and ink and mosaic. From pursuing ideas and taking risks in technique, she has developed a tonal impressionistic style, working from a simplified design to suggest movement with a minimum of detail. A hint of narrative allows the viewer to compose their own story and maybe recall a personal memory.
Just recently she was fortunate to be in Paris and made the most of every opportunity to sit and draw the Parisian ladies doing their shopping and socializing with one or two little dogs in tow. Therapeutic Herbs at Christmas With the festive season upon us, herbs and spices used in cooking the traditional Christmas lunch can also have some wondrous therapeutic properties. Rosemary (Rosmarinus officinalis) – this fragrant shrub with its volatile oil is used to improve many things related to the head. Headaches, poor memory and lackluster hair all respond well to extracts of rosemary. For headaches, rub a couple of drops of essential oil of rosemary mixed in a teaspoon of olive oil onto your temples. Sage (Salvia officinalis) – a powerful astringent herb that is used to prevent excessive sweating or heavy periods. Sage is also a strong antiseptic herb and used for throat infections or bleeding gums. Thyme (Thymus vulgaris)- a common herb used to treat common upper respiratory tract infections. A simple tea can be made using either fresh or dried herb.
Cloves (Syzygium aromaticum) – a fragrant spice that has a local analgesic and antiseptic properties. Cloves can be chewed (do not swallow) to soothe aching teeth or expel intestinal worms. Peppermint (Mentha piperita) – after feasting on Christmas lunch, peppermint tea can help with simple indigestion problems. Infuse either a tea bag or 1 teaspoon of tea leaves in a covered cup (to prevent volatile oils from evaporating) for 5 minutes. Can be sweetened with honey or agave syrup. Nb: Essential oils are not recommended during pregnancy. It advised to see a qualified practitioner before embarking on long term health strategies with herbal medicines. This is a perpetually popular exhibition which forms part of the regular exhibition programme at the Muswellbrook Regional Arts Centre. Red Cross host the exhibition calling for entries from various community groups, schools and the like. Each group is responsible for the setting up of their trees and this affords the Arts centre the opportunity to extend an opportunity for the community to participate and get involved with the Centre’s staff in terms of hanging a show and displaying the exhibits. The staff love this great community participation and look forward to the entries. Red Cross charge entry to the exhibition with all funds raised going to Red Cross.
