Handmade in the Hunter The idea for Handmade in the Hunter came to founder Karen Rowe while she was a stallholder at another local market. She wanted to highlight the fact that the products she had for sale were true artisan. She collected locally produced items from some of her crafty friends and placed them in her stall. It proved to be so well-received by visitors to the area that she started a handmade/ home-grown market in April 2011 based on this concept. Her original Handmade in the Hunter stall still exists and is the first stall as you enter the market at Kevin Sobels Wines (corner of Broke and Halls Road). Being an avid cottage crafter, Karen has collected craft supplies for many, many years. Now that she has retired, she is working on finishing and using up the bits and pieces from her well-supplied and bulging craft cupboard. Because she dreams up the projects based on what she has on hand, you never know what surprises you will find in her stall. At the moment, her crafting whimsy is taking her in the direction of creating a range of handmade dolls that will delight both young and old doll-collectors. Tasting in the Hunter Majors Lane Cooking School - Sichuan Menu Never having been to a cooking school before we arrived with some trepidation – what will it be like? Are we entering Hell’s Kitchen? We needn’t have worried as we were made to feel very welcome right from the start. Chef Ben was a great teacher, there were five of us on the day so it was a very relaxed setting that soon had us all working and chatting together, asking questions and volunteering our own culinary experiences to the group. Ben freely imparted his wealth of knowledge and talked about each of the different spices – where they come from, how they are used in their country of origin as well as in western cooking. He shared some fascinating stories about

the Sichuan area, the history and his own experiences of cooking there. It was wonderful to hear as we were working and gave us a deep sense of the history of the region and it’s cooking. Somehow this heightened our senses so when we were enjoying the fruits of our labours at the end of the morning everything we had learned really added to the taste experience. Ben showed us what to look for, what to avoid – including top tips for perfect fluffy rice (we’re not telling you – you’ll just have to do the course) plus easy ways to manage what you’ve learnt with him in your own kitchen. All in all it was a fun, practical and

Method: Preheat the oven to 200 c. Cut salmon into 4 pieces, put dukkah onto a plate and dip each piece of salmon into the dukkah to form a crust. Grease an oven tray with 1tsp of the lemon oil, put the fish skin side down (crust side up) onto the tray and cook in preheated oven for 15/ 20 minutes. Meanwhile shred the carrot, spring onion, capsicum and beetroot, toss together with the rocket, spinach and dressing. Divide between 4 plates and serve the fish on top.

Newcastle Maritime Festival 2012 The first Newcastle Harbour Regatta was held in 1834, consisting mainly of sailing events. Church opens its doors to music and the arts Churches, sacred music and religious art have been around a long time, but, what’s happening in the Newcastle suburb of Adamstown is a mix of a different kind. Since 1997 The Adamstown Uniting Church has been home to The Dungeon Jazz Club. Fifteen years on, and it’s now Newcastle’s longest continuously operating, internationally recognised, contemporary jazz venue, also doubling as a live theatre space. Business to Business TALKING BUSINESS by Brett Gleeson New Years Resolutions for Business It’s the start of a new year and its hard to fathom how fast the last one passed by. The tradition of making New Year’s resolutions is well practiced. Fulfilling them is another story. New Year’s resolutions are good to do. Not just for our personal lives, for our business as well. New Year’s resolutions are simple statements of good intention or goals. The most common ones in our

personal lives are ‘to lose a few kilos’, ‘exercise more’, ‘work less hours’, ‘ have more fun’, ‘spend more time with the family’. These same resolutions apply to our business. For example, ‘Lose a few kilos’ translates to cutting down on waste in the business, operating a bit more environmentally friendly or efficiently. For every ‘kilo’ of waste we shed in our business equates to a few dollars we don’t need to find to operate the business or more importantly, a few dollars more to the bottom line. Pick 2 or 3 areas of the business and put in place some simple strategies to reduce the waste by say, 5 or 10% for the year. First you need to know your current usage and then measure it month by month and see how you go. Start small and build over time. If you are the ‘boss’, then lead by example. Get your staff on board, use the savings to reward those staff that contribute positively. The money saved can pay for some tickets to the movies, a lunch or this year’s staff Christmas party. Acknowledging the positive contributions of employees shows that you really appreciate them. They will repay you many times over. I hope all your good intentions are fulfilled in 2012.

Cessnock Cessnock is a sub-region of the Hunter Valley, 120 kilometres north of Sydney, 40 kilometres west of Newcastle and 30 kilometres from the coast. Pastoralists commenced settling the land in the 1820’s. The township of Cessnock developed from 1850, as a service centre at the junction of the Great North Road, with branches to Black Creek (Branxton) and Maitland. During the 1860’s, land settlement was extensive between Nulkaba and Pokolbin with wheat, tobacco and grape growing, the main crops. Coal mining was the principal industrial base of the Cessnock area for over fifty years. Changes in mining, including automation and the introduction of

sophisticated computerised equipment, have lead to the closure of some mines in the area and this, together with the natural ageing of the population, has resulted in a decline in population in some villages over the last twenty years. Consequently many areas have undergone a change in character, with rural residential housing development and weekend retreats becoming popular. The Hunter Valley wine-growing area in Cessnock City is one of Australia’s oldest wine regions and one of the most famous with around 4,500 acres under vine. The vineyards of Pokolbin, Mount View and Allandale, with their rich volcanic soils tended by entrepreneurial vignerons, are also the focus of a thriving and growing tourism industry. Upstairs Art Teaching Studio and Gallery is located on the New England Highway in the heart of the historic upper Hunter town of Murrurundi. The teaching studio which has been operating for 5 years is open for 4 sessions a week and welcomes new students of any level of experience to improve their knowledge and skill from lessons with artist-in-residence Rodney Swansborough. In the last 2 years the business has expanded to include an art supplies shop and fine art reproductions are available to be printed on a wide format Giclee Printer. Rodney’s wife, artist Pearl Red Moon is an internationally recognised artist and teacher who has taught in the USA, Canada and New Zealand numerous times and all around Australia. Pearl is well known for her art dolls which are in collections worldwide.

For the last year Pearl has been creating a whole new body of work which will be on display from January 2012 in the Pearl Red Moon Gallery rooms dedicated to Pearl’s art. Pearl is a multi media decorative artist working primarily with textiles, fibres, beads and stitch. She makes sculptural forms (dolls), wearable adornments from beads, silver and found objects and 2 dimensional art. Her art is figurative and typically depicts feminine personas portrayed as iconic, dreamlike and fantasy representations. She uses the skills accumulated skills over 3 decades as a textile artist to create unique layered and embellished textiles to enhance the works with abstract elements. In addition to painting Pearl also incorporates the western traditions of female needle and textile craft to

collage the works together using such techniques as hand and machine embroidery, knitting, crocheting, applique and beadwork. See advertisement on p37 for more details.
