Daisy Dukes: Mary Ebarb
CHEF MARY EBARB’S CULINARY JOURNEY AND VISION FOR DAISY DUKES
HOW DOES YOUR BACKGROUND INFLUENCE YOUR APPROACH TO COOKING?
Growing up in Texas with a heritage spanning Spanish, Choctaw, and Apache traditions, along with inspiration from both of my grandmothers, cooking has always been a blend of diverse flavors and techniques. Tradition is essential, learned from them, and passing on this cultural heritage through food is a responsibility I cherish. For example, my recent special, “Nana’s Fried Chicken,” is a tribute to their influence on my cooking style.
WHAT CHANGES CAN DINERS EXPECT TO SEE AT DAISY DUKES UNDER YOUR LEADERSHIP?
I take great pride in crafting delicious and creative options for vegetarian, vegan, and dietary restrictive diets, ensuring every guest receives something special. Those who know me trust that I’ll go above and beyond, rather than settling for the ordinary. At Daisy Dukes, we’re dedicated to transforming into a family-friendly spot with a healthier menu. Our aim is to be the go-to spot for all occasions, fostering a positive work environment and encouraging ongoing learning among our staff for success.
WHAT’S YOUR ULTIMATE GOAL FOR DAISY DUKES?
I aim to blend tradition with a contemporary twist at Daisy Dukes, creating an inclusive dining experience where everyone feels at home. Whether enjoying a classic dish, trying something new, or unwinding during our Happy Hour, every visit to Daisy Dukes should be a laid-back celebration of good food, good company, and good times.
