One of the luckiest days of recent years for the InC was when, at a Gastronomic Festival in Buzios, back in 2011, French Chef David Mansaud fell deeply in love with Brazil. He caught the famous "bug" that has bitten so many of us ever since Pedro Alves Cabral discovered Brazil 513 years ago..

A fabulous opportunity presented itself through Rolland Villard, making it possible for David, who was at the time, with the Alain Ducasse Institute of Paris to take up the position as Executive Chef at the Estacio de Sa University here in Rio. Within a few weeks David was well on his way, organizing the University kitchens, cooking up a storm and making new friends. He has not looked back.....
We will begin with a trial class but the idea is for this class to be the beginning of a series of 6 expert cooking classes.
Late, last year David was introduced to us through our member, Helene Buob and this opened a whole new horizon for the InC. David also fell in love with the InC and has opened up his heart by giving not only his time but a nice discount to our members and has also made donations towards our activities and Charities.
Should you decide that you like the idea of a once a month cooking class and would like to continue, this is what you can expect; The idea is to have the ladies cook one week and the gents the next. During the three hours where the partner is cooking, the group waiting to be wined and dined will be otherwise occupied for those three hours. We are open to your suggestions, a spa visit, shopping, playing cards......watching the sun set....what ever takes your fancy...!

Now that I have your attention, here is the break down of what you will be getting…
A three hour cooking class
A kit which includes an Apron and Hat, a cutting board, knives and hopefully some extra surprises.
A three course meal made of top quality food selected and prepared by David. The duration of the dinner will be 2 hours.
Wines that have been harmonized by our Chef to accompany the meals plus other drink options.
THE PRICE OF THE FIRST INTRODUCTORY DINNER The cost of each cooking class is R$90 reais and all the food and drink (wine included) per person is R$80. So a couple will be spending R$ 275.00 for the first introductory dinner which also includes a small donation to the InC. THE PRICE SHOULD YOU DECIDE TO JOIN US FOR THE COURSE The six month course, Class and Dinners has a total cost of R$ 1750 (R$ 1650.00 for the dinners and R$ 100.00 for the culinary kit that will be yours to use in the class and then keep.) We will have an availability of places for 20 couples. The classes will be on two different Saturdays each month , making it easier for you to travel and not miss a class. If this still does not work with your plans, we will have a list of couples who would like to participate once in a while. That way no one will be out of pocket. We will need however that you let us know at least two weeks before or that you find a replacement amongst your friends at short notice. You can pay all at once or pay in three installments once every 60 days. Remember that this is a fund raiser and that your contributions go a long way. When thinking of Rio de Janeiro in the future, this will surely be an experience you will remember, as one of friendship and bonding. charity focus?
On Sunday April 7, three families from the Inc Rio travelled 2 hours into the hinterland of Rio de Janeiro to plant trees with other volunteers from the British School of Rio de Janeiro, local school children from Santana do Deserto and a local boy scouts' troop. We were there to support Children's Aid, who has an Eco-garden under construction that aims to teach the local children about the environment, gardening, sustainability and recycling. We planted coconut palms, vegetables and helped construct a bamboo trellis for passion fruit vines with some of the students. It was hard work but it was lots of fun. We picnicked under the trees and took in the beautiful views of the mountains in this part of Minas - Gerais. There is still a lot to be done at the Eco -garden and Ricardo hopes to begin construction of the buildings for the sports centre in May. I will keep you informed of any more family outings to the centre as they come up.

Charity Focus Lar Maria de Lourdes Project: O Loc ĂŠ Meu Abrigo Donation for 2013: R$ 1,000 We will be purchasing a wheelchair for one of the new residents Lar Maria de Lourdes was founded by Maria Isabel Alves Peixoto on June 29, 1998. The home sits on a quiet residential street in Jacarepagua, inconspicuously caring for approximately 45 special needs children and young adults. These children living at the facility are completely incapable of caring for themselves. Many cannot feed themselves, sit without the assistance of a specially designed supportive wheelchair, dress, bath or go to the toilet. The staff and volunteers of the facility provide full support to the children and adolescents who live there. The objective of the staff and volunteers is to value these children as members of society by providing not only the support necessary for their daily existence, but physical interaction and affection as well. The children live at the facility full time and most have arrived there as a result of being abandoned by their families and directed to the institution by a court judge. The children suffer from a variety of genetic and accidental disorders including cerebral palsy, neuronophagia, hydrocephalus and autism. Many of the injuries and abnormalities occurred during pregnancy or as the result of infection suffered by the mother during pregnancy or the child in early infancy. Bengt Sunnerstam By Flip Shelton
How does a former pediatrician from Sweden end up selling Australian, New Zealand and South African wines in Brazil? Sounds like an incongruous story but that is what Bengt Sunnerstan does. It was through a chance meeting with Ana Khouri that Bengt was introduced to the InC, and why he recently sponsored the InC‟s wine and cheese night. It was a hugely successful night with many people enjoying his wines. In 2002, at the age of 49 , Bengt walked away from his medical career and started looking for a new career. “ I never liked pediatrics. I had to force myself to go to the hospital. I thought it would change but after 18 years it didn‟t, so I left.” Bengt did go on to run a local business and while intellectually challenging he wasn't passionate about it so he closed the business. Bengt first visited Brazil at the age of 50 and stayed at a youth hostel in Sao Paulo. “I rang to see if they accepted 50 Year olds and they did, so I stayed there for 3 weeks!”. Bengt didn't enjoy Sao Paulo, „that much, it was too big‟ but the he visited Rio in 2004 and „fell in love‟ with the city, which he now calls home. In 2009, Bengt registered his importing business “Otimo Brasil” but it would be another two years before the wines finally arrived, such was the bureaucracy and complications. Many others would have given up, but Bengt was determined and patient. He says, its still a complicated process to import wines and it takes a minimum of 6 six months for the wines to arrive. In addition, all of the imported wines are very heavily taxed „but its worth it‟, says Bengt. “I am not a sommelier, but I have done lots of courses, and I am passionate about wine” Now he sells 27 wines from Australia, New Zealand and South Africa. None of these wines are available at supermarkets or wine shops. “I chose these wines because I like them the best. These wines have a „freshness‟ to them, which means you can drink them in the hot weather.” Does he have a favorite? “it changes with time but at the moment I am very fond of the New Zealand Nelson Pinto Gris 2009. It‟s been very popular and I had sold out, but I have just received some more, now from the harvest 2012, by airfreight.” And what about Swedish Wines? “Swedes love drinking wine but I‟ve never drunk a Swedish wince and I don't know if I want to!” You can check out the full range of wines on www.qissiawine.com.br (currently only in Portuguese) or call Bengt directly for a chat about the different wines he has. LOUIS XV WITH PRALINÉ CRISP
Ganache Paradis Preparation: This ganache will be used for the mousse and for the glaze. (Praliné: nutty caramel) Break the chocolate into pieces. Boil the créme fraiche and mix it with Ingredients: the chocolate. Mix well. (Obs: Remove 200g for the mousse before -Hazelnut Dacquoise: adding the chocolate sauce) Hazelnut powder - 125g Chocolate Sauce Preparation: Caster sugar - 125g Boil the water with the sugar, Egg white - 100g chocolate powder and thick créme Sugar - 50g fraiche. Cook for 1 minute, remove Hazelnuts - 50g from the oven and mix with the rest of Ganache Paradis (approximately -Feuillatine mixture: 155g). Mix with a hand mixer or Praliné - 100g fouet until it becomes smooth. ReFeuillatine - 50g it should be someserve. thing crispy like corn flakes or dry Chocolate Mousse Preparation: crepe to include with the praliné. Whip the créme fraiche until it turns White chocolate - 25g into whipped cream (Chantilly). Mix it with 200g of Ganache Paradis. -Chocolate mousse: Garnish over Dacquoise in a square Ganache paradis - 200g hoop of 1,5 cm high. Créme Fraiche (dairy cream) - 175g Freeze it. Presentation: -Ganache Paradis: Cut the puddings in 10cmx4cm rec66% dark chocolate - 190g tangle. Glaze with the mixture Créme Fraiche - 165g Ganache+chocolate sauce, lukeSugar - 150g warm. Thick Créme Fraiche - 8g Chocolate powder - 60g Basic requirement for the recipe: Water - 190g Dacquoise Preparation: Mix the hazelnut powder and caster -Garnish: sugar. Whisk the egg whites graduGold leaves ally adding the sugar. Gently add the hazelnut powder mixture. Feuillatine Mixture: Place this mixture in a baking tray Break the chocolate into pieces, with baking paper. Level the dough melt it in bain-marie, adding the with a spatula. praliné and feuillatine. Rafael Jaen Williamson – Director of Corporate Affairs at Chevron Brasil Petróleo The oil industry still has a long road ahead in Brazil, but it has the prospect of important economic results for the country. More importantly is the possibility of bringing major social transformations to the communities where activities are carried out as a natural compensation for such development. Since the potential of our industry is very great, it is important to identify where to act, resolutely, in order to organize the communities in this new Brazilian energy landscape, so that the benefits are mutual and lasting. At Chevron we recognize that education is a fundamental building block that contributes to economic development and sustainable prosperity. Participation in shaping the future of the countries where we operate is one of our values, and education is a way to achieve this goal. Globally, Chevron’s main priority is to invest in activities that foster economic development, capacity building, as well as health. In Brazil, social projects are aimed at the social and economic development of the country and are developed in partnership with various government and non-government entities, in line with government policies and geared towards communities in the states of Rio de Janeiro and Espírito Santo, where Chevron has operations. To do so, the company invests in three pillars of action: education, occupational training and environmental conservation. One differentiator of the projects supported by Chevron is the emphasis placed on women – at least 65% of projects are designed for young and adult women. This emphasis is based on World Bank research,
which shows that investment in education and job creation for women has a multiplying effect on t h e economy, since they a r e more likely to share their economic gains with their families and communities in general. Another statistic that supports this premise is the fact that some 30% of Brazilian households are headed by women. The company also supports educational initiatives for children and youth, with a focus on employability, such as the Enter Jovem, a partnership with the Empreender Institute and USAid, and Com.domínio Digital, also in partnership with USAID and the Aliança Institute, benefiting 900 people directly. Both programs promote the professional qualification of young women, aged between 14 and 29, from public schools in the state of Rio de Janeiro, in addition to placing these young people in the formal labor market. They also receive support from the United States Agency for International Development (USAID) and the departments of Education, Employment and Income and Social Assistance of the state of Rio de Janeiro. Chevron Brazil is also committed to the development of skilled labor in the oil & gas industry and for its suppliers, investing in the technical education of young Brazilians and contributing to expand local employees and supplier’s base by building local supply chains. Also in the area of employability, we highlight the project Elas em Movimento, conducted in partnership with the Social Investment Fund ELAS and the Community Inclusion Project, developed in partnership with the Aliança Institute. Both projects aim to enhance employment and income generation opportunities for women in communities in the cities of Rio de Janeiro and Itapemirim, in Espirito Santo. To foster the development of specialized labor, Chevron will invest in various university programs in four regions of the country. They include undergraduate, graduate and doctoral projects in engineering, geology and the environment at the Federal University of Rio de Janeiro, Federal Fluminense University, Rio Grande Federal University and the Federal University of Rio Grande do Norte, as well as the University of Brasilia (UNB) and PUC-Rio. Another successful example of a partnership that is underway is taking place at the Federal University of Rio Grande (FURG), where
Chevron sponsors a project that monitors the biodiversity of cetaceans (whales and dolphins) on the Brazilian coast. This research will be used to determine the location of marine environmental conservation units. Protecting the environment is one of the company’s core values. In the environmental conservation area, the company focuses on projects that promote sustainable livelihoods for communities in the company’s area of influence in Campos Basin and its environmental preservation. The goal is to increase knowledge and skills related to environmental management and safety of local communities. Besides these projects, from 2010 through 2012, Chevron Brazil supported other initiatives such as the Learning Center, developed in partnership with the Discovery Channel Global Education Partnership and the Department of Education of the City of Rio de Janeiro. The project aims to improve the quality of education in five public schools, benefiting some 6000 students and 148 teachers. Moreover, the company encourages its employees to engage in volunteer work at company partner institutions via the Solidarity Energy Program. The initiative embraces 4 lines of action: volunteering campaigns on commemorative dates, chats and regular meetings, ongoing support to social projects developed by the company, and prompt assistance that serves as support for social events and campaigns promoted by the company in benefit of projects. Today, Brazil has the potential to become an energy superpower. We believe that the best way to get there is through education, research and development.
