The first rule of choosing what to drink with your meal is that there are no rules. The second is to follow your instincts – they’re usually right, says David Ireland.
T
he first thing to remember about matching food and wine is to forget the rules. Choosing what to drink with a meal is not a science and there are no rockets involved. It’s largely about common sense, so trust your judgement and follow your tastebuds. While there are no strict rules, there are, however, a few pieces of friendly advice that might add to the enjoyment of a good meal. First and foremost, I’d recommend choosing a wine that you would want to drink even if you weren’t having something to eat. Despite all the guff written about matching wine and food, you will probably drink most of the wine without the benefit of food – either before the food is served or after you’ve finished your meal. Therefore, you will not go too far wrong if you make sure the food is good and the wine is, too. That way even if the match is not perfect, you will still enjoy what you’re drinking. Some wine buffs suggest that mediocre wines can be improved by serving them with the right food. The flaw in that reasoning, however, is the scenario described above. If the match does not quite work as well as you hope, you’re stuck with an average wine. So don’t try to get a wine to outperform itself. Just pick a good wine in the first place. This is where common sense comes in. The old rule about ‘white wine with fish and red

something to drink? wine with meat’ made perfect sense in the days when white wines were light and fruity and red wines were tannic and weighty. But today, when most Chardonnays are heavier than most Pinot Noirs and even some Cabernets, the old colour-coding rule does not always work. This tried-and-tested approach will minimise real dud choices, but it will also limit the possibility of your having one of those exhilarating moments when an unlikely combination hits the jackpot and creates a truly memorable experience. And while food has got more complicated in recent years, so too has wine. While red wine might once have ranged from Bordeaux to Burgundy and back again, supermarkets, offlicences and restaurants now stock Cabernets and Pinot Noirs from a dozen different countries in just as many styles. Unfortunately, one result of this huge variety of choice is that the chances of making a bad match are
exponentially increased. Red wines as a category are distinct from whites in two main ways: Tannins – many red wines have them, few white wines do – and flavours. White and red wines share many common flavours; both can be spicy, buttery, leathery, earthy or floral. But the apple, pear and citrus flavours in many white wines seldom show up in reds, and the currant, cherry and stone-fruit flavours of red grapes usually do not appear in whites. In the wine-and-food matching game, these flavour differences come under the heading of subtleties. You can make better wine choices by focusing on a wine’s size and weight. Like restaurant-goers, wines come in all shapes and sizes. To match them with food, it’s useful to know where they fit on a spectrum, with the lightest wines at one end and fullerbodied wines towards the other end. Hearty food needs a hearty wine, because it will make a lighter wine taste weak.

With lighter food, you have more leeway. Lighter wines will balance nicely, of course, but heartier wines will still show you all they have. Purists may complain that full-bodied wines overwhelm less hearty foods, but the truth is that anything but the blandest food still tastes fine after a sip of a heavyweight wine. These simple observations explain why a flowery Muscadet or a steely Riesling is a pleasing complement to a plate of fresh oysters, why a robust Cabernet enhances lamb chops and why a meaty Burgundy is great with roast beef. You can add variety to your selections by moving up and down the scale, while remaining roughly in the same quartile. The wine needn’t stop flowing at the end of the main course, so don’t be afraid to carry on quaffing when the pudding trolley arrives on the scene. Dessert wines are a great way to finish off a meal and can really add to the enjoyment of a third course, whether it be an apple tart, chocolate mousse or cheese selection. Dessert wines, such as Muscats and Sauternes, are a fabulous addition to a sharp fruit salad, while a spicy glass of port will cut through the stodge of a chocolate torte. Although Stilton is traditionally served with port around the Christmas table, why not try a late harvest Gewürztraminer or Riesling? And don’t just stick to whites – there are some fabulous sweet red dessert wines to chose from.
While these choices might seem obvious if you are eating in a traditional French, Italian or modern English restaurant, what if you’ve opted for an Indian, Chinese or Thai meal? These restaurants all serve wine, but why do so many of us still opt for a pint of lager or a beer rather than asking to see the wine list? The answer is partly down to an oldfashioned ‘hot food = cold drink’ philosophy, but in reality it is more due to the fact that beer works extremely well with spicy food, and that hot curries and peppery flavours are enhanced by a well chosen lager-beer. If you do fancy a glass of wine with a spicy
at many restaurants – not just Chinese and Indians – where a beer is an equally suitable accompaniment to the food as wine. Beer works excellently with robust foods like stews and casseroles, or indeed any meal that uses beer as an ingredient, such as a steak-and-ale pie. So don’t be afraid to order a beer, however many Michelin stars are pinned to the chef’s jacket. The other plus for beer drinkers is that a beer generally tastes the same, when and wherever it is drunk. There are no vintages, no good and bad years, so you can be sure of a consistent flavour – which is more than can be said for many wines, even those

If you are sticking to white wines, then those with high acidity levels, like Sauvignon Blanc, will work well with the bold flavours found in spicy seafoods, like prawns. Conversely, red wines with plenty of tannins or a weighty Shiraz are a good match for heavier meat dishes, while something less rich, like tandoori chicken for example, is just as happy with a lighter-bodied Beaujolais as it is with a pint of ice-cold Cobra. In fact there are many meals to be had
whose grapes were picked from the same vineyard during the same week. Lastly, if reading a wine list is like looking at a Russian translation of the bible – or you’re too busy chatting to give the wine list much thought – hold up your hands and let the wine waiter or sommelier make a suggestion based on what you’ve ordered to eat. Don’t be afraid to give them a rough budget – although make sure it’s out of earshot of your guests! Good luck and here’s to more perfect matches on your food and drink travels!

Is there anywhere you would like to eat? PJ: I would love to go to eat at Nobu, but it’s far and expensive...
Where have you worked before now? NB: I did my apprenticeship at The Grosvenor House Hotel, London alongside chefs like Mark Hix and Gary Sutherland. From there I moved to America for a year (stayed for 20!) and worked my way up the ranks to become Executive chef at the 5 star Plaza of the America’s Hotel in Dallas, Texas. After 7 years there I left to co-found Dani Foods, an exclusive food company specializing in high profile private catering, hospitality management and packaged foods. The company went from strength to strength and was sold to Coca-Cola (Southwest). Kelli (my wife) and I then opened Barclays, The Restaurant in Dallas which we ran very successfully for a number of years before heading back to the UK in 2000 to live our next dream. Kelli and I purchased a fantastic 6 acre property in Looe, Cornwall and in 2001, Barclay House, The Hotel, Restaurant and Luxury Cottages was created. After a multi-award winning 6 years Nick and Kelli sold Barclay
Who taught you to cook? PJ: Satosan, who was the Japanese chef in Izimola. What is your speciality dish? PJ: Slices of Rib Eye wrapped with enoki mushrooms in Teriyaki sauce. Which chef to you currently admire? PJ: My fellow chefs here in Yukisan. They each have their special skills and together we make up a whole unit. Where else do you eat out locally? PJ: It’s got to be Nobu Matsuhisa, the owner of thirteen restaurants around the world, and Hiroyuki Sakai, famous for his appearances in the Iron Chef series in the Japanese television show. I would cook them our specialty dish, the Wasabi Steak, sirloin steak with wasabi (Japanese horseradish) mayonnaise. In your experience what is the most important thing about cooking? PJ: Definitely passion and enjoying what you do. I think it reflects it in the dishes and the atmosphere in any restaurant.

He taught me the difference between classic cuisine and the way most progressive chefs cook nowadays. What is your speciality dish? NB: It is said that if you can create one dish unique to you that’s a great achievement! Mine would have to my Bubble and Squeak with Cod Fritters and Tomato Basil Chutney. Which chef to you currently admire? NB: I’m lucky to have Chef Iain Shillito cooking alongside me, I have great admiration for him. I enjoyed watching Paul Ainsworth on the Great British menu recently
and have great respect for Nathan Outlaw for achieving 2 Michelin stars; outstanding. Where else do you eat out locally? NB: The View near Whitsand Bay run by Chef Matt Corner and for something funky and unique the Rod and Line in Tideford. Is there anywhere you would like to eat? NB: French Laundry in California, Pollen Street Social in London. If you could cook for two famous people who? NB: I’ve been lucky enough to cook for a lot of famous people over my career, right now I think it would be blast to cook for The Hotel Inspector and Pippa Middleton! I’d start with my Bubble and Squeak and take it from there! In your experience what is the most important thing about cooking? NB: Being consistent day in and day out. I’m a massive supporter of keeping things local and simple, and always try to use food grown here, not flown here!

If you could cook for two famous people who? MW: Steven Spielberg and Ridley Scott. They are two of the finest directors of film which is another passion of mine. I wouldn’t be able to choose a particular dish so I would cook them a 5-course taster menu. In your experience what is the most important thing about cooking? MW: Being consistent in my views and approach to cooking, and correctly seasoning a dish is paramount!
Which chef to you currently admire? MW: David Everett-Matthias. His food is really gutsy and very individual. Where else do you eat out locally? MW: Gidleigh Park, Coombe House in Gittisham. Is there anywhere you would like to eat? MW: The Waterside Inn, it’s a 3 Michelin star restaurant and I really admire their style of cooking.

Raw or Grilled they are a Westcountry favourite grown and harvested in many estuaries in Devon and Cornwall. Previously eaten by many maritime nations for thousands of years we take a look at their provenance and try to get to the bottom of their allure.

reshly-Shucked Oysters It was a very long time ago since I ate my first raw Oyster. I remember it was in St Ives at a Beach Party late into the night on Porthmeor, with as I recall plenty of cider! Fast forward to 2011 I am still enjoying them served in many different ways and yep I still accompany them with cider from time to time. Oysters have a history! A long history! Archaeological digs have noted shells dating back to Roman times and not only near the sea but discovered inland sites meant their delicacy was truly revered. But we certainly do owe the Romans for understanding the harvesting and transportation of oysters allowing wealth to grow and other fishy industries to develop. After the Romans left our shores Oyster eating and harvesting declined for a number of years until around the 8th Century when a revival continued. By the 1400s the Oyster had become fashionable again as food for everyone. By the 1700s cooking Oysters with Ale and Pepper or popping them into Steak Puddings (often to imitate salt) and making sauces or even sausages containing Oysters. The early Victorian era brought pickled Oysters for the poor! And even Charles Dickens’s character Sam Weller said “poverty and Oysters always seem to go together”. Throughout the 1900s dredging for Oysters in vast areas with Oyster Smacks harvested

the world’s your oyster ton after ton until the natural stocks became exhausted. Oyster farming was soon to be born when fishermen brought back mature Oysters and larvae from Brittany. The fledgling oysters were placed in baskets in the estuaries allowing them to feed and grow as the tides bring in minute foodstuffs for them to gorge on. Fast forward to the 21st Century this is how the majority of Oysters are
farmed today in UK waters. We have two main varieties of Oysters in UK estuaries, first the Native Oyster or Ostrea Edulis and second the Pacific or Crassostrea Gigas. Both thrive in our estuary waters with careful management and harvesting. At Bistro One we sell plenty of Oysters bought daily from our Fishmonger Moby Nick who in turn purchases from Limosa Oyster Farm on the nearby River Yealm. Once the Oyster has attained its pre-required weight or size they have to be purified in clean water that is subjected to ultra violet light. The UV light passes through the water killing known harmful bacteria that might be lurking in the mollusc. They are then as safe as can be to eat raw or grilled. At Bistro One we don’t have a problem with Oysters that are too old as we sell plenty of shut-tight live ones, too old means dead! The shells start to open and they lose their meat/water weight rendering them unfit for human consumption. So when ordering Oysters trust the restaurant that serves them daily, otherwise why not ask the restaurateur to open them before your very eyes! Good restaurants will happily do this often with a little “theatre”.

Oysters added to other dishes? Then there was Carpetbagger Steak! This dish was offered when I was dining in Sydney whilst on a wine trip. I was served a Carpetbagger Steak of gargantuan proportions. The Fillet Steak was stuffed to the brim with Sydney Rock Oysters, seared rare and served with a rich Guinness and Brown Sugar Sauce! “Too much” I cried, as I tried my very best to finish it! I liked the combination but not the size so when I returned I set about creating an Oyster sauce that would become a signature sauce for our restaurant and be perfect for steaks of Westcountry beef. Oysters are truly sustainable food, fresh and nutritious, delicious and often a lovely treat and we all need a treat from time to time? Carpetbagger Sauce For four portions
So how do you eat an Oyster? Freshly-shucked served raw with a squeeze of Lemon (or Tabasco) is considered best. Pop the freshly-shucked Oyster into the mouth (chew for 10 seconds!) then some good brown bread followed immediately by a swig of dry white wine. All very quickly! Now relax, savour or even talk to your lunch or supper partner, then start again. You are hopefully then in the Zone! Hooked and ready for anything! Cooked Oysters Aficionados or even Trenchermen of the Oyster might turn their nose up to cooked Oysters but I think they are missing a trick as the subtle sea flavours can be retained if the Oyster is grilled under a fierce heat. Top with
chopped Chorizo, Leeks with Crème Fraiche, Spinach and Prawns or Finely Chopped Red Onion with vinaigrette all suit. This is also an excellent way for “Oyster Virgins” to try the little molluscs without fear of tasting too much of the seaside! What is best to drink with Oysters? Sharpham Dart Valley Reserve, Camel Valley Bacchus, Bordeaux Blanc, Muscadet and not forgetting Chablis all work really well. Subtlety as opposed to pungency is the key. Some Sauvignon Blanc’s or most oaked white wines do not work being too complex or rich. Otherwise try a cold Guinness or perhaps a Sparkling Cider, Cava or Champagne all suit a treat.
Ingredients: Two freshly-shucked Pacific Oysters snipped with scissors in a cup with juice reserved One finely chopped mild onion 80g unsalted butter 30ml Vermouth 30ml Crème Fraiche Freshly snipped chives A twist or two of Black Pepper instructions: Gently sauté the chopped onions in the butter for two minutes Add snipped oysters and juice, cook for one minute Add Vermouth and reduce by half Add Crème Fraiche and reduce for one minute or until it thickens Taste and adjust seasoning, add snipped chives Serve in a sterilised Oyster shell with Steaks or Fish

With increased competition in the high street and the rising cost of supermarket food, there has never been a more affordable time to eat out. Nick Bayly offers some top tips on how to dine out without breaking the bank.
W
ith so many people feeling that they’re on a less economically sound footing than they were a year or two ago, it should perhaps come as no surprise to learn that almost two-thirds of us are planning to cut back on our eating and drinking out this year as incomes come under increasing pressure from rising costs. Joanne Denney-Finch, chief executive of grocery industry watchdog IGD, which has carried out some detailed research into our dining out habits, says: “Consumers are clearly feeling a lot more downbeat than they were last year and plan to do some major belt tightening. Shoppers of all ages and across all socio-economic groups are telling us they intend to cut back on non-essentials, such as going to the theatre, meals out or going on holiday.” I don’t know about you, but while I’ll happily forgo two weeks on the beach in Spain (or huddling in a tent in some soggy field in the Lake District), I’m not about to give up on having a ‘non-essential’ curry night with the boys once in a while, or stop taking the kids out for a ‘non-essential’ pizza when they need cheering up, or, heaven forbid, not treat my essential wife to somewhere fancy when the mood takes her – which it often does. Such pleasures, while admittedly not free, are what stop us from turning into grim-faced robots, doing everything for a reason and nothing for sheer fun. OK, there’s common sense to be applied here, but just because petrol costs more than liquid gold and the price of a packet of cigarettes is more than Azerbaijan’s annual GDP, it doesn’t mean we have to sit at home surviving on a diet of stale bread and gruel and salivating into our sofas while watching repeats of Come Dine With Me and MasterChef. No, citizens of Britain, there’s no need to stay at home eating baked beans out of a tin with a spoon – which I happen to quite enjoy

– you can and you must, eat out. Firstly, and if nothing else, to stop yourself from eating your own hand and ending it all right now, but secondly, because if you do stop eating out when times are tough, when things do eventually start to pick again, as they surely will, there will be no pubs, cafés or restaurants left to for you to go to – as they will all have gone out of business. As the mantra goes: use them or lose them. Eating out can, of course, be a real bank balance-busting treat, but it doesn’t have to always be like that. Yes, it’s nice to push the boat out once in a while and go to that posh place with starched linen tablecloths that requires you to book six months in advance and give up your firstborn to slavery in order to get a table, but that doesn’t represent more than a tiny portion of the eating experiences that are to be enjoyed in your locality. There are plenty of pubs, bars, cafés,

Eating Out for Less brasseries and restaurants, be they high street chains or family-run operations, that offer affordable meals out, whether you’re a couple or a family of ten. If nothing else, going out for a meal, suspends the tyranny of shopping, meal planning, cooking and, of course, washing up, for just a brief moment – and you can’t put a price on that. Many people think that ordering a takeaway, rather than going out for meal, will help save

be packed with money-saving deals and timesensitive offers, including 2-for-1s, free wine with a meal, and other discounts. One well-known restaurant chain I know – let’s call it Pizza Express for argument’s sake – simply asks you to visit its website to print off a voucher for a free main course, providing you pay for another one, as well as offering a ‘two main courses for £10 deal’. I did the maths on a similar-sized meal for two from a wellknown takeaway chain with a domino in the logo and Pizza Express worked out £2 cheaper, even when you included drinks, side orders and added 10% for service. There are also numerous other websites, vouchercodes.co.uk is one example, that bring together hundreds of companies, including numerous bar and restaurant chains, that offer significant reductions on meals out. The sites will also keep you up to date with the latest deals, many of which may be valid just for that week, or even in some cases, that day. It doesn’t cost a penny to hand over your email address and print out a voucher

Using vouchers or coupons ensure you can eat out at a host of respectable restaurants for less, or virtually the same, as you would if you had stayed at home.
(OK, ink cartridges are quite expensive), but you get the picture. Providing you use the vouchers, and don’t mind which day you go, you can eat out at a host of respected Italian, French, and Asian chains for less, or virtually the same, as you would if you had stayed at home. Another expense for families eating out is the cost of feeding the children. Kids all love to eat out, as it’s an experience and is often one of the rare occasions when families actually sit down at the table together and eat similar food. It’s also a chance to experiment, try new things and generally enjoy each other’s company away from the stresses and distractions that inevitably arise from being at home. Restaurants have long been savvy to this problem, and are increasingly launching competitive deals for those with young children, with ‘kids eat free’ deals and extremely competitive child-friendly fixed menu offers. With high chairs widely available, and crayons and puzzles to pass the time between courses, there’s no reason not to take your kids out to eat, providing they don’t throw pasta on the walls. Child-friendly chains like Giraffe, Wagamamas and Pizza Hut and our old friend Pizza Express, all offer a great choice of healthy dishes for smaller diners, while also catering for more adult tastes, and more importantly, have staff that won’t get upset if things get messy or noisy – or both. Of course, going out for a meal is often the perfect excuse to leave the kids with grandparents or call in the babysitter, as eating out in noisy child-filled restaurants isn’t always
conducive to romantic thoughts or chatting with friends. You can still enjoy fine dining on a budget providing you do your homework. It’s widely known that there is great value to be had at midweek lunchtime deals at Michelin-starred and other top notch restaurants, where fixed menus can be enjoyed for a fraction of the cost of the same meal eaten just a few hours later. You receive the same quality of cooking and ingredients, the same service and the same ambience, but all for far less money, and with probably less of a queue to get in. Equally, many restaurants, especially those located close to theatres, also offer ‘early bird’, and in some cases, ‘late bird’ deals, where express menus are designed to be eaten quickly – and cheaply – as you rush to take your seat before the curtain rises, or as you turn out into the streets after the show looking for something more appetising than a kebab. Eating before 7pm, in those post-office happy hours, also offers a good chance to grab a cheap bite. The secret to not letting your restaurant bill run away with you is to watch what you drink, as that is where the biggest mark-ups are made. So that might mean sticking to a jug of iced tap water rather than fizzy mineral stuff from a posh bottle, opting for the house wine, and forgoing the post-dinner coffee, but let’s face it, we can all make a brew, but we can’t all be bothered to cook a three-course meal, so spend your money on things that you can’t do at home. If it’s the restaurant food that you crave and not the restaurant experience, you can cut also your costs by ordering your food to go – but I don’t mean by ringing up your local fish and
chip shop. Many restaurants don’t advertise themselves as takeaways, but are still happy to provide meals for regular customers to pick up, saving you the cost of service and drinks, but still providing a source of income to the restaurant without them having to use up a table on a busy night. It’s a win-win. And lastly, let’s not forget, eating out is a social experience, and not just about filling up your tummy. You’re not staying at home, you’re doing something together as a couple or a family, or with friends. And you’re hopefully having fun. And you can’t put a price on that.
