“But I have two left feet.” This is what a lot of us say when we think of learning how to dance. What James West, owner of the Arthur Murray Dance Studio in Southampton, will tell you is, “Let us help you find the right one.” I was told I should start taking dance lessons with my fiance, Joe Cipro, in December prior to our upcoming wedding in April. We both thought, "Wow, thats a long time period of preparation for the big day." We thought wrong, we definitely needed it, we needed to start even sooner, perhaps years sooner. Let’s face it, our killer personalities and charm make up for what we may lack in rhythm and coordination. routine. This is something many engaged couples don’t realize. It takes a while to actually learn how to dance. Lori Newell, our instructor, and West explained to us that it happens all of the time. Couples come in to learn how to dance just weeks before the wedding, in that time they can only learn a few basics. They will most likely not fly across the dance floor like they’re on the finals of "Dancing With The Stars," as they may have expected. It does take time to get a good dance routine on track. And what you want for your first dance, ie. the only time all of your loved ones are going to be focused on the two of you dancing, is a really good dance routine. This is your day. It’s your time to show off what you’ve got. During our first lesson we went over a variety of dances. The waltz, foxtrot, rumba, tango, salsa and hustle. And for those of us with “two left feet,” it was a lot to take in. But it was good to learn so many different moves at once. Even though it was hard

to remember all of them at first, from week to week we became more familiar with each and started to get a feel for what we liked and what we were good at. When you pick your wedding song you can do it one of two ways. Pick a dance you like and find a song that goes with it, or pick a song and do the dance that goes with it. We just so happened to like the foxtrot, with that we chose “Beyond The Sea” by Bobby Darin as our first dance. We have come a long way since we first stepped into the Arthur Murray Dance Studio and we definitely still have a long way to go. I will keep you updated on our progress and let you know how it goes on the big day in our next bridal issue in June. In the mean time we still need to finish our dance and both pick out father/daughter and mother/ son dances. Thanks to the Arthur Murray Dance Studio, we will be a modern day Ginger Rogers and Fred Astaire, starting with a classic jazz box step on our wedding day. Wish us luck!

Sugar Flowers: A Blooming Art By Kitty Merrill

They look good enough to eat, and they are. But, who would want to, when Tracy McHale’s extraordinary creations – if stored properly – will last a lifetime, a unique and beautiful wedding cake keepsake. A Hampton Bays resident, McHale’s been a pastry chef for 30 years. Her specialty has been wedding cakes and she noted, there’s always been a desire on the part of the wedding couple for cakes decorated with flowers. While most chefs use royal icing, a mixture of powdered sugar and egg whites, to pipe the adornments on a cake, McHale uses a sugar paste and actually sculpts each bud, each flower by hand. It’s a painstaking and timeconsuming process, but the end result is astonishingly realistic. The paste dries like porcelain and, if kept out of direct sunlight, will last decades.

McHale generally receives special requests from couples. The favorites are roses and peonies, “the quintessential wedding flowers,” she noted. But just for fun, she’ll also sculpt a variety of flowers, using bouquets her daughter brings home from a local floral shop for inspiration. Pictured with this story and on the cover are blossoms she crafted. Each little bud was made individually. Drying time is a consuming part of the process, then the buds are all assembled into the flower. To achieve the realistic color, McHale uses a sugar dough with gel-based color, then over dusts the pieces with edible food powder. The finished products are, indeed, works of art. And that’s no surprise. “Art was my thing in school,” McHale informed. She attended the Fashion Institute of Technology for a year, before she got married and began her family.

As a mom, there wasn’t a lot of time or space to sculpt, so she tried her hand at baking and became a pastry chef. Her skill is self-taught and the stunning flowers she now sculpts are the product of years of trial and error. Now, she’s formed The Sugar Flower Company, with the goal of providing the gorgeous blossoms for other wedding cake bakers who simply don’t have the time to sculpt the flowers. Over the years, she said, she

noticed that bakers find the time’s run out and look to purchase the flowers. Because they are hard to find, McHale feels establishing her own company “became natural segue.” McHale admits the sugar flowers can seem “quite costly,” but she pointed out, “These will last forever.” Because each hand sculpted petal is one-of-a-kind, choosing sugar flowers is a case where (with apologies to Gertrude Stein) “a rose isn’t a rose isn’t a rose.”

Same Sex Marriages: The Next Big Thing By Miles X. Logan

The hottest trend in the wedding industry: duh! Gay marriages, of course. The fact that more and more states are legalizing same-sex marriage comes at a time when public opinion is shifting: In the latest Pew poll 48 percent of Americans were in favor of legalizing same sex unions, with 43 percent opposed. Just four years ago 51 percent opposed it and only 39 percent were in favor. On Election Day three more states approved same sex marriage – Maine, Maryland, and Washington. Since Massachusetts became the first state to approve the measure in 2004, nine others plus the District of Columbia have passed laws legalizing the unions. That is not to say acceptance or even tolerance is widespread: 32 states have added amendments banning same sex marriage. Other states recognize same sex relationships but fall short of allowing legal marriages. Andrew Kohut, in his New York Times column, noted that the shift in attitude is generational: younger Americans are less inclined to have an opinion, or simply favor gay marriage. But Kohut said, Baby Boomers and even senior citizens are slowly coming around to acceptance. Lessings, a chain that specializes in wedding receptions, has a gay

According to About.com, “ . . . for gay and lesbian couples there are a few important details to consider” when planning a wedding and reception. For example, the official performing the ceremony, especially clergy, must be screened ahead of time to assure no bias exists. The venue should be “gayfriendly” even if the law stipulates no discrimination is allowed. As is the case with all ceremonies, the music must be chosen with care.

“The DJ can sometimes be a sore spot when it comes to wedding and commitment ceremonies,” according to the website. “Select a play list that tailors to both your tastes and the palate of your guests.” The same goes for videos and photographs. “Decide on a photographer with experience and be clear about what you expect. It helps to choose a DJ and photographer who are comfortable in a gay atmosphere,” About.com advises. Similarly, guests need to be comfortable with the limousine drivers.
