Fundraiser For Mark Schmitt On November 26 a fundraiser will be held for Mark Schmitt at the American Legion in Amagansett from 6 to 9 PM. Schmitt, 23, from East Hampton suffered traumatic injury to his brain, neck, and back after an accident in Springs. The governor of Maryland from 1967 through 1969, Agnew became the 39th vice president of the U.S. that year and served until 1973. He was one of the most controversial VPs ever, revered in some quarters but despised by many. He was forced to resign after charges that he had accepted bribes were filed. The matter was resolved when he admitted to failing to report income he had made illegally in 1967. He later lost a civil suit related to the bribery charges. Agnew, ever argumentative, became a key supporter of Nixon’s Vietnam policy and sparred with anti-war activists, often using alliterative vocabulary that sent friend and foe alike to the dictionary. It wasn’t until years later it was learned Agnew’s then speechwriters, Pat Buchanan and William Safire, were responsible for the most memorable prose. Buchanan coined “pusillanimous pussyfooters” and Safire was responsible for “nattering nabobs of negativism” among many other phrases. Nixon eventually soured on Agnew, who died suddenly in 1996.

Beet Carpaccio With Arugula Salad & Toasted Coriander Orange Vinaigrette Ingredients (serves 4) 8 red beets (medium size) 1 10 oz bag of baby arugula 2 oranges (juiced) zest from 1/2 an orange 1 c walnuts 2 tbsp coriander seed 1 c blended oil 1 tsp Dijon mustard 3 shallots 1/4 c olive oil 1/3 c all purpose flours

Method First fill a large pot with cold water and a pinch of salt. Place the beets in the pot and boil for about an

hour. While the beets are cooking, set the oven to 375 and lightly toast the walnuts for 7 minutes, then set aside to cool. Slice two of the shallots into rings, dust them in the flour, and fry in a saute pan on medium heat with the olive oil for 3 minutes. Set them on a paper towel to dry. For the dressing: Toast the coriander seed in the oven at 375 degrees for 5 minutes, then allow it to cool and use a spice or coffee grinder to grind the seeds. In a blender cup add 1 shallot, mustard, ground coriander, and the juice from the oranges. While blending these ingredients slowly add the

blended oil until you have reach a thick emulsified dressing. At the end you can mix in some salt and pepper to taste as well as the orange zest. When the beets have finished cooking, remove them from the hot water and let them cool in the fridge for at least an hour. When the beets have cooled, peel off the skin under cold running water. Cut thin uniform

slices of beet and layer them in a circular pattern. In a mixing bowl add the arugula, walnuts, and a bit of the dressing and mix together. Put a little salad in the middle of each plate lined with the beet carpaccio. Top with the crispy fried shallot rings and enjoy. www.chefjoecipro.com

Frutti Di Mare is the newest addition to Hampton Bays, located in the Hamlet Green. Chef Marco Barilla, famous for his Insatiable Eats Catering company, is now bringing his scrumptious eats to the masses offering gourmet mediterranean seafood at fast food speed. The "fruit of the sea" is local and fresh, while the price points are unbelievable with most of the menu items under $10. Frutti Di Mare gives locals a place to go for high quality seafood at a more than fair price. We started with a few appetizers. The panko crusted mozzarella sticks

were delicious. For the ultimate seafood lover, tr y the seafood empanaditas stuffed with calamari, mussels, scallops, shrimp, fresh jalepenos, herbs and salsa. The mini crab cakes were a hit, crispy on the outside while juicy on the inside. We also sampled the crab hushpuppies, another popular menu item. For our main course we tried the oyster, clam & shrimp poboy served tempura style with a delicious "secret" sauce, lettuce and tomato on a French baguette.
