Lionel Richie rocked the Brick house as a member of the Commodores but he will be forever remembered for his songwriting skills. Richie’s knack of paring beautiful melodies with soulful lyrics set him apart from his contemporaries. Most notable are the gorgeous love songs he composed, including “Once, Twice, Three Times A Lady,” “Still,” “Truly,” and many more. After a decade as saxophonist, singer, and songwriter for the Commodores Richie began to write songs for other performers. He penned “Lady” for Kenny Rogers and the song went platinum; he wrote “Endless Love” for the movie of the same name and his recording of it, with Diana Ross, also hit Number One on the charts. His self-titled debut album yielded the hit “Truly,” and was an instant hit – four million copies were sold the fist year. His follow-up album, Can’t Slow Down, sold twice as many and was an international hit. Sometimes the perks of working at a newspaper are simply . . . delicious. Last Thursday Daniel Karsevar, president of The Soft Serve Fruit Company stopped in the newsroom with an array of samples of his unique treat – Soft Serve Fruit. It’s real food that’s real simple crafted in a special machine with just three ingredients: fruit, water and organic cane sugar. There’s no dairy, no gluten, no high fructose corn syrup, no cholesterol, no sodium, none of the eight major allergens, and no guilt. Usually that means no flavor, because when one thinks healthy frozen treats, like rice cream or soy sorbet, one also thinks “Yuck.” But Karsevar’s creation is real tasty; the flavors are vibrant and the texture completely creamy. Staffers descended like rapacious hyenas and the most often uttered word, whispered around mouthfuls of strawberry, tangerine or dark chocolate SSF, was “Wow!” A “crunchy salty” sundae, replete with banana and dark chocolate Soft Serve Fruit, pretzels, warm natural peanut butter and melted chocolate was a huge hit with this taster. Karsevar reported the chocolate entry is new, the product of a lengthy search that led him to a single origin cacao from Ecuador. Karsevar first opened up shop on the Upper East Side in Manhattan about two and a half years ago. He’s got another outlet in Union Square and, just in time for the hot summer season, is partnering with
the Hampton Coffee Company in Watermill and the Golden Pear in Bridgehampton, Sag Harbor, and East Hampton. With a sort of pop up shop within the shops, SSF offers cups of the treat that weigh in at less than 200 calories. That’s an average of about 85 calories per 100 grams. You can craft sundaes with a selection of toppings, or try super healthy and rich smoothies. We like the “Calming Cacao,” blending the dark chocolate SSF with raspberries, sliced almonds and melted chocolate. There are also breakfast menu items -- try the vegan waffle -- and crunchy pretzel cones. Nutritional details for each flavor are available.

Veal And Legumes With Spring Vegetables And Curry Saffron Sauce Ingredients (serves 4) 1 lb veal top round (cubed) 7 oz lentils 5 plum tomatoes (large dice) 1 red onion (diced) 1 carrot (peeled & diced) 1 fennel bulb (diced) 1/4 c olive oil 2 tbsp butter 10 oz bag of baby spinach 1 handful thyme (chopped) 1 handful parsley (chopped) 1 tbsp curry powder 1 small pinch of saffron 1/2 c white wine 1/2 c English Peas salt and pepper to taste
Method Process the vegetables and herbs and cube the Veal. Rinse lentils in cold water and put them in a small pot of cold salted water, filled to an inch above the lentils. Bring the water to a boil then reduce to a simmer and let the lentils cook for about 15 minutes, stirring occasionally.
While the lentils simmer, heat a large sauté pan over high heat. When the pan is hot add the olive oil then the onion, carrot, and fennel followed by the cubes of seasoned veal. Sauté over medium high heat for 2-4 minutes being sure to brown the cubed veal. Deglaze the pan with the white wine and allow the wine to reduce for another 3 minutes or so. Lower the heat and add the butter, tomatoes, spinach, and English peas. Cook over medium heat another 5 minutes. When lentils are done strain any excess water and add them to the veal and vegetables. Finish the dish by making a quick sauce using some of the cooking liquid. In a small sauté pan reduce some of the left over cooking liquid with a pinch of saffron, one tbsp curry powder and a small knob of butter until it reaches a nice consistency.
