They started their set at the recent Amagansett Fire Department car show with a cover of Chicago’s “Beginnings.” At the Montauk Music Festival last month, they played cuts from Santana’s Abraxas that were so tight, hippies in the audience could practically feel the Woodstock mud squishing between their toes. The Blue Collar Band’s front man John Havlicek describes the group’s repertoire as “danceable rock and roll.” The band’s four members – Havlicek on keyboard and lead vocals, Dave Cavalier on guitar, Sandy Posnick on bass, and Gerry Gilliberti on drums – all live in East Hampton. And, according to Havlicek, Blue Collar is one of East Hampton’s rare commodity’s, a band comprised of members that only play for Blue Collar. The East End is home to a lot of excellent musicians, but very few bands, Havlicek explained. “Often you see a band and it’s sharing musicians with two other bands.” With few exceptions local acts tend to feature the same musicians sitting in with different bands. The same people can be in four or five different bands. Not so with Blue Collar. “We’ve been together a little over

a year,” said Havlicek, who first began collaborating with Gilliberti about five years ago. The group draws its moniker from Havlicek’s solo project, a CD of original songs, as well as their individual off stage careers. Blue Collar will include some of their original songs, such as a popular ode to Ditch Plains, in their performances, but, “Most places, people want to hear what they know. From the band’s perspective, if we played all original music, we wouldn’t be getting gigs, and performing is fun for us, too,” Havlicek said. “We’re kind of employees of the audience.” Throughout last winter, Blue Collar was frequently featured at the Montaukett. They’ll be in Montauk again throughout the summer, as well as East Hampton Bowl, which Havlicek describes as East Hampton’s “sort of secret” rock venue. Havlicek and Gilliberti have been “playing out” with different bands since the 70s. “Sandy and Dave are almost a generation younger, but each one of them has been playing for a couple of decades, too,” Havlicek reported. Enthusiastic about his band mates’ prowess, he concluded, “I always wanted to be the worst guy playing and it’s happened with this band.” kmerrill@indyeastend.com

Hamptons Players Club After a hectic Memorial Day weekend it was nice to slow down a bit this past week and just enjoy the season. The weather was great and so was the vibe around the local restaurant scene. One establishment that’s new to the Hamptons this year is The Hamptons Players Club. Team Frank Cilione, Neil Levinbook, and David and Carolyn Levinbook have transformed the restaurant located at 103 Montauk Highway in East Hampton (formally Beachouse). I was lucky to sneak in for an early reservation on Saturday. The décor is sharp and inviting with a large bar area perfect for early evening cocktails. The outside terrace has been turned into a beer garden and offers a large selection of craft beers from around the Northeast, as well as a light fare menu served exclusively in the beer garden. Our service was certainly notible, everyone was very attentive, knowledgeable and accommodating. The menu is vast, offering a great selection of whatever you are in the mood for. Tapas samplers and specialty thin crust pizzas are the way to go after a couple of happy hour drinks. If you want a nice steak, pick

your cut and a couple sides too. I went for the crab cake and was very impressed. I grew up in Baltimore and hold crab cakes to a high standard. This one was fantastic, huge pieces of warm jumbo lump crab seared to perfection on the outside with mashed avocado, a nice lemon butter sauce, and a potato wrapped prawn. It was delicious and is worth going back for again and again. Executive Chef Hector Diaz has constructed a very creative, well balanced, ambitious menu that highlights the best of what’s local, and caters to the sophisticated palates of the people who will be enjoying his cuisine. BBQ Beef Ribs With Broccoli Slaw Ingredients (serves 4) 1 slab of beef rib 4 slices of bacon (chopped) 2 c barbecue sauce 1/2 c cider vinegar 1/4 c soy sauce 1 tbsp cumin powder 1 tbsp chili powder 2 tbsp Dijon mustard 2 cloves of garlic 2 tbsp ginger 1/2 c brown sugar 2 tbsp cracked black pepper 3 tbsp salt Broccoli Slaw 3 broccoli stalks (shredded) 1 carrot (shredded) 1/2 head of radicchio (sliced thin) 1/2 red onion (finely diced) 2 tbsp mayonnaise 1 tbsp lime juice 1tsp olive oil 1tbsp Old Bay seasoning salt and pepper to taste Method For this recipe you will need time, patience, and a hot grill. Rub some of the salt, black pepper, and chili powder onto the slab of ribs. Sear the ribs on a very hot grill for 30 seconds on each side. Transfer the slab of ribs into a deep hotel pan. If you do not have a hotel pan, cut the slab of ribs in half and use something that can hold the ribs and about one gallon of liquid. In a blender cup add the chopped bacon, garlic, ginger, Dijon, brown sugar, spices, soy sauce, vinegar, and one cup of the barbecue sauce. Fill the rest of the way with water and liquefy those ingredients into a

flavorful cooking liquid. Pour that liquid over the ribs and add another cup of water to the liquid before covering the ribs in aluminum foil. Place them in a 300 degree oven for four hours. While the ribs are cooking mix your broccoli slaw so that it can marinate for a few hours as well. Mix the shredded vegetables with the dressing ingredients and place in the fridge until service. When the ribs are close to being done take two cups of the cooking liquid and reduce in a pan. When the liquid begins to thicken up, add the other cup of your favorite barbecue sauce. You can use resulting sauce to glaze the ribs when you take them out of the oven to finish on the grill. After four hours the ribs should be fall-off-the-bone tender. Carefully remove them from the cooking liquid and place right on a very hot grill, turning and brushing with sauce for about one minute until you have a nice charred flavor. Serve with the broccoli slaw and a side of barbecue sauce for dipping. www.chefjoecipro.com

Very few people ever achieve the pinnacle -- the very best, Number One. Björn Borg did it, reigning for seven years as the Number One ranked men’s tennis player in the world. With his long blond hair flowing, Borg was an unshakeable presence on the court, a predator that wore down opponents with his icy stare and flawless strokes. Off the court, he lived the life of a rock star, adored by women and a fixture in discotheques all over the world. Borg won 11 Grand Slam titles between 1974 and 1981, including five straight at Wimbledon. Borg’s rivalry with the American John McEnroe resulted in some of the most highly contested tennis matches ever played. In 1980 Borg held off McEnroe to win his fifth Wimbledon title, but the American came back the next year to break the streak. When McEnroe ascended to the top of the rankings, Borg abruptly quit playing professionally at age 25. Borg did eventually return to competitive tennis, and matches with McEnroe on the senior circuit continued to sell out. The two, by the way, are best friends. Borg has also become a successful clothing designer. When asked why he quit when he was making millions of dollars, the Swede said simply that if he couldn’t be Number One at something he’d rather not do it at all. SCORPIO (Oct. 23 - Nov. 22) Detachment is apparently not your favorite thing, because the Universe has been asking it of you for a little while now and it is still here. Honor another’s right to do things in their own way and see if you can keep your emotional freaking out about someone else’s stuff to yourself rather than unintentionally slime someone else with it. SAGITTARIUS (Nov. 22 - Dec. 21) Partnership and even love may be in the air for you, Sag, so keep your eyes and heart open. There is a lot of love to be shared right now and this will probably go beyond romantic love, although romantic love may be at the top of the list. Feel the love. CAPRICORN (Dec. 21 - Jan. 20) You may be doing a bit too much thinking right now, so give your head a rest. You won’t know what to do until it is time to know what to do and then it will be time to do something. Self doubt, which is driving the over-thinking, is not serving you right now, so trust yourself instead. AQUARIUS (Jan. 20 - Feb. 19) Look out for that addictive/obsessive vibe to wiggle its way into things.
