Brioni and The Peggy Siegal Company hosted a sneak Hamptons screening of Lionsgate and Roadside Attractions’ “Arbitrage” at UA East Hampton on Sunday. That 70s Band By Kitty Merrill

Here’s a test, Steve Interrante challenged. Pay attention at the next wedding you attend that features a deejay playing modern dance music. “When they put on classic disco . . . and the dance floor gets packed,” said the founder, along with partner Erol Caypinar, of That 70s Band. Jam-packed dance floors filled with revelers of all ages have become a signature of That 70s Band, and it’s completely by design. “Over the years, we’ve streamlined our song list to focus on the style of music that gets everybody on the dance floor,” Interrante explained. A recent gig at Cupsogue Beach saw a gaggle of eightyear-old girls dancing, while another performance at the Westhampton locale delighted people watchers with the sight of a snowy-haired octogenarian dancing with support from her cane. But, really, disco? Interrante acknowledged the genre sometimes gets a bad rap. “I listened to Pink Floyd and Yes myself during the 70s,” he admitted, “But when we put this band together, our goal was to play music from the 70s. That decade was the last great era of music.” Real music, played live, without all the technological folderol that often makes up for talent in more current music, he opined. Speculating on the intergenerational appeal, Interrante said, “Young kids, they’ve heard this music all their lives, but they’ve never ever seen anybody play it live. If played correctly, and with enthusiasm, this music reaches everybody.” The band is comprised of 10 members – he’s on sax and Caypinar plays guitar -- including three or four front singers, plus another four crew. Interrante’s mission is to strive to duplicate songs from the era. It was mission accomplished during their last show at Cupsogue on August 7, when aural double takes were necessary to determine when the band stopped and recordings by original artists began. That’s not surprising, since members have played alongside such stars as Janet Jackson, Sheena Easton, Marvin Gaye, The Gap Band, Paula Abdul and Enrique Inglesis. “We have a diverse group of musicians, with top vocalists,” Interrante said Saturday, as he juggled calls

about the weather forecast and that night’s performance. The group thrives on outdoor performances that draw hundreds to upisland venues. In fact, their outdoor gigs are so well loved, Interrante set up a special weather emergency line for fans to call in to check the status of gigs when the forecast is threatening. In its seventh year, That 70s Band

has developed a near-cult following – one that “blows me away to this day,” Interrante enthused. “We love to see the same faces come out to different shows. I hear stories from people who make as many shows as they possibly can, they love the vibe.” It’s common to meet people at Cupsogue who will report following the band after seeing them at venues up west. With a “very approachable” aura, band members not only make friends with fans, they turn fans into friends. “We’ve seen people who meet at our shows, then meet again and again and become friends,” Interrante said. The band’s uncanny prowess at replicating songs from the era -- at the August 7 show they diverged from disco for a pitch perfect rendition of “Don’t Stop Believing” by Journey – has the effect, Interrante believes, of “taking people away from day to day problems they have stress about.

During the show, it’s all about the moment . . . The music takes them back to another, easier time. That’s why we try to duplicate what existed.” With every weekend booked for the next year, Interrante is looking towards the group’s “indoor season,” with gigs at top clubs on Long Island. Beyond that, he wants to repeat the success with a second 70s group working out of Florida. On Saturday afternoon, as he juggled phone calls from fans and band members -- it’s not easy wrangling 14 members – Interrante stopped for a second and sighed, “We’ve been blessed.” Want to shake your groove thang? Today’s Birthday: Jimmy Webb, 1946

When people discuss the greatest pop songwriters of the past 50 years, one name is frequently overlooked – yet Jimmy Lane Webb of Elk City, Oklahoma is clearly at the top of the list. As a youngster Webb became fascinated with music, and bought his first record -- by Glen Campbell -- when he was 14. His family moved to California when he was 18 and he stayed there to study songwriting when the family moved back to Oklahoma. By the time he was 21, Webb had established himself as a songwriter, even penning a minor hit for the Supremes. But a chance meeting with Johnny Rivers launched him into superstardom. Rivers was producing an album for an unknown band called the Fifth Dimension. Webb wrote “Up, Up and Away” and it went gold. Campbell, of all people, heard an obscure cut on a Rivers album called “By The Time I Get To Phoenix” and decided to record it. It became one of the most played songs of the century. The two songs won a total of eight Grammys in 1967 – “Up, Up and Away” won Song Of The Year. Everything Webb touched turned to gold. He wrote five chart-topping songs in 20 months including “The Worst That Could Happen” (Brooklyn Bridge), “Wichita Lineman” and “Galveston” (Campbell). His most controversial song, “MacArthur Park,” was an unlikely hit. At over seven minutes long, it was unlikely to get airplay on the radio. It was recorded by Richard Harris – the actor - and had been rejected by The Association, a group that had a hit with “Along Comes Mary.” But “MacArthur Park” became an international hit and launched a new career for Harris, who had a best selling album containing the song. Donna Summer released it a decade later and “MacArthur Park” went platinum again. It was one of three Webb compositions to win a Grammy in 1968. Webb continues to compose, produce, and score movies and television specials. He is the only artist ever to have received Grammy Awards for music, lyrics, and orchestration. In 2001 Blender named “By The Time I Get To Phoenix” the “best song ever written.” Webb is the chairman of the Songwriters Hall Of Fame. giving spiritual counsel on the East End for more than 20 years. Culinary Bad Boy By Joe Cipro

For all aspiring chefs, home cooks, and lovers of fine cuisine out there who haven’t heard of “The Culinary Bad Boy” Chef Chris Nirschel, listen up . . . Nirschel is fast becoming a culinary pioneer and has quickly become one of the more successful and recognizable celebrity chefs. He has also cooked for the likes of P. Diddy and Mary J. Blige and is involved with a number of charitable organizations. Nirschel is still relatively new to the culinary world yet has been making waves since he was chose to pick up the profession. “My mom inspired me to take out a loan and go to cooking school. I went to the French Culinary Institute in New York. I had the best experience of my life. I fell in love with food and fully submerged myself into that world. I finished cooking school in 2010.” After graduating Nirschel took the sous chef position at the Knickerbocker Bar & Grille in the heart of Greenwich Village. Six months later he found out that he had been chosen to compete in the Food Network’s reality culinary competition “The Next Food Network Star.” Nirschel followed that up with appearances on “Dr. Oz,” CNN, FOX, NBC, and VH1. He put his public relations background and charismatic personality to work by starting Culinary Bad Boy Productions. When asked what drives him as a chef Nirschel explained, “Unless you have been defeated and broken down you can’t fully grow. I think

what the Food Network did was intimidating. It was hard. They made me look how I didn’t want to look. I looked immature. It motivated me to recreate my brand. So basically going against the machine. The media world makes us look a certain way so that we play a character. In real life I’m Chef Chris, I care about what I do, and care about my food. [The Food Network] motivated me. I want to be the best, I want to create a strong, powerful culinary brand.” Nirschel’s Culinary Bad Boy Company offers catering packages for large-scale events and private dinner parties as well as children’s classes and cooking demonstrations. Speaking with Nirschel, it’s obvious he is a driven businessman with the highest standards who believes in fresh seasonal ingredients and classic cooking techniques. He is also ready to break into the Hamptons culinary scene. “Right now I’m business minded and I love to cook. That’s why I’m focusing my energy right now in the Hamptons. I like the lifestyle. It’s where New York is in the summer, and I’m New York. There’s nowhere better to be.” He continues jokingly, “I’m not going to the Jersey Shore, I’m not a fist pumper.” His goals in business are to build a strong brand and to influence future generations of professionals. Crispy Fish Tacos With Pineapple Chutney Carrot And Radish Ingredients (serves 4) 1 1/2 lb mahi mahi fillet 1 c all purpose flour 2 c Panko breadcrumbs 4 eggs (whisked) 1 pineapple (trimmed and rough chopped) 1 jalapeĂąo 3 tbsp mayonnaise 1tbsp Old Bay seasoning 1 white onion

Method Slice four and a half inch thick strips of the Mahi Mahi. Bread by dusting each slice in the seasoned all purpose flour. Dip them in the whisked egg and finally coat each in the seasoned Panko bread crumbs. Place in the refrigerator until you are ready to fry them. To make the pineapple chutney start by sweating chopped onion and jalapeno over medium high heat with a little bit of oil. When they have become soft and translucent add the pineapple and turmeric. Cover and cook over medium heat for another 10 minutes. Add the entire mixture to the food processor along with half the cilantro. Pulse the mixture four or five times until everything has become nicely incorporated. Spread over a sheet tray and put into the refrigerator to cool. Heat the four cups of canola oil to 350 degrees in a large enough pot that the oil only fills it half way. While the oil is heating dress the thinly sliced carrot and radish by mixing the juice of one lime with the mayonnaise and old bay seasoning. Toss the vegetables in the dressing. When the oil is hot, fry the fish for about three minutes or until it becomes golden brown and floats on

top of the hot oil. Place the cooked fish on a towel while you assemble the tacos. Heat each tortilla over an open flame then spread a healthy portion of the pineapple chutney over the tortilla. Place a large leaf of Bibb lettuce over the chutney followed by the fish. Fold the taco and top with the radish and carrot.
